OVER THE PAST couple of years, Katherine Sabbath has rapidly risen to Insta-fame, with more than 213,000 Instagram followers now lusting over her out-of-this-world creations.

Katherine first dipped her toes into the baking world during high school. During those teeth-cutting years, she enjoyed baking for friends and creating food that she loved to eat.

After graduating high school, Katherine studied teaching and filled her weekends and spare time with culinary experiments.

Teacher by day, cake-maker by night, it was a few years before Katherine decided it was time to take the leap and leave her teaching position to pursue the cake life full-time.

But Katherine hasn’t lost her love

of teaching; she’s passionate about passing on her skills to others, frequently teaching culinary classes that she says are “highly creative yet relaxing and fun.”

She loves nature, drawing inspiration for her wondrous creations from the colours and textures in environmental landscapes such as the Great Barrier Reef.

In a world of aloof Insta-celebrities, Katherine’s modesty and humble attitude is refreshing, and she doesn’t get caught up in her large Instagram following. “It’s quite overwhelming but I am so grateful there are so many people out there who enjoy following my creations as much as I enjoy making them,” says Katherine.

THE SMELL OF charcoaled sausages wafts through the thick, steamy air. Your ears prick at the sound of ice-cold beers cracking open. Perhaps you can feel powdery white sand between your toes, or warm grass beneath your feet. Wherever you are, there’s a game of backyard cricket happening not too far away.

It’s January 26. Australia Day. The annual commemoration of the 1788 founding of the New South Wales colony.

What does Australia Day mean to you? A day off? Time to listen to Triple J’s Hottest 100 countdown? Is it a day to celebrate our people and culture? Or maybe you don’t celebrate at all?

It seems that, as Australia Day celebrations become more prominent on the national calendar, the meaning of the occasion becomes more contentious. Every year another debate emerges about the country’s history that exposes our seemingly confused national identity.

It can come as no surprise; our collective ancestry spans the entire globe. Whether your family was born here, descended from the first Europeans, entered in post-war immigration or arrived as refugees from war-torn countries, we all lay some claim to our personal ancestry and our identity as Australians.

With such a diverse cultural landscape, it’s

only natural that Australia Day means significantly different things to all Australians.

No matter how different our celebrations, we should all take the opportunity to reflect on how Australia has developed over the years. From humble origins it has become one of the world's most prosperous and stable free countries.

We have a productive economy, high living standards, some of the most liveable cities in the world and an awe-inspiring natural landscape.

The very fact that we can openly, honestly and vigorously debate what it means to be Australian without facing persecution is evidence that we live in a lucky country.

LIKE CINDERELLA, DYNAMIC duo Thessy and Yiota Kouzoukas are proof that an outfit can change your life.

They started out blogging about clothes and began their Brisbane-based start-up, Sabo Skirt, in an unused bathroom. Five years, 1.6 million followers and one fashion empire later, these sisters (and best friends) have no intention of slowing things down.

Their latest high-end fashion line, Sabo Luxe, was inspired by a recent holiday. After one look at the crisp, clear landscape and structured architecture of the Greek Islands, their love affair with minimalism was born.

The pair launched a preview of the line at NYFW through Fashion Palette, an initiative that connects Australian Fashion designers with the global market. Thessy and Yiota say they had never experienced anything like it.

“We are huge fans of New York; it’s a beautiful city. To be a part of NYFW was such an honour. A definite ‘pinch yourself’ moment,” they agreed.

The structured silhouettes are the perfect simple yet eye-catching staple for any wardrobe.

International supermodel sensation Gigi Hadid has already been seen sporting items from the collection.

But the girls won’t stop there; they’re already working towards introducing the line to the Australian market next month.

“Sabo Luxe will officially launch in Australia in late February with a dedicated fashion show, website and full range available. We can’t wait to show Australia what it’s all about!”

Sabo Luxe isn’t their only project; Thessy and Yiota are set to release a new Sport Luxe and sleep/loungewear range this year. The girls say they’re excited about the new range and will be able to reveal more about it in the coming months.

Thessy and Yiota will surely be a permanent fixture in the fashion world in coming years.

“We see ourselves expanding the Sabo Skirt empire, with several wholesalers and continuing on with our online ranges. We would also like to see Sabo Luxe on more US celebrities as we grow our presence overseas,” they said.

FROM A YOUNG age, Benjamin Ringuet searched for a purpose in life. Dabbling in drawing, painting and creating music, he was always an artistic being. But Benjamin had a deeper desire: he wanted to help and inspire people through creative expression. He says that fashion was an easy transition because he viewed the body as a canvas to portray wearable art.

“There is something very real and fulfilling in knowing that your creations contribute to other individuals’ special moments and memories,” Benjamin says.

The label has quickly gained the support of Australian celebrities such as Carrie Bickmore, Rebecca Judd, Dannii Minogue, Scherri-Lee Biggs, Jules Sebastian, Livinia Nixon and Sam Frost, developing a strong relationship with TV channels 7, 9 and 10.

Ringuet can now be found in select stores throughout Australia, the US, Latin America, the Middle East and Europe.

But it wasn’t always smooth sailing for Benjamin. Before the label took off, he was working multiple jobs in order to learn as much as possible about the industry. As a student, Benjamin says he would regularly skip classes to spend time in boutiques, trying to understand his craft and customer.

“I would save up all my money and travel to Sydney or Melbourne to walk the streets and introduce myself to boutiques,” he says.

Benjamin found that buyers kept asking for something different. After one unsuccessful trip, he had a defining moment that changed the course of his brand aesthetic.

“I had a window seat on the return flight home and it was dark outside and raining. The plane took off and I was staring out the window and the city lights began to sparkle with a beautiful array of illuminated colour. I took out my notepad and started to design.”

The latest collection, The Way You Love Her, features the beautiful and unique digital prints for which Ringuet is renowned. Benjamin says that the way he approaches art is very similar to his interpretation of music,

“One does not have to be a seasoned musician to understand the genius of an artist such as Jimi Hendrix. You just have to listen. There is no debate or question on whether his music and lyrics work – they just do.”

Benjamin draws other inspiration from being surrounded by people and conversation in public spaces, and complex equations. He hopes to inspire creatives and sceptics to see beauty through organised chaos.

Benjamin believes that colour is an important part in any woman’s wardrobe, as it is a tool used for self expression.

“Women will continue to have colour in their wardrobe as long as there is a desire to emotionally share and validate their inner beliefs to individuals they love, admire and respect,” he says.

So what is next for Ringuet? Benjamin’s aim is to continue to build a strong foundation in South East Queensland, before expanding nationally and internationally.

Benjamin says he hopes to continue building a business that is based on the ideology of self expression, experimentation and inner belief.

KNOWING HOW TO confidently manage debilitating headaches and migraines is the key to keeping your New Year’s resolution.

Bertrand Doeuk from the Brisbane Headache and Migraine Clinic says that he often sees people treating secondary issues rather than focusing on the primary, underlying cause. He reports that research has shown a link between experiencing chronic headaches and migraines and having an irritated and sensitised brainstem.

The brainstem is located in the cervical spine. According to Bertrand, the main culprits causing brainstems to become hypersensitive are previous

injuries to the neck or head, and poor postural issues. When the brainstem becomes sensitive, it can produce headache and migraine-like pain.

Bertrand explains that there are now safe and effective treatment solutions available to desensitise the brainstem and significantly reduce or stop headaches and migraines.

“The best thing about this treatment is that it does not require any surgical intervention, electrical devices or even medication,” says Bertrand.

He explains that treatment is highly effective if the patient’s headache and migraine pain can be reproduced and resolved by applying

specific pressure along the upper three vertebrae of the neck.

If this can be achieved in the first consultation, Bertrand reports that there is a high probability that the patient’s headaches and migraines will be able to be significantly reduced, if not stopped.

THERE’S A FAIR bit of buzz around Billykart in West End. For starters, it’s the sister restaurant to Billykart Kitchen in Annerley, owned by celebrity chef Ben O’Donoghue. Then there’s the fact that unlike its sibling, only open for dinner on Fridays, this restaurant is open for nosh every night. And just when that sounds like more than enough reasons to visit, there’s the added bonus of Billykart Provisions, a deli filled to the brim with breads, cheeses, charcuterie and other delicious morsels.

Billykart Mark II is also tackling the notoriously tight breakfast/brunch/lunch race in the area, so it has some stiff competition.

Frequent diners at the original venue will be familiar with the signature style of meals: full of flavour without being extravagant, and always focused on keeping as many products local (and in most cases house-made) as possible.

We’re told they make nearly everything used in their dishes in-house, from the nut milks to seeded bread and clotted cream.

We decide to take a peek at lunchtime, and it seems pleasantly bustling for a weekday. The atmosphere is funky casual, with the trademark neon sign welcoming us in.

The walls are adorned with deconstructed billy

kart pieces and vintage windowpanes of coloured glass, all making for an inviting visual.

Our first dish consists of corn fritters so light and fluffy it’s a surprise they don’t float right off the plate. They’re perfectly complemented by the creaminess of the avocado and the piquancy of the heirloom tomatoes, with a kick of chili to round it off.

The Billykart potato waffle croquet madame is the stuff of hangover heaven: picture a potato waffle topped with ham, cheese, béchamel sauce and finished with a fried egg. It was a bit too heavy for us the day we visited, but we suspect it would be the greatest meal alive after a long night out.

The standout on the mains is definitely the picanha, a smoked rump cap with burnt onion, erva mate Béarnaise, farofa and kale. The tea flavour (erva mate) takes the Béarnaise to a whole new level, blending well with the deep, smoky flavours of the perfectly-cooked meat.

We’re told this is the signature dish, and we couldn’t think of a more fitting way to represent the flavour of Billykart West End.

WHEN WINTER WINDS down, Kiwis flock to the river edge and attempt to catch hundreds of teeny tiny clear tadpole-like fish to fry into crispy whitebait fritters. Wash it all down with a can of iconic L&P and you’ll be saying “Choice as, bro!” before you know it!

After your hearty meal of fush and chups, hunt down a local ice cream shop to treat the family. You won’t be able to resist Goody Goody Gum Drops ice-cream, which has a classic bubblegum flavour and small gummy lollies sprinkled throughout.

If you’re after a more cultural experience, a marae stay will provide great insight into Māori life, including the language and customs.

Don’t forget to try the local cuisine such as hāngi (food cooked using heated rocks in a pit oven), boil up (pork bones slow-cooked with pumpkin, potato and water cress) and Rēwena (a bread cooked with flour and potatoes).

For a city take on food, do as the locals do and head to McDonald’s. Celebrate your surroundings with a serving of the much-loved Kiwi Burger. It’s a delicious combination of beef patty, egg, beetroot, tomato, lettuce, onion, mustard and ketchup.

It will come as no surprise that life in metropolitan areas such as Auckland and Wellington is vastly different to Kiwi life in the regional areas, particularly in rural New Zealand.

To experience regional life as a local, travel away from the city and look for opportunities to go camping, fishing, boating, hunting or tramping. You’ll be spoilt for choice when it comes to serene bush, beach and lake options.

However much local living you manage on your trip, don’t leave the country without experiencing Vogel’s bread. This small piece of dense bread is best toasted with lashings of butter and a slither of Marmite.
