These symposia will highlight cutting-edge science in hot-button topics such as eating behavior modification, the role of vitamin D in breast and colorectal cancer, systems science in obesity and chronic disease, and sodium’s changing role in disease management. The symposia, which are part of the Diet and Non-Communicable Diseases track, include: • Circulating Vitamin D and Risk of Breast and Colorectal Cancer. Saturday, April 26, 8-10 a.m. Attendees at this symposium will be the first to hear what presenters call “provoca- tive preliminary findings” from the international Vitamin D Pooling Project of Breast and Colorectal Cancer. These findings are anticipated to help clarify the dose-response relationship between vitamin D status and two common cancers. Researchers expect the results will have a significant impact on global public health policy and clinical guid- ance. The Vitamin D Pooling Project is an international consortium of 21 cohort stud- ies that examines associations between circulating 25-hydroxyvitamin D [25(OH) D] levels and breast and colorectal cancers. Researchers from the Harvard School of Public Heath, the American Cancer Society, the National Cancer Institute and Purdue University will discuss how they conducted this state-of-the-art epidemiologic research, including vitamin D actions in carcinogenesis and nutritional assessment methodology. Unlike meta-analyses that work with study summary estimates, this research pooled individual data and harmonized all risk factors across studies. It also integrated previ- ously measured 25(OH)D data with new laboratory analyses. Session topics include a look at how the researchers developed laboratory and sta- tistical methods that enable them to use accurate, absolute 25(OH)D concentrations in their analyses, despite the fact that 25(OH)D measurements can differ by up to 20-40 percent across laboratories. • Beyond Blood Pressure: New Paradigms in Sodium Intake Reduction and Health Outcomes. Tuesday, April 29, 8-10 a.m. Multiple randomized, controlled trials support the current Dietary Guidelines for Americans’ sodium intake limits of 2,300 mg a day for healthy people and 1,500 mg a day for those who are at risk for or already have hypertension. Because blood pres- sure is linked to stroke and heart disease, sodium intake has traditionally been seen as a robust indicator for cardiovascular disease risk. However, faculty members from the University of California Davis, Creighton Uni- versity and the Albert Einstein College of Medicine will give presentations during this symposium showing that there are numerous recent prospective cohort data sets that actually document an inverse or J-shaped association between sodium intake and CVD morbidity or mortality. In addition, the presenters plan to discuss new epidemiological evidence showing that sodium intake is difficult to change regardless of environmental, cultural, food supply or demographic differences. This is particularly pertinent in light of numerous public health efforts to reduce Americans’ sodium consumption. “The emerging evidence about sodium intake and health outcomes is fragmented and not widely known among scientists who aren’t directly involved in the area,” said session chair Janet King, PhD, University of California Davis. “Summarizing and Symposia to Focus on Novel Approaches to Nutrition in Medical Management Sunset at Pacific Beach, one of San Diego’s many beautiful seaside vistas. A s energy drinks increasingly become a part of American society, health questions arise. Researchers are examining how these popular drinks affect sleep patterns, blood pressure, alcohol consumption and more. During the Saturday, April 29 session “Energy Drinks: Current Knowledge and Critical Research Gaps,” ASN attendees will get an up- to-date look at the newest research, trends and hot-button issues in energy drink consumption. Topics include: • Caffeine Intake in U.S. Chil- dren and Adolescents. Namanjeet Ahluwalia, PhD, DSc, National Center for Health Statistics, Centers for Dis- ease Control and Prevention, will dis- cuss youngsters’ caffeine intake trends over the past decade and the influence of sociodemographic factors on caf- feine consumption. Using data from the National Health and Nutrition Examination Survey (NHANES) and the Kantar Worldpanel Beverages Consumption Panel, Ahluwalia plans to show that energy drinks do not have a large contribution to caffeine intake among nationally representative samples of Red Bull and Red Flags: What You Need to Know About Energy Drinks children. • Disparities in Energy Prod- uct Use, Sleep and Health Out- comes. Michael Grandner, PhD, Center for Sleep and Circadian Neurobiology, University of Pennsyl- vania, will discuss research examining the role of energy drink use in healthy sleep practices and beliefs. “I hope that attendees gain an understanding that energy drinks may occupy a unique place at the interface of social factors, sleep and health outcomes,” he said. Although data on social patterning of energy drinks is scarce, Grandner plans to illustrate how a variety of studies show that consumption of the beverages is more common in adolescents and men, and in combina- tion with alcohol. However, research shows that education levels, employ- ment status and income range have little to no influence on energy drink usage. Grandner will also examine other sociodemographic factors that might influence energy drink use and sleep patterns, including ethnicity, risky behaviors such as smoking, and work shift patterns.

Q Tell us a little about how you got started in nutrition

A When I went off to Michigan State University as an undergraduate the goal was to go to medical school I had a friend who recommended I take a nutrition science course and re-ally enjoyed it and declared nutrition science as my undergraduate major I think I liked it because I was a wrestler and was always watching my weight and what I ate Also I saved for college by being a cook I did a research study program with Dr Jenny Bond and began to really like the idea of doing research When I didnrsquot get into medi-cal school she encouraged me to go to graduate school I applied and went to the Pennsylvania State University I did my Masters and PhD there I still watch my weight and what I eat

Program Description

The chemical basis of the unique taste properties referred to as ldquoumamirdquo was ascribed to monosodium L-glutamate more than a century ago The umami is a dominate taste found in many natural foods such as meats cheese and tomatoes The characteristic savory or umami taste properties of glutamate have been used for decades as a flavor enhancing ingredient added to foods In recent years however the scientific advances in the biology of the umami taste and glutamate function have revealed important new information Umami is now regarded as a fifth taste along with sweet sour bitter and salty More importantly the discovery of taste receptors and other glutamate receptors along the gastrointestinal tract have begun to unravel the molecular basis for umami taste and how it signals from the gut to the brain Metabolic studies in humans and other species have also established that glutamate is abundant in human milk and functions as a major energy fuel for the gut epithelial cells This session will seek to highlight new discoveries about the biological basis for umami taste and glutamate function and how they may influence the taste and nutritional quality of human foods

In recent years with support from Dairy Research Institute (DRI) the students started hosting the SIG Travel Award Competition with a poster ses-sion held during the breakfast Students submit their abstracts for peer review by student leaders ASN usually receives more than 200 entries for this competi-tion with six finalists selected not only for their research but also for their abil-ity to translate and present their work These finalists present their posters dur-

Q Tell us a little about how you got started in nutrition

A When I went off to Michigan State University as an undergraduate the goal was to go to medical school I had a friend who recommended I take a nutrition science course and re-ally enjoyed it and declared nutrition science as my undergraduate major I think I liked it because I was a wrestler and was always watching my weight and what I ate Also I saved for college by being a cook I did a research study program with Dr Jenny Bond and began to really like the idea of doing research When I didnrsquot get into medi-cal school she encouraged me to go to graduate school I applied and went to the Pennsylvania State University I did my Masters and PhD there I still watch my weight and what I eat

The chemical basis of the unique taste properties referred to as ldquoumamirdquo was ascribed to monosodium L-glutamate more than a century ago The umami is a dominate taste found in many natural foods such as meats cheese and tomatoes The characteristic savory or umami taste properties of glutamate have been used for decades as a flavor enhancing ingredient added to foods In recent years however the scientific advances in the biology of the umami taste and glutamate function have revealed important new information Umami is now regarded as a fifth taste along with sweet sour bitter and salty More importantly the discovery of taste receptors and other glutamate receptors along the gastrointestinal tract have begun to unravel the molecular basis for umami taste and how it signals from the gut to the brain Metabolic studies in humans and other species have also established that glutamate is abundant in human milk and functions as a major energy fuel for the gut epithelial cells This session will seek to highlight new discoveries about the biological basis for umami taste and glutamate function and how they may influence the taste and nutritional quality of human foods

Q Tell us a little about how you got started in nutrition

A When I went off to Michigan State University as an undergraduate the goal was to go to medical school I had a friend who recommended I take a nutrition science course and re-ally enjoyed it and declared nutrition science as my undergraduate major I think I liked it because I was a wrestler and was always watching my weight and what I ate Also I saved for college by being a cook I did a research study program with Dr Jenny Bond and began to really like the idea of doing research When I didnrsquot get into medi-cal school she encouraged me to go to graduate school I applied and went to the Pennsylvania State University I did my Masters and PhD there I still watch my weight and what I eat

The chemical basis of the unique taste properties referred to as ldquoumamirdquo was ascribed to monosodium L-glutamate more than a century ago The umami is a dominate taste found in many natural foods such as meats cheese and tomatoes The characteristic savory or umami taste properties of glutamate have been used for decades as a flavor enhancing ingredient added to foods In recent years however the scientific advances in the biology of the umami taste and glutamate function have revealed important new information Umami is now regarded as a fifth taste along with sweet sour bitter and salty More importantly the discovery of taste receptors and other glutamate receptors along the gastrointestinal tract have begun to unravel the molecular basis for umami taste and how it signals from the gut to the brain Metabolic studies in humans and other species have also established that glutamate is abundant in human milk and functions as a major energy fuel for the gut epithelial cells This session will seek to highlight new discoveries about the biological basis for umami taste and glutamate function and how they may influence the taste and nutritional quality of human foods

Program Description

The chemical basis of the unique taste properties referred to as ldquoumamirdquo was ascribed to monosodium L-glutamate more than a century ago The umami is a dominate taste found in many natural foods such as meats cheese and tomatoes The characteristic savory or umami taste properties of glutamate have been used for decades as a flavor enhancing ingredient added to foods In recent years however the scientific advances in the biology of the umami taste and glutamate function have revealed important new information Umami is now regarded as a fifth taste along with sweet sour bitter and salty More importantly the discovery of taste receptors and other glutamate receptors along the gastrointestinal tract have begun to unravel the molecular basis for umami taste and how it signals from the gut to the brain Metabolic studies in humans and other species have also established that glutamate is abundant in human milk and functions as a major energy fuel for the gut epithelial cells This session will seek to highlight new discoveries about the biological basis for umami taste and glutamate function and how they may influence the taste and nutritional quality of human foods
