In 1996 SteveBarbazette came to the floral shop, by thenknownasBlitzandCompany,afteramovefromWashington,D.C.,tobenearfamily.Fiveyearslater,heboughtthebusi-nessfromBlitz.

Barbazette sayshewasborn in thebackofaflower truck.Hestartedhiscareer inthefloralbusinessrightoutofhighschool. He was impressed back then at how many people sendflowers.After20years,hehadlearnedallfacetsofrun-ning the shop, from design to delivery. “The owner liked me so I was able to learn a lot,” he says.

NowadaysBarbazetteengagesinonlyabitofdesigncompo-sition, to break up the work day. He credits the talented de-signersonhisstafffortheirspectacularcreations:“Ourstaffhas great tenure, with Kim and Carrie both having been here 20-plus years.” He says this translates into design consistency, creativity and the ability to stay up with current trends.

Nothing takes thechilloutof theeveningairquite like thesmell of ginger, garlic, basil and curry. I walked into Indochine with my dinner companion and we were greeted by a friendly gentleman. The aroma of decidedly exotic spices tempted our taste buds and teased our empty bellies. We were led to our table, passing a scrumptious case of house-made gelato, which I vowed to keep in mind for later. With menus seamlessly placed in our hands, we began to peruse the vast offerings underneath the warm amber light.

The beverage menu presented an array of wine, signature cocktails, martinis and non-alcoholic beverages. We settled on a Lychee Martini and a Thai Kiss. The Lychee Martini was ex-pectedlysweetandtropical infusedwithaslightlyfloralnotefrom the whole lychee fruit resting at the bottom of the glass. The Thai Kiss, by contrast, was the creamy, grown-up version ofatraditionalThaicoffee.Bothdrinkswerebeautifullypre-sented with a single orchid balanced on the rim of each glass. They were perfect accompaniments as we gazed at the peace-ful fountain and pool at the center of the main dining room. The effect was lovely, offering a sense of privacy in a dining room nearly full of dining couples, friends and families.

Beforewefinishedourcocktails,ourappetizersarrived:Fire-cracker Fried Spring Rolls and Curry Vegetable EmpanadaPuffs.Thespringrollsarrivedhotandweredelightfullyspicy,crisp and incredibly meaty. Chili aioli and a sweet chili sauce

were offered on the side for dipping, but the spiciness of the rolls stood alone, and the sauce is only necessary if you prefer a more supple bite. The empanadas were heavenly clouds of aromaticvegetableswrappedinpuffpastry.Atruedelight!

We could have stopped there, satiated by our cocktails and the generously portioned appetizers; however, the exten-sive menu piqued our curiosities. The menu categories in-cluded soups, noodles, salad, curries and more, so we turned to our knowledgeable waitress for recommendations, de-cidingonThreeFlavorWildSalmonSteakandGangCurry.The salmon, atop a bed of stir-fried vegetables, was colorfully adorned with a slightly sweet and spicy sauce, basil, toasted almonds and black and white sesame seeds. The plate could easily be shared between two people, as was the case with the classic red coconut curry, which I paired with tofu.

Dessertwasnottobemissed.WetriedtheMangoStickyRice,which, coated in coconut milk and sprinkled with sesame seeds, was the perfect balance of savory and sweet. We then tasted the creamy, smooth-as-silk, pleasantly tart orange-cranberry gelato. The dessert selection was a gentle end to our lavish meal.

ItwasOkafor’ssonwhopersuadedthetwotoopenares-taurant and her grandmother who inspired the food. In the South, “Madea” is a termof endearment for grandmother.SinceOkafor learnedmostofher cooking techniques fromhergrandma,itseemedfittingtonametherestaurantforher.

There are few Cajun establishments in the Pierce Countyarea,butOkafor’ssuccessisnotduetolackofcompetition.“If the food’s good, they’ll keep coming back,” she said. The food is good, and they do keep coming back.

Cajun fried pickles are a hearty appetizer, accompanied by blue cheese or ranch dressing. Tangy dill slices are tossed in a seasoned breading and served up in generous portions.

BoudinsausagelinksandCajunfriedturkeywingsarealsoonthe menu.

Chunks of chicken, shrimp and Andouille sausage are abun-dant inMadea’s jambalaya.Okafor’s spiceblend iscomplexandearthyandpacks someheat.ThePo-boyshrimpsand-wich combines sweet batter-fried prawns on a crisp roll with a dressing lightly laced with horseradish. Also worth a try are seafoodgumbo,crawfishétouffé,andredbeansandrice.Forless adventurous palates, the menu offers a variety of burgers. Madea’s fare is full-flavored and rich in subtle nuances. Truffledmacaroniandcheeseisanadultversionofachildhoodfavorite.Pastashellsaretossedinalightcreamsauceincorporat-ing three cheeses—parmesan, ricotta and white cheddar—and truffleoil.Thedishcontainsagenerousamountoftheshaved,earthy delicacy.
