ITS TURKEY TIME Dear Southeast Missouri State Community, Here we are in November and over half way through the semester. So far we’ve had an eventful Fall here in dining services, and we look forward to many more of both the university and dining events, as well as the upcoming holidays. The past month was filled with so many fun and successful events. Everything from the Copper Dome and Homecoming to the Halloween themed meals at Towers and the UC. This month we’re looking forward to more fun events, including Cooking 101 with Laura, Thanksgiving themed premium meals at Towers & River Campus and Dining with the Directors. Cynthia, Mary, Emma and Candy all work in the UC at the Redhawks Market. Cynthia and Mary have been associates at Southeast for 15 years while Candy

has been with us for 19 years and Emma a staggering 36 years. All four of these ladies are dependable, loyal, gentle-hearted and all around wonderful women.

All four YouFirst associates are dedicated in their roles and always are available to help anyone in need rather if it’s another coworker or if it is a student.

Cynthia, Mary, Emma and Candy are all an integral part of our team and we are very fortunate to have all four of these ladies. They always motivate those

around them and help put smiles on other associates and student’s faces. Their passion for their job is seen everyday through their hard work while displaying

contagious smiles and laughter

All four associates were recently recognized and interviewed for the Southeast newsletter The Arrow. The student body had such a large request to get to

know each of their stories. Our team was so proud to read the article and see Chartwells represented by four outstanding and sensational women.

We are proud to nominate Cynthia, Mary, Emma and Candy as our YouFirst Team Star Associates of the Month.

Associate of the Month

Cassie Jordan Cassie is the catering supervisor and has been with Chartwells since 2012. She has her bachelor’s degree

in Hospitality & Restaurant Administration from Southeast Missouri State University.

Cassie is an excellent member of our catering team. She is dedicated to making each event as unique as the group it is for, and provides YouFirst service at all times. She has gone above and beyond for our guests and her co-workers, and continually proves that she is

driven to improve herself and those around here.

We are proud to nominate Cassie as our Star Associate of the month.

National Cereal Day It’s National Cereal Day! Cereal is the most popular breakfast food

in America, but that wasn’t always the case. Up until the 1860s, most people ate eggs, bacon, and sausage every morning. Cereal emerged as a

healthier alternative at the end of the 19th century.The invention of one of the most famous brands of cereal was an

accident. In 1877, two brothers named John Harvey Kellogg and Will Keith Kellogg were experimenting with food made with boiled wheat. They left a batch out overnight and returned to find it stale. Instead of

throwing it away, they rolled it out and discovered that each wheat berry formed its own flake. They tried the same process with corn, and created the first dry breakfast cereal, which we now know as Kellogg’s Corn Flakes!

Today, 49% of Americans start their day with a bowl of cereal.

Wholegrain cereals are an excellent source of fiber, iron, and B vitamins. Celebrate National Cereal Day on March 7th with a bowlful of your favorite brand!

Balanced U: Brain Boosters

To help your brain to operate at peak performance it is important to fuel it with the right types of foods. Food can play a major role in how well we comprehend, retain, and recall information. Although there is no one food that claims to increase concentration or build memory, eating a balanced diet can help enhance learning and maximize brain function. Brains use a lot of energy and need a constant supply of fuel. Water and fats also play critical roles by providing the insulation and fluid needed to conduct signals between nerve endings. To help incorporate all of these essential elements in your diet here are some tips to follow and foods to include:

• Make half of your plate fruits and vegetables. Dark colored fruits and veggies are important because they contain antioxidants. These compounds help keep your brain in top form by fighting off free radicals that can damage brain cells.

• Make half of your grains whole. Whole grains are digested more slowly than refined grains thus providing your brain a steady energy supply rather than a sudden gush.

• Vary your proteins to include fish and nuts. These provide Omega-3 fatty acids that are good for your heart and your brain. These good fats provide protection for nerve endings in your brain and allow you to connect your thoughts more effectively.

• Stay hydrated. Our brains contain a lot of water. Even being just slightly dehydrated can cloud our thoughts and interfere with comprehension.

Balanced BiteEnjoy your favorite holiday foods and treats, but limit your portion size. By eating smaller portions you can savor each bite and your pants will still fit on New Year’s Eve!

Turkey Waldorf Salad

Ingredients: 2 cups of turkey meat 1 apple, crisp 2 stalks celery 1 cup grapes, red seedless 1 tsp honey 2 tbsp lite mayonnaise 1 pinch black pepper 1/4 tsp salt 1/2 cup pecans 1/2 cup non-fat yogurt

Preparation: In a large bowl, toss the turkey, celery, apple, grapes and pecans until combined. In a small bowl, whisk together the yogurt, mayonnaise, honey, salt and pepper. Add the dressing to the turkey mixture, then season with a little more salt and pepper if needed or to taste. Toss gently to evenly dress the salad. Serve with your leftovers from Turkey Day.

Yields 4-6 servings

Building Healthy Holiday HabitsWhat’s holding you back this holiday season? Rather treats at holiday parties are calling your name, you are exercising less due to cold weather, or those gingerbread men are too good to have just one; stay in control this holiday season! The good news is that the holidays don’t have to mean weight gain. By focusing on a balance of food, activity, and fun, you can enjoy your friends and family without creating excess fat! Here are a few tips to help:

· Take the focus off food. Turn cookie and candy making time into non-edible craft time like wreath decorating or making Christmas ornaments.

· Plan time for exercise. Exercising will help relieve holiday stress, take your mind of what is in the cookie jar, and help to keep you from over-eating. It can be as simple as calling a friend and asking them to go on walk.

· Don’t skip meals. When you skip meals, you are more likely to overindulge at your holiday gathering rather than save any calories. Try eating a light snack of raw carrots or a piece of fruit before going to a party.

· Eat until you are satisfied, not stuffed. A great trick is to fill and eat your plate but wait 20 minutes before getting seconds. This allows your body enough time to tell your brain you are full.

· Practice Healthy Holiday Cooking. Preparing favorite dishes lower in fat and calories will help promote healthy holiday eating. Try using margarine instead of butter and reduced sodium broth. Instead of using a whole egg, try to use two egg whites to cut down on cholesterol. Add in more vegetables as these little gems are packed with nutrients but add few calories to dishes.
