We’re going to see quite the unique car collection, plus some great scenery along the road. Hopefully we will have good weather. It should be a fun trip. Board Of Directors Report

Volunteer opportunity – due to a new job and conflicting schedules, our secretary, Mary Chubinski has stepped down. We are in need of volunteer to step forward and become secretary for the club. No experience needed, on the job training. Pay is lousy but the benefits are great! Benefits include being a part of the team of officers and enjoying the company of our Board of Directors and other Activity Chairs. Please call any of the Board members or our Club President to apply and be immediately accepted into the position.

NOTE: The proposed Amendments to the Constitution and By-Laws passed by the membership vote in November. Labels have been created that you can place in your 2012 membership Directory. Bring the Directory to the membership meeting and request the labels.

A Reminder: the Board Meetings are open to all Club members. If you have suggestions for the club, please join the Board Members at one of the meetings.

Fifth Annual 28th Street Metro Cruise®REPORT

Saturday, August 24th

On August 24, 2013, an extraordinarily beautiful day, just the right temperature with a gentle breeze, 20 antique cars and 43 club members and their friends gathered to enjoy a parade of beautiful old and modified vehicles at the annual Metro Cruise. Joining us were six members of the Christian Rodders Club. We gathered at the parking lot of the Christian Reformed Church denominational building. This is an excellent location, providing a prime place to display our cars and a shady lawn area to sit and visit together and watch all the vehicles going by. Members and their cars began arriving about 10:00 am. During the morning, canopies were put up, folks and cars continued to arrive. One small crisis occurred, however. The first two ladies who went to use the porta-jons came back to report that there was no toilet paper in them. Good thing Meijers was nearby. One of our honorable male members was dispatched to Meijers and soon returned with the necessary item and the porta-jons were amply stocked. At noon, a delicious potluck lunch was enjoyed by all. The rest of the day included lots of interaction among members and friends and everyone enjoying the exhibition taking place on 28th St. Many people driving along 28th St saw our cars, pulled in, parked their car and got out to walk around our attractive and interesting cars for a closer look

OCTOBER RecipesBeef Tips and Vegetables

¼ lb. beef boneless tip steak – cut into ½ inch cubes 1 Tbsp. stir-fry sauce w/ garlic & ginger1 bag (12 oz) frozen Asian Medley (fresh steamers) ½ cup uncooked instant white rice2 tsp. water ½ cup waterHeat 10 inch skillet over med-high heat. Cook beef in skillet about 2 minutes, stirring frequently, until brown. Stir in vegetables & 2 tsp water. Cook 1 minute, stirring frequently. Stir in stir-fry sauce until well mixed; reduce heat to medium. Cover and cook 2 – 3 minutes, stirring frequently, until vegetables are crisp-tender. Meanwhile, cook rice in water as directed on package. Serve beef mixture over rice.

Blueberry-Peach Fruit Salad w/Thyme

4 peaches ¼ cup lemon juice4 nectarines 1 tsp. lemon zest1 cup blueberries ½ cup water2 tsp. fresh, chopped Thyme ¼ cup sugar (if fruit is sweet enough – you might skip this)1 tsp. grated gingerPlace water & sugar in saucepot and bring to boil and reduce liquid by half into a simple syrup. Allow to cool.Chop peaches & nectarines, place in a bowl with blueberries. Pour over the cooled simple syrup. Add thyme, lemon juice, lemon zest, and ginger. Blend well. Cover with plastic wrap and place in fridge. Allow to macerate for one hour. Serve.

Quick Crescent Pecan Pie Bars 1 (8 oz) refrigerated crescent rolls (or Recipe creations) Filling:½ cup chopped pecans 1 Tbsp. Butter, melted½ cup sugar ½ tsp. vanilla½ cup corn syrup 1 egg, beaten Heat oven to 350^.  For rolls – unroll dough; separate dough into 2 long rectangles. (for recipe creations; unroll dough, cut into 2 long rectangles).   Firmly press perforations to seal.   Place in ungreased 13x9 inch pan; press over bottom and ½ inch up sides to form crust.  Bake 8 minutes.  Meanwhile, in medium bowl, mix filling ingredients.  Pour filling over partially baked crust.  Bake 18 to 22 minutes longer or until golden brown.   Cool completely, about 1 hour.  For bars, cut into 6 rows by 4 rows.  Store at room temperature.
