GuyPortelli
Internationally renowned sculptor
and local man, Guy Portelli,
is perhaps best known for his
appearance on the Dragon’s
Den TV show a few years ago. However,
there’s an awful lot more to find out
about him, as Staying In & Going Out
magazine discovered in an interview
with him this month. Lisa spoke to Guy...
lisA: Although you are originally
from South Africa, you grew up and
went to school in Tonbridge. Is school the
place where you became inspired to take
up sculpture?
guy: My family moved here when
I was 12. I went to Hugh Christie
Secondary Modern in Tonbridge but I
gave up art at school. However, I was
always passionate about it and did a lot
of art at home, so when I decided to go
to art college, I had a lot of work put
away ‘under the bed’ that I could show.
Schools can’t always cater for everyone’s
interests, but that shouldn’t stop
you from pursuing something you’re
passionate about.
lisA: Was it always
sculpture that you were interested in,
as opposed to other forms of art?
guy: I think of myself as an ideas
person really. As well as sculpting,
I paint, I write books, I have a
film project that I’m working on, I
make guitars… creativity is a way
of thinking. But when I was at art
college, one of the lecturers set a task
about turning an everyday object
into something else. I took a chair
and turned it into a cellist. And the
lecturer recognised something in me
and said: you’re a sculptor.
lisA: You famously appeared in
Dragon’s Den. Did it help you to
achieve you aims to develop your
Pop-Icon Collection – pieces inspired

Richard, has been running marathons
every year since 2002, to raise a total
of £40,000 to date. He says, "That
feeling and the knowledge that the
funds I’m raising are helping children
and young people in Build Africa’s
projects is worth a lifetime of PBs and
it’s what keeps me challenging myself
each year."
wHAt HAppens to tHeMoney?The Build a School programme
works with schools that are in need
of help; which currently operate in
makeshift, unstable structures, have
little or no furniture, inadequate
water and sanitation facilities, and
possess few learning materials. The
charity supports them by helping
to build classrooms and sanitation
facilities, as well as providing a water
supply, desks and textbooks.
With just a small contribution
from you, young people get a
chance to access better education
and healthcare. Sustainability is
at the heart of all Build Africa’s
programmes, as it also works
with parents, teachers and local
communities to enable them to
take responsibility for the on-going
maintenance and improvement
of their school.

KeAne support tHe HospiceAward winning local band Keane
are supporting a new promotional
DVD for the Hospice in The
Weald with their song Somewhere
Only We Know – which they
donated free of charge for the
project. When asked about the
new DVD, the band commented,
"We support the great work
of Hospice in the Weald. It’s a
pleasure to be associated."
The DVD, which gives people
an overview of the Hospice’s
work, shows powerful images of
the services it provides against
uplifting music. Tim Edmunds,
a BAFTA award winning fi lm-
maker, volunteered to make
the DVD, and spent 300 hours
making the 20-minute fi lm. This
footage was then used to make a
4-minute music version.
Rachel Holweger, fund-
raising director, said "The DVD
is a first for Hospice in the
Weald and we hope to show as
many people in the community
as possible. The film covers all
areas of Hospice life and how
people can help it continue to
care for patients, carers and
their families free of charge."

guy Yes, we’re still achieving our
aims. I appeared on Dragon’s Den
because there’s a huge amount of
talent in the world, so sometimes you
have to do something to give yourself
an identity.
lisA: Can you tell us a bit about
your work with sculpture parks?
guy: I helped to set up the
sculpture park at Sausmarez Manor
in Guernsey, and there are many
parks all over the UK. The nearest is
Pashley Manor in Ticehurst, which is
wonderful. Everything they do there
is very professional and shows a great
eye for detail.
lisA: Do you have any new projects
in the pipleline?
guy: Well, I’m a bit like a crazy
scientist in a lab – it just depends
what comes out! I’m always working
on many projects, so it’s hard to know
what will take seed. I always think “aim
high”. I think on a big scale and try to
dream up big projects for global events.
each one can genuinely say “I did that”.
It was amazing to see how the sculpture
became part of their healing process.
lisA: In fact, you do lots of work for
local charities, including the Hospice
in the Weald…
guy: Yes, I’m gathering a group
of friends together to make an art
exhibition at the Hospice in September,
called Lyrical Journeys. It will be a
fund-raising event, but also it’s about
raising the profi le of the Hospice. I’m
working on a project for the Tunbridge
Wells arts festival in September, too.
lisA: And fi nally, in art history, do
you have a favourite piece of sculpture
that you would tell everyone to go and
take a look at?
guy: One artist that stands out is a
friend of mine, Johannes von Stumm.
He makes pieces from different
materials – glass, granite, steel and
wood – and I think they have a really
spiritual quality. Go and take a look!
lisA: Guy, thanks so much for
talking to us – it’s been an inspiration!

lisA: Is there a piece of your own
work that you are especially proud of?
guy: I’m proud of most of my
work, but there’s a sculpture called
Dreamcatcher that I worked on at
Hill View School in Tonbridge. It was
created in memory of a girl called Becky
who was tragically killed in a crash. I
worked with her classmates to create
the piece and they all contributed, so

Dr. Gareth Francis knows
what makes children’s
minds tick – and his
Working Science
workshops are becoming very popular
with parents who are looking for fun
things for kids to do. To give you a
taster, here’s one of Gareth’s great
experiments that you can try at home!
MAKe ice creAM!You can make your own ice cream
at home in 20 minutes and you
don’t need to freeze it in the
freezer – that’s where the
science comes in! Gareth
does this experiment
with groups of up to 20
children and gets good
results most of the time…
some even say it’s the best ice
cream they’ve ever tasted...
you will need:•two bowls (preferably one small
metallic bowl and one larger plastic
container with a lid)
•50ml of fresh double cream
•20ml of fresh milk
•A few drops of food colouring
•A few drops of fl avouring (vanilla,
strawberry a fl avour you have to hand)
•A tea spoon of sugar
•Some ice cubes
•Lots of salt (two or three table
spoons)
MetHod:1. Put your double cream into the
small metallic bowl (a metallic
pudding dish works best). It
needs to be metallic to be a good
heat conductor.
2. Add the milk, food colouring and
fl avouring and sugar, mix it all up,
and set it aside.
3. Put lots of ice in the larger plastic
bowl or container (preferably plastic as
it doesn’t conduct heat very well), and
add lots of salt.
It’s the salt that
makes the
experiment
work.
The salt lowers the freezing
point of ice, meaning that the
temperature of the ice reduces to
around -5°C. This is suffi cient to freeze
the ingredients that you have put in the
metallic bowl. Mix the salt into the ice
and add more for good measure!
4. Once the ice and salt are in, rest
the metallic bowl with ingredients
inside in the ice and put the lid on
your plastic container. Be careful not
to get salt in the ice cream mixture as
it tastes horrible.
5. Leave it 10 minutes and then open
it up to give it a stir, and really scrape
the frozen bits off the bottom of the
inside of the metal bowl, this helps
the rest of the ice cream to freeze
quicker, then put the lid back on for
5 or 10 minutes.
6. Open up stir again. It
should be quite frozen and
ready to eat. If it’s not frozen
add more salt to the ice cubes
in the plastic container and
put your
ice cream
bowl in
again
until it’s
frozen.

Salt doesn’t allow water to freeze
until it is about -5°C, which
therefore reduces the amount of
ice on the roads. The salt hinders
the freezing process of water by
adding a different molecule into
the water and disrupting its
preferred structure!

A FEW OF OUR...
favourite thingsrosemary and lemon lambServes 4-6
If you’re having the family round on Easter Sunday, you could try a traditional roast leg of lamb, but with a little twist for that special occasion. Recommended by Steve Fuller at A. Fuller Butchers in Hawkenbury, this recipe is simple, full of taste, and is a great dish for spring.
you will need� 1 x 1.3kg lean whole lamb leg joint
� 45ml fresh rosemary leaves
� grated zest of 2 lemons
� salt and freshly milled black pepper
� juice of 2 lemons
� 15ml olive oil
For lemon and white wine gravy:
� 25g plain fl our
� 150ml dry white wine
� 450ml pint hot lamb stock
1. Preheat the oven to Gas mark 4-5, 180-190°C, 350-375°F.
2. In a small bowl mix together the rosemary and lemon zest.
3. Place the joint on a chopping board and make several slits over the surface with a sharp knife. Season on both sides and push the rosemary mixture into the slits.
4. Transfer the joint to a metal rack in a large non-stick roasting tin, spoon over the lemon juice. Drizzle with olive oil and open roast, basting occasionally with any meat juices. Cover with foil if browning too quickly. For medium-cooked lamb, cook for 25 minutes per 450g, plus 25 minutes. For well-done lamb, cook for 30 minutes per 450g plus 30 minutes.
5. Remove the joint from the oven, loosely cover with foil and leave to rest for 15-20 minutes. Meanwhile, make the gravy. Spoon off any excess fat from the roasting tin and discard. Place the tin over a medium heat and sprinkle over the fl our. Stir well with a small whisk or spoon, add a little wine and stir again, scraping the base of the pan to release any rich lamb sediment.
6. Add the remaining wine, stock and any meat juices from the lamb. Adjust the seasoning if required and simmer for 8-10 minutes, stirring occasionally. Strain before serving.
AND SERVE...Serve the lamb with seasonal vegetables, such as broccoli and spring cabbage, new potatoes, and the lemon and white wine gravy.

a reincarnation of the brewery with
the same name that operated in the
town during the 1980s. Simon has
been assisted in the venture by Ian
Dormon the owner of the original

Kent hops and British malt, the core
range of cask conditioned beers have
now sold to over 200 pubs across
Kent, East Sussex and into central
London. Royal is a 4.1% Best Bitter
based on the handwritten recipe
notes for the top selling ale of the
original Royal Tunbridge Wells
Brewing Company.

constant production under the
‘Spa Fine Ales’ branding; Royal
Best Bitter, Sovereign Blonde Ale
and Dipper Bitter. One additional
seasonal beer will also been
produced for the Spa Fine Ales
range. Beau Porter was a very
successful winter beer and it is soon
to be replaced with RPA – Royal
Pale Ale.
In addition it is planned to produce
speciality beers to bring further
variety to the brewery’s offerings and
it allows the opportunity for Simon
and his team to dream up new recipes
to excite and delight. In the near
future expect to see Golden Ticket
and BFG available in selected outlets
and at beer festivals across the county
and beyond.
The Royal Tunbridge Wells
Brewing Company has also now
started bottle conditioning their Spa
Fine Ales range of beers. They are
available in 500ml bottles and are
already listed with Majestic, Oddbins
and at Tunbridge Wells Farmers

on complementary
therapies. We start with her
speciality – refl exology…
wHat is refleXology?Refl exology is a complementary
holistic therapy, which aims to treat
the whole person and not just the
symptoms presented. The therapist
applies pressure to various points
on the feet known as ‘refl ex points’,
which correspond to every part of
the body, including organs and
glands, in order to bring about a
state of deep relaxation, stimulate
the body’s own healing processes and
help the body to return to a state of
balance and wellbeing.
Refl exology is not a new therapy,
and has been practised for thousands
of years. There is evidence that as long
ago as 2330BC it was being used in
ancient Egypt as an effective healing
tool. There is also evidence of its use in
India, China, Japan and in the Native
American culture.
Refl exology has an intensely
relaxing effect on the body, mind
and emotions. It has been shown to
alleviate symptoms of a wide range
of conditions, particularly those that
are stress-related or worsened by
stress, for example:
� Headaches,
� Digestive disorders,
� Insomnia and sleeping problems
� Tension
� Hormone imbalances
� Anxiety
� Infertility
� Problems in pregnancy
� Symptom management of long-
term chronic conditions
Refl exology does not claim to
diagnose or cure, but can be very
effective when used alongside
conventional medicine.
wHat to eXPeCtA treatment usually lasts between 30
minutes to an hour. This will include
a consultation with your therapist,
who will ask questions to
determine your past and
present health and lifestyle.
The refl exologist will then
use her hands to apply
pressure to the feet.

training given in approved schools and
colleges to ensure that therapists are
competent and trained to nationally
agreed standards. Members of this
professional organisation must
adhere to a strict code of conduct that
includes being insured and keeping
their knowledge and training up to
date. This allows their members to use
the letters MAR after their name.
