So aS if telling you which bike to buy waSn’t bold enough laSt iSSue, thiS iSSue i Shall tell you where to ride.If you have a fast and light bike with minimal suspension then that’s easy, explore the basin on the Queenstown Trails Trust inspired trails. There’s over a hundred kilometres of groomed “piste” to satisfy your needs. Pick sections and spend the summer networking all the different ways to join it up, or how to join up the café and vineyard options. I personally like the ride out to Jacks Point to earn great coffee. Downhill bike? Apart from the obvious Gondola, it’s fun exploring beyond the Bike Park too. Tick off the Wynyard Express, the famous Zoot Track (easy shuttle), Skippers Pack Track, Rude Rock or the Remarks track (can be harsh on the vehicle!) or even walk your bike up Coronet Peak and session a few sections with your mates. There are jump parks for little bikes (Gorge-ous Road jumps) and larger scale jump parks for most other bikes (Mini Dream and its surrounds). For people with reasonable skills and a “do it all” bike (and attitude),

make sure you head out to 7 Mile Bike Park to sample a good plethora of fun single tracks. A good way to hit up 7 Mile if you like it a little more technical and busy is to start at the Queenstown end, head up Gold Digger (parallel to Moke Lake road), return the same way, cross the road and into the BOB trail off the end of the car park and empty your energy levels in the Bike Park. Leave enough to get back to your car or town though. If you like that remote feel the Moonlight Track is hard to beat. Start at the Arthurs Point end so you’re fresh for all the single track, don’t forget to pick up the Gold Digger Trail at the far end. It’s the closest back country feel to central Queenstown. We are fortunate to have the “in-form” Queenstown Mountain Bike Club, who help pull people and their ideas together and coordinate various groups to produce an array of options for the single track hounds. The French don’t like spiced rum. At least that was the conclusion I reached after a recent trip to Vanuatu. Thankfully, the ni-Vanuatu don’t share the English affinity for beer, instead they inherited the colonialist French genomes for booze, resulting in small market shops being filled with nice wine and white French-Caribbean Rhum Blanc. I brought a bottle home and spiced it myself doing it this way: 1. Buy a bottle of white rum. 2. Go to Med Mart and buy the following spices: 1 whole nutmeg, 1 cinnamon stick broken into pieces, 1 vanilla bean split lengthwise, 2 whole cloves, 1 cardamom pod, 4 black peppercorns, 1 star anise, 1 large navel orange.

3. Save $: Steal the nutmeg and cardamom from a rich spice-hoarding friend. 4. Throw spices into a dry frying pan (med heat) for 2 minutes or until it smells awesome. 5. Zest the orange peel with no “white” stuff 6. Throw it all in a coffee grinder for 2-3 spins 7. Mix it all in a mason jar with the rum and let it sit for 24-48 hours 8. The hardest part is filtering. You can use 2 layers of cheese cloth and a funnel or a coffee plunger after you removed the big bits. 9. Drink it. Or let it sit with vanilla for later. They just look better.2. choose a firm fabric – your tie will be less floppy and much easier

to tie. (My ties in the main are from the New Zealand manufacturer rixon Groove, or Tommy hilfiger from the united States.)

3. Tying a bow tie can be tricky, but becomes easy as you get the hang of it. It is really no different from tying shoe laces. There are many good instructional videos available on youTube.

4 Pick colours that complement the shirts and suits you wear. Because the tie area is smaller than an ordinary tie, you can afford to be a little bolder in your colour choices. Generally speaking, you cannot go wrong with stripes and polka dots.

5. avoid single colours – they look too much like adapted evening wear.6. Make sure your bow tie is not too thin or narrow, otherwise you will

end up looking like a cheap nightclub entertainer.7. In general, your tie width should be about the width of your collar.8. Go for a tie with a straight edge, rather than a pointed one. It looks

more authentic.9. Do not go for other adornments like a pocket handkerchief – they can

look too fussy and preppy. however, braces are okay and can add to the style.

unfortunately, the millennium bug seemed to give pub landlords a mental virus which caused them to make a big deal out of what really should just another night on the turps. all of a sudden it became what oliver reed called “amateurs’ night”, an evening for those who need to be told how to have fun. and for Queenstown, seemingly half the population of southland. we must count ourselves lucky this year - the weekdays fall in such a way that we shouldn’t see the first mullets and dental catastrophes crossing the kawarau until December 30th. a veritable christmas present in itself. of course, no one wants to be a sad-sack. after all, it is nice to be around friends. but so often the DIy aspect gets overlooked. It’s easy. your usual $11 pinot? make it a $30 one. sack off the supermarket; head down the deli. you earned it! hustle and bustle of town? bugger that. enjoy the fireworks from the balcony with friends you love. hug with affection, look friends in the eye and shake hands with conviction - and promise yourself that you’re going to make 2014 *even better* than 2013. cheers!

a creative frontierIS IT A GALLeRY? IS IT An oFFICe? SHouLD I Go In oR JuST Look In THe wInDow? wHAT’S THIS FRonT RooM THInG ALL ABouT AnYwAY?Don’t worry you’re not the first to ask. The Front Room is a ‘small creative gallery space populated by local artists and photographers’. That’s what the guys at Fluid will tell you if you ask. Fluid is a Queenstown creative agency set up in 1999, fortunate enough to have street frontage and some spare floor space available for the local creative community to use as a meeting space, gallery and exhibition area. Since moving to the Memorial Street site in 2011, Fluid has developed the Front Room into a semi-permanent exhibition space and holds regular creative film nights, speaker sessions and collaborative events. WHAT IS BEER? Technically speaking it is a fermented drink that is lager or ale dependant on the yeast used. Some of the beers our big breweries sell to us as ales are in fact lagers but that’s another story. It is made from four basic ingredients… water, barley, yeast and hops.Recent times have seen the rise of flavouring additions or adjuncts to beer. This is nothing new and in many countries it has been an accepted practice for centuries. The Belgian Lambics involve immersing whole fruit into casks of aged beer allowing the fruit to impart flavour, aroma and colour to the beer. Traditional fruit lambics are Kriek made with cherries and Framboise made from raspberries. Recent additions have included peach and plum just to annoy the traditionalists! These styles are available in NZ and are worth sourcing just for their uniqueness. Several New Zealand brewers are using adjuncts to palate-blowing effect. Another style not familiar to many New Zealanders is Smoked Beers… yep gotta love that two in one feeling aye…but alas, no, not as you think. Again this style is nothing new and goes back to the 1st century BC but with the recent worldwide resurgence in craft brewing we are seeing it appear on

the radar once again. These are reminiscent of smoky Scotches because the malt is kilned over an open fire. Two of my favourites in our fair green land are from a couple of our most talented brewers. Big Smoke from SorenEriksen’s 8 Wired Brewing Company is a Smoked Porter so it pours a lovely dark red/almost black colour and gives off a wonderful dark roasted chocolate flavour wrapped

in a cocoon of smokiness. Absolutely superb with smoked chilli mussels. Another to check out is brewed by the Yeastie Boys, a couple of guys who have earned a solid reputation for brewing style bending beers. Rex Attitude is the first beer in the world to be brewed with 100% peat smoked malt. The smell is like dirty old hospital bandages in that iodine sense but the layers of flavour that unravel as you taste it are a thing of beauty.I would to love sit in front of a roaring open fire (reminds me of a bar or two in QT) with a glass of Laphroig in one hand, Rex Attitude in the other and a big fat... cigar. This is the perfect bottle to share and watch the faces people pull when they sniff it…Ian Marriot is our Beer editor and one of our original Source writers. He now runs a wicked little craft beer bar in warkworth called Tahi. If you’re up north, call in and say hi.

250g butter, chopped250g good-quality dark chocolate, chopped, 3 eggs1 cup firmly-packed brown sugar3/4 cup plain flour, sifted1/4 cup self-raising flour, sifted1 cup frozen raspberries1/2 cup white chocolate bitsicing sugar to serve

Preheat oven to 170°C. Lightly grease a 4cm-deep, 27cm x 17cm pan. Line with baking paper, allowing a 2cm overhang at both ends. Place butter and dark chocolate in a microwave-safe bowl. Microwave on medium-high

for 2 to 3 minutes, stirring every minute with a metal spoon until smooth and melted. Set aside to cool. Beat eggs and sugar until light and fluffy. Add chocolate mixture. Beat to combine. Fold in flours. Pour half into pan. Sprinkle with raspberries and white chocolate. Pour over remaining mixture. Bake for 35 minutes or until just firm to touch. Allow to cool completely in pan. Refrigerate for 4 hours or until firm. Cut into squares and dust with icing sugar.

THE SOuRCE WANTED TO KNOW AND ON A FRANTIC NIGHT OF SKILL, PROWESS AND SKuLDuGGERY WE HELD THE SOuRCE SHAKEDOWN AND FOuND THE ANSWER WE WERE LOOKING FOR. WE TOOK ONE REP FROM THE MOST REPuTABLE WATERING HOLES IN TOWN AND SET THEM AGAINST EACH OTHER IN A SERIES OF CHALLENGES TO SEE WHO REALLY WAS THE BAR STAR OF THE YEAR.Challenges included running up the Brecon Street steps with a tray of glasses (while wearing high heels), a hot lap of Steamer Wharf on a mountain bike (built for a 5 year old). Pouring the perfect Guiness (into a wine glass), blind beer tasting, pole dancing, horizontal bungy stretching, nearly impossible trivia and some cocktail making too.

s: The theme of The source this month is Creation - is the song writing process something that’s calculated and planned, do you wake up and say “today I’m going to write a song” or is it something more organic?a: good question! my attitude to this has changed over the years and by all accounts this process is different for everyone. nowadays I’m a big believer in the great thomas edison quote - “genius is 1% inspiration, 99% perspiration”. for a long time I would just sit and wait for the golden gates to open and the creative spirit to rain down upon my frustrated hori consciousness and endow me with the genius that I thought I deserved in order to write the greatest song in the world that no-one cared about! I think waiting

around for inspiration is an excuse some musicians have to justify that fact that they are just useless and probably too stoned! these days I write every day and 99% of what I write is shithouse but some days there’s 1% of something that’s enough to set me off in the right direction. It’s worth it.s: When you guys play live there’s a big energy exchange with the crowd - how does that energy change when you are in a crammed little club versus a festival with a field of people?a: perspective is indeed everything when you’re going from big festival stages to a small club stage! I used to think the big festivals required everything on stage to be 100 times louder and everything had to be 100 times more physical! It can be there’s 10,000 people out there

tonight you have to be 10,000 times more awesome! what I’ve learnt is no matter where the performance is you will never lose if you give yourself 100% to the music first. serve the music first, everything else is secondary, within that you’ll have good and bad gigs but you’ll never lose.s: your live show feels like it has a huge amount of improvisation - do your songs have ‘definitive’ versions or are they always evolving?a: this whole hori thing of mine was started by me booking a gig, asking a bunch of mates to show up and then hoping for the best! I started this so I could always have a musical place that I could go to that was like going on a music holiday with my friends! I’ve tried my best to avoid turning this into

the ‘thing’ it now is and now I’ve given myself over to what it’s evolved into. this ahoribuzz thing never had an audience which is what I loved about it most as it was a place that a group of people could go to and try and challenge their own musical boundaries. now it does have an audience and I’m grateful for that. people come for a good time, now it’s all about trying to slay a different musical beast every night. It’s fun! s: What are you looking forward to for your summerlands gig? a: as a muso 99% of the job is to create a vibe and if there’s a vibe already there then our job becomes more fun-filled than it already is!
