Potato, Olive & Preserved Lemon Tagine

Ingredients

60ml of extra virgin olive oil2 onions, finely sliced4 garlic cloves, finely sliced1 green pepper, finely sliced1 cinnamon stick1 tsp ground turmeric1 tsp ground cumin1 tsp ground coriander1/2 tsp chilli powder100ml of white wine100g of green olives, (large ones) with 1 tsp brine2 preserved lemons, sliced into eighths800g of waxy potatoes, washed and sliced 1.5cm thick1 bay leaf, fresh if possible400ml of vegetable stocksalt3 tbsp of coriander, chopped, plus extra to garnishCrispy chickpeas400g tin of chickpeas, drained1 lemon, zestedsaltpepper

Serves 4

60 minutes

Method

1. Preheat an oven to 220°C/gas mark 7

2. Place the chickpeas on a roasting tray

and toss with olive oil, lemon zest, salt

and pepper. Place in the oven and roast

for 15 minutes, until they start to crisp up

and the skins are blistering, then remove

and set aside

3. Meanwhile, sweat down the onions and

garlic with the spices and a pinch of salt in

the oil for 8 minutes in an ovenproof pan.

Add the green peppers and cook for

another 5 minutes

4. Add the white wine to the pan and reduce

by half

5. Add the olives with the brine, preserved

lemons, potatoes, bay leaf and vegetable

stock. Turn the oven down to 190°C and place

in the oven for 45 minutes or until cooked

through and the potatoes on top are starting

to crisp up a little

6. Stir through some of the chopped coriander

7. Serve topped with more coriander and the

crispy chickpeas

SNEAKY GREENSIf you want to eat more veggies but aren’t

sure of how to go about it, try making the

same dishes you eat regularly but add in

an extra portion of vegetables. This could

be as easy as adding a chopped courgette

to a curry, a pack of baby spinach to a stew,

or grilled red pepper slices to a sandwich.

BLENDSmoothies are the magical way to get a huge

dose of whole foods with minimal effort. Not

only are smoothies delicious, they’re a fast

and convenient way to eat a LOT of whole

foods when you’re on the go.

GARNISH AWAYMany foods that are often used as garnishes

also happen to be really nutritious! For

example, sprinkling your pasta with parsley

will give you a dose of iron, and adding alfalfa

sprouts to your sandwiches will provide an

extra boost of vitamins and minerals (sprouts

are mini nutritional powerhouses!).

BATCH IT UPIf you struggle to find the time to make

healthy food at home, try just cooking a big

batch of an easy dish once a week that will

yield a lot of portions.

SNACK LOVEEnergy balls are as tasty way of getting more

whole foods into your diet, and are so simple

to make. Try blending the following in a

food processor; 1 cup oats or almonds,

10 dates, 3 tbsp coconut oil and 3 tbsp

cacao powder. Roll into balls and store in

the fridge until ready to eat.

GRAINY DAYSTry swapping out white rice for brown rice,

or another whole grain like quinoa or millet.

Similarly, instead of white pasta try brown, or

a pasta made from millet or quinoa. For

noodles, try using those made from

buckwheat or brown rice.

TOOLS FOR THE JOBNever underestimate how much having the

right (and inexpensive) kitchen tools can

make a difference when it comes to getting

more whole foods into your diet. For example,

using a mandolin means you can shred

vegetables like broccoli stems and cabbage

very finely, making them much easy to eat

and digest. They’re also then easier to add to

salads, stews or soups, boosting the overall

nutrient content of these dishes.

Ingredients800g ripe cooking plum, such as Victoria or dessert plums, halved and stoned50g light brown sugar1 orange, finely grated zest 1 tsp ground cinnamon1 tsp plain flour

For the crumble250g plain flour150g butter80g caster sugar80g demerara sugar50g ground almond

MethodHeat the oven to 200C/180C fan/gas 6. Put the plums into the base of a shallow gratin dish about 28cm long. Mix together the sugar, orange zest, cinnamon and flour and sprinkle over the plums. Trickle over 2 tbsp water.

Put all the crumble ingredients into a food processor, and using the pulse button, whizz until the mixture just starts to clump together. Take care not to over process at this stage. Alternatively, rub the butter into the flour using your hands and then stir in the other ingredients.

Scatter the crumble over the plums and bake in the oven for 30–40 mins until golden brown. Leave for about 15 mins before serving with custard or cream.

Our visit to Churchill HQ..

In October this year we were given a guided tour around the Churchill factory in Stoke-on-Trent to see what happens behind the scenes!

We were amazed by the sheer size of the factory and the amount of people that worked there. There were so many different processes the products had to go through. From beginning to end we saw the innovation, attention to detail and work that was put into these products.

The highly technical machines that were used for various processes were just magnificent! it was alsointeresting to see the small details being added to the products which made each one unique such as cup handles being individually stuck on and plates being hand decorated - we got to have a go as well! definitely not as easy as they make it look.

Last but not least, we were taken to the showroom, WOW - it was so slick and everything looked amazing. You could see the quality and excellence in each individual product.

We had a great ‘Churchill experience’ and would highly recommend that you experience it too.
