There are few couples who are more sure of what they want from life than the Browns. After visiting their selected floorplan at GemLife Bribie Island just twice, the couple happily told our Sales Consultant, Michelle Rochow that they were: “Sold!” – much to her immediate shock. Here, Warren and Trish tell us a little more about their journey to finding their fabulous home at GemLife Bribie Island.

How did you find out about us?

Well, Trish was on the computer one morning and said: “I want to move to Bribie!” and my reaction was: “what?!” So we looked around in the area at house and land packages etc. and then my sister – who lives at Ruby Gardens – mentioned that there was an over 50s resort on Bribie Island. We got in the car and followed the signs on the Island to the Sales Office where we met Michelle who showed us around.

We heard you joined us at the open day… did you have a good time?

We did! It really was a fantastic experience even though it was a stinking hot day! I’d unfortunately cracked my hip and was hobbling around, but we still had a great day and there were smiles all around.

cars and thought, “where do we park? Surely all these cars aren’t here for the open day – that’s impossible, there must be something else going on”, but sure enough it was.

We didn’t realise how many residents were already living there, and we saw all the construction going on at the clubhouse and we found it was a lot larger than we expected.

What sealed the deal for your move to GemLife Bribie Island?

As I mentioned earlier, my sister lives at Ruby by Living Gems, and I asked her, “If you had to do this all over again, would you still go into an over 50s lifestyle resort?” and she said: “Yes I would”. My sister has been living there for over ten years and they still love it, so that really assured us in our decision!

Isn’t it beautiful? This show stopping cake is decidedly Easter themed, but you could certainly put a spin on it for other occasions such as Mother’s Day luncheons, baby showers or just for a Sunday get-together.

INGREDIENTS:

For the cake: · 3 cups cake flour, spooned

and levelled · 1 ½ tsp. baking powder · 1/4 cup malted milk powder · 1 tsp. salt · 1 cup canola oil · 1 cup extra light thickened cream,

at room temperature · 1 cup sugar · 1 tsp. pure vanilla extract · 1 tsp. pure coconut extract · 1 large egg plus 2 large egg whites,

at room temperature

· Coconut buttercream · 1/8 tsp. brown gel

food colouring · Cadbury’s Mini Eggs

For the buttercream: · 1 cup unsalted butter,

at room temperature · 1/2 cup of cream of coconut · 6 cups confectioners’ sugar · 1 tsp. pure vanilla extract · Pinch of salt · Blue gel food colouring

For the filo nest: · Tightly roll 6 sheets of filo dough

lengthwise. Very thinly slice. · Transfer to a baking sheet, loosely

separating layers. Spray with cooking spray.

· Bake at 175°c until golden brown, 10-12 minutes. Cool completely.

METHOD:

For the cake: 1. Preheat oven to 175°c. Lightly grease

three 20cm cake pans and line the bottoms with parchment paper. Whisk together flour, baking powder, malt powder and salt in a bowl.

2. Whisk together oil, cream, sugar, vanilla, coconut extract and whole egg in a separate bowl until smooth. Fold in flour mixture just until incorporated. Beat egg whites with an electric mixer on medium-high speed until stiff peaks form, 1-2 minutes. Fold egg whites into batter until just combined.

3. Divide batter among prepared pans. Bake until a toothpick inserted into the centre comes out clean, 18-22 minutes. Cool in pans on a wire rack for 15 minutes, then invert on racks to cool completely.

4. Place one layer of cake on a cake plate and frost top with 1 cup of the prepared coconut buttercream. Repeat two more times. Frost sides with remaining coconut buttercream.

5. Stir together food colouring and 2 drops water in a bowl. Dip the tip of a wide, stiff paintbrush into the mixture. Holding the brush approximately 20cm away from the cake, gently fling the mixture onto iced cake. Repeat for desired effect. Spread the filo nest around the base of the cake, and nestle the Cadbury Mini Eggs within.

For the buttercream: 1. Whilst the cake is cooling, prepare

the buttercream by beating the butter and cream of coconut with an electric mixer on medium speed until smooth, 1-2 minutes.

2. Gradually beat in the sugar. 3. Beat in pure vanilla extract and

a pinch of salt until combined. 4. Beat in blue gel food colouring, one

drop at a time, to desired colour.

Chef's Top Tips

Keeping up to date with our residents is very important here at GemLife, Bribie Island. As a pet friendly resort, we see our animals as part of the family – so in this section of our newsletter, we catch up with our hairier residents.

What type of dog are you?

Bailey: I am a Shih Tzu cross Poodle – a big ball of fluff! Mum says I look more like a Shih Tzu at the moment, but I’ve already had one haircut and I’m only 12 weeks old. My hair just won’t stop growing!

Why are you looking at bit sad today?

Bailey: I’m feeling very sorry for myself today as I’ve just had another injection –

but hopefully it will stop me getting sick when I’m older. Mum and Dad say that I can’t even play outside in case I catch germs! It’s so unfair!

What’s your favourite treat?

Bailey: I LOVE Schmackos!

What are you most looking forward to?

Bailey: I can’t wait to get into the dog run at GemLife Bribie Island! I’ll get to make so many new friends!
