2014 IN REVIEW I am very pleased to announce the release of the second issue of “Impression”, SDH Institute’s official newsletter edited and published by our very own students, guided by the SDH staff. As mentioned in the first issue, “Impression” aims to provide the opportunity to our students in various SDH programmes to hone their talents and further develop their areas of interest not only in print expression but in different areas that go beyond publication. As the name implies, therefore, this school organ shall facilitate each student’s desire to contribute to the further enhancement of their personal well-being and that of others around them. We take pride especially in this second issue because for almost one year now, we have had a very active Student Council whose members have been officially instated by the election of the student body. And this issue of Impression is a clear manifestation of the Student Council’s untiring effort to pursue individual passions outside their usual academic duties. I am very pleased to announce the release of the second issue of “Impression”, SDH Institute’s official newsletter edited and published by our very own students, guided by the SDH staff.

As mentioned in the first issue, “Impression” aims to provide the opportunity to our students in various SDH programmes to hone their talents and further develop their areas of interest not only in print expression but in different areas that go beyond publication. Vatel Receptionby Jonatan Hue

The Vatel reception is an annual event held in honour of our Vatel Singapore students. It’s a special event for SDH Institute as SDH represents Vatel Singapore Bachelor’s and Master’s students.

During this event, the guests were all welcomed with free drinks and celebrations provided by our own trained waiters and waitresses from the SDH Diploma course. The diploma students taking part were trained by Mr Isaac Joshua.

Jarit Sharma hosted the event and a live musical performance was given by two talented SDH students; Olga Osmanova, and Bailey Wong.

Former SDH Student Council President Raju Pakalapati, and current SDH Student Council Treasuser Constance Marechel, gave a joint presentation on their experience with Vatel Singapore.

Overall it was a great event that highlighted some of our best and brightest students at SDH Institute and Vatel Singapore.

Exchange Studentsby Constance Marechel

In the Fall of 2014 SDH Institute received several new students that were enlisted in a student exchange program coming from Myanmar. These eight Burmese students from Temasek International College came to Singapore on 29th of September 2014 to study at SDH and experience all that Singapore has to offer.

Last Wednesday on the 1st of October 2014, several student council members of SDH Institute took a stroll with the Burmese students through one of the most well known and sensational Singapore nightlife experiences across Clarke Quay. That night, they were walking through the Clarke Quay Riverside when something weird and fascinating caught their eyes, the LEFTG MAX Reverse Bungee. What’s interesting about this ride is the fact that you would be flung towards the sky with an equivalent speed of 3-5 G-Force and 50-80 Meters high.

Unfortunately, neither the Burmese students nor the student council were courageous enough to participate in this ride. In the end, they wrapped the night up by sailing from Clarke Quay to Raffles Place while looking at the astounding metropolitan scenery in a floating pub for two hours. Meanwhile on the 3rd of October 2014, the student council members also brought the Burmese students to Little India for Deepavali.

Student Council Elections September 2014by Jonatan Hue

On 18th September 2014, SDH institute held an election to select a new student council for the school. There were 12 students who applied and were able to participate in the student council elections. In the end only 6 would be chosen to be in the student council.

Most of the candidates went to the different classes to campaign, and tell students why they should be chosen and how they would make SDH more fun and interesting. This helped them to rally support and votes for themselves. On the voting day, students who had voted received a free Krispy Kreme donut for them to enjoy.

After much debate, talking and convincing, all the votes were tallied up and we came up with the results of the six students who received the most votes. They were Constance Marechel, Shindy Soetanto, Maricel Martinez-Perez, Anu Ilakkiya, Jagrit Sharma, and Jonathan Hue. These six students will be helping in making SDH more interesting and to give the students in SDH a better experience while working on their higher education, and helping to furnish a more friendly environment at SDH.

The SDH Student Council plays an integral part in community life at the school. Members are constantly working to create events for students to enjoy, address concerns that students might have, and ultimately help ensure that everybody feels that they belong to the SDH family.

The new group is a diverse group featuring students from four countries and includes two members who were a part of the pioneering batch of SDH students who have the esteemed honor of being the first ever elected members of the student council. “The elections were certainly one of the best events I’ve seen in my time working in higher education. It was really exciting to see so much energy and passion in one room” noted

senior lecturer and student council mentor Fred Utanes. Fred will be working alongside fellow mentor Anthony D’Amico in guiding the new council members.

After the election to decide the six members of the council the elected students themselves voted amongst each other to select a new President and Vice President. In the end Shindy Soetanto became president, Jagrit Sharma Vice President, Constance Marechel the treasurer and Anu Illakiya the secretary. Jonatan Hue and Maricel Perez as officers, will also play an integral role in the council.

The art of teaching combined with great actions makes it a

rewarding and remarkable lesson. SDH fine dining etiquette was a night to celebrate those experiences. Fine Dining etiquette at Shatec Bistro

was a night when all of our diploma and advanced diploma students met at Recipes, a very popular

bistro by Shatec. All of the students sat together excitedly with SDH Lecturers, staff, among them. The guest of honor was our very dynamic Principal Mr. Chia. The event is held annually by our Food and beverage lecturer Mr. Isaac Joshua who challenges his students to be perfect in their dining etiquette. This is a foundation and something that we are going to need to learn, nurture, and teach in future. The night started with a small introduction by Mr. Isaac and then a speech followed by our guest of honour , Mr. Chia telling students the need for and power of table etiquette. The main course which included the special flambe “beef steak” was mind blowing. The Recipe by Shatec did not let us down at any moment. A very tangy and tempting complementary drink was served with the Food. During the dinner there was a celebration on the account of SDH’s victory on National futsal championship 2014. SDH lecturer Mr. Tony and Our Guest of Honour, Mr. Chia, gave medals and rewards to the futsal team. The room was filled by the spirit of joy and enthusiasm and the whole scene of the evening was just breath taking. It all ended with a round of applause for our school, futsal team and for everyone present on that remarkable night.

The Mexican lunch took place on the 26th of November in Fullerton class,

organized by the students of Advanced Diploma. The

classroom was well decorated

with the colours of Mexico as well as

some postcards and garlands. Some of the delecacies served were a gazpacho (cold tomato soup), a dish of layered tortillas with marinated chicken, black beans and veggies and for dessert, an infused coconut mascarpone cream with mango and banana. The menu was served with a choice of mock tails. The service was good and it was an excellent practical exercise for

the students. Gracias to all of you!

The food was delicious and the ambiance superb. The Chefs did an

excellent job preparing an authentic Mexican dish. A special thank you to Lyra Ong and Lashmi P for preparing such delicious food.

While the food was the highlight, the excellent service didn’t go unnoticed.

The SDH family will definitely be looking forward to another one.

Romantic, Cozy, warm, and relaxing are how most of the people described the first SDH Institute Italian restaurant lunch. With advance diploma student’s Food and Beverage training, Advanced diploma students had brought a classic 3 course Italian dish and service to the next level. With 2 captains, 3 waiters, 2 bar tenders, 2 runners, as well as 3 chefs, the team was ready. Guests were offered a refreshing strawberry

chocolate chip for the starting bites and free flow lemonade.

The food was delicious and the ambiance superb. After the frantic preparation leading up to the first luncheon, it was indeed satisfying to see the calm order with which it was carried out.

Soon after the appetisers had left the pallate, guests were given a choice of mains. They were tomato puree risotto with bbq chicken, and fettuccine with beef goulash.

As they ordered the main course, a clear Italian soup had come to them waiting to be tasted. After finishing their main courses, the team finished off with a stunning cup cake and hot chocolate dessert for the guests to enjoy. In the end we can see the smile from the guests as well as a loud hooray!! The Italian restaurant is a huge success. Once again, everyone is able to reap the rewards of hard work and dilligent preparation.

SDH in the Nation’s Cup Finalsby Jonatan Hue

After a long journey through the competition, team SDH reached

the semifinals.

It was a nerve-racking day for the futsal team of SDH. It was their semifinal match in the competition and they faced NAFA (Nanyang Academy of Fine Arts). So the day had come for them to face their opponent. Right after the referee blew the whistle, the match grew tense. But after just a few minutes had passed, Odie scored an opening goal against NAFA which gave SDH the one goal advantage lead. Then NAFA equalized the score, returning the tension to what was a truely nail-biting match. But the players did not give up and continued to fight hard, and their hard work paid off. In minutes they scored many more goals against NAFA and brought themselves to a 4-1 lead ahead of NAFA. After the break time, team NAFA managed to slip a goal into the SDH net. But then team NAFA made some mistakes which cost them the game.

The game ended with a score of 8-2 and this brought team SDH to the finals where they would be playing against MDIS. Finally, the day that everyone had been waiting for came.

The final match of the competition between a still very new SDH team and MDIS (Management Development Institute Singapore) would commence.

It was a nervous moment for everyone watching and playing. As soon as the kick off happened,

the match became super intense. Students and

teachers who came to support the team cheered to

give them moral support. Then, as the match continued on, goals

were scored left and right.

At half time SDH trailed 1-0 and the mood was somber. By the second

half, team SDH was ahead of team MDIS. But then MDIS managed to score a goal and soon after that

goal, team SDH conceded another goal by an own goal

from one of the players. But the players did not blame anyone or give up. Instead they worked even harder as they really wanted to win the competition. What ensued was a superb match of acrobatics, nail-biting moments, marvellously vocal support and the impressive doggedness of the SDH team.

In the end, it all paid off. The hard work, and sweat that was spilled on the pitch had been worth it for them. They finally achieved the ultimate victory and were crowned the champions. Then there was another award for one of the players on the team when Odie won the award for the top scorer of the competition.

After the match all the players and supporters came together to celebrate their victory and have a good time together. So once again congratulations team SDH on winning the futsal competition 2014. You have done us proud!

Around town

The Golden Boot WinnerAdvanced Diploma student Odie led the tournament in goals scored and his impact on the field was undeniable in leading SDH to the championship. At the end of the tournament Odie received the Golden Boot.

A team of ChampionsThe SDH team was led by students and staff and its members hail from eight countries!

PassionIn the Championship game SDH trailed at halftime and when they took they lead in the second half they never gave it back. Pictured above is Sylvan putting the team ahead with one of his goals in the Final.

ComraderieThe team really worked together well, cheered on by fantastic support from SDH students and staff. A great spirit was enjoyed by all, both on and off the field.

Have you ever been late for class because you had to print an assignment for Mr. Barry? Well, fear no more as the student council has purchased a printer for students’ use in the lounge.

Do you still remember the First Aid course (Sept 13 & Sept 27, 2014) held by Mr. Barry and Event Management students?

Bountiful thanks to Mr. Barry and the company’s kindness. The funds raised from the event were donated to the student council, enabling us to get a new printer which every student can benefit from. After much deliberation on the wisest way to put the money to good use, the student council has used these funds to purchase a brand new printer for the convenience and fulfilling the needs of the SDH students.

Printing is in business and what now? It only costs ten cents!Anyone can participate in helping the actual operation and be recognized! This is your time to have fun and

socialize with the rest of the school. Come and join us to operate the printing service. Together we can! Do approach any member of the

Student Council. We are more than happy to work together with you, whoever you are!

Christmas Partyby Anu Illakiya

Friday, 5th December 2014 SDH early Christmas party, organized by the student council. It was a fun packed party filled with food, candy, games, music and dance for all the SDH students and staff. Christmas

celebrations are never complete without Santa and gifts because Christmas means spreading of joy and exchanging gifts. At the party everyone exchanged their gifts with one another and spread joy around the place. We organized games like musical chairs and balloon bursting, the winners of these games were given special gifts.

In addition, we also had a live performance from one of our institute’s diploma classes, the talented Olga Osmanova from Ukraine, who dazzled us with her rock and roll skills! The end of the year is always a vibrant time, when everyone has the time to unwind and join in the festivities.

In all, it was a fitting conclusion to a year that has seen SDH Institute grow into a stong community of students who show a strong sense of initiative, independance and reliability.

Tourism Boothby Anu Ilakkiya

(Friday,23 January 2015)

A special event which took place at SDH was the Tourism Booth Exhibition by our diploma class. Diploma students promoted various countries of students in the class by setting up a booth which highlighted some of the wonderful things associated with the respective countries.

The countries that were represented were Vietnam, Korea, Singapore, India, Indonesia, Srilanka and Ukraine.

The Booths were decorated with their flags, traditional things and some booths even went the extra mile to serve their traditional food and drinks (Hats off to Ukraine, Sri Lanka, and Korea!) Booth members were in their traditional attire which made for a festive and colourful

addition to the event. Students were organized around the classroom and promoted the top destinations, activities, and scenic places throughout the countries. The Tourism booth was organized and guided by our professional teacher, Mr. Isaac Joshua, SDH.

The event had an especially enjoyable atmosphere because the room was filled with Staff, lecturers, students, and friends of our wonderful institute. Students had to present to their peers, their superiors, and at times to complete

strangers! This was one of a number fun and active events for our students that allow for a great time as well as allowing us to use our creativity to adapt what we learn to the classroom and how we may be able to utilize it in the future. Staff and lecturers went around the room

and not only enjoyed themselves, but judged each booths decorations, appearance, information, and the knowledge each group had about

the country they represented. Sri Lanka won the first place for their tourism booth. First runners up were Korea and second runner ups were Indonesia and Ukraine. Overall it was another fun filled and informative event at SDH!

At the end of the invigorating event, we all got together in a marvellous depiction of who we really are. Using a Korean drum, with an Indian drumb beat, everyone joined in to contribute their own national flavour to what was a very groovy melee of intercultural dance. This is SDH - a dynamic group of committed individuals who work hard, play hard and truely understand the wonders of cross-cultural hospitality!

A spectalcle indeed, ode entirely to the spectacular efforts of all!

Word from the Bear Catby Jagrit Sharma

Mr Barry Hayes had over 30 years of professional experience that spans across our industry, before becoming an educator. In his younger and more adventurous days Barry spent time race sailing and coaching around the UK and Europe. He also coached at the international level at Plas Menai, the renowned National Water-Sports Centre for England and Wales. Barry also completed three Hospitality Management trainee programmes with the Trusthouse Forte group. In 1998 he came to Asia to assist in setting up a water sports company and has stayed on since. In 2001 he led his first of five annual AWT Asian windsurfing tours which was telecasted around the world. In the ten years that followed, Barry managed a group of resorts and hotels in South East Asia, in Indonesia, Vietnam, and Thailand. He then settled down permanently in Singapore, where he was the Director for the group’s resorts in South East Asia. Barry was instrumental in building the $2m water sports Centre at East Coast Park in 2008. In 2009, Barry returned to his passion of lecturing to the future of the hospitality industry. Barry possesses a Master of Science (MSc) in Sports Business Management and a Bachelor of Arts (Honours) degree in combined studies involving tourism, leisure, and business management. Barry is a Senior Lecturer at SDH where he is continuing his studies for a PhD specializing in hospitality research.

Jagrit Sharma: What three pieces of advice would you give to the current hospitality students?

Barry Hayes: 1. Passion - be passionate about something, If you have an interest in F&B, be passionate about it, wines for example; learn as much as you can, at least have something that driving you. 2. Education - Never, ever stop learning, don’t limit your mind at any stage of your life, I learn something new every day. Use your education and to achieve great heights. 3. Travel. - I love travelling, I think one should travel as much as they can to explore themselves and learn different things about cultures and people, and how they are do things in their way in their country. Never travel just for leisure, but for many different purposes for example gaining knowledge.

JS: The difference between life in London and life in Singapore?

BH: When I was growing up in London around

40 years ago thing were pretty rough and hard. London was surrounded and dominated by gangs

and there was influence of drugs and all kinds of other stuff. We were supposed to stay safe and out keep out of all these areas, impossible!! Now most of London is just like Singapore, the heritage and history however is ever lasting and can be seen amongst the new tower blocks. Most of the London’s original populations are now shifting to suburbs; Main London is just a hub

like Singapore’s business district. The traffic and crowd makes it really difficult to drive cars. The heritage and history is the sustaining element for the tourism.

JS: If you could be any animal what would you be?

BH: I will be a pussycat, look aggressive but when you rub my tummy I will always purr and be happy.

JS: If you weren’t the best darn hospitality lecturer what would you be doing and why?

BH: I would be sailing across the world following my passion for travel; I love water and have sailed the North Atlantic Ocean 3 times. I just bought an old yacht for myself I am pretty excited about it. Before the hospitality industry I was coaching many different water sports activates and before that I was in the military so I like action. JS: What’s the best and worst thing about yourself?

BH: One of the best things about me besides being very approachable is I am very, very straightforward and honest, I don’t like cheesy or ambiguous comments, as I prefer transparency. This means you get to know the real truth about what goes on. The worst thing is, I guess, people may think or take me as sometimes being rude but really it’s just that I am straight forward. I can also be very diplomatic.

JS: Date one, marry one, and kill one: Jennifer Lopez, Beyonce and Jennifer Aniston?

BH: Kill them all; I would date my beautiful wife.

The Naked Hotelier Gets Personalby Tan Meng Wee

Rudyard Kipling, who penned ‘The Jungle Book’ for his daughter, once observed that Raffles Hotel was a place where the food was excellent and the rooms were bad. The management promptly used the condensed quote, ‘Feed at Raffles where the food is excellent!’ to promote the hotel as a host of delectable cuisine, while quietly embarked on a renovation plan.

It will be harder to make selective disclosure these days. If your favourite celebrity shares a picture of the suite room that disappoints her, a simple Instagram search can easily reveal that. The voluminous feedback left by fellow travellers on Tripadvisor may contain details that surprise even hotel staff themselves. The blow-by-blow public accounts of how hotel PR department handles customers’ gripes are sometime melodramatic comedies.

It is not inconceivable then that, by the time you step into the hotel lobby, you would have a pretty good idea of what your new host has in store for you. Because it costs very little to put stuff online, and you have access to ubiquitous search devices, you would be able to gather for yourself a copious amount of information, from the menus of the adjoining restaurants to the list of top rated bars within a 1km vicinity. Your expectations would also have already been tempered, no doubt by helpful comments from previous visitors, to be contented with a clean, comfortable room even though it comes advertised as the ‘spectacular luxurious personal haven.’

Having most of its wares exhaustively displayed, the hotel invariably still must find ways to delight you, the honourable guest. You might be fickle-minded, temperamental and transient (save for the mileage driven business travellers), but you do wield a weapon of massive destruction aka social media. Whether a compliment paid by a grateful guest or an insensitive retort from an overworked staff, once captured as a Facebook screenshot, while not necessarily preserved for posterity, it can unleash wide debate and attention. The presentation of the room key (or more likely key card) confers your status: your needs shall be given full attention; your idiosyncrasies tolerated.

The hotel therefore stands as the last bastion of fantasy in reality. Cinemas used to offer that - a darkened two hours for you to indulge in vicarious living. Now movies are watched at home or from a phone, just snacks to munch along while on the go. Yet at a hotel you can still be treated like a king. The porter addresses you with “Sir” or “Ma’am” and stoops to carry your bags. Breakfast is delivered

next to your bed. You can summon your personal chauffeur and arrange for minions (from the business centre) to run your errands.

In an age when hardware is commoditised and no one bats an eye at Eames lounge chairs (genuine or otherwise), personalised service becomes the killer app. Imagine being surprised by a wedding anniversary gift after you checked in, or receiving your favourite mocktail as the welcome drink. With Silicon Valley guys delving deep in analytics tools, that scenario is not far. St Regis leaves Jazz CDs for hotel guests to take home. Soon you may download tunes to remind yourself (and show off to others) that you have spent a great time there. A hotel that manages to do just one thing to make you feel that you are special will deserve the fond memory that you would inevitably share with others. They may even get away with bad rooms.

2014 has been quite the year for both students and staff at SDH Institute. We have enjoyed many new faces, sent off some e x t r a o r d i n a r y graduates, all the while preparing and educating some of the finest minds in the hospitality industry. We have accomplished a lot together this year and have a lot to be excited about in 2015.

This is the second edition of the SDH Student Council Newsletter. We hope to engage and inform our students, staff, and alumni on a more regular basis and feel as if this is the perfect supplement to our SDH Society Facebook page.

In 2014 Senior lecturer Fred Utanes helped form the first ever SDH

Student Council. In March 2014 Raju Pakalapatti became the first Student Council president. He was joined by an exciting and diverse group of students from all over the world. Raju was joined by fellow Indians Vishvesh Rege and Jagrit Sharma, Italian Alessandra Barabino, Indonesian Shindy Soetanto, and local Singaporean Neda Illieva. Together this ambitious group laid the foundation for future student councils.

The Student Council organized a barbecue at East Coast Park in July 2014 which saw nearly a hundred students enjoy a great time. Raju and the first members also designed, and sold nearly 90 SDH t-shirts to the student body. The pioneering batch of students has a lot to take credit for as they have helped spawn what we hope to be a proud, and lengthy tradition at SDH Institute.

In September of 2014 SDH Institute held its first formal Student Council elections. There were twelve candidates, over a hundred voters, and in the end six elected to represent the student body. Shindy

Soetanto, Jagrit Sharma, Constance Marechel, Jonatan Hue, Anu Ilakiya, and Maricel Martinez-Perez took over beginning in September 2014.

The newly elected Student Council has helped organize a number of events, provide services for the student body, and has contributed significantly to the student life here at SDH. Expect even more excitement and joy beginning in 2015. However, as we move forward, it’s been great looking back on a truly memorable year.
