Ingredients:• 2 bunches fresh cilantro, finely chopped• 1 bunch dill, finely chopped• ½ bunch mint, finely chopped• 1 scallion, chopped• 2 ounces fresh spinach, finely chopped• 1 young garlic (green part), finely chopped• 5 eggs, beaten• ½ teaspoon salt• Ground black pepper• 4 tablespoons unsalted butter (clarified butter or olive oil)

Directions:1. In a large bowl, combine all the ingredients and beat well. Add salt and pepper.2. In an 8-inch (20 cm) nonstick pan, melt the butter or oil over medium heat. Pour the mixture and cook on medium-low heat for about 8 minutes.3. Using a knife, gently cut the kuku into 4 wedges. Carefully turn each piece to brown the other side. If necessary, add a little butter or oil in the pan.4. Mix the yogurt and garlic and serve kuku accompanied by the sauce.

*Note: prep time- 30 minutes, cook time- 15 minutes, serving size- 4 people.

Ingredients:• Rice paper sheets• Noddles• Lettuce- thinly sliced• Peppers (all colors)- julienned• Tofu- julienned• Cucumber- julienned• Mint leaves• Thai basil

For Dressing• Soy sauce• Chili paste• Honey• Peanut butter• Vinegar• Water

Directions:1. Place noodles in boiling water; let stand about 5 minutes or until just tender, drain. Using kitchen scissors, cut noodles into random lengths.2. To assemble rolls, place a sheet of rice paper in medium bowl of warm water until just softened. Move it to a wet cloth to assemble3. Place the veggies, noodles, tofu, mint, Thai basil and start rolling. Roll sheet to enclose filling, folding in sides after first complete turn of roll.

Peanut Sauce1. Whisk all the dressing ingredients.2. Mix with hot water for desired consistency.

Ingredients:• 2 cups cooked pinto beans

(red kidney or other red beans

can be used if preferred)

• 4 tablespoons oil (corn or peanut)

• 1 large onion (2 cups)

• 5 cloves garlic, minced

• 1 teaspoon mild curry powder

• 1/2 teaspoon ground cumin

• 1/2 teaspoon turmeric

• 1/2 teaspoon paprika

• 1/4 teaspoon salt

• 1/4 teaspoon black pepper

• 1/2 can crushed tomatoes

• 1 cup low sodium vegetable stock

(chicken stock if preferred)

• 3 tablespoons ketchup

• 2 teaspoons tomato paste

• 1/2 can full-fat premium coconut milk

• 1/2 cup of heavy whipped cream (optional)

• 1/2 cup of milk (optional)

• 1/2 cup chopped cilantro (optional)

• 1 small diced Jalapeno (optional)

Directions:1. To cook raw beans: Run cold water over beans to remove

any bits of rock and sand. Drain the water, place the

beans in a large saucepan and cover with two inches

of cold water. Cook over medium low heat for 1 to 2

hours, or until the beans are tender and soft inside. The

time will depend on the age and size of your beans. Drain.

Drain and rinse the beans if using boiled beans in a can:

1. Heat the oil in a large pot or skillet in medium high heat.

2. Add the diced onions and cook until translucent.

3. Add the garlic until the mixture is golden brown.

4. Add curry powder, cumin, turmeric, paprika

and salt until the spices are incorporated.

5. Add the tomato paste and cook it for 3 minutes.

6. Add the crushed tomatoes and stock. Bring it to a boil, then

lower the heat to medium low. Let simmer for 15 minutes.

7. Add your drained beans into the mixture and stir.

8. Add the coconut milk, heavy whipped cream and milk,

stir and cover. Simmer for another 10 minutes in low heat.

9. Add the ketchup, black pepper and cilantro. At this point, if

you’d like it spicier, add the chopped jalapeno. The level of

the sauce should come up to just cover the beans. If

there’s not enough liquid, add a bit of water or stock and

cook for another minute or two.

*Note: Serve the coconut beans with steamed rice or flatbread of

your choice (naan, pita, chapati, roti, tortillas, etc.). Meal makes

6-8 servings. Enjoy and happy cooking!

Ingredients:• 2 tablespoons extra virgin olive oil

• 2 cloves garlic, minced

• 2 cups yellow onion, chopped

• 1 teaspoon iodized salt, plus

additional to taste

• ¾ cup chopped celery

• 1 cup chopped carrots

• 1 cup chopped red bell pepper

• 2 cups chopped zucchini

• 2 cups chopped sweet potato

• 1 teaspoon basil leaves

• 1 teaspoon oregano leaves

• 28 ounces crushed tomatoes

• 4 cups low sodium chicken broth

• 1 cup spinach & ricotta tortellini

• 2 cups Great Northern Beans,

drained and rinsed

• 5 ounces organic baby spinach

• Ground black pepper, to taste

• Parmesan wedge

Directions:1. In a large pot, heat olive oil over medium heat.

Add garlic, onion and salt. Cook until fragrant

and translucent, about 5 minutes.

2. Add celery, carrots, bell pepper, zucchini,

sweet potato, basil and oregano. Continue to

cook for another 5 minutes, stirring occasionally.

3. Add the crushed tomatoes and chicken

broth, bring mixture to a boil.

4. Reduce heat to low and simmer, uncovered, for

another 20 minutes or until sweet potatoes can

be easily pierced with the tip of a knife.

5. Stir in the tortellini and beans, simmer for 15

minutes or until pasta is al dente. Vegetables

should be tender, not mushy.

6. Remove from heat and stir in spinach to wilt.

Season to taste with salt and pepper.

7. Serve soup topped with freshly grated Parmesan

and black pepper.

*Note: Though the recipe calls for chicken broth, it can

easily be made vegetarian by using water or vegetable

broth instead.

Ingredients:• Romaine lettuce (cut in half)• Olive oil• Creamy balsamic dressing• Smoked blue cheese crumbles• Smoked bacon (cooked and chopped)

Directions:1. Brush cut halves of romaine lettuce with olive oil (salt and pepper to taste).2. Place romaine lettuce cut side down, on heated grill until slightly charred (approx. 4-5 minutes).3. Flip lettuce for an additional 1 minute and remove from grill.4. Top with creamy balsamic dressing, smoked blue cheese crumbles and chopped bacon to taste.5. Serve warm.

*Note: feel free to use additional toppings, i.e. chopped walnuts or cashews, sliced strawberries.

Ingredients:• 1 cauliflower• 1 teaspoon turmeric• Handful of cilantro• 2 teaspoons cumin powder• 2 teaspoons coriander powder• 1 teaspoon all-purpose flour/corn flour• Oil- to coat• Salt to taste• Lemon juice

Directions:1. Mix above ingredients in a mixing bowl.2. Air fry/ Bake at 400 for 15 min or until golden brown.3. Drizzle lemon juice and serve.

Ingredients:• 2 cups cucumber • 1 large Vidalia onion• 1/2 cup white vinegar • 2 tablespoon water• 1/4 cup sugar or 1/4 cup (Sugar substitute Ketologie Organic Sweet Like Sugar replacement)• Teaspoon salt• Quarter teaspoon pepper• Tablespoon dill weed

Directions:1. Peel cucumbers and slice.2. Slice onion.3. Mix vinegar, water, sugar or sugar substitute, salt, pepper and dill weed.4. Place cucumbers and onions in a plastic or glass container.5. Pour mixture of ingredients over cucumbers and onions, stir, put lid on container and refrigerate overnight.

Ingredients:• 1 head cauliflower • 2 tablespoons melted butter• 1 tablespoon olive oil• ½ cup Frank’s Red-Hot Sauce• ½ cup almond flour (or regular flour)• ½ tablespoon garlic powder • 1 teaspoon sea salt

Directions:1. Place cauliflower florets in a large bowl with melted butter, olive oil, and hot sauce.2. In a separate bowl, whisk almond flour, garlic powder and salt.3. Sprinkle a handful at a time of almond flour mixture over the cauliflower. 4. Air fry at 425 degrees for 30 minutes or until desired crisp.

*Note: You can also bake these instead of air fry!

Directions:1. Preheat oven to 400 degrees.2. Line a baking sheet with the parchment paper; lightly coat it with cooking spray.3. Place cauliflower in a large bowl; coat it with cooking spray. Add 1 tablespoon taco season, mix well.

4. Arrange the cauliflower in a single layer on the prepared baking sheet; bake 25 minutes, until it is golden brown and soft.5. While the cauliflower cooks, place the yogurt, mayonnaise, bell pepper, onion, pickle, vinegar, and cayenne pepper (if desired), in a medium bowl; whisk to combine. Set aside.6. Combine ½ cup of the cheese and the remaining 1 teaspoon taco seasoning in a small bowl. Set aside.7. Sprinkle the cheese mixture onto the cauliflower. Loosely cover with foil; bake 8-10 minutes more, until cheese melts.8. Sprinkle the remaining ¼ cup cheese over the cauliflower; set aside 1 minute until cheese melts.9. Spoon the dressing over the cauliflower and cheese. Divide evenly between 4 serving plates. Serve immediately.

*Note: This side pairs nicely with a good source of protein to create a well-balanced meal as shown above with turkey meatballs.

Ingredients:• 1 teaspoon baking powder• ½ cup coconut flour• 2 tablespoon psyllium husk powder• ½ teaspoon salt• 1 ½ ounce coconut oil• 1 cup boiling water• Garlic powder and/or any other herbs to taste

Directions:1. Mix all dry ingredients with a hand whisk.2. Add oil and blend well. It will have the consistency of nut butter.3. Add boiling water ½ at first, blend until a dough like mixture forms.4. Divide the mixture into 6 balls.5. Rolls the balls between 2 sheets of parchment paper to flatten out.6. Cut out a circular shape using the saucepan lid as a template. Ensure your circular shape fits in a fry pan flat.7. Dry fry in your fry pan for 2-3 minutes each side, until golden.

*Note: This recipe is Keto/Paleo friendly and dairy free. Great for people wanting a wrap when on Keto and bread is a no-no! Makes 6 small flatbreads, 119 calories each. Found they were a little small. For larger flatbreads, double the ingredients and use a larger frying pan.

Ingredients:• 1 frozen deep-dish pie shell or 2 roll out pie crust if using a casserole dish• 4-6 ripe Roma tomatoes, sliced• 1/4 cup of sliced red onion or Vidalia onion• 2/3 cup of balsamic vinegar• 2 tablespoons of chopped fresh basil • 1 teaspoon of pepper• 1 cup of mozzarella cheese, shredded• 1/2 cup of mayonnaise • 1 cup of cheddar cheese, shredded• 1/2 cup of sour cream

Directions:1. Preheat oven to 350 degrees and bake pie shell or crusts for 10 minutes.2. While pie crust is cooking, marinate the tomatoes and onion in balsamic vinegar in large bowl. 3. After 10 minutes take crust out and allow it to cool.4. In another bowl mix basil, pepper, both cheeses, mayonnaise and sour cream.5. Completely drain balsamic vinegar from tomatoes and onion using a colander.6. In the pie crust layer, the tomatoes and onions in a single layer.7. Top with the cheese mixture.8. Place in the 350-degree oven and bake for 45 minutes until melted, bubbly and crust is brown.9. Allow the pie to sit and cool for 10 minutes and serve.

Ingredients:• 1-pound orzo pasta• 3 tablespoons extra-virgin olive oil, plus 1/4 cup• 2 cups fresh arugula (about 3 ounces)• 3/4 cup crumbled ricotta cheese (or feta cheese)• 1/2 cup dried cherries• 12 fresh basil leaves, torn• 1/4 cup toasted pine nuts• 3 tablespoons lemon juice• 1 1/2 teaspoon salt• 1 teaspoon freshly ground black pepper

Directions:1. Bring a large pot of salted water to a boil over high heat.2. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. 3. Drain pasta and put the pasta on a large cookie sheet. 4. Drizzle the pasta with 3 tablespoons olive oil, toss, spread out, and set aside to cool.5. Once the orzo is cool, transfer to a large serving bowl.6. Add the remaining ingredients and toss gently to combine.7. Serve.

Ingredients:• 1 tablespoon olive oil• 2 cloves garlic (minced)• 1 1/2-pound ground meat (beef or turkey)• 1 tablespoon sea salt• ½ teaspoon black pepper• 1 ½ cup marinara sauce (or more)• 1 tablespoon Italian seasoning• 1 medium eggplant (1 ¼ pound), Sliced lengthwise into 8 slices, about 1/4’-1/2’ thick• 2 tablespoon olive oil• Sea salt and black pepper to taste• Cheese filling- 8 oz ricotta cheese• ½ cup grated parmesan cheese• 1 large egg• Cheese Topping-2 cups of mozzarella cheese

Directions:1. Heat oil in a large pan over medium-high heat. Add the garlic and cook for 30 seconds, until fragrant.2. Add the ground meat. Season with sea salt and black pepper. Cook until browned (about 10minutes), breaking apart the meat with a spoon or spatula.3. Stir in marinara sauce and Italian seasoning. Reduce heat to a gentle simmer. Simmer for about 10 minutes while preheating the oven and preparing the eggplant.

4. Meanwhile, preheat the oven to 400-degree. Line and grease a baking sheet.5. Arrange the eggplant slices in a single layer on a large baking sheet (or two small ones). Brush both sides with olive oil. Season with sea salt and black pepper.6. Roast the eggplant in the oven for about 15 minutes, until soft. When done, remove from the oven and leave the oven on at 400 degrees.7. Meanwhile, make the cheese filling. In a small bowl, stir together the ricotta cheese, parmesan cheese (try to get fresh grated parmesan cheese), and egg. 8. Assembly line the bottom of a 9x13 in glass or stoneware casserole dish with a single layer of roasted eggplant slices.9. Top each slice with the ground meat marinara mixture. Spread the ricotta mixture on top.10. Sprinkle with shredded mozzarella cheese. Repeat the layers again, with shredded mozzarella last. (you will end up with 4 oblong stacks-one serving will be ½ of one of the these.)11. Bake for 15 minutes, until the cheese on top is melted.12. Take out the oven, let it sit a few minutes and serve. You can add more grated parmesan cheese if you like.

*Note: Great to serve with a green salad and glass of wine! Serving size: 8 people, prep time- 20 minutes, total time- 1 hour.

Peanut Banana Cups

Ingredients:• ¾ cup dark chocolate chips• 1 medium banana • ¼ peanut cup butter (all natural) (I just use regular peanut butter)• 1 tablespoon of coconut oil melted• 16 1.25-inch baking cups

Directions:1. Place a sheet of wax parchment paper on the countertop for preparation. Set the baking cups on top.2. Melt chocolate in a double-boiler or in a small saucepan over low heat. Allow to cool slightly. In the meantime, combine the melted coconut oil and peanut butter.3. Add approximately 1 teaspoon melted chocolate to bottom of each baking cup, followed by one banana slice, 1 teaspoon peanut butter mixture, ad lastly drop ½ teaspoon melted chocolate in the center of each cup. Carefully place cups on a freezer safe dish or casserole pan. Cover and place in the freezer until set, approximately 1 hour.4. Our perfectly portioned Peanut Butter Banana Cups thaw quickly. For best results, enjoy one at a time after allowing to set a to room temperature about 2-3 minutes. To prevent the peanut butter mixture from softening too quickly add 1 tablespoon powdered sugar to peanut butter and coconut oil mixture before adding to cups.

Ingredients:• 4 cups old fashioned oats• 1/3 cup wheat germ,• 6 tablespoons unsalted butter• 3 teaspoon vanilla• 1 1/3 cup of honey• 1/2 cup of lightly packed brown sugar• 1 cup of dried cranberries and 1/2 cup of dried blueberries

Directions:1. Heat oven to 350 degrees.2. Roast 4 cups of old fashion oats for 10 minutes, stirring once.3. Reduce oven temperature to 300 degrees.4. Mix oats and wheat germ.5. On stove combine: unsalted butter, honey, vanilla, brown sugar.6. Bring to a boil and add to oats and mix well.7. Add dried fruit.8. Mix well and add to lightly oiled cake pan.9. Bake for 12 minutes at 200 degrees, let sit until cool.

*Note: can also add 1 cup of sliced almonds to the oats and toast them as well.

Ingredients:• 4 cups old-fashioned rolled oats

(use certified gluten-free oats for

gluten-free granola)

• 1 1/2 cup raw nuts and/or seeds

(I used 1 cup pecans and 1/2 cup pepitas)

• 1 teaspoon fine-grain sea salt

(if you’re using standard table salt,

scale back to ¾ teaspoon)

• 1/2 teaspoon ground cinnamon

• 1/2 cup melted coconut oil or olive oil

• 1/2 cup maple syrup or honey

• 1 teaspoon vanilla extract

• 2/3 cup dried fruit, chopped if large

(I used dried cranberries)

• Optional additional mix-ins:

1/2 cup chocolate chips or coconut flakes

Directions:1. Preheat oven to 350 degrees Fahrenheit

and line a large, rimmed baking sheet

with parchment paper.

2. In a large mixing bowl, combine the oats, nuts

and/or seeds, salt and cinnamon. Stir to blend.

3. Pour in the oil, maple syrup and/or honey and

vanilla. Mix well, until every oat and nut

is lightly coated.

4. Pour the granola onto your prepared pan and

use a large spoon to spread it in an even layer.

5. Bake until lightly golden, about 21 to 24

minutes, stirring halfway (for extra-clumpy

granola, press the stirred granola down with

your spatula to create a more even layer). The

granola will further crisp up as it cools.

6. Let the granola cool completely, undisturbed

(at least 45 minutes). Top with the dried fruit

(and optional chocolate chips, if using).

7. Break the granola into pieces with your hands

if you want to retain big chunks or stir it

around with a spoon if you don’t want

extra-clumpy granola.

8. Store the granola in an airtight container at

room temperature for 1 to 2 weeks, or in a

sealed freezer bag in the freezer for up to

3 months.

9. The dried fruit can freeze solid, so let it

warm to room temperature for 5 to 10

minutes before serving.
