On behalf of the Italian National Committee of FIL-IDF, I’m honored to give our warmest welcome to all International professionals involved in milk and dairy industry who will attend the IDF World Dairy Summit 2011 – Summilk in Parma.

After 55 years, this important event comes back to Italy with a very urgent and pressing goal: gathering dairy experts from all over the world to give their contribution to a “Sustainable Food Security”.

Summilk will give you the opportunity to be main actors in production, sustainability, science and technology, environment, food safety, policies and economics, marketing, nutrition and health across the dairy sector.

Which venue would be better than Parma to host the Summit and face these challenges? No other.The city is located in the middle of the Italian Food Valley and its surrounding areas are the heart of the production of many Italian typical cheeses as well as the headquarters of many Italian leading dairy companiesand laboratories. In a few words, a great part of the Italian dairy industry and research, as well as the European Food Safety Authority (EFSA) are settled here.

WELCOME OF THE INTERNATIONAL DAIRY FEDERATIONThe International Dairy Federation is delighted to welcome you to Parma for the IDF Summilk 2011

After very successful programmes around all areas of the world, it is now my pleasure to welcome you to the IDF 2011 World Dairy Summilk in Parma, Italy. The theme for 2011 is ‘Sustainable Food Security’, a topic of great significance and value to the entire world dairy community.

A series of joint conferences is being organized by IDF with the Food and Agriculture Organization (FAO) of the United Nations regarding ‘Sustainable Food Security’ at the 2011 Summit. A conference on environment will follow-up on the latest achievements regarding life cycle analysis for greenhouse gas emissions from the dairy chain; other conferences will focus on various key topics such as animal health, welfare and animal feeding to address dairy sustainability issues from different perspectives and stimulate exchange of expertise within the dairy industry. A new Round Table on dairy supply chain issues will gather active representatives from various dairy stakeholders groups in stimulating debates and ensure participation of more stakeholders from all parts of the dairy chain, as well as different regions of the world.

The Forum for Dairy Leaders and the IDF Summit itself will provide many opportunities for all participants to express viewpoints, discuss and debate about their vision of how the dairy sector will continue to evolve and thrive with dairy leaders from several regions of the world, and to also address messages to a global audience.

The location for the Summit also has a key role to play. The city of Parma is the capital of Italy’s famous “food valley” where Prosciutto di Parma ham and Parmigiano-Reggiano cheese are only some of the culinary delights on offer. Parma is nestled in the valley of the Po River in the Italian province of Emilia-Romagna, and its rich history and culture radiates beyond its city limits, providing a variety of cultural and social delights for you to see and enjoy.

Parma and its territory are one of the world main players as far as dairy processing and technology are concerned, and it is also the seat of the European Food Safety Authority.

SUSTAINABLE FOOD SECURITY

Milk and dairy products, with their high nutritional value, should be basic foods in the diet of every population. Ensuring dairy food security – and doing it in a sustainable way – is a challenge for the dairy sector.

This means research for a better farm and diseases management, animal feeding, sustainable application of science and technology to milk and dairy production. These topics together with suitable dairy policies and economics, an intrinsic food safety and respect for environment contribute to improve the dairy sector and its products.

The IDF World Dairy Summit 2011 will be an important gathering for all dairy experts from the industry, farms, research institutes and governmental authorities to explore and discuss challenges and opportunities related to this topics.

Destination ItalyCountry of art, history, culture and much more

Italy is a synonym for culture, art and history. Artistic wonders can be found everywhere, and every corner of the country holds countless and wonderful masterpieces. Our artistic and cultural heritage is one of the most valuable in the world. Italy has more cultural UNESCO World Heritage Sites than any other country. Rome, Florence, Assisi, Venice, Siena, Pisa, Parma, and Naples are some of its most renowned cities of art.

Italy has always been a synonym for “good food,” offering an unmistakable explosion of flavours, scents, and aromas. Aside from having one of the most famous cuisines, it also proposes an immense variety of different regional dishes and recipes. Ancient Greeks used to call Italy “Enotria”, since it was renowned for its extraordinary wines. It would be impossible to list all of the features of Italian wines, world-famous for their variety and quality.

Destination Parma

Parma, centre of Northern Italy and of the Duchy of Maria Luigia of Austria, land of Giuseppe Verdi and Arturo Toscanini, recounted by Giovannino Guareschi in his tales of “Peppone and Don Camillo”, production area of unique typical food products, custodian of the masterpieces of Antelami, Correggio and Parmigianino; this city is the small Italian capital of music, food, art and culture. Within this territory are produced many typical Italian cheeses and other food excellencies such as seasoned and cured meats, mushrooms and truffles as well as the wines from the Parma hills and plain left to age in local cellars. The historical city centre, snug yet elegant, hosts beautiful museums and monuments; beyond the city, the land is dotted with castles and fortified mansions offering a countryside both intense and evocative, from the autumnal colours of the Apennine beech woods to the gentle rolling hills which give us Parma ham, to the great plain along the river Po.

Venue – Auditorium Paganini and Parma Congress Centre

The new Auditorium by the architect, Renzo Piano, is built upon the remnants of the walled structure of the Eridania Sugar Factory. It shows an admirable work of connecting the past and future, between two epochs that are by now truly distant. The workspace and that of the machines has been regenerated and transformed into a space for culture and a rediscovery of humanity.But these passages and mutations are neither automatic nor casual. They are experiments that only succeed under extraordinary conditions.The genius of Renzo Piano, the unanimous master of international architecture, made sure that the experiment was not only executed in a perfect way, but that the result occurred as if from a spontaneous and absolutely natural transformation.

The immense windows that go from head to toe of the building allow the internal space to flood with light, the green of the park, the air and the music.

ITALIAN DAIRY INDUSTRY

• Italy, where tradition is industry

Italy is one of the main players of the world dairy industry: the national production combines quality, volumes and tradition. Most advanced milk processing technologies have turned it into a favorite drink – fresh, UHT, LSL – compatible with special diets and accessible to customers suffering from intolerance.

The cheese-making tradition is testified by 37 PDO cheeses and by numerous local cheeses, where the traditional practice has become industrial process, besides cheeses made with modern production technologies. A variety of cheeses that meet the diverse and demanding needs of domestic and foreign consumers.

Yogurt and fermented milk are available in a wide range of characteristics, flavouring, size and they are the ideal products under numerous occasions of consumption. Besides traditional products, there are probiotics fermented milks that answer to modern demand for health products, thanks to the intuition that characterized Metchnikoff’s research one century ago.

The dairy sector is the first Italian food division, with a sale of 14,2 billion of euro.75% of the milk is produced in the North districts of Italy: Lombardia, Emilia Romagna, Veneto and Piemonte.

In Italy 11 millions of tons of milk are produced and 13 millions of tons of milk are converted in 1 millions of tons of cheeses (more than 440.000 tons are PDO cheeses), almost 3 millions of tons of pasteurized drinking milk (1.300.000 tons) and UHT milk (1.600.000 tons) and 190.000 tons of yogurts and fermented milks.

Italian dairy industry produces a great variety of traditional cheeses, all of them unique in their organoleptic and nutritional characteristics and processing technique:

- Mozzarella occupies the first place as far as volume is concerned – 250,000 tons/year – followed by the two most popular DOP (Protected Denomination of Origin) cheeses in the world:

•Grana Padano – the most exported with 163,000 tons/year•Parmigiano Reggiano – the most imitated with 116,000 tons/year

- Gorgonzola, Pecorino, Asiago, Taleggio are also part of the Italian tradition, always evolving and highlighting its quality.

TECHNICAL TOURS

• Tour 1 - Cibus Tec International exhibition on technologies and solutions for the food industry with a special focus on dairy processing and packaging. www.cibustec.it

One of the leading shows worldwide presenting over 100 manufacturers of equipment, machines and complete lines for dairy processing and packaging. This tour is included in the registration fee.

• Tour 4 - Grana Padano Factory

This tour will be operated in cooperation with Grana Padano Consortium. You will experience all the phases of the preparation and ripening of Grana Padano cheese.

• Tour 5 - Parmigiano Reggiano Factory

Operated in cooperation with Parmigiano Reggiano Consortium. On the way back, a special visit to the Museum of Parmigiano Reggiano, in the beautiful village of Soragna, only 30 minutes from Parma. The Museum offers a panoramic view of the processing equipment and machines used between XIX century and mid XX centuries together with ripening and maturing tools.

• Tour 4 - Gorgonzola Factory

This tour will be operated in cooperation with Consortium for the protection of Gorgonzola Cheese.You will assist to all processing and maturing phases above all the “erborinatura”, that is to say the creation of moulds which make this cheese so special and unique.

• Tour 7 - Model dairy farm

• Tour 2 - Technical visit to Parmalat headquarters

Located in Collecchio Parma, a two – hour tour where all participants will be able to get in touch with one of the world leading processors and first Italian company for the production of milk.

• Tour 3 - Technical visit to Tetra Pak headquarters

Three hour tour of Tetra Pak’s largest R&D and manufacturing plant located in Modena to show all participants how the leading player in processing, packaging and distribution of liquid food handles and nurtures its business.
