THE CULINARY SCHOOL ........

The cookery industry has boomed in the last few years and Britain’s interest in food has undoubtably increased with help from the televised cookery market. From Jamie Oliver’s, “Ministry of Food”, where he tries to get Britain cooking fresh and simple food, to Channel 4’s, “Come Dine With Me”, to the very best amateur chefs competing to clinch the “Masterchef” title.

According to the BBC, “the UK popula-tion is consuming less nutritious, fresh produce and more saturated fats and sugars.” By educating people in the world of cookery, there is little doubt that this statistic would not change.

By providing a culinary school in the bustling “foodie” Ashton Lane in Glasgow’s West End it would attract a host of clientelle from the young student starting out in the cooking world, the tourist; visiting one of Glasgows most famous cobbled streets, to the more refined cook who happens to have been sampling some fine local food and wishes to develop his skills.

The building dates back to around 1885 when the Optical Engineers, Barr and Stroud, occupied it as their workshop. It was around 1904 that the building began its journey into the food world and it is probably best known as the creperie “Cul-de-sac”.

The culinary school on Ashton Lane was to be opened by a Michelin starred chef. I therefore chose to look at the Scottish chef Tom Kitchen and his philosophies which enabled me as a designer to create a form of branding and really develop his concept “from nature to plate” into an interior.

Reception Desk

- Reception desk built fromreclaimed railway sleepers- Long glass vase attatched to the front of the desk with fresh flowers.- Herb wall with starter pots such as basil and rosemary that are available for customers to purchase.

Rows of terracotta pots line the walls with seasonal fruits and vegetables. For example a crop of summer strawberries

Grow Your Own Feature Wall

Light penetrates from the buildings skylightsproviding the perfect warm , sunny environment for plant growing.

Plant growth is enhanced with the use of artificial energy efficient lighting, which, can be left on duringduller periods of the day.

Produce is within reach of picking andcould be used within classes

Retail space within reception

- Stacked cut timber posts, 75x75x600mm provide a base for wooden crates where retail items are stored.- “Grow your own” strawberry wall acts as a focal interest and a retail opportunity.
