spruced up seasonal vegChristmas goes hand-in-hand with British veg. We trial, test and taste until we f ind the most f lavoursome varieties to grow. Here’s how to make them the star of your festive feast.
brussels sprouts £2.49/1kgWithout the artificial sprays that protect conventionally-grown brussels, our organic ones may not look cosmetically perfect. They’re back-breaking to pick by hand, too. But because we grow them ever-so-slowly, they tend to taste better; so we roll our sleeves up, think of Christmas dinner and persevere. You’ll get them field-fresh, still on the stalk, wherever possible.
Soggy, overcooked sprouts are about as unappealing as veg gets. If you must cook them in water, avoid boiling and steam them as briefly as possible. Even better, Jane Baxter, head chef in our Field Kitchen restaurant, recommends stir frying them so they keep their crunch (see recipe over the page).
carrots £1.45/1kgOur winter crop is harvested in late October and November and kept in cold store for the winter. Unless the skins have become discoloured, there should be
no need to get out your peeler - a good scrub at the sink should do.
As with sprouts, Jane steers clear of boiling carrots and advises roasting or cooking them with a little butter instead. She also serves a very moreish dish of sweet honey-glazed carrots. Put chopped carrots into a pan with a knob of butter, a tablespoon of honey and a splash of water. Simmer until tender, add some drops of balsamic vinegar, a sprinkling of chopped parsley and serve.
parsnips £2.25/1kgParsnips can be ready by September, but we tend to wait until the first frosts to start harvesting them. Cold weather causes some of the starch in the root to convert to sugar and greatly improves the flavour.
For a new take on roasted parsnips, parboil, then roll them in a mixture of flour and parmesan. Season well and roast in the oven with the rest of your Christmas dinner.

potatoes £1.45/1kgWe harvest our main-crop varieties in September and October to go into store for use through the winter. Valor is the best-keeping variety and is good for roasting and mash. If your fellow diners demand roast potatoes with their Christmas meal, you could try our version with lemon and garlic, to introduce some different flavours to the festive table.
red cabbage £1.45Braising brings out the sweet, earthy flavour of red cabbage and is a very easy way of cooking it. Fill a heavy-bottomed pan with a mixture of finely shredded red cabbage, two chopped dessert apples, a chopped onion, 50g butter and a tablespoon and a half of dark soft brown sugar and balsamic vinegar. Season well and simmer gently over a low heat for two hours until rich and glossy. It makes a traditional accompaniment to game and roast meat - good with your turkey on Christmas Day.

3 tbsp sunflower oil2 shallots or 1 onion, finely chopped2 garlic cloves, finely chopped1 chilli, finely chopped600g brussels sprouts, finely shredded4cm piece of fresh ginger, cut into very fine strips4cm piece crystallised stem ginger, cut into very fine stripssalt + pepper
Heat the oil in a wok, add the shallots or onion, plus the garlic and chilli, and fry quickly for about 2 mins, without browning. Add the shredded sprouts and the fresh and crystallised ginger. Cook, stirring constantly, for 2 mins. Add 3 tablespoons of water, cover and steam for 3 mins. Season with salt and pepper to taste and serve.

lemon + garlic roast potatoes serves 4
800-900g potatoes, cut into wedges (peeling optional) 200ml olive oil 70ml veg or chicken stock 3-4 cloves garlic, finely sliced juice of 2 lemons 2 tsp chopped fresh oregano or rosemary leaves salt + pepper
Preheat the oven to 220̊ C. Place the potatoes in a single layer in a deep roasting tray. Mix the other ingredients together and pour over the potatoes. Bake for 25 mins then turn the potatoes and baste. Bake for another 30 mins or until brown and sticky. Taste and season with more salt and pepper as needed and another squeeze of fresh lemon juice.

christmas on our farms
Guy Watson, Wash FarmGuy spent a lot of the last 12 months enthusing people around the country about the joys of cooking with seasonal produce. He also saw his travelling restaurant dream come to life. In between all this, Guy returned to Devon for some downtime, to nurture his beloved globe artichokes - the most successful crop he has ever grown, thanks to its prime spot behind the Field Kitchen and much cossetting.
Peter + Jo-ann Richardson, Home FarmThe year started well, although bitterly cold, with Peter’s homegrown brassicas popular with customers and pigeons alike. Then, April saw Home Farm’s first ever five acre crop of asparagus spring up. It was so good, the team threw an asparagus evening to celebrate the harvest. Things turned nasty late
summer, when Peter had a run-in with the potato harvester and ended up in hospital and out of action. Never a dull moment!
John Walton, Stockley FarmThis year, John’s team planted up a new area for veg growing and tried out some different varieties, including round courgettes, which went down a storm. All John wants for Christmas is for the cows not to escape down the lane on Christmas morning, as they did last year when he went in to milk them.
It’s been an eventful year around the farms, from delivering vegboxes through the snow in January and our French farm filling the ‘hungry gap’ this spring, to the summer travels of our restaurant-in-a-yurt and a wonderfully plentiful autumn harvest.

Nigel Venni, Sacrewell FarmBack in February, the team and some green-fingered locals planted 1,500 trees next to the vegbox barn, to increase the biodiversity and encourage more wildlife to the farm. 2010 was also the year Sacrewell enjoyed its first full harvest of crops. Onions grow particularly well, thanks to the dry climate and mixed soil.
Chris Wakefield, Upper Norton FarmEarly this year, the team planted 20,000 herb plants, to create one of Hampshire’s largest herb gardens. Outdoor herbs include mint, thyme, chives and oregano, while their less
hardy cousins basil, coriander and chillies are nurtured in
polytunnels.

France This spring, we harvested the first crops on our French farm in the Vendée, to help bridge the hungry gap when
very few crops are ready in the UK. The favourable light levels in France gave us lettuces, spinach, summer turnips and beans about six weeks sooner than we’d normally have them. Look out for more crops next year.
Paul Ward, Mole End Farm, KentThe cold winter and early summer meant this year’s English apples were the tastiest they’ve been for years. Paul’s apples will be stored right through the winter to keep us going until March.
