Our island is subjected to a powerful winterwind called the BURA which blows from theVelebit mountain range, as it crossed theAdriatic Sea it picks up and dries sea saltwhich is deposited upon the rocky pastures.This in turn affects the balance of the soilresulting in strains of wild herbs whichcan only found on Pag. The most pre­dominant being a unique strain of Dal­matian sage which is considered bymany to be the gourmet sage �par ex­cellence�.  This aromatic herb formsthe largest part of the sheep�s diet.

Our sheep are completely freerange on small family farms. Wehave 200 sheep of our own andwe buy from local 250 fami­lies. The milking season runsfrom January to June and isdone by hand. The shep­herds deliver milk twicedaily, the milk then goesstraight into storage forproduction the nextday.

From an area of Croatia known as �Ju�ni teren�or southern fields, we buy milk from carefullyselected family cattle farmers in a rich area ofagricultural land stretching 150 km fromKnin to Imotski, along the Bosnia bordertraversing the beautiful mountain range ofDinaric Alps.

The cattle are free range and are movedfrom pasture to pasture through theseasons, only coming inside duringthe harsh winter.

In higher altitude the cows enjoy adiet of alpine grass and subterra­nean clover. Whilst those incoastal farms are subjected towarm Adriatic breezes wherePersian and Alfalfa grassesand clover flourish.

Our cooperates are familyenterprises with whom wework closely to maintainthe highest quality.Each farm cares for 20to 100 cattle of Hol­stein and black andred Simmental.

We buy goat milk from small family farms in theRavni Kotar  Region. Oregano is a predominant

local herb along with Mentha and Sage

Aged 3 months, our premier cowmilk cheese has a hard yellow toorange thick rind which opens to afirm light yellow interior with aslightly buttery aroma.  The tasteis fresh and light but with depthwhere you can find distinctivegrassy undertones with asmooth and flavoursomefinish.

Aged for just 21 days, this white cowmilk cheese has a very thin rind un­der which lies a semi hard texturedinterior with a delightfully sa­voury taste.  The mild strengthmakes Mladi Trapist an idealcheese for those who avoid themore powerful flavours butmake no mistake that thequality is evident is everybite.

Aged for a minimum 14 days ormore mature if requested, our goatmilk cheese has a very discreetaroma and the thin grey/whiterind opens to supple texture witha mild and creamy taste.  A per­fect introduction to goat milkcheese as this does not carrythe typical goat cheesebitterness.

The perfect partner..Riesling or a medium bodied Gra�evina

Aged minimum 4 month, this mixedmilk cheese is a personal creation ofIvan Gligora. Cow milk is largelyat the base with 20% sheep milkfrom the Zadar hinterland. Thedeep yellow rind gives way toan almost granular texturewhich has an intense andcomplex flavour with a spicyfinish.

The perfect partner..aged Riesling or a semi­dry Traminac
