Breakfast Burritos

Ingredients:

2 eggs 1 Tbsp (15 mL) milk 2 green onions, chopped ½ red or green bell pepper, diced ¼ cup (60 mL) shredded cheddar cheese 2 small whole grain tortillas Pinch of salt and black pepper

Directions:

1. In a bowl, whisk together eggs and milk. Stir in onion, pepper, salt and pepper. 2. Spray a small nonstick skillet with cooking spray and heat over medium low heat.

Pour egg mixture into skillet and as egg begins to set, use a spatula to gently push cooked portions to the centre. Tilt pan to allow uncooked eggs to flow into empty spaces.

3. Sprinkle with cheese and cook for 1 minute or until eggs are set and cheese is melted.

4. Divide egg in two and place each half onto a tortilla. Roll up to enjoy.

Frozen Yogurt-Covered Breakfast Kabobs

Ingredients:

1 Cup strawberries 1 Banana 1 Cup blueberries Handful of granola 1 Large container vanilla Greek yogurt 4 Skewers Wax Paper

Directions:

1. Before starting, soak skewers in water. This will make it so the fruit slides smoothly onto the skewers.

2. Cut up all of your fruit horizontally into bite-sized pieces.3. String your fruit onto your skewers in alternating patterns. 4. Place skewers on a baking sheet covered with wax paper.5. After all of your skewers are in place, cover you kabobs with Greek yogurt. Use a

spoon and drizzle the yogurt on top.6. Sprinkle the granola on top of the breakfast kabobs.7. Place in the freezer until frozen. If you make these at night, put them in the

freezer, and they are ready to go by morning.8. Peel off wax paper, and enjoy your delicious on-the-go breakfast!
