Thanksgiving is over and Hanukkah, Christmas &New Years are just around the corner!

Before we have our favorite holiday dinners....here is a lite dinner that can be made ahead

of time & even frozen so that inbetween work & shopping you can just pull these out,

defrost them and have a healthy dinner or serve small ones as appetizers.

Salmon Bugers with Green Goddess Dressing

1 pound wild salmon fillet, skinned (use farmed if wild not available)

3 tbls finely chopped red onion

2 tbls chopped cilantro

3/4 tsp peeled chopped ginger

1/4 tsp baking soda

1/4 tsp kosher salt

pinch of pepper

1 tbls olive oil/canola oil

4 tbls Green Goddess dressing...recipe follows.

Using a large chef’s knife, chop the salmon using quick up and down strokes. Do not rock

the knife back and forth, that may cause the salmon to be mushy. The salmon should be

small pieces 1/4” pieces. Place salmon in large bowl. In a separate bowl mix the onion,

cilantro, ginger, soda, salt & pepper. Mix well and then gently fold into the salmon. Divide

mixture into four patties about 1” thick. At this point you can make small patties if being

served as appetizer. Place on a plate and refrigerate for up to 3 hours. At this time, you can

wrap them individually and freeze them for use later on.

Heat the oil over medium heat. Add burgers. If you like Sushi...cook for one minute on

each side to add a bit of crunch, or cook for 2-3 minutes on each side. Serve on a bun with

the dressing spread on it...or on a bed of greens with a dollap of Green Goddess on top.

Green Goddess Dressing

1 cup low fat mayonnaise

1/2 cup low fat sour cream

4 anchovy fillets, rinsed and chopped

3 tbls chopped chives

2 tbls chopped parsley

1 tbls capers rinsed, lightly chopped

2 tbls freshly grated lemon rest

1 1/2 tbls lemon juice

pinch of salt

pinch of pepper

Combine all of the ingredients in a food processor and and combine

until smooth. Store in the fridge until ready to use.

The Holiday Pup Crawl will take place

at Downtown at the Gardens, and prom-

ises to be a fun filled day out with your dog! The event is FREE and will

feature a holiday pet parade, pet entertainment, activities for kids, and

more than 30 pet related businesses - think groomers, boutiques, vets, pet

sitters and dog bakeries. In addition, restaurants at Downtown at the

Gardens will be offering food and drink discounts. Kibbles of Love pet food

bank and Peggy Adams Animal Rescue League will be on site conducting

pet adoptions, doing vaccination, and looking for volunteers and support.
