A note from environmental services ... The Greek American Rehabilitation and Care Centre was founded on the basis of providing “Quality Care With Genuine Hospitality” and is honored and privileged to care for your loved one. Currently over 90% of our residents rely on the facility to launder the clothing therefore it is crucial that all cloth-ing is given to the receptionist for labeling immediately upon being brought to the facility and prior to giving it to the resident. All clothing must be labeled by the facility, regardless if the clothing is being laundered by the family or facility. Please do not leave items to be labeled at the nursing station or in the resident room. Once the clothing has been labeled the laundry staff will deliver it to the resident room. If the family wishes to do the laundry please provide a hamper to put the soiled clothing in and also inform social services in order to have a “family will do laundry” sign placed. Also, we would like to remind you that residents rooms are furnished with a limited amount of space for storage of clothing so we ask that the family rotates clothing that is appropriate based on the season. In addition, food brought into the facility for a resident must conform to the residents prescribed diet and must be stored in a secure container (ex: Tupper wear). The container of food must be labeled and dated with the residents name and date that the food was prepared and/or opened. If you choose to bring food into the facility, please make an extra effort to inspect your loved ones draw-ers and food contents to ensure that the food continues to be safe for consumption and properly stored. A NOTE FROM SOCIAL SERVICE ..
ADVANCE DIRECTIVES – POAHC/POLST
A Durable Power of Attorney for Healthcare (POAHC) is a legal document which provides authorization for someone you have named to act on your behalf with respect to health care decisions. The Durable Power of Attorney for Healthcare can be created by our Social Services Department here at the GARCC. The document is very basic in that it simply names your agent and what life-sustaining treatment you
would like i.e. DNR. In conjunction with a POAHC, it is recommended that a Practioner’s Order for Life- Sustaining Treatment or POLST form is also created. POAHC and POLST are called Advance Directives which are written instructions stating how you wish your medical decisions to be made if you become unable to make decisions for yourself. A Surrogate Decision Maker form can also be created for those who do not have a POAHC and who are unable to make decisions related to their diagnoses. To create a POAHC, POLST or Surrogate form, please feel free to contact your Social Services Department at the GARCC. Therapy Corner
Living with Low Vision
As we age, our eyesight changes in many ways. Many people are able to manage the changes
with new glasses. But some visual changes, including those due to glaucoma, macular degenera-
tion and cataracts cannot be corrected with a pair of glasses. People with these types of problems
have “low vision” and are at higher risk for falls and other medical problems. Physical and occu-
pational therapists can teach compensations for low vision to help people manage their daily
tasks safely. Here are 4 ideas to help an individual with low vision:
Lighting and Glare
Consider the everyday activities you perform in each room of your home, and then decide if
you need additional or different lighting in each space.
It is not recommended that you create additional illumination by simply placing a higher-
wattage bulb into an existing light fixture or lamp because it can cause vision-reducing
glare.
A physical or occupational therapist can help you to evaluate the different types and sources
of light within your home. The therapist can also help to identify if glare is impacting
your vision.
Modifying Size of Print/Objects
Modify the size of the object with either large print products or use of Optical devices, such
as magnifiers or readers
Enhancing Contrast
Use of different colors can be used to enhance independence, safety, and accessibility
Increasing the contrast between an object and its background will generally make the object
more visible.
Modifying the Task
There are many strategies for maximizing your independence. Therapists can assist in you
in identifying modifications to the tasks that are causing you problems.

A note from food Service...
Greetings!! From the Kitchen. November ushers in colder weather, and the beginning of the
Holiday Season. This month we are featuring a Holiday Dessert Recipe.
Baked Alaska – Recipe – Courtesy of Alton Brown
Ingredients
1 ½ quarts Neapolitan ice cream, softened
9 by 5 by ½-inch piece chiffon cake
8 oz. sugar
2 oz. water
4 oz. pasteurized egg whites, room temperature
½ teaspoon vanilla extract
Pinch kosher salt
Directions
Line a 9 by 5-inch loaf pan with plastic wrap.
Place the softened ice cream into the loaf pan and spread evenly.
Place the piece of cake on top of the ice cream, press down lightly, and place
the pan in the freezer for 1 hour.
After an hour, combine the sugar, corn syrup, and water in a 2 quart saucepan
and place over high heat. Stir just until the sugar dissolves, about 5 minutes.
Clip on a candy thermometer and bring the mixture to 240 degrees F. While
the syrup is cooking, place the egg whites, salt, and vanilla into the bowl of a
stand mixer and, using the whisk attachment, whisk the eggs on high speed
until the reach medium peaks, 4 to 5 minutes.
When the sugar syrup reaches 240 degrees F, remove from the heat and, with
the stand mixer on low speed, slowly and carefully pour the syrup in a thin
steady stream into the egg white mixture, being careful not to come in contact
with the whisk. Once all the syrup has been added, increase the mixer speed to high and
whisk until stiff peaks are formed and the mixture has cooled 8 to 10 minutes.
Remove the loaf pan from the freezer, turn upside down onto a heatproof serving platter,
and remove the plastic wrap. Completely cover the ice cream cake combo with a 1-inch lay-
er of meringue all around, sealing the meringue to the pan around the bottom edge.
Use a propane torch to brown the meringue all over. Serve immediately.

Have you ever wondered to yourself how you can make a positive impact on another person’s life? Well, becoming a volunteer
can be a very rewarding experience.
Here at the Greek American Rehabilitation and Care Centre we are always look-ing for friendly, outgoing and compassionate individuals to lend a
helping hand. There are many ways you can be of assistance such as, visiting with the Residents, providing additional support during activities, assisting with special projects or events, helping provide clerical assistance or even
volunteering in our gift shop.
To begin your volunteering experience today visit our website at www.garcc.org and complete the volunteer
application or feel free to stop in and pick an application up near our first floor reception area.
All activities are subject to change. All changes will be posted on the large Life Enrichment Calendar on each floor.
