However, as far as per capita consumption goes, the U.S. lags behind ten other countries including Switzerland where they eat an average 22 pounds (10 kg) per year. • The U.S. consumes about 50 percent of the world’s sup- ply of chocolate. • Americans eat 2.8 billion pounds of candy each year. Nearly half of it is chocolate. • Every second, Americans collectively eat 100 pounds (45 kg) of chocolate. • The average person will consume 10,000 chocolate bars in a lifetime. The amount oftheobrominepresentin2.5ouncesofdarkchocolate

has been shown to reduce coughing, and it has been used to reduce asthma.

CHOCOLATE: THE BAD NEWS•Theobrominecanbepoisonouswhentakeninexcess.Alethaldoseforanaveragehumanwouldbeabout40Hershey bars. Dogs and cats metabolize theobromine more slowly, making it more dangerous. Although cats can rarely be induced to eat sweets because they are un-able to taste sweet things, dogs will happily gorge on chocolate. A smaller dog can die after eating as little as 1.8oz(50g)ofmilkchocolate;alargerdogcandieaftereating a pound of it. •Darkchocolateisfarhigherintheobromineconcen-tration than milk chocolate and is therefore more dan-gerous for dogs. It’s treatable if caught early and treated, but can cause seizures and death. • In2014, fourblackbearswere founddeadof theo-bromine poisoning in New Hampshire after unscrupu-lous hunters lured them to a bait site using chocolate and chocolate donuts.

CHOCOLATE HISTORY•Chocolatecomesfromabeanthatgrowsonthecacaotree. The cacao tree is an evergreen native to the tropical regions of Central and South America. Its cultivation has since spread to tropical regions worldwide, primar-ily in Africa.•The name ‘cacao’ is a Maya word meaning ‘godfood.’ThisinspiredtheLatinnamewhichis‘Theobro-macacao’where‘theo’means‘god’and‘broma’means‘food.’•Theword‘cocoa’isacorruptedspellingof‘cacao.’•Theword‘chocolate’isderivedfromtheMayanword‘xocolatl’meaning ‘bitterwater’because rawcacao isindeed bitter unless sweetened.

As soon as he notices both of them in the room with him, he yelps and runs off to another room with his tail between his legs. I have never seen any other interaction between them, good or bad. Do this by gradually reintroducing all the pets into one room. You’ll need a helper for this. First, bring in Jessup and command him to sit or lie down and stay next to you. Keepasupplyoftreatsinyourpocket.

Next, have your helper bring in one of the cats, cradled in their arms or, if necessary, in a carrier. They should sit down across the room where Jessup can see them. If and when Jessup begins to react, tell him to sit and stay. Give him a treat if he obeys.Dothisforonlyaminuteorsoatfirst,andgradually

extend the time each day. Avoid getting frustrated. If you can get Jessup to stay just a short time by your side and then calmly leave the room, that would be a big victory.

Tame Your Tummy With Turmeric

I enjoy studying and reading about natural health remedies from around the world. My new favorite health and cooking spice is turmeric. Turmeric is a golden-colored culinary spice that often is used in curry dishes. It gives mustard that bright yellow shade and has been commonly used in tradi-tional Chinese medicine for its health properties.

Research shows turmeric may be effective for improv-ing an upset stom-ach and for reducing osteoarthritis pain. In some studies, its effectiveness com-pared favorably with that reported for phar-maceuticals, accord-ing to a National Institutes of Health report.

Other early evi-dence suggests ben-efits for Alzheimer’s disease, colorectal cancer, gum disease, Crohn’s disease, irritable bowel syn-drome, rheumatoid arthritis, diabetes and other diseases. However, the Natural Medicines Comprehensive Database reports that it is too soon to rate the effectiveness of turmeric for these conditions.

“Turmeric’s benefits are attributed to its anti-inflammatory and antioxi-dant action,” said Dr. Pam Duitsman, nutrition and health education spe-cialist.

Curcumin, a constituent of turmeric, also is believed to have anti-inflam-matory, anticancer and antioxidant properties, according to early findings from animal and lab studies.

“The best news is that turmeric is a spice that offers dishes a delicious subtle earthy flavor, and can accom-plish its health-promoting work with virtually no adverse side effects,” said Duitsman. “It is easy to reap the health benefits of turmeric by cook-ing with it, rather than taking it as a supplement.”

She recommends experimenting with turmeric by adding a pinch to recipes like vinaigrettes, pizza dough, rice dishes, eggs and egg salad, sauteed vegetables, lentils, soups, smoothies, etc.

This Curry Spice Blend recipe has large amounts of turmeric. Use it in my Easy Chicken Curry and improve your health while enjoying a delicious dish!

CURRY SPICE BLEND 2 tablespoons turmeric 2 tablespoons ground coriander 1 tablespoon ground cumin 2 teaspoons ground cardamom 2 teaspoons ground ginger 2 teaspoons black pepper 1 teaspoon powdered cloves 1 teaspoon cinnamon 1 teaspoon ground nutmeg

Combine the ingredients in a jar. Cover tightly and shake. Keep in a cool, dark, dry place. Makes 1/2 cup.

EASY CHICKEN CURRY 1¼ pounds boneless, skinless chicken breasts or thighs, cut into 1/4-inch strips 1⅛ teaspoons salt 1 teaspoon ground black pepper 2½ teaspoons curry powder or spice blend, divided 3/4 cup plain low-fat (2 percent) or whole Greek yogurt (do not use nonfat), divided 4 tablespoons vegetable oil, divided 1 medium yellow onion, finely chopped 4 garlic cloves, minced 1 tablespoon grated fresh ginger 2 cups low sodium chicken broth 1 tablespoon cornstarch 2 teaspoons sugar or stevia 1 cup frozen peas (no need to thaw)

1/4 cup chopped fresh cilantro or basil, optional 3 sprigs green onions, roots removed and discarded, white and green tops chopped

1. Sprinkle the chicken evenly with the salt, pepper, 1 1/2 teaspoons curry powder and 1/4 cup of the yogurt. Mix the chicken with the spices and yogurt until well-coated.

2. Heat 2 1/2 tablespoons of oil in a 12-inch skillet over high heat until just smoking. Add the chicken in a single layer and cook, stirring occa-sionally, until lightly browned but still pink in spots, about 3 minutes. Transfer the partially cooked chicken to a clean bowl and set aside.

3. Add the remaining 1-1/2 table-spoon of the oil to the skillet and set heat to medium. Add the onions and cook, stirring occasionally, until softened, about 5 minutes. Stir in the garlic, ginger and remaining 1-1/2 teaspoons curry powder and cook until fragrant, about 1-2 minutes.

4. Using a small bowl, whisk the chicken broth and cornstarch togeth-er to dissolve the cornstarch. Add it to the skillet along with the sugar or stevia and 1/8 tea-spoon salt. Bring to a boil, then reduce the heat to medium and cook until the sauce thickens, about 5 minutes.

5. Add peas and return the partial-ly cooked chick-en to the skillet. Reduce heat to low

and simmer until chicken is cooked through, about 3-5 minutes. Remove the pan from the heat, and stir in 1/4 cup of the remaining yogurt. Season with salt and pepper, to taste. Sprinkle with cilantro or basil, if desired. Garnish with green onions. Serve with basmati rice, if desired. Serves 4.

EASY CHICKEN CURRY 1¼ pounds boneless, skinless chicken breasts or thighs, cut into 1/4-inch strips 1⅛ teaspoons salt 1 teaspoon ground black pepper 2½ teaspoons curry powder or spice blend, divided 3/4 cup plain low-fat (2 percent) or whole Greek yogurt (do not use nonfat), divided 4 tablespoons vegetable oil, divided 1 medium yellow onion, finely chopped 4 garlic cloves, minced 1 tablespoon grated fresh ginger 2 cups low sodium chicken broth 1 tablespoon cornstarch 2 teaspoons sugar or stevia 1 cup frozen peas (no need to thaw)

1/4 cup chopped fresh cilantro or basil, optional 3 sprigs green onions, roots removed and discarded, white and green tops chopped

1. Sprinkle the chicken evenly with the salt, pepper, 1 1/2 teaspoons curry powder and 1/4 cup of the yogurt. Mix the chicken with the spices and yogurt until well-coated.

2. Heat 2 1/2 tablespoons of oil in a 12-inch skillet over high heat until just smoking. Add the chicken in a single layer and cook, stirring occa-sionally, until lightly browned but still pink in spots, about 3 minutes. Transfer the partially cooked chicken to a clean bowl and set aside.

3. Add the remaining 1-1/2 table-spoon of the oil to the skillet and set heat to medium. Add the onions and cook, stirring occasionally, until softened, about 5 minutes. Stir in the garlic, ginger and remaining 1-1/2 teaspoons curry powder and cook until fragrant, about 1-2 minutes.

4. Using a small bowl, whisk the chicken broth and cornstarch togeth-er to dissolve the cornstarch. Add it to the skillet along with the sugar or stevia and 1/8 tea-spoon salt. Bring to a boil, then reduce the heat to medium and cook until the sauce thickens, about 5 minutes.

5. Add peas and return the partial-ly cooked chick-en to the skillet. Reduce heat to low

and simmer until chicken is cooked through, about 3-5 minutes. Remove the pan from the heat, and stir in 1/4 cup of the remaining yogurt. Season with salt and pepper, to taste. Sprinkle with cilantro or basil, if desired. Garnish with green onions. Serve with basmati rice, if desired. Serves 4.

Taking any type of monetary payment from the De-partment of Veterans Affairs means that at any time, it can ask for the money back. If that happens, you’re atriskofhavingallyourbenefitscanceleduntilthedebt is paid. AWashingtonveteran recentlywent through theprocess of the VA trying to collect money it said he owed. Fortunately for him, he had kept every single piece of paper and receipt, and a copy of every letter he’d written to the VA. That inches-high stack of cop-ies was helpful to the attorney he had to hire. Onedocumentwasaletterhe’dsenttotheVAsay-ing he was in prison but needed the money to take care of his family. The VA kept the payments com-ing.Oncehegotout,theVAsuddenlywantedallitsmoney back -- either in one big bite or they’d cut off allhisbenefitsuntilthatamountwasrepaid.Multipleletters sent by the attorney were ignored until sud-denly, without fanfare, the veteran received a waiver of the debt. Direct overpayment isn’t the only way a veteran can end up with cash that needs to be returned. Temporary 100-percent disability payments canbe a problem when the illness goes into remission or is cured. The VA is supposed to ask for a follow-up medical exam to track progress, but often it doesn’t

and the checks just keep arriving. At some point the VA realizes its error and demands all the money back. Another problem happens when a VA claim num-ber is used to process one payment and a Social Secu-rity number is used to process an identical one.
