UnbELiEvAbLy it is almost the end of the summer – but on the plus side, it means the fabulous, versatile squash is coming back into season. This soup is one of my favourite things to do with it…
you will need1 large butternut squash, peeled, de-seeded, and chopped into rough cubes2 cloves garlic, crushed1 red chilli (de-seeded)1 tsp ground cumin1 tsp ground coriander1 tsp turmeric1 large onion, peeled and chopped1 litre vegetable stockFreshly ground black pepper 2 tablespoons olive oil
Heat the oil in a large saucepan and add the onion, chilli and butternut squash, stirring frequently until the squash begins to go fluffy around the edges, probably 10 minutes or so.next add the crushed garlic and spices. Cook for another 5 minutes, stirring all the time.Add the stock and simmer for 15-20 minutes, then whizz with a hand blender until smooth. Add black pepper to taste and serve with crusty bread. For a more substantial supper, add a tin of drained chickpeas and partially whizz for texture. Serve with hot naan breads.

the olympics were meant to inspire a generation and it was lovely to see how they made a fantastic impression on my eight-year-old daughter.
During the Games, Amber took great pleasure in cheering on Team GB and watched every sport available on the brilliant TV coverage.
She would wake up every morning, put the TV on, press the red button and decide which events she would watch and which she could record so she didn’t miss any of the action.
We talked at great length one evening when she informed me that at the 2020 Olympics she would be taking part. She decided she would like to compete in the swimming, gymnastics AND the running

want to be.” I loved playing hockey at school. That was my favourite.
It was wonderful to hear her talk about who had won medals and what had happened in that day’s events. She could tell me all the results.
Amber is really looking forward to going back to school so she can take part in some sports clubs.
The Team GB fever really took hold in our house. We are also looking forward to the Paralympics.
I’m pleased the Games have shown children it’s OK to be competitive – and that not everyone wins!
