ROUGE TOMATE CHELSEA BEVERAGE LIST If you are what you eat, you are also what you drink. And if today we are paying more and more attention to the origin of our food, we may still overlook where our beverages come from… At Rouge Tomate Chelsea, the core of our program is to offer our guest tasty, complex, exciting wines, spirits, liquors, beers, teas, coffees and any liquid you can dream of drinking from the most careful, dedicated, responsible producers. Behind the certifications and labels, we are looking to create human relationships with all the farmers we are working with – because, at the end, all of our producers are first and foremost farmers – supporting an idea of farming respectful of the future. Protection of the biodiversity, observation of the natural cycles, enlightened agriculture without the abuse of synthetic chemicals, human-sized farms… these allow our producers to vinify, brew, and distill complex, flavorful ingredients with the fewest additives possible, and to encapsulate a real transparency of place, time and culture in a glass of wine or a cup of tea. This is what we are looking for. By our choices, we are engaged citizens of this world, and it is not only good for the planet, it is also good for us, and good for the palate! ROUGE TOMATE CHELSEA

BEVERAGE LIST

If you are what you eat, you are also what you drink. And if today we are paying

more and more attention to the origin of our food, we may still overlook where

our beverages come from… At Rouge Tomate Chelsea, the core of our program is

to offer our guest tasty, complex, exciting wines, spirits, liquors, beers, teas, coffees

and any liquid you can dream of drinking from the most careful, dedicated,

responsible producers. Behind the certifications and labels, we are looking to

create human relationships with all the farmers we are working with – because, at

the end, all of our producers are first and foremost farmers – supporting an idea of

farming respectful of the future. Protection of the biodiversity, observation of the

natural cycles, enlightened agriculture without the abuse of synthetic chemicals,

human-sized farms… these allow our producers to vinify, brew, and distill complex,

flavorful ingredients with the fewest additives possible, and to encapsulate a real

transparency of place, time and culture in a glass of wine or a cup of tea. This is

what we are looking for. By our choices, we are engaged citizens of this world, and

it is not only good for the planet, it is also good for us, and good for the palate!

The whole team is excited to share all of these stories, and to cheers with you.

SAKE

NV Saiya Shuzou, “Yuki No Bosha”, Yamahai Junmai, Akita-ken 55 Slightly gamey, with hints of roasted nuts and honey.

NV Shichi Hon Yari, Shizuku Junmai Daiginjo, Shiga-ken 125

This is a family-run brewery managed by the 15th generation. A special product made from free-run, or “drop” sake. Light and ethereal, with layers of freshness and complexity woven together.

1999 Inoue Gomei, “Biden,” Junmai Yamahai Koshu, Fukuoka-ken Unique because of its age, this exhibits savory caramel flavors and is the true definition of umami.

14/ ---

NV Fukuchiyo Shuzo, “Nabeshima”, Junmai Ginjo, Saga-ken Named in honour of a prominent samurai clan that dominated the area

through the Edo Period. A “slow & low” fermentation preserves freshness,

but still allows for some opulence.

8 / 55

2002 Uehara Shuzo, “Taiko No Izanai”, Yamahai Muroka Nama

Genshu Shinsosui-jikomi Shizenshu Koshu, Shiga-ken

70

With organic rice and no added yeast, this is a return to ultra-traditional brewing. There is a beautiful, enormous wood press and an equally regal wooden rice

steamer. It was made with seawater, and needed more than 13 years before the salt softened.

WINES BY THE GLASS

SPARKLING 2011 Pet’Nat, Chardonnay / Viognier, Andrea Calek, “Blonde”, Rhône,

France Fresh & lively low-intervention bubbles, floral with subtle biscuit hints, from

a Czech transplant crafting natural wines & living in a trailer in his vines.

23

Burgundy, France

13

In a forgotten corner of Burgundy, old vines of melon are flourishing: dry, briny, oyster-perfect.

2011

Mtsvane, Niki Antadze, Kakheti Republic of Georgia A window onto the wine of 7,000 years ago, aged in buried clay qvevri on

the skins with no additives: savory, white tea, clove, cheese rind & gold fruit.

15

2011 Jacquère, Jean-Yves Péron, “La Petite Robe”, Savoie, France

sharp, uncomprising wines on the slopes of the Alps. .

17

VERMOUTH ON TAP 2016 “Apple Mint”, Uncouth Vermouth, Red Hook / Saugerties, New

York (3 oz) 7

Kind of like a 50 / 50 gin martini turned into wine. Apple is the variety of mint

that gives its green, fresh character to this bone-dry vermouth.

From the shores of Seneca Lake, Kim and Debra are taking care of their

vineyard like a garden, to make genuine, transparent wine
