YOLO LODGE #195FROM THE EAST- THE PILLAR OF WISDOM

October is just about here, and that means a welcome change in the weather. And,among typical Lodge business, the annual cleaning of the roof! Recently, Wor. DonKillmer and Bro. Brian Glaudel joined me on the Temple roof and we gave it agood scrubbing. In all seriousness, it’s good for the roof and keeps up the warranty.Thank you, Brothers, for your hard work!

October 2 will be our Stated Meeting and Dinner. At the meeting we will answerany final questions regarding upcoming Grand Lodge Legislation for the nextAnnual Communication.

Famous Mason:Andrew Jackson - 7th President of the United States (1829-1837) and firstWesterner to be elected President. A national military hero for his actions in theBattle of New Orleans during the War of 1812, His term addressed many of thesignificant issues in the formation of the country but was marked by politicalpartisanship so common in that time. He left a legacy of strong presidency. He wasGrand Master of Masons in Tennessee two terms (1822-1824).

The Grand Lodge annual communication isalso in the month of October, please talk to one of your three main lodge officers ifyou feel strongly about any of the items to be balloted on.

WOODLAND LODGE #81FROM THE SOUTH- THE PILLAR OF BEAUTY

As per request I have taken the liberty this time to give some background information on thedishes that were served at the Yolo Lodge stated meeting and Roll Call dinner for September. Itseems that these dishes were not only very different from what the American palate isaccustomed to but they were very well received by all and essentially devoured by many goingback for more servings. We were so happy to know that one and all enjoyed our culinarypresentation.

The first is what can be described as a Russian style potato salad and here is the history behindit according to Wikipedia, who we all know can be suspect at times. Olivier salad is atraditional salad dish in Russian cuisine, which is also popular in many other Europeancountries, Iran, Israel, Mongolia and also in South American countries like Argentina, Braziland Uruguay. In modern recipes, it is usually made with diced boiled potatoes, vegetables, eggs, diced boiled chicken, turkey, ham and roast beef and is dressed with mayonnaise. Worldwide, the dish is commonly referred to as Russian salad, although this term can connote withVinaigrette or the beet root salad. The original version of the salad was invented in the 1860s byBelgian Lucien Olivier, the chef of the Hermitage, one of Moscow's most celebratedrestaurants. Olivier's salad quickly became immensely popular with Hermitage regulars, andbecame the restaurant's signature dish. Olivier cooked by recipe of Hermitage restaurant. Theexact recipe — particularly that of the dressing — was a jealously guarded secret, but it isknown that the salad contained grouse, veal tongue, caviar, lettuce, crayfish tails, capers, andsmoked duck, although it is possible that the recipe was varied seasonally. The original Olivierdressing was a type of mayonnaise, made with French wine vinegar, mustard, and Provençalolive oil; its exact recipe, however, remains unknown. In Russia, Ukraine and other post-Soviet states, as well as in Russophone communities world-wide, the salad has become one ofthe main dishes on zakuski tables served during New Year celebrations (along with champagneand tangerines). The family recipe of Gala (my lovely wife) uses ham, turkey, and roast beefcommonly but we have added smoked meats from time to time. The one characteristic of allRussians preparing this dish is how small they can cube the ingredients and how the cubes willbe precise and consistent.

The other salad is Russian Vinaigrette which is a kind of beet root salad. It is a salad in Russiancuisine which is also popular in post-Soviet states. (Continued, next page)

WOODLAND #81- CONTINUED

It includes diced cooked vegetables (beetroots, potatoes, carrots), chopped onions, as well assalt cabbage and dill pickles. Other ingredients, such as green peas or beans, are sometimesalso added. The naming comes from vinaigrette, which is sometimes used as a dressing. However, in spite of the name, vinegar and vinaigrette is often omitted in modern cooking, andsunflower oil is just used. Some cooks add the brine from the pickled cucumbers. The saltedcabbage used is not the same as sauerkraut or fermented cabbage.

Everyone is of course familiar with the Borscht I started the meal with, but even with a familythere can be more than one recipe, such as with ours. Fried cabbage is a very commonworldwide dish having many variations in America. The garlic carrot salad is a little differentin that it has garlic which is not the same carrot salad I grew up with. And last of course wasthe desert of the stuffed plums with walnut in the sweetened sour cream sauce. Anothervariation that was new to me was adding sugar to the sour cream.

I did receive a lot of feedback and it was very rewarding to have so many people comment andgive us praise for our dinner. This was something very much out of the ordinary for everyone.Anyone that would like a copy of any of the recipes let me know and I can send it on to you. They are all easy to make dishes. Some just have a little more prep work.

We enjoyed immensely presenting a small sample of Galas’ heritage and family recipes andsharing with our friends and brothers.

As my family and I are preparing for a trip to Lake Tahoe next week to celebrate anotherwonderful anniversary I have no Lodge event news to share at this time. I do look forward tothe Hiram Award presentation at Woodland 81 this week to Worshipful Paul Haynes. He ismore than deserving of this award as he has been very active, helpful and a brother who isalways there for anything a brother or the lodge may require. I am very happy to know thatbrother Haynes is being recognized and honored this week. I hope many brothers from manylodges will attend and celebrate his achievement.

Next month being October and my turn to prepare dinner I am going to take a little liberty onthe usual Oktoberfest kind of meal. Instead of German sausage I am going to serve some PubGrub. You will dine on Bangers, Mash, Onion Gravy and Peas. As I do not recall Woodlandserving anything like this I like to mix things up a bit and make something new. Bon Apetit.
