Previously, in Unit 1, we learnt that food comes from nature. They can be of animal, plant or mineral origin.

Food can be also classified according to their treatment,

that is to say, if they are natural and fresh or manufactured, which means that they have been modified in a factory.

Whether they are natural or manufactured, we can eat them both

straight the way they are, or cooked. If we buy them already cooked, they are called pre-cooked food. If we cook them at home, we call them homemade dishes or recipes.

They are not modified in a factory.

They do not need labels because their

nutritional properties are always the

same.

Examples: fresh meat, fresh fish,

eggs, vegetables, fruits...

Modification of food

Manufactured food:

Natural and fresh food:

They have been modified in a factory.

They need to be packed or stored in a

container.

They need labels that show the

ingredients.

Examples: cookies, pastries, candies,

yogurts, sausages, snacks, juices,

breads, preserves, etc.

Homemade dishes and recipes:

When we cook at home, the meals

are called “dishes” or “recipes”.

It is healthier to cook ourselves

than buying pre-cooked food.

Advantages of cooking at home:

o We eat those food right away.

o We always know which

ingredients we are using and

we do not use substances that

are not naturally in food

(called additives).

o We use less salt, less sugar

and less fat (oil or butter).

They have been cooked,

packaged, labelled in a

factory and they have been

put on sale. This means that

they are almost ready to eat.

For example: frozen

croquettes, frozen pizzas,

legumes cans...

Modification of food

Pre-cooked food:

Let's do an exercise in which you must look at every food that we present.

You can also read the name of each food.

You must mark with an X each food you think can be eaten raw.

Then you should also mark in the second column with an X, if you think it can be eaten cooked, or it should be eaten cooked

Let’s check that you learnt it

Tomatoes

Fish

Eggs

Now let's do another exercise for a better understanding of how some food are produced in the factory.

Specifically, we will observe how bread is made.

You have to match the drawing with the phrase that explains what is happening. You can use narrows.

Let’s check that you learnt it

We make the shape of a loaf

of bread.

We prepare the ingredients

of bread on the worktable

Mix and knead bread

ingredients with your hands

We sell the loaf of bread to a

customer

We put the loaves in the oven

We take the bread from the

oven and baked. Be careful

because it is very hot.

Now let's do the same exercise but with the processing of milk.

We will notice that the obtaining of milk is more complicated

than the production of bread, but we will also learn where the milk comes from and how it gets to us. You have to match the drawing with the phrase that explains what

is happening. You can use narrows.

Let’s check that you learnt it

The milkman waits for a

tanker to come and collect his

milk.

The deliveryman takes the

packaged milk from the

factory.

The milkman milks the cow

every morning.

The mother and the girl go to

the store to buy milk.

The mother and the girl have

a big glass of milk for

breakfast

The deliveryman takes the

milk bottles to the store.

In this exercise we will see how to cook food. Also, where it comes from.

We are going to learn the whole story of some fried eggs,

from the beginning. Remember to use as little oil as possible when frying.

You have to match the drawing with the phrase that explains what is happening. You can use narrows.

Let’s check that you learnt it

The farmer collects the eggs

from the coop.

The farmer fries eggs in a

pan with hot oil.

The chickens live in a hen

house.

The chickens lays eggs inside

the hen house.

The farmer keeps fresh eggs

in the fridge.

The farmer and her husband

eat fried eggs.

Whether we buy fresh food or manufactured, we need to know how to store them at home so they do not spoil/go

off.

The same applies to the dishes after cooking them. So let's learn how to preserve food.

There are three ways to keep food at home:

Everything that has reached its expiration date

must be thrown away!

The preservation of food

IN THE PANTRY IN THE FRIDGE IN THE FREEZER

The food that are not cold in the store can be stored in the pantry or closet.

The food that are cold in the store must be placed in the refrigerator. Also, we put the food that we want to keep cold in the fridge.

The food that are frozen in the store must be placed in the freezer

Page 9: The modification of food - HealthyDS · The preservation of food IN THE PANTRY IN THE FRIDGE IN THE FREEZER The food that are not cold in the store can be stored in the pantry or

THE LOREM IPSUMS OTOÑO 2016

9

Imagine that you go shopping to the supermarket, and now at home, you have to put things in the best place to be correctly preserved.

Use narrows to indicate where you would keep the food

in. If you believe that any food can be stored in more than one site, you can use two arrows.

Let's consider several aspects:

ON THE TOP

The cooked dishes are always placed above

everything else in order to avoid pieces of raw

food falling on them.

We must keep the cooked dishes covered and

closed.

IN THE MIDDLE OF THE FRIDGE

There should be two shelves in the middle:

- One for keeping dairy (yogurt and

cheese), or sausages (ham, chopped

meat).

- The other one for meat and fish.

• It is a very cold part of the fridge and

preserves these food appropriately.

IN THE BOTTOM DRAWERS:

The fruit and vegetables that we want to

put in the fridge.

Drawers help them to be cold but not too

cold.

IN THE REFRIGERATOR DOOR

It is for drinks that we want to cool down.

Also for bottles of liquids that we have already

opened: juice, milk…

In addition it will keep open sauces, open

jam, butter, margarine, etc.

How do we order the refrigerator?

We have learned where to place the different types of food (pantry, fridge or freezer) as well as the order in which they are stored in the refrigerator. Now we will

learn to store the food properly, that is to say, well wrapped and well packed so it does not spoil. In addition, we need to know that you have to throw away all the food that are damaged.

How do we store the food?

Cooked (leftovers)

• In a covered container or a container covered with plastic wrap.

Open cans and canned (tomato sauce

, tuna ... )

• The content of the can should be taken out and stored in a covered container. And throw away the can.

Containers with lids or caps (bottles,

cartons...) .

• With its own lid or cap. Make sure it is properly closed.

Eggs

• In its own packaging.)

Cheeses and sausages

• Wrapped in plastic wrap or the original package from the shop.

Meat and fresh fish

• Wrapped in plastic wrap or the original package from the shop. Also, they should be stored on a plate or tray in order to avoid liquid dripping.

Fruits and vegetable

• In the bottom drawer and without bags.

Food in the freezer

• In airtight containers or airtight bags but also with a label indicating what it is and when it was saved..

Food in the pantry

• Very tightly closed and in its own container .

In this exercise we will try to find food that are not properly stored in a refrigerator because they are not well

covered. Or they are in good condition and should not be in the fridge.

Circle the food that should not be in the fridge: because they are not well stored or because they are in bad condition.

Let’s check that you learnt it

When we buy food it is important to read some parts of

their packaging and labels. For example:

1. The serving size.

2. The date of expiration or preferred consumption.

3. Ingredients.

4. Nutrients.

1)THE SERVING SIZE: It tells us how much a single serving of that food weighs. For example, in a box of cookies, the individual portion is one cookie. So we can know if a single cookie has a high amount of fat or sugar and decide whether we can eat many or just a few.

2) EXPIRATION DATE OR BEFORE DATE: It tells us until when we can consume that food without any risk for our health (only if we have not had opened it).Once opened, it should be consumed in 3 or 4 days,

especially dairy products and meats.

How do we read the labels?

One serving

size

Every time I

eat that food

Page 15: The modification of food - HealthyDS · The preservation of food IN THE PANTRY IN THE FRIDGE IN THE FREEZER The food that are not cold in the store can be stored in the pantry or

THE LOREM IPSUMS OTOÑO 2016

15

How do we read the labels?

4)THE NUTRIENTS: The industry is obligated to inform us of

the content of nutrients that are harmful to health when they are present in a high proportion. These nutrients are: - Sugar - Fats - Saturated fats - Salt They must also inform us of this per serving of food.

3) THE INGREDIENTS: They inform us of the food that have been used to make that product. The name of these food always appear in order, from highest to lowest amount. You should pay special attention to the products whose first ingredient is sugar, because if it is first one the

ingredients list, that means it could be unhealthy because it has too much sugar.

People with intolerances, allergies or celiac disease should pay special attention to the ingredients for their

own allergy/intolerance.

Let’s check that you learnt it

This exercise is about learning the interpretation of food labels. To do this, we are going to see images of labels and we are going to ask questions about them. You have to answer the questions, paying attention to the image.

Questions:

3) What is the expiration date shown in the picture on the left? ___________

4) What is the before date shown in the picture the picture on the right? ________________________

Did you know that…?

THE FOOD YOU CHOOSE WILL BE HEALTHIER IF YOU GO SHOPPING WITHOUT FEELING HUNGRY There are scientific studies that indicate that to go shopping early in the morning or early afternoon (after breakfast or lunch) helps us make

better food choices for our diet.

IDEAS FOR A HEALTHIER PURCHASE:

BEFORE

• Make a list of what we need.

• Go shopping when not feeling hungry.

• Wear glasses (to read the labels).

DURING THE SHOPPING

• To choose natural food rather than manufactured.

• To choose fresh food rather than cooked.

• We will divide the trolley:

• Half: fruits, vegetables and legumes.

• The other half: meat, fish, eggs, pasta, rice, bread ... and milk.

AFTER

• Check that you have bought everything you need.

• Read the labels.

We have learnt many things, let’s look back and refresh our

memory so we do not forget them.

You have to help us remember. Good Luck!

1. What food has been produced in a factory?

2. Connect the food with the animal it comes from with an arrow. Also

connect the food to the factory if it has been processed in a factory:
