Jean-Marie began his professional journey under the tutelage of one of the greatest living sommeliers, Gerard Basset MS MW OBE, at Basset’s boutique hotel and restaurant chain, Hotel du Vin. As testament to his incredible talent and commitment to his craft, Jean-Marie became Head Sommelier at Gordon Ramsay’s eponymous three Michelin star restaurant in London, aged just 23.

Jean-Marie then embarked on a tour of the New World, gaining invaluable experience in winemaking and wine retail. In 2012, Jean-Marie joined Sarment, excited by the prospect of empowering Chinese consumers in their enjoyment of wine. His outstanding wine knowledge, talent and ability to communicate with clients make him an invaluable asset to lead Sarment’s expansion in mainland China.

Educated at the L’Etincelle Sommelier School in Nimes, Julien’s talent as a sommelier was spotted early when he was recognized as the Grand Prix M. Chapoutier’s Best Student Sommelier in France in 2006. His career began at the famous three Michelin star Restaurant Guy Savoy in Paris, where he spent 4 years mastering his craft. Julien’s service was rewarded with the chance to transfer to Guy Savoy, Singapore in 2010, where he took up the role of Head Sommelier.

In 2014, Julien decided to return to his studies, enrolling in a Wine & Spirits MBA at Kedge Business School in Bordeaux. With change came opportunity, and he joined Sarment Group as Head Sommelier for South East Asia. Still based in Singapore, Julien’s experience and impeccable standards are prized assets for Sarment as the brand expands across the region.

Sébastien is an internationally recognised sommelier with a wealth of experience at a number of Michelin star restaurants. He started his professional journey at L’Ambroisie, the three Michelin star restaurant in Paris, before moving to the Mandarin Oriental in London, where he also managed the wine collection for Michelin star restaurant Foliage.

After five years of success there, Sébastien moved to Amber at the Landmark Mandarin Oriental in Hong Kong, where he helped the restaurant achieve its two Michelin star rating in 2008 with a stunning wine selection and diligent service. Since 2009, Sébastien has held the position of Head of Wine at Sarment in Hong Kong, delivering a first-class one-on-one service to Sarment Privé members in Asia as well as leading Sarment’s wine strategy.

Educated in London, Ze began his career at one of the world’s most luxurious hotels, The Dorchester, as Assistant Sommelier before completed his training at the British royal family’s hotel-of-choice, The Goring, where he soon became a gifted sommelier.

After 6 years working in London, and fascinated by the wine boom in China, Ze decided to return to Shanghai to launch Waitanyuan, a new project from the Peninsula Hotels group. Following this success, Ze was recruited to manage the Waldorf Astoria’s entire wine collection for their six fine dining restaurants. In 2012, Ze joined Sarment and soon became the key member of the Sarment sommelier team in China. As a full time sommelier, Ze not only ensures Sarment’s customers will receive the best advice possible, but also manages Sarment’s wine collection in mainland China.

李泽曾在英国伦敦留学，并以世界最豪华的酒店之一的Dorchester的助理侍酒师开始其职业生涯。随后他加入英国皇室青睐的The Goring Hotel，并在此完成专业培训，成为一名颇有成就的侍酒师。

在伦敦工作6年后，被中国葡萄酒市场蓬勃发展深深吸引的他选择回到中国上海，加入上海半岛酒店集团，成为酒店旗下项目外滩源的一员。此后，李泽成为希尔顿旗下最高品牌华尔道夫酒店一员，负责管理6个餐厅的所有葡萄酒单。

2012年，李泽加入Sarment，成为Sarment中国侍酒师团队的核心成员。作为一名全职侍酒师，李泽不仅为Sarment客户提供最佳建议，同时还负责Sarment在中国大陆的葡萄酒系列。

Sarment Sommelier – P. R. China

Born in Ningbo in 1988, Swift Hu is a rapidly rising star among Chinese sommeliers with an infectious passion for wine. Having discovered his love of wine at an early age, Swift moved to Shanghai in 2011 to pursue his dream and joined the Sarment team a year later.

The last two years have brought a boon of success for Swift: In 2013, he was crowned champion of the inaugural Loire Valley wine challenge, and achieved third place in the prestigious China National Sommelier Competition. In 2014, Swift continued to accumulate awards apace, winning third place at the Best French Wines Sommelier in China competition, and representing China at the World Young Sommelier Competition in Denmark in September.

Swift has set his sights on competing in more international sommelier competitions, perfecting his knowledge of wine, and helping Sarment with its expansion throughout South-East Asia. His contagious love of wine, commitment and people skills mark Swift out as a much-respected member of the Sarment team.

1988年生于浙江宁波，胡乔飞是中国侍酒师界一颗冉冉升起的新星。他早年就发现了自己对葡萄酒的无限热情，于2011年来到上海，一年后加入Sarment团队，开启其侍酒师生涯。

Protecting the health of the vineyard and maintaining a balance between the different environmental factors that constitute "terroir" is crucial. Different philosophies pertaining to viticultural practices are common in modern day winemaking with sustainable, organic and biodynamic farming methods forming a crucial aspect of everyday life in today's wineries.

S U STA I N A B I L I T Y

Respect for the environment with constant attention and care paid to all different aspects of the vineyard, including the controlling of yields, as well as nurturing the vine without causing undue stress. Synthetic chemicals are sparingly used as a last resort in order to keep the vineyard in the healthiest condition and protect the crop against diseases.

O R G A N I C

Organic vineyards must be certified by a government and/or a non–profit organization in order to standardise the different methods of organic viticulture. No chemicals of any kind are permitted in the vineyard in order to respect and adhere to current organic principles.

B I O DY N A M I C

Biodynamic viticulture follows organic principles, augmented by aspects of astrology. The approach was established by Rudolph Steiner to further enhance the life of the vineyard and follows nine strict principles. A mixture of leaves (compost), plants and other components such as cow's horns are used to help the vineyard cope with potential diseases. A biodynamic calendar is used to reflect the four main components of the vine (flower, fruit, root and leaf) as well as the use of astrological signs and the alignment of the different planets. For a vineyard to be declared biodynamic, it must be certified by the "Demeter" organization, which controls the different steps and stages of the viticultural process.

Located in the Loire Valley, winemaking is still done the traditional way at this fourth generation family wine estate. They cultivate terrific plots of land in the Savigny-en-Véron district by the banks of the River Vienne. for aging for two to three years. The estate produces it iconic red “Les Picasses” which is complex and rustic, sourced from 50 year old vines on the riverbank. The estate makes two more cuvées of red, “Les Barnabés” and “Les Peuilles”, and a limited-quantity white wine from the Chenin grape, Chinon Blanc le Champ-Chenin which are truly wines of singular personality and “Haute Couture”.

The property has been in the hands of the Bordet family since 1590 and is now maintained by 13th generation family member Jean-François Bordet. Often harvesting later than his neighbours in Chablis, Jean-François looks to achieve greater ripeness and, with his extended lees contact for the fermentation, he makes wines with great structure and a sense of lusciousness to them.

The Domaine’s attention to detail and selective picking, harvesting and sorting is a feature of their beautifully structured wines, which do very well with some bottle age and have been highly praised by Burgundy aficionados the world over.

parcel in Chambolle-Musigny 1er Cru Les Amoureuses, but the Domaine’s flagship plot is likely their parcel in the Chambolle-Musigny 1er Cru Les Sentier. Located just a few meters below Bonnes-Mares Grand Cru, Les Sentiers is often the Domaine’s most surprising wine in blind tastings.

The time and effort Serge Groffier gives to the vineyards is paying back handsomely and correspondingly low yields have produced wines of real pedigree and class. For Groffier, like for many top winemakers, nothing should be inflexible in the vinification process, it all depends on the characteristics of the vintage but every year he works with the same precision to craft the finest wines from this superb Domaine.

The Château owns more than 32 hectares, each planted with Chardonnay covering four appellations in Pouilly-Fuissé, Saint Véran, Macon-Villages and Macon-Fuissé. The most famous vineyards of Les Brulés, Les Combettes and Le Clos surround the Château and are bottled as specific cuvées to showcase their unique terroir. The “Tête de Cru” cuvée is a fine example of such with grapes from over 20 distinctive vineyards going into the blend – each vineyard bringing with it the quintessence of the most refined and accomplished white Burgundy. The standout vineyard has to be the monopole “Le Clos” in Pouilly-Fuissé, a site which bestows wines with immense character and lovely minerality.

Yves Cuilleron is something of a Rhône winemaking legend. The “King of Condrieu” has been making wine since taking over the family estate after studying mechanical engineering at university but has warmed to it and now makes some of the very best wines in the region. The Cuilleron family Domaine, located in the hamlet of Verlieu (part of the town of Chavanay), was founded several generations ago in 1920. Yves Cuilleron’s grandfather was the first to bottle wine for commercial purposes in 1947. Yves assumed full ownership and direction of the Domaine in 1987 and, since that time, has built an entirely new facility while at the same time acquiring additional vineyards. the Chapoutier estate is one that nurtures its vineyards with the greatest respect for natural balance and terroir. The family motto, “Fac et Spera” means ‘do and hope’ and this is the mantra by which the winery is now run – one could say it is the spirit or the essence of the winery. Steep rocky vineyards pave the way for Syrah wines with a deep and rich intensity and whites, primarily crafted from the local Marsanne grape that lend refreshing minerality to the palate. The wines’ ability to match with food is at the heart of the philosophy of the winemaking at Maison M. Chapoutier and central to Michel’s winemaking approach.

Beginning with the 2008 vintage, Alain’s son, Maxime Graillot (also of Domaine des Lises & Equis) has taken over from his well-respected father to run both of their Domaines. The wines Maxime makes under his father’s label are produced as they always have been – using stems during the vinification and no new oak for the élevage – and are similarly exuberant and expressive, yet perhaps with a bit more size and fruit power to them.

Yields are kept low to maintain the concentration found in each bottle of Domaine de Montvac; the wine benefits from the decades of experience accrued by winemaker Cécile Dusserre, who was traditionally trained by her father in 1992. Subject to the Mistral winds, which cool the Rhône Valley by a few degrees for a third of the year, Cécile’s small plot of vines is lined with pine trees that help protect vines from Mistral gusts. While these cooler temperatures help keep the vines free of humidity, and thereby free of disease, they also help concentrate the grapes. Embellishing the nature of the local climate, Cécile harvests when the grapes are slightly overripe.

Château de la Font du Loup literally translates into “Fountain of the Wolf”. The name, according to local folklore, dates back to a time when wolves drank from the various springs located on the property. of white wine while the remaining 18.5 hectares are used for planting grapes suited for red Châteauneuf-du-Pape wine. This includes a 4-hectare parcel of old vine Grenache that was purchased in 1992. The vineyards are organically farmed.

The wines are certainly not in the heavy alcoholic style of some Châteauneuf-du-Pape. In fact, they bear more similarity to the wines of Burgundy in terms of the mellowness and delicacy of their red fruit aromas.

Now into the third generation of the family, the winery represents a mosaic of distinctive plots that bring a rich identity and a deep complexity to the wines. All told the Usseglio family commands a respect in the region thanks to their biodynamic farming efforts and their winemaking prowess.

Cultivating 17.5 hectares of vines that average 60 years-old, just about half the vineyards are dedicated to the production of Châteauneuf-du-Pape white wine whilst the remaining portion is planted with Grenache, Mourvedre, Syrah and Cinsault. The regular Châteauneuf-du-Pape is one of the best examples in the appellation, while the Cuvée Vieilles Vignes is a powerful and concentrated wine and is now one of the most sought after deluxe cuvées in Châteauneuf.

My father was very ambitious and the concept of quality was always something he felt strongly about”.

But through innovation and perseverance, the Scavino family is one winery that has flourished because of the pioneering nature of these innovative winemakers that have transformed the way in which wines are made today in Barolo.

Federico attended winemaking school, where he acquired the technical knowledge and dedication to tend the vineyards and care for the family.

In 2002, Federico took over the company unifying all the land that originally belonged to his grandfather and restarted winemaking and bottling the wines made from their grapes. The wine they produce is the manifestation of the passion that goes into hand-crafting each and every bottle from this small 14 hectare estate.

The Roagna have been winemakers in the village of Barbaresco since the mid 1800s. It was Giovanni and his wife Maria who moved their house and winery to its present location in the hamlet of Paglieri, which is also home to the famous Pajé vineyard. This plot is the foundation of the estate, which in all covers 6.5 hectares in Barbaresco. Alfredo and Luca, father and son, now take care of the property and in 1990 they were able to purchase two slices of renowned vineyard sites of Castiglione Falletto in Barolo, la Pira and le Rocche. All of the vines in Barbaresco and Barolo are worked organically, no herbicides have ever been

is to produce, in the simplest possible way, wines that are an expression of the place in which they are cultivated.

The terraced vineyards allow the dominant red grape varieties of Sangiovese, Merlot and Syrah to be cultivated at Valgiano which combine to produce the estate’s two red wines – Palistorti Rosso and the estate’s flagship wine – “Tenuta di Valgiano Rosso”. White varieties include Vermentino, Trebbiano, Malvasia, Chardonnay and Sauvignon Blanc which go into Valgiano’s white Palistorti Bianco.

The Podernuovo estate was bought in 2004 by Paolo and Giovanni Bulgari and is located in the southern tip of Tuscany, positioned within a triangle between Umbria and Lazio. but also one of the most highly respected producers, making only 10,000 cases of wine per year. It can trace its presence in the region back to the early 1800s, but a renewed passion for creating great wines with indigenous grape varieties started in 1988 with Guiseppe Benanti, who has dedicated many years to studying local vineyards and varietals. The result is a staggering achievement of unique and complex wines; some coming from vines aged over 100 years-old.

In 2004, to fulfill his thirst for understanding wine, Franck Massard, who was voted the UK’s Best Sommelier in 1996, along with a long time friend purchased a small vineyard in Spain’s Priorat region. The region was already well known internationally but with a huge spectrum of styles and qualities. The duo started with a tiny project crafting just 500 bottles that they called “Huellas”; meaning fingerprints – Franck actually put his own fingerprint on the label – to echo the hand-crafted labour that was involved.

Thanks to some knowledgeable and skilful people who helped them along the way, such as the Cusiner family in 2007 and

Dominique Roujou de Boubée in 2009, the winery has achieved an altogether different class of top-quality wine. This is evident in the numerous listings in top restaurants worldwide and the 92 point Robert Parker rating.

However, Franck feels that they are only starting the adventure, with more work to do in fine-tuning their care of the vines and adapting more judiciously their winemaking decisions according to each vintage. The goal is to highlight that elusive quality of the Priorat that is “restrained power and minerality” and show the underlying tones of pepper and violet so rarely encountered but that lift Franck Massard wines to another level.

Antonio Ruperez, Javier Ruperez, Juan Martín del Hoyo and Marcos Espinel. The name Rudeles comes from the first letters of the names of the four owners: Ruperez, del Hoyo and Espinel. Cultivating Tempranillo, Grenache and Albillo, the winery has the distinction of being the only estate growing one hundred year-old Grenache in the region, which produces rich, complex and aromatic yet elegant Spanish wines.

her own winery in 2001 with the aim of bringing out the best of Bairrada by experimenting with small plots and parcels, vinifying small cuvées and focusing on the stunning local grape varieties. She is one of the founders of the “Baga Friends”, a society aiming to keep and maintain Baga vineyards as an essential part of Portugal’s rich heritage. She likens this notoriously challenging red variety to Pinot Noir in temperament, using it to make wines that are full-bodied, spicy, rich in tannins and absolutely delicious.

An unusual characteristic of the 8 hectares of Cabernet Sauvignon, Merlot, Petit Verdot and Cabernet Franc (and the 6.5 hectares of Chardonnay, Sauvignon Blanc and Semillon) is that they are not irrigated, leaving the vines to struggle enough for the fruit to reach optimum levels of intensity. Intervention is kept to a minimum and traditional techniques are combined with the latest technology.
