IntroductionEverything is bigger in Texas. Kent and I have heard it since we were children, and we believed it. Researching this cookbook certainly brought that point home, as we quickly discovered that when it comes to cooking in The Lone Star State, there’s more than just beef on the table.
The pleasures of Texas cooking are as big and bountiful as the state itself. From frontier campfire cooking to spicy Tex-Mex fare, old-fashioned cowboy cooking to the German influence of Central Texas, and southeast Texas’ own style of Cajun and Creole cuisine, Texas cooking is diverse... and delicious.
It is our goal to preserve those recipes that have been handed down through generations... favorite recipes from countless family Sunday dinners, recipes that have been cooked on the ranch for years and years, and the recipe your grandmother then your mother then you have made for so many years no one remembers where it actually originated. Some of the best cooks in Texas graciously shared their favorite recipes for this cookbook.
No Texas cookbook would be complete without The Lone Star State’s Big Three—barbecue, chili, and Tex-Mex. Deep-Fried Jalapeños12 whole jalapeños1/2 pound white American cheese, gratedBacon bits2 eggs, lightly beaten1/2 cup milk1/4 teaspoon salt1/8 teaspoon Fiesta Brand® Black Pepper3/4 cup all-purpose flourOil for deep-frying
While wearing gloves, cut tops off jalapeños, scoop out seeds and remove stems. In a bowl, combine cheese and bacon bits. Stuff each jalapeño with ½ to 1 tablespoon cheese and bacon mixture. In a separate bowl, combine eggs and milk. In another bowl, mix salt and pepper with flour. Roll filled jalapeños in flour mixture, then in egg mixture, then again in flour mixture. Deep-fry in hot oil until golden brown. Do not over-cook or cheese will leak out.

Fried Pepper Jack Sticks1 pound pepper jack cheese3 tablespoons flour2 eggs1/4 cup each: water and milk1/2 cup breadcrumbs1/2 cup finely crushed corn chips⅓ cup grated Parmesan cheese1/4 teaspoon Fiesta Brand® Garlic PowderOil for frying
Cut pepper jack cheese into ½-inch x ½-inch strips (about the size of restaurant-style cheese sticks). Coat each piece evenly with flour; set aside. In a shallow bowl, combine eggs, water and milk. In another bowl, combine breadcrumbs, corn chips, Parmesan and garlic powder. Coat cheese sticks in egg mixture then in crumb mixture; repeat the process. Carefully fry in hot oil until golden (30 to 45 seconds). Cook only a few at a time. Rest on a paper towel to drain; serve hot.

Wurstfest Sausage Cheese Balls1 pound spicy (hot) sausage, room temperature1 pound Velveeta cheese, room temperature1 (16-ounce) box Bisquick biscuit mix
Mix ingredients until well blended making sure there are no large pieces of cheese or sausage. After ingredients are well blended, separate into pieces about the size of a large tablespoon. Roll portions in balls until smooth. Bake at 325° about 15 minutes or until slightly brown on bottom.

This fun 10-day festival features a variety of entertainment, food and fun on the Wurstfest Grounds in Landa Park and many special events throughout New Braunfels and Comal County. Bacon-Wrapped Wienies40 hot dogs (wienies)1 pound bacon1 (16-ounce) box light brown sugarToothpicks
Cut hot dogs in half. Cut bacon strips in thirds. Wrap bacon around hot dogs; secure with toothpicks. Combine brown sugar with enough water to make a saucy consistency. Pour over hot dogs and bake at 350° for 1½ hours. Good to take along in a crockpot. Great for a day at the lake!

Beer-Battered Onion Rings1 large Texas 1015, Vidalia or other sweet onion1 (12-ounce) can beer3 cups flour, dividedSea salt
Slice onion into ½-inch-wide rings. Separate rings. Combine beer and 2 cups flour in a gallon zip-close bag mixing well to make a semi-thick paste. (More beer or flour may be added to keep coating consistency.) Dip onion rings into beer batter covering onion well. Gently drop coated onion rings into a Dutch oven or equivalent pot or fryer with at least 3 inches hot oil. When rings turn light brown on 1 side, turn over to brown lightly on other side. Lightly season with sea salt immediately after removing from fryer. Mound onion rings on platter and enjoy (if there are any left from the chefs)!

Salsa1 pound tomatoes, chopped5 green chiles, chopped2 garlic cloves, chopped1 teaspoon salt1 cup water1/2 cup finely chopped onion1/2 cup finely chopped cilantro
Boil first 5 ingredients for 7 minutes. Place in bowl; stir in onion and cilantro. Refrigerate. Serve cold with chips.

Combine everything in a bowl. Refrigerate before serving.
Big Bang Salsa FestJuly • Three Rivers
The Big Bang Salsa Fest celebrates everything salsa including music, food, and dancing. Thenineteen-year-old festival features two stages of continuous music, a salsa-making competition, salsa-eating contest, a bicycle race, and about sixty food and arts and crafts booths. This free event, with children’s area, attracts about 6,000 people.

Salad Shrimp con Queso2 pounds frozen salad shrimp1 small bell pepper, chopped1 jalapeño pepper, seeded and chopped1 small onion, chopped1 teaspoon minced garlic1/2 stick butter2 (10.5-ounce) cans cream of mushroom soup1/2 to 1 soup can milk1 (14.5-ounce) can diced tomatoes2 (1-pound) packages Velveeta cheese, cubed
Rinse shrimp and set aside to completely thaw. In a skillet, sauté bell pepper, jalapeño, onion and garlic in butter. Combine everything, except shrimp, in a large covered pan and cook over low heat until cheese melts. Add shrimp and cook 5 minutes longer. Serve in small bowls with rice and chips on the side or allow to rest to thicken and serve with chips.
Queso Blanco (White Cheese)Asadero is a white cow’s milk cheese of Mexican origin that’s available in braids, balls, or rounds. Asadero, which means “roaster” or “broiler,” has good melting properties and becomes softly stringy when heated—very similar to an unaged Monterey Jack cheese. Asadero is sometimes called Chihuahua or Oaxaca.
11/2 cups finely shredded Monterey Jack or asadero cheese1 can green chiles, undrained1/4 cup half-and-half2 tablespoons finely chopped onion2 teaspoons ground cumin1/2 teaspoon salt1 tablespoon Fiesta Brand® Cilantro
Put all ingredients in a double boiler over medium heat. (Or cook on low in a saucepan.) Cook until cheese is melted and ingredients are well blended, stirring occasionally.

Dried Chipotle Chile DipChipotle (pronounced chih-POHT-lay) chile is actually a dried, smoked jalapeño. It has a wrinkled, dark brown skin and a smoky, sweet, almost chocolaty flavor.
4 chipotle chiles1 (4-ounce) can green chiles1 cup salsa1 cup sour cream
Remove stems and seeds from dried chiles and place in saucepan. Cover with water and bring to a boil. Remove from heat and soak in cooking water until soft. Remove skins (reserve cooking water) and process in a blender or food processor with 1 tablespoon cooking water (add more water, if needed, to make a thin paste). Combine in a bowl with remaining ingredients. Chill and serve.
Chili Dip1 (15-ounce) can chili without beans or 1 cup homemade chili1/2 cup chopped onion2 teaspoons Fiesta Brand® Garlic Powder2 teaspoons Fiesta Brand® Chili Powder3 tablespoons water1 (14.5-ounce) can stewed tomatoes, undrained1 (4-ounce) can green chilesSalt and Fiesta Brand® Black Pepper2 teaspoons hot sauce1/2 cup shredded Monterey Jack cheese1 (8-ounce) package cream cheese, cubed
Combine everything in a saucepan and cook over low heat until heated and well mixed. Serve hot with chips.

Texas Caviar2 (15.5-ounce) cans black-eyed peas, drained1 (14.5-ounce) can diced tomatoes, drained2 jalapeños, seeded and minced1 small onion, diced1/2 yellow bell pepper, finely chopped1/4 cup chopped fresh cilantro6 tablespoons red wine vinegar6 tablespoons olive oil1/2 teaspoon salt1/2 teaspoon Fiesta Brand® Black Pepper1/2 teaspoon Fiesta Brand® Garlic Powder1 teaspoon Fiesta Brand® Oregano11/2 teaspoons ground cumin
Combine everything in a bowl. Refrigerate at least an hour before serving.

Hot Sausage Hoppin’ John Dip1 pound ground hot breakfast sausage1/2 cup finely chopped onion1/2 tablespoon minced garlic1 small red bell pepper, chopped3/4 cup minced cabbage3/4 cup uncooked brown rice2 (14.5-ounce) cans chicken broth2 (15.5-ounce) cans black-eyed peas, drained2 teaspoons hot sauceSalt and Fiesta Brand® Black Pepper to taste
Brown sausage and drain. Stir in onion, garlic and bell pepper. Stir in remaining ingredients. Cover and simmer 20 minutes or until peas and rice are tender and liquid is absorbed. Serve surrounded by crackers and tortillas.
Black-Eyed Pea Dip2 cups cooked black-eyed peas or 1 (16-ounce) can black-eyed peas,
drained1 small onion, chopped1 (14.5-ounce) can diced tomatoes, drained1/2 cup grated sharp Cheddar cheeseDash hot sauceSalt and Fiesta Brand® Black Pepper to taste1 teaspoon Fiesta Brand® Cayenne Pepper
Mash peas slightly but do not cream. Stir in remaining ingredients and mix well. Serve cold or heated.

Guacamole2 ripe avocados, peeled2 tablespoons lime or lemon juice2 tablespoons minced white onion1 jalapeño pepper, seeded and minced1 small tomato, chopped and drained2 tablespoons Fiesta Brand® Cilantro1 small garlic clove, mincedDash Fiesta Brand® Chili Powder1/2 teaspoon saltDash Fiesta Brand® Black Pepper
Mash avocadoes in a bowl. Stir in lime or lemon juice. Add remaining ingredients. Adjust seasonings to taste. Serve immediately.
Layered Avocado Dip1 (16-ounce) can refried beans1 (4-ounce) can green chiles1 (1-ounce) envelope taco seasoning2 avocados, seeded, peeled and mashed1 tablespoon lemon juice2 tablespoons taco sauce1 cup sour cream1 tomato, chopped1 (2.25-ounce) small can sliced black olives1 cup Monterrey Jack cheese
Combine refried beans, chiles and taco seasoning; spread over bottom of a glass baking dish. Combine avocados, lemon juice and taco sauce; spread over bean mixture. Top with sour cream and sprinkle with tomato, olives and cheese. Serve with tortilla chips.

Flour Tortillas2 cups flour1 teaspoon baking powder (for fluffy tortillas)1 teaspoon salt1 tablespoon vegetable shortening3/4 cups water
Combine flour, baking powder and salt. Add shortening and mix by hand until lumps are gone. Add water, a little at a time, kneading until smooth. Form dough into balls about the size of ping-pong balls. Using a rolling pin, or tortilla press, roll each dough ball into about a 6-inch circle. Cook in a hot skillet treated with nonstick spray until set.

Cheddar Pepper Bread21/2 cups flour1 tablespoon baking powder1/4 teaspoon salt3/4 cup milk1/2 cup mayonnaise1 egg, beaten2 cups shredded Cheddar cheese1 small onion, minced2 tablespoons minced jalapeño pepper or canned green chiles
Combine all ingredients and pour into a prepared loaf or cake pan. Bake at 425° for 20 to 25 minutes or until a toothpick inserted near the center comes out clean.
Corn TortillasThe trick to making authentic corn tortillas is using the corn flour known as masa harina (not cornmeal).
2 cups instant corn flour (masa harina)1⅓ cups warm waterDash salt
Combine corn flour, water and salt. Mix into a dough. Add water if too dry, more corn flour if too wet. Form dough into balls about the size of ping-pong balls. Using a rolling pin, or tortilla press, roll each dough ball into about a 6-inch circle. Cook in a hot skillet treated with a nonstick spray until set.
Note: Masa harina is Spanish for “dough flour” and is a corn flour made from dried masa (sun- or fire-dried corn kernels cooked in limewater, soaked in limewater overnight, and ground).

Sweet Potato Bread2 cups packed, cooked and mashed sweet potatoes3 cups sugar1 cup vegetable oil4 large eggs, separated11/2 teaspoons Fiesta Brand® Cinnamon1/2 teaspoon Fiesta Brand® Ground Cloves11/2 teaspoons vanilla extract1 teaspoon Fiesta Brand® Ground Nutmeg1 teaspoon allspice1 teaspoon salt31/2 cups flour2 teaspoons baking soda dissolved in ⅔ cups water11/2 cups nuts (walnuts or pecans)
Mix all ingredients except egg whites and nuts. Beat egg whites until stiff and fold into mixture. Stir in nuts. Bake in greased loaf pan at 350° for 1 hour. Use small loaf pans for gifts during the holidays.

Southern Hushpuppy ChampionshipsFourth Week of September • Lufkin
If you’ve got the secret ingredient to the most delicious hushpuppy recipe, then join us by celebrating and competing in the “deep-fried and delicious” fall culinary event—the Southern Hushpuppy Championships. Hushpuppies come in all shapes, sizes, and flavors and will be judged on taste, originality, and appearance. The competition takes place during the Texas Forest Festival and features all types of teams including family teams, business teams, non-profit organization teams, and teams comprised of children and teenagers. Join us for this fun Southern tradition.

HushpuppiesEvery year, my grandad had a fish fry at our cabin at the lake. Grandad caught the fish and my grandmother made her infamous hushpuppies. All the aunts, uncles, cousins, and close friends were invited. Over the years, the recipe has been adapted but the traditional fish fry remains the same. Even fifty years later, a weekend at the lake is not complete without fresh, fried catfish and grandmother’s hushpuppies. It is just a younger generation grandmother. Every year, my grandad had a fish fry at our cabin at the lake. Grandad caught the fish and my grandmother made her infamous hushpuppies. All the aunts, uncles, cousins and close friends were invited. Over the years, the recipe has been adapted but the traditional fish fry remains the same. Even fifty years later, a weekend at the lake is not complete without fresh fried catfish and grandmother’s hushpuppies. It is just a younger generation grandmother.

Combine everything in a bowl and pour into a prepared baking dish. Bake at 350° for 35 to 40 minutes or until a toothpick inserted in center comes out clean and top is golden.

Black Skillet Cornbread11/4 cups milk1 cup cornmeal1 cup all-purpose flour4 teaspoons baking powder3/4 teaspoon kosher salt2 eggs, beaten1/4 cup pecan oil
Preheat oven to 425°. Place 9-inch cast-iron skillet in oven to warm. Mix milk and cornmeal together in small bowl and let soak 10 minutes. Sift flour, baking powder and salt together in a mixing bowl. Beat cornmeal mixture and eggs into flour mixture until you have a smooth batter, about 1 minute. Remove skillet from oven. Dissolve yeast in lukewarm water. Combine flour, sugar and salt; mix well. Add yeast water; mix well. Add egg and shortening; mix well. Form into a ball and rub with oil. Place in a large bowl, cover with plastic wrap and allow to rise about 2 hours or until doubled in size. Break dough into 12 equal pieces and form into balls. Place on a greased cookie sheet with space between each and allow to rise again. Bake in a preheated 425° oven about 15 minutes or until golden brown.

Ham and Cheese Kolache
Ham and Cheese Filling:1 cup diced ham1/2 cup shredded Swiss cheese1/4 cup grated Parmesan cheese2 tablespoons Dijon mustard
Kolache Dough:3 to 31/2 cups all-purpose flour, divided1/4 cup grated Parmesan cheese1 tablespoon sugar1 envelope fast-rising yeast1 teaspoon salt1 cup plus 1 tablespoon water, divided2 tablespoons butter or margarine1 large egg1 egg white1 tablespoon water
Combine all filling ingredients; mix well. Refrigerate. In a large bowl, combine 1 cup flour, cheese, sugar, undissolved yeast and salt. Heat 1 cup water and butter until very warm (120º to 130º); gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add egg and another 1 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes. Divide dough into 16 equal pieces; shape each into a ball. Cover; let rest 15 minutes. Place balls 2 inches apart on greased baking sheets. Make a deep and wide indentation on each ball by pushing outward toward edge, leaving ½-inch ridge around outside. Fill with ham and cheese filling. Cover and let rise until doubled in size, about 1 hour. Brush surface with a mixture of 1 egg white and 1 tablespoon water. Bake at 375º for 15 minutes or until done. Serve warm.

Sift together flour, baking powder and salt. Cut in shortening with fork until mixture resembles coarse meal. Add milk and mix with fork until flour is moistened and dough pulls away from sides of bowl. Turn out on lightly floured board. Knead and roll ¾ inch thick. Cut with a biscuit cutter, and place on lightly greased pan. Bake at 450° for 12 to 15 minutes.

Combine all ingredients in a small bowl. Drop by teaspoon onto a nonstick cookie sheet. Bake at 450° for 12 to 15 minutes, or until golden brown.

Beat together egg and milk; add remaining ingredients and mix. Add more milk if needed. In a skillet over medium heat, pour 1/4 cup batter onto skillet and cook a few minutes until edges are brown and bubbles form in batter. Flip and cook other side a couple minutes. Serve hot topped with butter, syrup and additional pecans.

Banana Nut WafflesBanana Nut Waffles truly hit the spot for a quick breakfast on the go. You can make this the night before and eat them cold at the lake or heat them up on the barbecue grill along with the syrup.

Combine flour, baking soda, baking powder, sugar and salt in a bowl; set aside. Whisk together eggs, vanilla and milk in a separate bowl. Stir in melted butter and flour mixture until a slightly lumpy batter forms. Add bananas, pecans and cinnamon. Cook in preheated waffle iron until steam stops coming out of the seam, about 2 minutes. Serve with your favorite brand maple syrup (heated).

Combine eggs, milk, creamer, brown sugar and ½ cup pecans in a large bowl. Dip each piece of toast into egg mixture. Cook in a hot skillet until golden brown. Remove from skillet and sprinkle with reserved pecans. Serve hot sprinkled with powdered sugar.

Cut or pinch a hole in center of a piece of sliced bread. Melt several pats butter in heated skillet. Add garlic powder and seasoning salt to butter. Add bread to skillet and turn coating both sides. Crack and place an egg directly in hole in center of bread. When egg is cooked on 1 side, flip bread quickly and carefully. Remove when egg is cooked on other side. The result is a quick flavorful breakfast contained in 1 compact package.

Place potatoes in large boiler with salted water to cover. Bring to boil over high heat. Reduce heat and cook about 20 minutes or until potatoes are just cooked through (do not over-cook). Combine mayonnaise, jalapeño mustard, sour cream, Cajun seasoning, chili powder and sugar in large bowl until well blended. Add warm potatoes; gently stir to coat well. Add tomatoes, bacon and green onions; toss lightly. Chill before serving. Just before serving, gently stir in sunflower seeds, chopped almonds or chopped pecans, if desired.
