METHOD: Preheat the oven to no higher than 42C or its lowest temperature. Grind the flax seed in a high-powered food processor until it is a fine consistency similar to flour, then transfer it to a bowl and stir in 3 tbsp of water. Leave for 10-15 minutes to swell and turn into an egg substitute. Grind the pecans in the clean food processor until they are fine like flour and add in the rest of the ingredients except for the yoghurt and berries. Blend until the mixture becomes slightly runny, a little less wet than your usual pancake batter. Place large spoonfuls of the batter on to a plate or a baking tray lined with baking paper and smooth them out into round pancake shapes. Place in the oven for approximately an hour or until the tops of the pancakes look dried out. Cover the pancakes with another sheet of baking paper and flip the paper over so the dried tops are now facing down. Leave in the oven to dehydrate for a further 30-60 minutes or until the pancake bases are dry enough for you to peel off the baking paper. But a medical scare prompted her to sort out her diet, turning to puppy love to help shift the pounds. Eight years ago to the day, when I was 23, I was told I had breast cancer. This means I have lived almost a third of my life with cancer and no matter how hard I try, I cannot remember what it was like to not have this stupid disease. But that’s OK, I quite like the life I have now. My gosh, I would not have believed I would be saying that when I heard that news on February 19, 2009. Having cancer for eight years means I’ve spent about 500 hours in hospital, had around 200 needles poked into me, three operations, 35 scans and 35 nailbiting days hearing good or bad news related to my condition. But it has not been all bad. It also means I have spent 2,920 days happy to be alive. I’ve had around 30 awesome holidays and lost count of the amazing people I have met as a result of having cancer. I have shed a few litres of both happy and sad tears and have been tested to my absolute limits. But what matters is that I am still here. It is still my plan to stay here for as long as possible, despite the fact the average survival time after a stage-four breast- cancer diagnosis is two years. Milestone But statistics mean very little when you already very much beat the odds in getting the disease at the age of 23. To hell with stats. So how am I marking this significant milestone? With my family, doing one of my most favourite activities – eating. It may not sound all that exciting to you but to me it’s the mundane things that often mean more. Doing things you love, no matter how big or small, is what is important. It will undoubtedly involve a walk on the beach, too. I live in Cornwall now, after all, and the novelty of living by the sea hasn’t worn off yet. Finding happiness after something as crap as cancer is hard and, in a way, I am lucky to be as strong as I am to deal with the many beyond-rubbish situations I’ve had to deal with. My friend Fearne Cotton has written about happiness in her rather aptly named book Happy, which is out now. She writes about moments when she too has had to dig very deep and get through depression. On the surface you would think she’d have her life together and be blissfully happy. But like all of us, she has tough days. Her book is full of exercises and ways to deal with, well, crap. And guess what? Yours truly has contributed to the book. It was an honour to take part and write about how having cancer taught me what happiness really is. I hope you too can spend this Sunday doing something that makes you happy. EIGHT YEARS? I’M STILL HERE DIET BEFORE DIET AFTER BREAKFAST: Nothing LUNCH: BBQ chicken melt with chips DINNER: Homemade pasta with lots of cheese SNACKS: Sausage roll, cheese or crisps BREAKFAST: Smoked salmon, avocado and poached egg LUNCH: Vegetarian salad with egg, houmous, feta and vegetables DINNER: Maple- glazed salmon with basmati rice and broccoli SNACKS: Apple with no-added- sugar peanut butter, carrots and reduced- fat houmous recently I was the odd one out. Then I went to university and met Pete, who’s now a business manager. “I felt comfortable with him and we ate out a lot. But I was eating as much as he was and I felt miserable about my size. “I lost all my confidence but covered it up by acting bubbly. There were times when Pete would say, ‘I’m taking you out for dinner’ but when he’d arrive, I’d be on the floor crying because I couldn’t find anything to wear.” ‘More than 18,000 Instagram followers’ Following her diabetes scare, Danielle decided she had to address her weight. She says: “My health was suffer- ing, so I joined Weight Watchers. “I started researching the foods I should be avoiding, like my favourites, fatty meals of pasta and bread, and what I should eat instead. I started cooking from scratch lots of stir-fries, fresh fish and veg. “I learnt how beneficial exercise would be for my condition, so I started walking the dog more regularly. “Walking Coco has transformed me from the girl who always avoided doing exercise into some- one who loves being active and misses it whenever it’s not part of their day. “To spur myself on, I also started an Instagram account @girl_on_weightwatchers, where I post pictures of my cooking and a few selfies. Instagram allowed me to connect with other people try- ing to lose weight and hopefully inspire a few people too. “I thought that I might get 50 followers but I now have more than 18,000. “The weight came off and now I feel fantastic. As well as walking the dog, I’ve taken up horse-riding on weekends. “It hasn’t only been a physical change but a mental one too. I’m less self-critical. “In the past I would never try anything new because I had a fear of failure but these days I’m saying yes to so many things. “Now I am grabbing every opportunity I can.” l This story is from Weight Watchers magazine.
