The other day I took a trip down memory lane and watched one of my all-time favourite movies - the 1969 musical Hello, Dolly! starring Barbra Streisand as New

York matchmaker Dolly Levi. This is a real feel-good movie about giving fate a helping hand to make things turn out for the best. Perhaps in some way this explains why I get so much pleasure out of the work we do at County Concierge, helping our clients to get things done with as little stress and as much pleasure as possible. In the opening sequence Dolly sings a great song called ‘Just leave everything to me’ and lists all the amazing things that she can arrange from massage to marriage! It is fair to say that I will never be a Dolly Levi, but together with my lovely team of concierge ladies we can arrange most things, so if you need help, all you need to do is get in touch and we will do the rest.

County Concierge is so much more than a magazine. Of course we hope you enjoy your magazine each quarter but for us it is like a menu of things that we can help you with, showcasing the amazing people that we work with across Surrey and Berkshire. As always this issue is packed with ideas and information about food, drink, fashion, health, home, work, cars and brilliant things to do and see. But this is just the tip of the iceberg when it comes to our raison d’etre – our concierge services. We are just a call, text or email away for whatever you need...remember Dolly’s excellent advice…and just leave everything to us.

Hopefully what started as the warmest summer on record will not turn out to be the wettest once again this year. My brilliant team have trawled the internet and come up with some fabulous things to do locally and further afield. Of course there are plenty of open-air events this season but we also have some great rainy day options for all the family. As always, if you can’t find what you are looking for do get in touch.

Many words have been used to describe her charms – gamin, elfin, waif-like – but she was also one of the most graceful andstylish women of her time. PUPPY SOCIALISATIONIS NOT ALL ABOUT SOCIALISING!

A long time ago, back in the 70s, two American scientists, John Paul Scott and John L Fuller conducted a study on puppies of various breeds to try to

discover what developmental processes happened in the first few months of a puppy’s life, and how its environment shaped the way it behaved in the future. That’s how the idea of the critical period of socialisation for puppies was born, and now we know that for a dog to become aconfident, well-adjusted individual we need to expose to it to a variety of stimuli when it’s still small (ideally between 3 and 12 weeks of age) and its brain ismalleable. Otherwise the puppy is likely to grow up to be a scared, timid dog, prone to show fearful behaviours, or even fear basedaggression towards anything it has not been exposed as a pup – be it other dogs, vacuum cleaners or people wearing glasses.

The idea of socialisation has caught on especially when it comes to introducing our puppies to other dogs.However, while in theory lots and lots of social opportunities should create a well-adjusted and sociable dog, things are not that simple. Contrary to popular belief, socialisation with dogs is not aboutexposing your puppy to as many dogs as you can meet when out and about. Also, it isn’t about letting your puppy get into mad rough and tumble games with other puppies, which end in them having a scrap when the game becomes a bit too heated. It also isn’t about letting your puppy run up to every single dog in sight – this

can be a very dangerous thing to do as not all dogs are well social-ised or friendly and by letting your pup come up to them uninvited you are risking them getting growled at or even bitten.

Instead, socialisation with dogs should not be about quantity, but rather quality. It is much, much better for a little puppy to meet

fewer, but well socialised, friendly adult dogs, than a whole lot of dogs, some of which might be a bit grumpy or even aggressive. This is because a single negative experience with other dogs such as being pinned to the ground, picked up and shaken or injured can scar a little puppy for life – a previously confident youngster might start showing fearfulbehaviours around other dogs, which then can lead to the development of defensive fear aggression.

Equally, puppies should not learn that their walk is all about meeting dogs. If that’s their expectation and for some reason they are unable to be let off lead and socialise (e.g. because it is not safe to do so) this can create a feeling of frustration, manifesting itself through barking, whining, lunging and even aggressive behaviour. It is much better to allow interactions with dogs whose owners are happy for this to happen, but every now and again ask your puppy to

focus on you while walking past a dog, and teach them thatignoring other dogs and playing with you is a fun way of spending time together, too.

HOLISTIC HARMONY IN WOKINGTHE PERFECT ANTIDOTE FOR LIFE’S STRESSES

Having experienced some of her wonderful therapy first-hand I asked holistic therapy guru, Tara Von Spreckelsen, to tell us all about her career and her

busy practice in Woking.“I came to England from Ireland twenty years ago and after

working in the music /PR business, and having my three gorgeous boys, I decided to have a change of career. Initially it was tricky balancing my family duties with learning something completely new, then setting up my business from scratch, but now I am so happy that I made that life choice. I decided to train in Massage, Reflexology and Reiki and combining those practical skills with my spiritual and mindfulness beliefs makes for a better experience for all of my clients.

Establishing my own business, Holistic Harmony, in 2008 was a significant milestone and a proud moment for me, particularly as my mum is a successful businesswoman. Trained by Raworthand Paragon College, I am a member of the Association ofReflexologists (AoR), the Complementary & Natural healthcare council (CNHC) and the UK Reiki Federation (UKRF).Furthermore my training and practical experience in Reiki has led me to be a Reiki Master teacher, so the girl from Dublin who didn’t really enjoy school has come of age.

High end Italian kitchen company Pedini Londonrecently held the first of a series of celebrity chefMasterclasses at their recently transformed and

enhanced London showroom, in collaboration with foodie magazine ‘Seasoned by Chefs’.

The inaugural masterclass was hosted by Two Michelin starred chef Atul Kochhar. On arrival the guests were greeted with a champagne reception, Atul then talked enthusiastically about India, his family, background, and the differences in the food and cooking styles across the region. He explained the uses of the different oils and spices whilst cooking and giving tips that would enable the amateur to create modern Indian dishes with a real wow factor.Finally everyone sat down at the “pop up” Pedini London fine

dining restaurant, for a delicious meal cooked by Atul and paired with a selection of fine wines especially chosen to accompany the featured dishes.

The whole day was a great success and the team at PediniLondon are looking forward to the next Masterclasses! Y ou grow up, get married, buy a house and have 2.4 children. At least that’s how things used to work. These days an increasing number of young (and indeed not

so young) couples are having to make a choice between their dream wedding day and their dream of owning their own home.

In the US, the average wedding (excluding the honeymoon) cost $31,213 in 2014 according to the Real Wedding Survey. In Ireland, couples now shell out 19,635 euros on their big day while in the UK, You and Your Wedding has found that the bill now totals £20,983.

Of course, £20,000 won’t buy you a house in the UK, but it could make all the difference in obtaining a mortgage when used as a deposit. This is the take of the ING International Survey, published in June 2015, which examined whether couples were sacrificing their ‘big day’ in favour of home ownership.

The results speak for themselves: 60% of people across Europe were found to opt for spending on a house rather than on their wedding day. With home ownership becoming an increasingly unattainable goal and the cost of living rising faster than wages, betrothed couples seem to have a pragmatic mindset when it comes to matters of the heart.

Ray Withers, Chief Executive of specialist property investment company Property Frontiers, comments, “The UK has a realproblem in terms of lack of housing supply and that is one of the factors that has driven prices up in recent years. It’s meant a fantastic boom for the buy-to-let sector, as young professionals opt to rent in city locations during the early stages of their careers, but the age of first time buyers has gradually been pushed up and up as a side effect.”

Nationally, the average first time buyer in the UK is now 31 years old, according to The Sunday Times Money, while a KPMG report has found that they need an income of £41,000 – almost double the average UK wage of £22,000. With 100% mortgages a distant memory, buyers are increasingly having to choose between a life of wedded bliss and a roof of their own over their heads.

Some are considering a wedding overseas as a way to cut costs, but even in countries such as Spain, where the cost of living is lower than in the UK, nuptials can still be pricey. Bella Wedding reports the cost of a boutique hotel wedding for 60 guests in Spain as 18,000 euros.

Marc Pritchard, Sales and Marketing Director of leading Spanish homebuilder Taylor Wimpey España comments, “A wedding in the Spanish sunshine is a lovely idea and can be cheaper than getting married in the UK, but many couples are still having to choose between that and using their cash as a deposit. The reality is that pragmatism has to come before romance in many households these days. For couples in Spain, the ING survey showed that 70% would rather spend their money on a house than on their wedding day – higher than the European average of 60% and the UK average of 67%.” The 18,000 euros cost of a Spanish wedding would serve well as a deposit on a seafront apartment at a development like La Recoleta III, on the Costa Blanca, or perhaps an exciting renovation project with two houses and land in neighbouring Portugal.

With couples increasingly preferring to opt for propertyownership instead of a wedding day, it is understandable that the marriage rate in the UK is falling, though the statistics from The Marriage Foundation that 47% of women and 48% of men aged

20 will never marry really do throw the issue into stark relief. Until the UK starts building homes at a faster rate, it’s a trend that looks set to continue, with the number of cohabiting couples increasing with each generation. Still, at least they will be cohabiting in homes that they own.

This July royal nursery designers Dragons of Walton Street unveiled its new concession in world-famousdepartment store Harrods as part of an exciting expansion.

The Knightsbridge firm already has outlets in Moscow,Monaco, Hong Kong and the United Arab Emirates, as well as recently launching a design studio in Walton Street, but says the collaboration with Harrods is its most exciting to date.

people who have lost weight and need a new wardrobe… or simply clients who fancy being pampered.

My aim is not to completely change a person’s style, Iincorporate elements of what the client likes and merge this with the best look for them, finding something they will feel comfortable with.Whether I offer them, on-trend designer looks or high street fashion really depends on the client.

I work with clients of all budgets but luxury is my passion. There is no comparison when it comes to the quality of a designer piece - the cut, the fit, the intricate details... there is nothing that excites me more! I spent years working for luxury publication Luxure Mag-azine. Being exposed to the best brands in the world and so many

beautiful things on a daily basis was like a dream come true. For my own style I like to mix designer pieces with high street fashions (my favourite is Zara). It’s very easy to look like you’ve spent a fortune on your entire outfit by investing in a few key luxury brand items. I love showing my clients how to do this.

I studied fashion journalism at University of the Creative Arts in Epsom going on to work at Red Magazine and backstage at ITV This Morning on their fashion segments. I spent some time in New York working for a wonderful personal shopper/ television stylist and my last job was with Luxure Magazine here in London. I’d dreamed about setting up my own business as a personal shopper, even drafting my first business plan, long before I actually did it.

As a stylist the toughest thing is detaching yourself from what you like so that you can shop for what your client will like and look best in. I find this easy as my own personal style is very varied. Sometimes I’m a tomboy in trainers, skinny jeans and a white tee paired with my Rick Owens jacket and sometimes I’m a lady in Manolo Blahnik and Tom Ford sunglasses. My favourite brands are Alexander Wang, Alaia and Helmut Lang. They’re all verydifferent but all have an element of simplicity.”

You ate whilst listening to the yachts halyards chinking as the warm sea breeze wafted at your sun kissed face, which tinglesslightly after your evening shower.

You’ll want to buy fresh sardines ideally the same day theyare caught; they spoil very quickly because of their high omega-3fat level. For that reason you’ll also want to clean them immediately, unless you have a fishmonger that will do it for you.

Look for sardines that are fresh looking and not smelly, with shiny silver skin, and are whole. They should look like they just jumped out of water.

Dip sardines in flour, shaking off excess. When all sardines have been floured, heat half the oil and half of the butter in a pan, when hot add sardines and cook quickly on both sides. (Do not over crowd the pan) Transfer the cooked sardines to paper towel to drain then cook the rest of the sardines in the remaining oil and butter. Arrange the sardines and serve with oven baked tomatoes.

THROUGH HISTORY & BEYONDTHE NEW LONDON MODEL IS UNVEILED

New London Architecture (NLA) has unveiled a new interactive model of London in the NLA galleries at The Building Centre just off Tottenham Court Road.

Measuring 12.5 metres in length, the New London Model will provide a focal point for Londoners and tourists alike to learn about the history and future development of the capital.

NLA, London’s foremost independent forum and think-tank on the built environment, marks its 10th anniversary this year with a comprehensive series of exhibitions, research projects, events and tours exploring the capital’s development. At the centre of the 2015 programme is the launch of the New London Model. The model replaces its predecessor, first unveiled at the organisation’s inception a decade ago, the day after the announcement that London had won the Olympic bid.

Built by Pipers with data supplied by Ordnance Survey, the 1:2000 scale model covers more than 85 square kilometres ofLondon, 19 Boroughs and approximately 170,000 buildings, including 34km of the Thames with its corresponding 21 bridges. It extends from King’s Cross in the north to Peckham in the south and the Royal Docks in the east to Old Oak Common in the west.

A sophisticated projection and lighting system allows buildings and major infrastructure projects to be digitally animated across the surface of the model. Controlled by touchscreens, visitors are able to call up detailed information and key facts on London’s newest buildings and future projects that will help to define the capital. The model is the city’s only physical manifestation of how London

will look and progress as new buildings and developments are given the go-ahead.

A series of five bespoke interactive films, integrated with live projections, bring the story of London’s past and future physical development to life. The series documents the history anddevelopment of London; the impact of the London Plan; the future of infrastructure in the capital; the rise of tall buildings and the ongoing influence of the Great Estates as a sustainable model ofdevelopment. New films are set to be commissioned to coincide with NLA’s ongoing programme of Insight Study research pieces.

Key moments in history that have shaped the fabric of the city are displayed through sophisticated lighting displays and audio presentations, such as the Great Fire of London in 1666. This event is dramatically visualised on the model as the Square Mile appears to burn while the rest of the city is plunged into darkness,highlighting the terror and devastation that ravaged London.

The future development of the city is represented with the location of the 263 tall buildings planned or under construction in London mapped across the model. Visitors are also able to track the route and impact of new transport links, such as HS2 and Crossrail 1 and 2 on central London and the outer boroughs.

The New London Model which is open to the public at the NLA galleries at The Building Centre was launched on 20 May.

The NLA galleries are open Monday to Friday, 9am-6pm and Saturdays 10am-5pm.

FINE ART IN THE COUNTRYART COURSES AT HIGHBULLEN HOTEL IN DEVON

North Devon’s award winning Highbullen Hotel is launching a series of fine art courses with local artist Jon Lincoln Gordon.

Jon is famed for his Exmoor and Dartmoor landscapes in particular, and will use the hotel and its 125 acre grounds, nestled in the Mole Valley, as inspiration and backdrop for students.

The courses are all two or three day residential courses. They cover a range of media and techniques, from drawing and water col-ours for beginners, to a mixed media painting course and botanical printing. They are taking place over summer 2015 to make the most of the superb light found in Devon at this time of year.

Courses, which are all residential, start on a Monday and five are currently scheduled:

10-13 August – a two or three day ‘Water Colours forbeginners” course.

24-27 August – the second ‘Creative Landscape” course. 14-17 September – a three day mixed media painting course

enabling participants to experiment with a range of materials and techniques.

28 September – 1 October a three day ‘Botanical Printmaking” course.

A two day course (staying two nights) costs £349 per person based on sharing a twin or double room or £449 per person forsingle occupancy. A three day course costs (staying three nights) will cost £525 per person (sharing a room) or £649 per person

THE POINTER PUB & RESTAURANTAND NEW HEAD CHEF MINI PATEL

The Pointer restaurant, pub and butchers sit in a prime and beautiful location in Brill, Buckinghamshire, with routes towards Oxford, Bicester and central London.

The local train stations are Haddenham and Thame Parkway, only ten minutes by car or Bicester Town, which is 15 minutes away. The interiors are incredibly elegant and reminiscent of a converted barn with vaulted ceilings, high visual beams, white washed walls, antique Ercol chairs and intricate bespoke farm animal paintings by talented artist Robert Clarke.

Since joining in December 2014 Head Chef Mini Patel and his team are delighted to have been awarded two AA Rosettes in The Pointer restaurant. Mini’s menus change daily and are founded on carefully sourced produce and simple British classics with creative twists, all cooked and presented beautifully. Expect dishes such as: Cream of Pointer Farm asparagus with poached pheasant egg and garden chives; Dressed Organic tomatoes with buffalo mozzarella, wild garlic and lemon oil; David King’s Ludgershall Lamb Rump with clamped Cheltenham beetroot, Jerusalem artichokes, sheep’s curd and grilled spring onions; Pointer Estate poached outdoor rhubarb with ginger and pear; and leafy lemon posset with ruby grapefruit and Pointer Farm mint. Mini also oversees the menu in the pub at The Pointer, serving a more relaxed, paired-back offering than in the restaurant. Alongside the food menu is an extensive and thoughtfully selected wine list and the bar offers a great range of local and national real ales.

Wherever possible, produce comes from The Pointer’s own farm and estate overseen by Stockman Jamie Brewer and Estates Manager Paul Gough. Produce direct from the farm includes beef from the very best free range English Longhorn cattle which is aged for a minimum of 30 days; and pork from the farm’s rare breed Middle White pigs. The English Longhorn cattle are an award-winning herd and renowned for theirsucculence and flavour. On the estate, Paul grows and cultivates vegetables and kitchen garden herbs throughout the year to keep the kitchen well stocked with the freshest produce. Any additional food is sourced, as much as possible, from the surrounding area and promises to befree-range, sustainable and fresh.

Adjacent to The Pointer pub and restaurant is the butcher, run by husband and wife team Jon and Anna Wilkins. Pointer owner, David Howden and Jon Wilkins, have shared a love of food and passion for farming for many years and it finally led them to open the butcher two years ago. Similar to the pub, the butcher is a focal point for Brill’s local community, providing up to 160 meals a day for the neighbouring school during term time, attractingfamilies on a weekly basis to purchase their free-range meat, eggs and preserves and providing produce for The Pointer restaurant and pub. They provide a boutique, intimate service where both Jon and Anna educate customers on specific meat cuts and cookingmethods, with the use of their own recipe cards. Jon has also worked with XT Brewing Company to create his own ‘Pointer Butchers Beer’, available to purchase only in the shop. They also stock other interesting produce such as ‘Chazwinkle’ preserves, local hand churned butter, cured meats and Cacklebean eggs from Cackleberry Farm.

BRASSERIE DINING IS KINGOR SHOULD WE SAY CORBIN AND KING!

Chris Corbin and Jeremy King have been business partners for over thirty years and in that time have developed, owned and managed some of London’s most respected,

revered and successful restaurants. In 2003 they opened what was considered to be London’s first Grand Café, The Wolseley on Pic-cadilly, recently voted Restaurant of the Decade by popular vote at Taste of London, and regularly topping the lists as London’s favourite restaurant in the Zagat and Hardens guides.

In 2011, they opened The Delaunay, a Grand Café with a mittel-European slant, located on the corner of Aldwych and Drury Lane. The adjacent Counter at The Delaunay is a relaxed café and take-away. In June 2012, they opened the 240-seat, spectacular Art Deco Brasserie Zédel just off Piccadilly Circus in London’s Soho, serving classic French brasserie food at remarkably low prices; the venue also houses the Bar Américain, ZL Café and a cabaret space, The Crazy Coqs. 2012 ended with the opening of Colbert, an informal neighbourhood brasserie on Sloane Square in Chelsea.

Prior to 2003, Corbin and King owned and managed some of London’s most famous restaurants, including Le Caprice (opened 1981), The Ivy (1990) which consistently topped the Zagat and

Hardens Guides as the most popular restaurant in London, and J Sheekey (1998), all as part of Caprice Holdings, which they sold in 1998, staying on as directors until 2002.

2014 saw the opening of Fischer’s in June, an informal, neigh-bourhood café and konditorei evocative of Vienna in the early 20th century on Marylebone High Street and the opening of their first hotel, the 73-room Beaumont in Mayfair. Evoking the elegance and personalised hospitality of pre-war Mayfair, it is grand in style and yet intimate in feel. With 73 rooms, including 23 suites, a particular favourite is a suite in the form of an inhabitable sculpture by Antony Gormley. The hotel includes a classic Grill Room, an American Bar, a separate Residents’ Bar & Lounge, a Boardroom, and a Gymnasium and Spa with Hamam.

This autumn Corbin and King will open the Bellanger on Isling-ton Green. A classic grand café-brasserie with a menu that displays a distinct nod to the Alsation roots of the original Parisian brasse-ries. There will be a continuous food and drink offering throughout the day, from early breakfasts through to late dinners.
