Northeastern
• Extremely spicy• Rare fish from rivers• Rice, salads, grilled chicken, larb
(minced pork salad)
Southern Flavor
• Salty, Sour and Hot• Influenced by Chinese and Malay
• Curries coconuts and chilies

Recipe
• 1/3 cup vegetable oil • 3-5 Thai chili pepper, minced • 1 teaspoon sugar • 2 shallots, thinly sliced • 1 lime 1/3cupgreen mango • 2 tablespoons fish sauce • ½ lb catfish • ¼ cup cashew
Crispy catfish green mango salad
Fry fish then add ingredients as stated. Serve’s as an appetizer
