A little bit about us!

Wallers Mildura owned and operated by Pam Conrick for 30 years is a clothing store which focuses on quality products and good old fashioned service. Pam was once a customer of the old Mildura based feed store, often stopping in for horse-feed. One day she went in to buy a hat and enquired as to whether they were interested in selling the business. The rest is history.

SECTION: RD – PRESERVED - DRIED FRUITS continued RD012 Fruit Leather (Kamaradin) Recipe as follows: Try - Apricots, Plums, Pears, Peach-es, Nectarines, Bananas and their mixtures 1. Select ripe, mature fruit and

weigh it. Cut into 6kg (12lb) lots (It doesn't matter if the skin is damaged or blemished)

2. Rinse in clean water to remove dust and dirt.

3. Cut fruit in half and remove the stone (No need to remove skin)

4. Put the fruit through a mincer, mincing up flesh, pulp and skin together

5. Add 10gms of Metabisulphite powder (3 level teaspoons) to the pulp and mix well. If Sulphur free fruit is required, the Sodium Metabisulphite can be omitted, but the slabs will darken rapidly after drying unless stored in the fridge.

6. Spread the pulp on plastic cov-ered drying trays, in strips 15cm wide and 12 - 20mm thick. The pot scraper is useful to straight-en the edges of strips

7. Dry the slabs in the sun for at least one day to develop full color, after that, the drying can be finished in the sun or a well ventilated shady area.

8. After three days the slabs can be removed from the plastic and turned over to hasten the drying.

9. Drying is complete in about a week of fine weather. To make confectionary slabs, add 1/2kg Sugar to the pulp and mix well, Drying may take slightly longer for "plain" slabs

NOTE: All exhibits of Cakes, Scones, and Bread etc. to be sam-pled by the judge. Packet Mixes not permitted, except where stated

Unlimited entries allowed per exhibitor per class, in all Clas-ses

Cooking Hints: Scones: Uniform in shape and colorings. Free from excess flour, particularly on the base. Texture light and fluffy when opened. Cooked set apart.

Biscuits: Daintiness of size and shape, uniform size. Where different varieties are called for, definite flavor and mixing should be used. Should be crisp e.g. snap in half cleanly.

Chocolate Cake: Fine soft mix-ture, blend cocoa with a little warm water and cool before adding to mixture. Add vanilla in the creaming butter and sugar stage. This applies for all butter cake mixtures. This will enable you to get the full flavor and aroma right through the cake. When turning out place a clean tea towel over the cake rack. This will avoid lines on the base.

Cooked Slices: Dainty even shapes. Do not exhibit the outside crusty pieces.

Fruit Cakes: Follow recipes in the Schedule. Add essences with butter and sugar. Bake at least three weeks before exhibiting, allowing cake to get full bloom and aroma.

Boiled Fruit Cake should have nice shiny surface with no cracks and no soggy core.

Tip for all Cakes: Cover wire rack with tea towel to eliminate lines in base of cake

VAS REGULATIONS: 1. An exhibitor having won at a
