Like everyone else, we try to recycle wherever possible so it seems appropriate that we should make use of our own waste and use it for the benefi t of the community.”

Winter is the hardest time of year for many living on the breadline. This Christmas,

rising costs of food, fuel and static incomes will force local people into crisis where they cannot aff ord to eat. Thanks to the generosity of local people, Salisbury foodbank gives out nutritionally-balanced food parcels to people in crisis, feeding over 4,000 people last year. At Christmas, Salisbury foodbank also

gives out hampers fi lled with festive food to bring a little joy to people struggling to put food on the table.

Mandi, a local mother of two, said ‘I cried with joy when our foodbank Christmas hamper was delivered’. Despite being a working family, reduced hours and salary had left them unable to make ends meet as the additional costs of winter took their toll. ‘We had to choose

between paying for food, heating or rent’ says Mandi. ‘It’s so hard to tell your two young children that they can’t have any Christmas presents or a dinner like their friends... Salisbury foodbank made our Christmas, it was the best we’ve ever had.’

Bauble Hunt, Craft & Gift Fair

Taking place over the fi rst two weekends in December, this is the fi rst time the Wilton Shopping Village have held an event like this

around Christmas. The aim is to support and help raise funds for Naomi House who will take over one of the vacant retail units and sell table space to small businesses in order to create a Craft & Gift Arcade. The unit will also be decorated to give it a festive feel.

Children’s activities and entertainment will be organised including children’s biscuit decorating, Christmas card-making and tree decoration-making workshops on both Saturdays. On the Sundays there will be a Christmas Bauble Hunt around the shopping village, inviting children to participate with a visit to Father Christmas when they fi nish the treasure trail. There will be a small fee for the Bauble Hunt of £3 per child, but no admittance fee to the whole Christmas event.

Other attractions will be a tea-cup ride and a small children’s roundabout; live music with Jamie Eldridge (coach for EMinor Pop Academy) and the Wilton Youth Band. It is also hoped that Spire FM will attend.

The congregation of St Thomas’s Church in Salisbury is looking forward to staging its Christmas Tree Festival again this year.

Last year Lloyds Bank decided to close their branch in Downton leaving Caroline

and her husband Simon, who live in Downton, thinking what a wonderful idea it would be to open a coffee shop/café serving fantastic food and drink. Caroline’s passion has always been food and after discussing the idea with family, who thought it was a great plan, Penny, Simon’s sister and her husband Chris, also decided to join the venture.

The building was in a fairly run down state so they set about the refurbishment earlier this year whilst learning as much as possible about the catering business. Caroline had a little previous experience having catered for some local private parties and also helping to run the Primary School’s food stall each year at the Cuckoo Fair. Apart from that it was in at the deep end.

The first obstacle was how to master the coffee machine and learn as

much as possible about coffee. It proved to be a fascinating world with different beans from all over the world and they wanted to offer a quality product that people would want to come back for. After much research a bean was settled on which is ethically sourced, organic coffee, 100% Arabica from Papa New Guinea supplied by a local company Caffé Delizia from Fordingbridge.

Next - how to recruit staff. The decision was to put up a sign

in the window now that the refurbishment was

nearly complete but after three days it had to be taken down because there were so many applications.

Eventually after reading through all the

CV’s and inviting people for interviews, a small team

passionate about food, coffee and service was recruited.

A barista was hired to train everyone and after a lot of coffee grinding, milk frothing and tasting everyone eventually felt comfortable with making a coffee. There is however an ongoing programme of training

aimed at improving everyone’s skills and the next one is on Latte art.

The very small kitchen meant that Caroline had to devise a menu that provided succulent food but didn’t require huge preparation. This has been done by providing croissant and pastries in the morning including a Portuguese pastel de nata, which is a custard tart and guaranteed to make you come back for more! There are pre-prepared Paninis, baguettes and sandwiches made to order, bacon ciabatta rolls baked by the New Forest Bakery with the bacon supplied by the butcher in the village, griddled chicken tikka wraps, tortilla, quiche, salad, fantastic home made soup, lovely homemade cakes, fantastic Long Critchel Fruit Bread and much more. New dishes are added most days.

The aim is to provide a fun service, with quality products sourcing as much locally as possible and exceeding customer’s expectations.

Forest organisations are urging people to drive carefully through the New Forest this

winter.

Nigel Matthews, Community and Visitor Services Manager at the New Forest National Park Authority, said: 'This year has got off to a good start. The number of animal accidents across the Open Forest by the end of June was only 40, compared to 64 in the same period last year.

'However, there is usually a rise in accidents over the winter. A lot of ponies wear reflective collars but many don't, so drivers should look out for dark-coloured ponies, which are often more difficult to see. Ponies have no road sense so it is up to the driver to be extra cautious.'

Head Agister Jonathan Gerrelli, who works for the Verderers said: 'It is the law to report all accidents

as soon as possible, or within 24 hours. However over 30 accidents were not reported last year, not only is this distressing for the injured animal, but also for the Agisters, who work long hours in often difficult circumstances.'

If you witness an accident: If you witness or are involved in an accident involving a pony, donkey, cow, pig or sheep, call the Police (999 for an emergency or 101 if it's not an emergency).

Be prepared: Animal accident hotline cards are available from garages and Local Information Points across the New Forest. The hotline cards tell you who to call if you see sick, injured or distressed animals. To stock the cards contact the New Forest National Park Authority at [email protected].

Choose a themeChoosing a theme brings unity to the overall look. It should suit your house and the way your family celebrates the festive season, whether laid-back and relaxed, sophisticated or formal. For some, that might mean a traditional, living fi r tree and a colour theme of red, green and gold. For others, a kitsch fake tree with fl uorescent ornaments; or perhaps a minimal, modern style with pure silver and glass.

Dress the treeStart by winding it with lights, making sure they’re evenly distributed. Next, drape your garlands, again aiming for evenness and an impression of generosity without overloading the tree. On small or slim trees, use slender garlands; on larger trees use heavier, fancier garlands. Last, hang your ornaments, with the largest fi rst, fi lling in around them with smaller ones. Place some nearer the trunk for a sense of depth and interest.

Hang a wreath For some, the making of a family wreath using foraged leaves, fl owers, seeds, nuts and fruit is a signifi cant part of the holiday season. Now’s the time to dig out that special table runner and your best crockery, glassware and cutlery for an eye-catching table display, fi nished off with a dish, tray or platter fi lled with greenery, candles and other festive decorations.

Looking after your treeBuy a tree that’s as fresh as possible. As soon as possible, cut half an inch off the bottom of the trunk, to help it absorb water. Trim away low-down or interior branches that you don’t need. Put the tree in a stand that can hold plenty of water, and never let it run out. Avoid standing the tree in a sunny window or near a radiator.

Hardly a week goes by without a gruesome news report about a

child being bitten by a dog in an apparently unprovoked attack.

Sometimes it’s a family pet who has “turned” for some unknown

reason and often it’s the larger breeds

- Dobermans, German Shepherds and Staff ordshire

Bull Terriers - resulting in some being demonised in the public

mind. But are these dogs really to blame and can a bad dog ever become good?

Dog behaviourist Mike Mullan, who is President of the UK Registry for Canine Behaviour and has more than 50 years working with the animals, is

adamant that there’s no such thing as a bad dog - only bad owners. He says: “The only

exception to that rule is dogs that are taught to fi ght - you’re never going to cure that. But dog behaviour problems can be corrected with kind, positive training, nothing

harsh or negative as this only makes the dog think it has done something wrong. People don’t put

the work into dogs - they make all the mistakes like letting the puppy get on the sofa and the next thing it’s fully grown and covering the sofa in mud and hair. The dog is what you teach it. Too many people expect dogs to be trained by nobody and anybody because they’re a working breed and they think they come like that!

But if you don’t put the eff ort in you’re not going to get the results.”

Mike, who is also vice president of the Doberman Club, says he teaches his dogs to respect him - and he respects them. He has had enormous success with thousands of dogs over the years and believes this is down to a kind but disciplined approach without the need to resourse to physical force.He says: “There is never a reason to smack a dog - you don’t need to use any brute force. Mainly you use your voice, your tone of voice, the quietness, and at the same time use your hands. Also your facial expression is important as dogs are very good at reading this. I can sound angry but if I am smiling my dogs know I’m not really cross.They can read your face and hand gestures but your voice is the most important, as is the use of diff erent tones to call and command.”

Mike says it was the late and highly-respected trainer Roy Hunter who taught him the importance of the voice in dog training. Out walking his Doberman Barbie with Roy, Mike admits to screaming at the top of his voice when his pet refused to come back when he called. He recalls: “Roy turned to me and said, ‘I didn’t know Barbie was deaf.’ He told me to keep my

hands in my pocket and use a very quiet tone to call her back. Of course it worked and she complied. When I had screamed at her she didn’t know what she had done wrong. What we’ve got to remember is that she can hear you at 400 yards without having to raise your voice. Their hearing is brilliant. The more you shout at them the less they’ll come back. When a dog’s close to you, you just need to whisper to them and you’ll see their ears prick up and their heads go to one side because they’re paying attention. It’s much easier to get them to comply if you whisper.”

Mike is only too well aware of the poor image some breeds have but having worked with hundreds of Dobermans, German Shepherds and Staffi es over the years believes the solution is simply better training for dog owners. He wants to see an eight-week training course in place for all owners and each animal micro-chipped by law. Mike adds: “It’s very unfair to blame the dog, it’s always the people who own the dog. If there was a law that owners had to be licensed and trained, most of the people who want these pitbull types wouldn’t bother to put the work in and society would be a safer place. All those people want is a weapon and it’s the poor old dog that suff ers.”

RECIPEMini Christmas Cakes

These delightful mini fruit and nut topped cakes are perfect for giving as a festive foodie

present. Simply wrap in clear cellophane and tie with gold ribbon or place in small gift

boxes.

INGREDIENTS

For the cake

• 250g butter, softened

• 250g dark muscovado sugar

• 4 medium eggs, beaten

• 350g plain fl our

• 2 tsp ground mixed spice

• ½ tsp ground cinnamon

• ½ tsp ground cloves

• Finely grated zest of 1 lemon

• 800g mixed dried fruit

• 100g glace cherries, rinsed, dried and

chopped• 100g chopped mixed nuts

For the decoration

• 750g marzipan

• Icing sugar, for dusting

• 4 tbsp apricot jam, warmed and sieved

• Mixed coloured glace cherries, walnut

halves, Brazil nuts and chopped dried

apricots

METHODPreheat the oven to 150C/300F/gas 2.

Grease and line the base and sides of a 20cm

square cake tin with a double thickness of

greased, greaseproof paper.

Place the butter and sugar in a large bowl and

cream together until pale and fl uffy. Gradually

beat in the eggs. Sift together the fl our and

spices then fold into the creamed mixture. Fold

in the lemon zest, dried fruit, glace cherries and

nuts and mix thoroughly.

Spoon the mixture into the prepared cake tin

and smooth the surface. Use the back of a

metal spoon to make a slight dip in the centre

(this will help to give an even rise). Bake in a

preheated oven for 3¼ - 3 ½ hours or until

fi rm to the touch and a skewer inserted into the

centre of the cake comes out clean. Leave to

cool in the tin.

When the cake is completely cold, use a sharp

knife to cut it into 9 smaller square cakes.

Brush the sides of each cake with a little

apricot jam. Divide the marzipan into 9 pieces.

Dust a surface lightly with icing sugar and roll

each piece out to a strip long enough to go

around each cake. Wrap the strips around the

cakes pinching the ends together to seal. Top

each cake with a selection of cherries, nuts and

apricots. Tie a ribbon around each cake if liked.

MAKES 9 Ready in 4 hours (plus cooling)

This doesn’t necessarily mean brightly coloured cases or novelty items that plug into

laptops’ USB ports, although of course there are plenty of those to choose from; novelty USB items are this decade’s equivalent of hilarious musical socks, and best avoided.

In many cases accessories can make gadgets even more useful. Take the Eye-Fi Connect memory card, for example: it’s a camera memory card with built-in Wi-Fi, so it turns any camera into a connected one for instant uploading. It’s not as expensive as you might expect - at the time of writing a 4GB Eye-Fi Connect X2 is £32.25 on Amazon - and it will genuinely delight any camera fan. Just make sure it’ll fit: Eye-Fi cards are designed to fit in SDHC slots, which you’ll find in most but not all modern cameras.

Another camera favourite is the Gorillapod, an innovative camera tripod that can hang on to almost anything. It’s available for everything from smartphones to enormous digital SLRs, and prices start at around £10. Unlike traditional tripods it doesn’t need to sit on the ground: you can wrap it around lampposts and tree branches, hang it from tables or put it on your head.

There are no shortage of useful accessories for iPads, and one of the best is Logitech’s Ultrathin Keyboard (around £75), which essentially turns an iPad into a small laptop. If you’d rather spend a little less, there are tablet styluses for writing notes and drawing for as little as £6.30 (Griffin’s Apple iPad Stylus),

rising to around £22 for the Pogo Sketch Pro. Such styluses work not just on iPads, but any touchscreen device including rival tablets and smartphones.

As you’ve probably noticed in the shop, Apple owners are particularly well served by accessories: you can’t wander round the supermarket without tripping over a pile of iPhone alarm

clocks and speaker docks. Such items make great presents, but be careful which ones you buy: with the arrival of the iPhone 5 in September, Apple dumped its existing dock connector in favour of a smaller connector called Lightning. Accessories designed for the iPhone 4 and earlier will still work, but they’ll need an expensive adapter for the iPhone 5, updated iPods and updated iPads - and in some cases the cost of the adapter may be more than the cost of the accessory. It’s definitely worth checking which version the person has before spending any money - advice that also applies to very useful multi-device chargers such as the Bluelounge Refresh (£69.99), which can charge multiple gadgets simultaneously.

If you’re still stuck for ideas, there’s always the famous answer to the present for someone who has everything: a box for them to put it all in. Rather than a box we’d recommend a bag, and we particularly like the Unit Portables bags (£59.99 from Muazo.co.uk): while they’re designed to accommodate gadgets, chargers and their accessories, they’re smart, stylish and available in a range of eye-catching colours.

What do you buy the person who hasEVERYTHING?Buying Christmas presents for gadget fans can be difficult, because they don’t tend to wait for special occasions to splash out - but before you reach for the stand-by option of perfume or socks, it’s worth thinking laterally. The answer to the question “what do you buy for the person who has everything?” is often “accessories”.

us some helpful advice for safely surviving the Christmas period with our four-legged friends.

"Pets sometimes take a fancy to Christmas decorations – tinsel, for example, can cause serious intestinal injuries if ingested, and broken glass baubles can cause foot injuries. Wherever possible, pets should be kept away from Christmas trees and decorations, festive plants, presents, batteries, foods and snacks.

species all belong to the Pinaceae family. They are considered to be of low toxicity, but ingestion may cause a mild gastrointestinal upset (vomiting and diarrhoea). However ingestion of plant material could cause a mechanical obstruction if a large amount is ingested including physical injury from sharp needles.

This season often brings a lot of poisoning emergencies. Chocolate poisoning is a common enquiry at this time of the year. The severity of

poisoning depends principally on two things, obviously the amount of chocolate ingested but also the type of chocolate (i.e. milk or dark). The amount of theobromine (a methylxanthine similar to caff eine) in milk and dark chocolate diff ers considerably, which is refl ected in the toxic dose for dogs. Chocolate is also toxic to other species (for example cats, rodents, rabbits etc) but there is currently insuffi cient data available to determine a toxic dose. The common eff ects seen in

chocolate poisoning are vomiting and diarrhea (and coupled

with the fact that theobromine is a diuretic, animals may become severely

dehydrated). Theobromine also directly stimulates both the heart muscle and the nervous system, and therefore some animals may become hyperactive and develop hyperthermia, high blood pressure and often a dangerously high heart rate. Stiff Muscles, tremors and convulsions may also be observed in some extreme cases."

Hopefully all of the above situations can be avoided with a little bit of care and thought, but if you do require
