breeding methods, biotechnology crosses
species boundaries, instantly scrambling
genetic codes into arbitrary versions that
would not otherwise have occurred.

I just had an odd experience. While
oundering for days for the right
words to thank you in connection with
our Customer Appreciation Day and
38th anniversary, I was listening to
NPRs Sunday Puzzle, and this weeks
winner was Carla Fink of New Bedford,
Massachusetts.
You probably dont know Carla
(please let me know if you do!), but sheread Adelle Daviss Lets Eat Right to Keep
Fit 43 years ago when we both worked
in the MIT Psychology Department, and
she recommended it to me. Neither of us
could have imagined that it would feed
a personal passion that became a calling:
running a natural food store in Helena,
Montana, for 38 years.
But thats what it did. At the time all I
wanted to do was nd the perfect diet, eat
it, and get on with the rest of my life. As
it turned out, nding and eating a healthy
diet was a bigger, more complicated and
more important challenge than I thought.
Making a business of it is another story,
but all along my ambition has been to be a
well-developed, well-rounded person; and
there is only so much you can learn from
books.
I could have done or been many other
things in my life, and of course I still can,
but theres a unique sort of richness here.
Learning about health, appreciating our
relationship with nature, developing the
ability to lead and follow a team of people,
getting crash lessons in communication,making a difference in your life and turning
spaceship Earth toward a sustainable
futureall these things are parts of my
Real Food experience and my continuing
process of becoming fully human.
So I thank you for making this life
possible for me. And I imagine that just
as Carla Fink, through one small gesture,
made more of a difference than she
realized, this store touches lives in ways I
will never know.
So I thank you again for your support,
on behalf of all the people who work and
shop in this store, and I look forward to

Getting optimum nutrition from
your foods is a great idea, but knowing
which ones to choose can be a challenge.
Fortunately Eating on the Wild Side, which I
wrote about last month, has largely solved
that problem.
As the book shows,many foods have lost
nutritional value as theyve
been successively bred
for larger size, less ber
and more sweetness. This
month, Ill discuss some
of the exceptions, the
nutrition powerhouses,
and how to best use them.
Dandelion greens are a
true super food, providing
eight times more
antioxidants, two times
more calcium and three
times more vitamin A than
spinach, which is already
a great source. Dandelions
have a bitter, astringent
taste on their own, but
when steamed and drizzled with balsamic
vinegar, theyre one of my favorite greens.If theyre scarce in your yard, we know
where you can get some.
Potatoes are a staple of the American
diet, yet they have been somewhat
villainized due to their high glycemic
index and the corresponding rise in blood
sugar they cause. There are a couple
ways around this. First, if the potatoes are
cooked then chilled for 24 hours before
eating, the glycemic index is dramatically
lowered. Another option is to choose a
sweet potato instead. Sweet potatoes have
approximately half the glycemic index of
a white potato. Sweet potatoes also have
twice the antioxidant value of a baked
russet potato. The highest nutritional value
is in the darker red sweet potatoes, which
are usually called yams.
Beets are another super food,
containing high levels of
antioxidants, ber, folateand potassium. The
most nutritious choice in
beets is to buy them with
the tops on and also eat
the delicious, nutritious
greens as well as the
roots.
No article on
nutrition in vegetables
would be complete
without discussing the
crucifers. The crucifer
family includes arugula,
broccoli, Brussels
sprouts, cabbages,
cauliower, collard
greens, kale, kohlrabi,
mustard greens,
radishes and turnips.
The good news about the crucifers is that
their nutritional value hasnt changedby sweetening them up. The problem
with that is many people dont care for
the bitter or spicy avor they have. The
crucifers have the most nutritional value
if eaten as fresh as possible and raw or
lightly steamed. This family of veggies is
loaded with antioxidants and offers more
health benets than all but a few fruits and
vegetables.

Roughly 28 percent of U.S. adults
drink diet soda. Until several months ago
I was one of them. In fact, its a habit (or
addiction) that Ive battled for decades.
Maybe youll agree with me that its time
to end this battle with a victory.I was introduced to diet soda as an
overweight child at a time when these
products were becoming popular as a
supposedly better alternative to sugary
drinks. I quickly grew accustomed to their
taste and soon found that I craved their
unique avor. In my adult years the habit
not only continued but grew along with
the size and availability of the drinks, a
trend evidenced by a 2010 Centers for
Disease Control nding that over half of
diet soda consumers drank more than 16
ounces at a time. That trend was just one
reection of our cultures gravity toward
larger portions in general.
As an adolescent and young adult,
my rationale for drinking diet soda was
simple: there are no calories, they taste
good, and most importantly, I thought
they were harmless. But as a doctor, it
has become clear that the issue of dietsoda consumption is neither simple nor
harmless.
While the position of the American
Diabetes Association and the American
Heart Association is that when NNS
(nonnutritive sweeteners, also known as
articial sweeteners) are used judiciously,
NNS could facilitate reductions in added
sugars intake, thereby resulting in
decreased total energy and weight loss/
weight control, and promoting benecialeffects on related metabolic parameters.
Unfortunately, we know obese
individuals are signicantly more likely
to consume diet drinks compared to non-
obese counterparts, and there is mounting
evidence that calorie intake actually
increases when diet drinks are consumed.
This is because hormones that regulate
appetite are not stimulated after drinking
a diet beverage compared to a sugary one.
Therefore, we eat more. And, to compound
this problem is the fact that when these
beverages are consumed in the presence of
a carbohydrate-rich meal, there is actually
a heightened metabolic response that may
cause us to gain weight more easily.
So, if the possibility of my metabolism
getting worse wasnt enough to make me
quit, the suggestion that diet soda could
put me at increased risk of diabetes and
kidney disease was. We know that dietsoda does not alter blood sugar, but due
to complicated factors that are still being
determined, their consumption greatly
increases the risk of type 2 diabetes, and
several studies have reported the increased
risk of disturbed
kidney function.
As with most
good scientic
inquiry, there is evidence to support
multiple positions, but for me the growingevidence that regular diet soda intake
may worsen my health was compelling
enough for me to call it quits. I think Ill be
healthier for it.

Is zero-calorie diet soda boosting
your weight? As Dr. Jeff Roush points
out above, that may well be true. If so, itwould be just one more example of things
that work differently or even oppositely
from what you expect when you take them
out of context. Lets start with sweeteners.
Sweetness guided our ancestors to
sources of life-sustaining calories as well
as vitamin C, which is abundant in fresh
fruit. The sweetness came from sugars that
were embedded in high-ber foods that
digested slowly, gradually raising blood
sugar levels and satisfying the appetite. In
fact, we recently discovered that there are
sweetness receptors not just in our mouths
but in our guts, apparently to signal a
complex chain of reactions in response to
incoming carbohydrates.
So what happens when you fool
your body into thinking its getting
carbohydrates when its not? It should
come as no surprise that when you give
your body an inappropriate message youget an inappropriate response. You can ask
yourself whether the same idea applies
to other things in your diet and lifestyle,
whether its avorings, colorings, isolated
nutrients, rened our and oils, and so on.
As leading food journalist Michael
Pollan has suggested, you can also look
at the still-larger contexts of foods, diets,
lifestyles and cultures for examples of
parts that dont work as expected when
transplanted into a different context.
For example, seaweeds may be fantastic
nutritionally, but the Japanese who
traditionally have eaten them have the
specialized genes to digest them; where
they get fuel, you may get gas.
During this Non-GMO Month of
October, consider what happens when
a gene is taken from one species and
transplanted into another, as in the
genetically-engineered corn and soybeansthat are everywhere in Americas
processed foods. As famed geneticist
David Suzuki has said, its like moving
a note from one symphony to another.
It may be a perfectly good note in one
context, but its meaning and function may
be entirely different in another. So the
effect of GMOs on your personal health
could well be hard to predict.
The examples could go on, but ourbottom line is that we keep seeing more
and more reasons to stop fooling with
nature and make your food Real Food.
