champagne as a non-vintage is all about the maisons ‘house style’. the styles vary by their vineyard grape selection, blend, wine making process and dosage. never under estimate the quality of the nv as this is how a champagne house is traditionally judged.

gewürztraminer gewürztraminer gives up gorgeous floral characters with luscious musk, lychee and turkish delight finishes. the majority of good gewürztaminer’s are rich and textural on the palate, but can also be made in a finer style by some producers. this is a wine that is beautifully suited to savoury and subtly spiced foods.

riesling often mistaken as a sweet wine due to australia’s love of germany's mosels in the 70's, riesling is one of the
great aromatic white varieties of the world. riesling can present differently depending on region, age and
winemaking, bone dry, through to beautiful sweeter styles. australia's riesling character trends toward
aromas of citrus and florals with a fresh and dry palate. riesling is wonderfully suited to an array of food
types and is also a perfect aperitif.

assyrtiko assirtiko is one of greece's signature white wine grape varieties, used for both dry and sweet wine. it
reaches its peak on the island of santorini, where it was first planted. it yields a bone-dry, steely wine that
has deliciously concentrated citrus aromas mixed with an earthy, mineral aftertaste. assyrtiko is the ideal
complement to delicate dishes, fish, seafood and, surprisingly, even grilled meats

marlborough, new zealand. popular due to its tropical fruit freshness and easy drinking style, sauvignon
blanc is traditionally made as an unwooded wine and best consumed young. some of the more premium
wines use partial barrel fermentation to offer greater complexity, flavour and richness. sauvignon blanc

quality wines come from the margaret river (wa). many of the worlds great dessert wines are made from

tignanello “this was the first sangiovese to be aged in barriques, the first red wine to be blended with non-traditional varieties (like cabernet) and one of the first chianti reds not to use white grapes. tignanello is a milestone. it is made from a selection of sangiovese, cabernet sauvignon and cabernet franc. the wine is aged in barriques for about 12 months and for a further 12 months in the bottles.
the wine shows an intense nose of red fruit along with hints of sweet spices and underbrush. on the palate, the flavors are fresh and vibrant with supple and balanced tannins. the finish and aftertaste are long and sustained.”

barolo and barbaresco notwithstanding the fact that both wines are produced with 100% nebbiolo, in neighboring areas less than 10 miles apart, there is still a distinct difference between the two. barbaresco ripens earlier than barolo, giving it a shorter maceration time, allowing it to be ready to drink earlier. however, this means it does not age as well. barolo takes a little longer to be drinkable but will age long into the future.

shiraz + syrah & blends these are still australia's most popular red wines. the rich, ripe and intense characters of barossa, mclaren vale, heathcote and the hunter valley are still driving these wines. in recent years however those wanting wines of more subtlety, spice and finesse are enjoying the cooler climate exponents from the margaret river, pemberton, adelaide hills and hawkes bay to name a few. although shiraz and syrah mean the same, some producers are using the word syrah to express their rhone valley winemaking approach.
