A Swedish twist for EdinburghNewly opened cafe/bar Hemma on Holyrood Road is named after the Swedish term to feelat home, or “hame” for us Scots. The Swedish take on things runs right through into thedecor of the bar, the food offerings and the range of ciders and lager on draught. Duringthe day Hemma is more like a chilled out cafe where you can order open sandwiches andsalads and some traditional Swedish inspired dishes including smoked trout. At night thereare live DJs and as the bar spirals over two floors there is plenty of space for larger groups, and they also hire out the top floor for private parties and events. If you asked any of myfriends what ciders theywere drinking five yearsago, they would definitelyhave named a ciderbrand that came in theform of a litre bottle, orthey would havepreferred a BacardiBreezer or a blue WKD.Nowadays, though youcould argue that ciderhas taken the placeof these ready todrink brands, as it'snow a fashionablechoice and popularin clubs and stylebars, not just in beergardens. So why the growing interest inCider? Well for one, brandslike Kopparberg and Bulmersare coming up with innovativemarketing campaigns and TVadverts that are definitelycatching people's attention, and enticing their taste buds.Plus the versatility of cider hascome along way, with morebrands than ever beforeadding flavour variants to theirportfolio. I remember tryingKopparberg Pear cider in theObservatory in Glasgow whenit first launched, and since thenthey have added Strawberryand Lime, Apple, Mixed Fruit,Elder flower and Lime, andtheir most recent addition,Naked Apple. A new brandthat only launched last yearcalled Briska is also followingthe flavour trend, offering threevariants, Apple, Pear andPomegranate.Fraser McIlwraith is operationsbar manager for bars likeScotts in Largs, Lido in Troonand Elliots in Prestwick. Hesaid,“What a difference to a fewyears ago. The market has

been blown wide open by all ofthe new brand and flavourchoices out there. The biggestdifference is that more womenand younger people areordering it at the bar.” StephenMcLaren, assistant manager atThe Pear Tree in Edinburgh, has also noticed a big swingtowards cider, both bottled anddraught. He told Repertoire“Kopparberg Pear cider ispopular in here, simplybecause it tastes great. Whatthe flavours have done for thecategory has made it less of asummer drink as it’s creepinginto our customer’s repertoiresover the winter months too.The more traditional ciders arealso picking up with a youngergeneration of drinkers –especially Bulmers.”So what brands should you belooking out for? Well, Bulmersfans will be pleased to learnthat there is a new variantcalled Bulmers Vintage whichis now available in Scotland. You should also keep youreyes peeled for Briska, the

new Swedish ciderwhich you will find inbars like Edinburgh's

Bond No.9, TheOuthouse and Drop Bar in

Glasgow and also at their“Garden of Sweden”bar at this year'sEdinburgh festival inAugust. Draughtcider leader,Strongbow hasalso announcedsome excitingnews with thelaunch of

Strongbow Pear, which will be available on

draught from July 2012. Thepear variant has a distinctivearoma, which is low insweetness and easy to drink.Look out for the distinctive barfont and glassware that will belanding in your favourite bars.Pear really does seem to bethe flavour of the moment asStella Artois Cidre are alsolaunching a bottled pear variantthis Summer as well asGaymers who have launchedtwo new flavours, GaymersPear with Raspberry andGaymers Pear with Cherry andApple. Mentioned earlier wasNaked Apple, the new variantfrom Kopparberg which isdevoid of all other fruits (exceptapple) and promises to appealto those looking for a cleancrisp taste. You may havespotted Kopparberg's new‘ün-established since 1882advert on TV and billboards. Aspart of this campaign, thebrand has also pioneered aground breaking partnershipwith Spotify and Last.fm thatsees these two musicplatforms working together witha brand for the very first time. You can deny that it’s certainlyall go on the cider scene.

Girls out there who aren't shy of a festivalor two will appreciate just howuncomfortable using portaloos can be,

and even worse, having to queue when youreally, really need to go! I have been there andlet me tell you it is not pleasant, and although Ihave seen many intoxicated girls lift theirdrawers and have a pee in the middle of thefield (usually while their equally drunk friend triesto hide their dignity with a scarf) I will never havea pee in the open air, no matter how much Ineed to go!The difficulty of being able to use the ladiesroom at a festival spurredon the creation of theShewee. Described asevery girl's best friend forthe festival months, theShewee is portable, disposable and althoughit can be slightlyundignified to use, itbeats having to stand inlong queues just to begreeted by the sight andsmell of the inside of aportaloo, whichsometimes no amount ofbaby wipes will help. Myfirst experience with a Shewee or “pee mate”asthey are sometimes called was somewhatsurreal, and an almost liberating experience I willnever forget. I was tactfully spotted by a peemate sales girl who must have spotted mystruggle whilst half dancing, half grimacing in abid not to wee my pants while standing in thelongest queue in portaloo history. She pouncedon me, pee mate at the ready and led mebehind the portaloos to what looked like ahidden hut. I'm thinking where is she taking me?But I was so desperate to wee I just didn't care, and if there was a loo in this hut then just getme in there, with whatever this pee matecontraption was that I had just spent my lastfiver on. I finally get into the hut, and at first myconcentration on not weeing my pants in frontof my newly found pee mate friends stoppedme from noticing that there was not a toilet insight, but instead plenty of urinals. The sight ofabout thirty girls all standing up taking a pee intoa urinal with a perfect aim will never leave me!Some of these girls were clearly pros, whereasme, a pee mate virgin, had absolutely no idea

how the thing worked or how to get it out thepacket. I know girls tend to bond in the toilet, but having a complete stranger show me howto adjust my shorts and pee down this funnel, whilst aiming into a urinal was one of the mostbizarre experiences I have ever shared in thegirls loos. I was so desperate for the loo now Iwas past caring, and if everyone else wasdoing it then what was the harm? My new peemate friend actually clapped with excitement(clearly she'd had a few ciders)...and spurredme on whilst it felt like I had the longest pee inhistory in front of my over excited audience. I

was just a tad mortifiedthat I was peeing in frontof a sea of strangers, faces, but the relief wasincredible, and once youget over the idea ofpeeing standing up youthink this is not so bad!No smelly portaloo, notrying to balance halfpissed while hoveringover a disgusting toiletseat, and best of all noqueues! My new peemate friend then huggedout my first urinal

experience before going back to join thefestival, leaving me feeling part violated, partexhilarated! Thinking I could get used to thispee mate experience I head back to my friendsto tell them about my exciting news and newtalent for vertical urinating. However, I was notalone in my excitement, as my friends hasclearly discovered the pee mate too. They hadbeen led to another secret hut, clearly this peemate experience was more commonknowledge than we realised, but that didn't stopus telling every girl we met about it. I tell you onething, It makes you jealous of all males whodon't appreciate the convenience of being ableto jump into the fenced off urinal areas withoutso much as a thought. So, if like me you are heading to a festival thisyear then look out for the pee mate huts, andavoid the portaloos from hell. I would stronglyrecommend that if it's your first time don't wearshorts like I did, and I would definitely notrecommend trying it sober! You need somedutch courage for your first Shewee girls! Soget your pee mates at the ready, happy peeing!

Girls get yourshewee on!

Did you ever think you would end up selling beer for a living? No way, not a chance. Iactually always wanted to be anews reader, would youbelieve? I loved the idea ofbeing on the television ordoing any kind of presenting. Istudied drama and dance so itstems from that, and isprobably why I love going outto speak to people to tell themall about my products atWEST...the performance sideof me is still there.

So how did you get into working for a drinks company?I actually did a businessdegree at StrathclydeUniversity, but I later realisedthat the jobs available at theother side of University weremore about pencil pushingand less about out meetingpeople, which just isn't me. Iwent to Michael Pagerecruitment where anopportunity came up for asales role at Waverley Tbs. I’mglad I took the job as I had an

So what is your working daylike on a regular basis? My Job is to look after thesales side of the business atWEST Brewery. I look at waysto develop our product salesboth in house and out. I amresponsible for all our keycustomers so I arrange regularmeetings with the bar ownersand make sure they aregetting a great service. It isalso my job to set up newaccounts and have ourproducts in as many bars aspossible, so I have to keep myeyes peeled for new baropenings and opportunities. Most people will probablyknow our flagship brand StMungos, but we have justlaunched our new lager calledWEST 4, which is the only 4%premium lager in Scotland.

What do you love most aboutyour job, and do you have a

formula to do well? What's lovely is being able togrow up with my customersand to share experiences withthem. I had my wee boyNathan 4 years ago, and I cantalk to customers about myfamily and their kids too. Thepeople I deal with havedeveloped too – for instance Imight have dealt with themwhen they were bartendersand now they own three or fourpubs! Having a goodrelationship with your customeris so important! My winningformula is to value loyalty andintegrity, as honesty will get youfar. What made you move toWEST Brewery?I already knew the ownerPetra, and she offered me ajob just as she wasexpanding, and it was timefor a new challenge for me. Ilove the sense of family wehave at West. I also lovehaving the freedom to drivethe business in the direction Ithink it should go. It is mainlyfemale staff which I'm sure willsurprise a lot of people that ateam of females are headingup beer!

Who is your Inspiration?Definitely my big sister Alison! She has always been quitepivotal in everything I do. Sheis definitely my mentor and it

Repertoires TopPicksinTown

Last issue we gave you some of our toppicks for Glasgow and I hope you managedto check some of them out. I know a fewpeople have been into Neighbourhood afterreading about the burgers, and one reader

got in touch saying they had a great night inthe Berkeley Suite. This month we headedto Edinburgh, and came across some realgems. Here are some of the best wefound…

Words: Lynn Kelly

Musical FingersIf you love live music then you must make apoint of visiting Fingers piano bar at 61aFrederick Street. You can hear the musicbursting out the front door before you evenstep downstairs. What we loved mostabout this bar is the energy and the feelingthat you are being whizzed back to the ratpack era. They even sell trilby hats in here,so you can get right into the swing ofthings. Usually you will find a Frank Sinatrastyle singer serenading customers andtaking requests. The night we popped in,the place was mobbed and everyone wassinging along to Mack the Knife and NewYork New York. It was just fantastic. This bardefinitely has the feel good factor. Anothernew bar that is becoming renowned for livemusic and a great atmosphere is DirtyMartini in George Street, above Le Monde.

Anyone for Steak? Newly opened Steak at Picardy Place isproving very popular. After hearing somany friends raving about theirexperience in Steak we decided to give ita try, and we were not disappointed. What we loved most about this restaurantis how relaxed you feel and how friendlythe trendy staff are. We particularly lovethe uniforms - black aprons andconverse trainers. The food was topnotch, and you get to see the cuts ofsteak on offer before selecting yourchoice. One of the favourites at our tablewas the Sirloin, which came with tastychips and a blue cheese sauce. Later onat night a DJ jumps on the decks andsets a more club vibe, which workedreally well. By the time we left therestaurant, we were set up for a big nightout! Check outwww.steakedinburgh.com.

Best for BeerThere are so many good places to drink beer in Edinburgh, that it could fill the whole magazine. But if I was to single outone for attention that I think would appeal to Repertoire readersit would be Holyrood 9A. It's a slightly modern take on atraditional beer pub, and they have lots of beers available tosample. Look out for its beer festival...it should not be too faraway.

Thirsty for cocktails? We have always been a fan of Treacle,Broughton Street, and the loveableowners who add a cheeky twist toeverything they do there. What we lovemost is the delicious cocktails that any ofthe bartenders will happily customise tosuit your favourite tipple. I generally optfor a rum cocktail and I can honestly say Ihave never ordered off the menu hereinstead I trust the staff to do theirmagic...and they always hit the spot.Last time I popped in for lunch weenjoyed a pre-made fruity rum cocktail, stored chilling in a jar. It was very tasty, and ideal for sharing.

Best Outdoor Area – and viewIf you've got wheels then head down toSouth Queensferry and Antico – this barhas the most amazing outdoor area, overlooking the Forth Bridge. I'd even goas far as saying it's one of the best outdoorareas in Scotland, never mind Edinburgh.A lovely gazebo, water feature, comfortableseating … and great drinks to boot. Roll onmore good weather.

Best to Impress You can't visit Edinburgh without popping in to see Tiger Lily on George Street.Whether you are planning a businessmeeting, lunch with friends, a romantic overnight stay or cocktails until late, Tiger Lilyticks all the right boxes. It oozes style andsophistication and will impress anyonevisiting the city or those looking for that fivestar treatment. What we love most about thisplace is the impeccable service andexpertise, from every member of staff. Weoften get people raving about the experiencethey have had there too! The surroundingsare lush, with a boutique cocktail bar, finedining restaurant and of course the luxuriousbedrooms in the hotel. The hotel is currentlyrunning a Summer offer until the end of Julywhich includes overnight stay, two coursemeal, entry into Lulu club downstairs andbreakfast for only £165. Log ontowww.tigerlilyedinburgh.co.uk to book.

Anyone for a Dram? Whether you are a lover of whisky or justcurious to experiment with different Malts, there are plenty of bars in Edinburgh thathave a wide range of whiskies andknowledgeable bartenders to boot. A realwee gem of a bar that has over 68 Maltsto compliment a delicious food menu isThe Queens Arms on Frederick Street. We discovered this bar not long after itopened, and ever since it has never failedto impress. Manager Alec has a realpassion for whisky and his staff will happilytake time to recommend the Malt of themoment and give any information on thebrands they stock. We love theenthusiasm here for whisky so much thatwe even host our Make a Date withWhisky festival in the bar every othermonth. This is a free event for anyonewho would like to learn about whisky. Formore information [email protected]. If you are a realconnoissuer of whisky you should alsovisit the Whisky Experience on the RoyalMile and of course the Whiski rooms –more whiskies than you'll see just aboutanywhere!

Repertoireheaded to The Tiki Bar

in Glasgow last month, andenjoyed a night of rum, traditional

Meringue dancing and tasty cocktails. The tipple of choice was Brugal rum,

who hosted the first of two nights at TikiGlasgow then El Bario in Edinburgh. Youcan see from the photos how much

everyone enjoyed the night. The cocktails onoffer were Daquiris and Mojitos which wentdown a treat. The night was rounded off

with a Bartenders’ Mojito challengewhich saw winner Toni Herbert fromThe Voodoo Rooms, Edinburgh

Go Slow... poorshow!I was disappointed last monthafter visiting one of my favourite restaurants inthe West End – Stravaigin on Gibson Street, which I have visited on many occasions toenjoy their homemade burgers, seafood stewand Eggs Benedict for brunch. This time Ipopped in on a Sunday for brunch andordered my usual Bloody Mary and EggsBenedict. The place was busy, but after 50minutes and many a grumble from ourstomachs we started to think they hadforgotten about us. We weren’t wrong! Thewaitress apologised on behalf of the kitchen, explaining our order had been misplaced. Wewaited another 20 minutes before our foodarrived, and received no further apology oroffer to compensate for our wait. Hopefully thiswas just a blip! But come on guys if we had towait more than an hour, there should have adrink or coffee on the house!

Cocktails with charismaOn a more positive note I enjoyed first classservice at The Tiki Bar in Glasgow recently.Although the bar was busy the service wasslick, professional and the bar staff looked likethey were having great fun shaking up our fourcocktails, which were spot on! I certainly wouldrecommend their new Kraken Attack cocktail.Very tasty! You can also take part in cocktailmasterclasses here check outwww.tikibarglasgow.com

Awards timeI love judging our annual pubawards (see news). I get to dowhat I love doing best –

checking out great places with my friends –from late entertainment venues, to customerservice, and new bar. However, it is certainlynot as easy as it might seem... as we do havecertain criteria – like welcoming bar staff, gooddoor staff... but the key thing is alwaysservice. And in the main, we've not beendisappointed.

Animal FarmIt seems to be a new trend recently to nameyour bar after types of animals, and even morebizarrely after the colours black and blue. TheBlack Rabbit opened on Byres Road recently, following the opening of The Blue Gooseearlier this year in Colinton, Edinburgh. Youalso have two other bars in Edinburgh thatopened last year following the same theme,The Black Cat and The Red Squirrel and whoknows what will pop up next? We alreadyhave the legendary Blue Dog, Black Sparrowand long standing restaurant The Black Sheepin Glasgow. All we need is a blue cow, a blackpig then the full farm line up will have beennamed. The newest arrival on Byres Road,Black Rabbit is a trendy bar that offers 2 for 1pizzas all day everyday! They also have abeer garden at the front which is on the sunnyside of the road, great for alfresco pints andpizza. Why the name Rabbit? No reason, but itseems to have created a bit of a buzz.
