We crossed Greece from Thrace to Crete to find the local gastronomy's finest and the challenge
with the recipes was simply, which comes first. The ones we chose are family recipes, laborious to prepare
at home and easy to enjoy by food-lovers in every corner of the world, regardless of their local cuisine.
This valuable attribute we owe entirely to the Greek gastronomy - a unique combination of ethnic intonations
on a taste palette, familiar to people beyond Greece's borders. Indigenous Greek, Italian, Ottoman, Arabic, French and Slavic influences amalgamated in dishes like the famous Moussakas, the Briam or the Gemista. Their common ground has always

“Moussakas” is for the Greek Cuisine what Acropolis is for the visitor of Athens –a must! Like most great products we enjoy in everyday life, Moussakas is actually a blend of diff erent food cultures. Palirria, inspired by a succulent family recipe, starts carefully with a layer of sautéed potatoes and aubergines. Delicately spiced minced meat follows and on top lies a creamy béchamel with grated kefalotiri cheese. Greeks o� en leave Moussakas to cool down before enjoyment.
Ingredients: Béchamel 47% (Μilk, Water, Wheat Flour, Kefalotiri Cheese, Soya Oil, Butter, Eggs, Sugar, Sea Salt, White Pepper, Nutmeg), Potatoes 13.8%, Aubergines 13.8%, Minced Beef Meat 12.8%, Peeled Tomatoes, Tomato Paste, Onions, Kefalotiri Cheese, Olive Oil 1%, Parsley, Sugar, Sea Salt, Bread Crumbs (Wheat Flour, Corn Oil, Yeast, Sugar, Sea Salt), Black Pepper.
Deep Frozen Product - Easy to prepare in oven ready tray
In CONVENTIONAL OVEN - Remove outer packaging and fi lm lid from tray. Preheat oven to 180°C. Always place tray in the middle shelf of the oven. A) Defrost in refrigerator for 24 hours before use. Heat at 180°C for 30-35 minutes. B) Heat directly from frozen at 180°C for 40-45 minutes.
Dish is ready when béchamel turns golden brown.
Let stand 10 minutes before serving.

Following the best Greek tradition, Palirria uses full-aroma tomatoes, peppers, Greek spices smoothly blended with the rice, and cooks in olive oil to present a refreshing, light meal, a trully Greek-summer delight.
Ingredients: Tomatoes 25%, Rice 20.5%, Green Peppers 12%, Potatoes 12%, Onions, Peeled Tomatoes, Olive Oil 7%, Sugar, Parsley, Sea Salt, Lemon Juice, Paprika Powder, White Pepper, Garlic, Spearmint.

“Kolokithakia” is the Greek word for small courgettes, a vitamin rich vegetable of smooth taste and light fl avour. Palirria takes this rather plain vegetable and raises it to perfection. It blends the sturdy, spicy taste of minced meat in the rice and the discreet, velvet-like veggie feeling of the courgettes with the aromatic egg-lemon sauce that prepares your senses for a real treat.

No wonder, the recipe came from an Greek Orthodox Monastery.
