Prepare pork with your favorite rub or seasoning on both sides
Make sure smoker is ready to go and load your smoker with the pork, fat side up
Close the smoker door and set the temperature to 220 degrees
For a five to six pound piece of pork, it will take approximately six hours to reach an internal
temperature of 170 degrees
It is recommended to use a remote probe thermometer to gauge the inside temperature of the pork WOODS TO USE: Hickory - less is better with this type of wood, then add a coat of hickory or sweet BBQ sauce
