INGrEDIENTS

1 roll of puff pastry3 whole eggs30 ml of fresh cream25 ml of milk300 grams of smoked bacon150 grams of “emmental” cheese or any hard cheeseSalt, Pepper, Nutmeg

1. Preheat oven to 250 degrees Celsius.2. Remove the puff pastry from the refrigerator 30 minutes before. It will be easier to unroll.3. Line a pie dish with the puff pastry.4. Prick dough all over with a fork to prevent it from puffing up.5. Pre-cook for 15 minutes.6. Remove from the oven and put it on side while you prepare the mixture.7. Brown the bacon in a skillet over high heat. Strain off the melted fat.8. In a bowl break the 3 eggs and pour in the cream.9. Mix eggs and cream with a whisk and gradually add milk while continuing to whip.10. Add salt, pepper and nutmeg. Spread the bacon evenly over the pre-baked pastry and add

the egg mixture.11. Sprinkle with cheese and bake the Quiche Lorraine for 30 minutes at 250 degrees Celsius.12. After 25 minutes, check if knife comes out dry with no trace of cream, your quiche is ready!

INGrEDIENTS

1 cup uncooked brown rice¼ cups water4 red (bell) peppers, tops and seeds removed1 teaspoon olive oil¼ onion, chopped2 cloves garlic, chopped 1 (15 ounce) can black-eyed peas, rinsed and drained2 large Swiss chard leaves, chopped ( can substitute with spinach)Salt and black pepper to taste

METHoD

1. Bring the brown rice and water to boil in a saucepan over high heat. Reduce the heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 45 to 50 minutes.

2. Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.3. Place the red peppers on the prepared baking sheet and bake until tender, about 15 min-

utes.4. Heat the olive oil in a skillet over medium heat, and cook and stir the onion and garlic until

the onion is translucent, about 5 minutes. 5. Stir in the black-eyed peas and chard. Bring the mixture to a simmer, and cook until the

chard is wilted, 5 to 8 minutes. 6. Mix in the cooked brown rice, sprinkle with salt and pepper to tasted, and lightly stuff the

mixture into the red peppers. Serve hot!

Over 400 of the 650 crew members taking part in the Clipper 13-14 Race, the largest crew ever assem-bled for the biennial event, attend-ed the Crew Allocation ceremony at Portsmouth Guildhall in the UK where they met their new team mates for the first time and discov-ered which skipper had been cho-sen to lead their team around the globe.

Crew members came from as far afield as Australia, China, North America and South Africa, as well as from across the UK, for the high-ly anticipated Crew Allocation Day. For many, this is where the reality of their participation in the event begins to kick in for the amateur crew who have already been in training for many months.

Sylvia Chahonyo, 38, the first Ken-yan woman to ever take part in the race, flew in from Johannes-burg, South Africa eager to find out which of the professional skippers she will be racing with, and to meet her equally excited team members for the first time.

“It’s been a fantastic experience, meeting people from so many dif-ferent countries with varying lev-els of sailing experience and skills. My team is really excited to have Richard Gould as our skipper, he is already putting in so much work to make sure we all work hard and bond quickly as a team.”

The 650 crew will be the first to compete on the newly commis-sioned matched fleet of twelve Clipper 70 ocean racing yachts.

The ninth and largest edition of the race will start on Sunday, 1 September 2013, the starting loca-tion is due to be announced soon. At 40,000 miles this is the world’s longest ocean race and takes al-most a year to visit 15 ports on six continents, including Qingdao. The Olympic sailing city will also boast an entry again; the fifth time the Chinese city will be represent-ed around the world. - The Wave, Muscat triumph on China’s Olympic wa-ters just two points ahead of Alinghi- Alinghi win final double pointer and maintain lead on overall Series leaderboard after three Acts- SAP Extreme Sailing Team firing on all cylinders, winning three races to secure third place

Qingdao saved its best for last on the final day of Act 3 of the Extreme Sailing Series™ and the pres-sure was understandably on from the first start gun with no quarter given on the water as the teams used classic match racing tactics to try and outwit their nearest rivals. The nine races came in thick and fast in the best conditions the fleet have sailed in all week in the heart of Fushan Bay which has once again demonstrated how they became such a successful Olympic sailing venue. Heading into the final classic Extreme Sailing Series style deciding double-points race, the battle for victory was well and truly on between Alinghi and The Wave, Muscat tracking each other around the course and mirror-ing each other’s moves. The Swiss America’s Cup winners used their experience to try and outwit Leigh McMillan’s team and although they won the final double pointer, it wasn’t enough to win the Act and an ecstatic, and somewhat relieved McMillan commented: “It’s a massive relief! To actually get the better of Alinghi in the light winds was a big achievement for us. When it comes to the pure boat on boat battle, they (Alinghi) tend to get the better of us. It’s a tough battle, they are a very tough team to beat and tough competitors. The rest of the year is shaping up to be really exciting.”

Morgan Larson, who has taken the tiller from team’s skipper Ernesto Bertarelli at this Act, was visibly frustrated to lose out in the final seconds, and talked through the tactics on the final race. “We had The Wave, Muscat on starboard so we hunted

them a little bit, made them tack back and forth and then we just held them and pinned them out until Red Bull Sailing Team and SAP Extreme Sail-ing Team got in there. We just managed to get our spinnaker up in time to be ahead of Red Bull and SAP and that was with the points we needed, but you have to hand it to The Wave, Muscat. Those guys were sailing so sharp all week they didn’t give up, they fought back and passed the two boats to the finish.” The Swiss team still leads the Series after posting third and first places in Acts 1 and 2 respec-tively.

SAP Extreme Sailing Team were firing on all cylin-ders from the word go, winning three races includ-ing the first of the day and gradually eating into GAC Pindar’s advantage held from the beginning of the day. In the final race, the co-skippers on SAP Ex-treme Sailing Team, Jes Gram-Hansen and Rasmus Kostner executed the start with precision and never looked back. Helmsman Gram-Hansen said, “We’re very happy! It’s a fantastic result for us, hopefully something we can build on and as a team everyone is doing a great job. The Wave, Muscat and Alinghi are sailing very well, but I think today we proved that we can also sail just as well. We are definitely getting closer to them so we will go away, debrief and see how we can improve.” This is the second Act in a row the Danish outfit has finished on the podium, matching their third place from Singapore just three weeks ago.

Despite slight frustration at losing out on their first ever podium position at the final hurdle, GAC Pindar’s young Kiwi skipper Will Tiller, who is mak-ing a real mark on this Series in his debut year, was upbeat dockside. “We’re a little disappointed with the results but overall really happy as a team. Fin-ishing the regatta in fourth is just brilliant for us and we would happily take that any day! We will keep

pushing these top teams. We have been battling with SAP Extreme Sailing Team from day one and well done to them, they sailed really well today. Hope-fully in Istanbul we can flip the coin and get ahead of them!”.

The double Olympic gold medal winning duo Ro-man Hagara and Hans Peter Steinacher on Red Bull Sailing Team sailed an inconsistent regatta by their standards on the Olympic waters they know so well, but did manage to muster fifth place overall after a slow start to the week, and sit third on the overall Series leaderboard.

The local contingent China Team had the support of the home crowds this week, with four of China’s talented young sailors stepping up to the challenge, a clear sign of the successes of China Team in develop-ing their national sailing talent. Aussie sailing legend and skipper Mitch Booth commented: “It’s been great to be with the local team, the local support has been just phenomenal and they’re following these youth Chinese sailors with great interest. It’s really satisfy-ing when you are teaching 20 year old kids that have never raced catamarans before to come and join this

high level racing Series, it’s just great. For me it’s just great to be back involved in something that is a real passion of mine.”

Earlier this week, the iconic British brand Land Rover announced a three-year sponsorship of the global sailing series as Series Main Partner, and celebrated the launch of the partnership with the unveiling and naming of their Land Rover branded Extreme 40, which has made its world debut in Qing-dao and will be used as a platform to host VIP and media guests.

Co-organised by the Qingdao Yachting Association, China has delivered a festival atmosphere on and off the water including a spectacular opening ceremony, a programme for local schools to meet the sailors and a closing ceremony that finally brought proceed-ings to a close. Next the Extreme 40s head to Istan-bul, 20-23 June for Act 4 as the Series approaches its halfway stage and we can expect the pressure to turn up another level as the teams look to set themselves up for the second half of the year.

Building connections and keeping ties with people can often lead to fruitful re-sults. Here is one new endeavour under-taken by QEC that can reach out to so many, both within our own community and also to the citizens of Qingdao.

In 2011, the Qingdao Spiritual Civilization Office and Qingdao Civil Affairs Bureau named Qingdao Agape Social Work Service Centre one of the top ten Public Welfare offices in the city. Agape is the first non-prof-it, public welfare institution in Shandong Province. Their modest offices are just off Shandong Bei Lu, where they implement responsibilities stated

by the Governing Council. Within this Governing Council are interlinked offices, such as Administra-tive Department, Program Department, Membership Department, Training and Volunteer Departments plus the financial and personnel offices. Agape seeks to reach out to those who need social support of vari-ous kinds.Their philosophy circles around Faith, Hope and Love. Faith changes life, hope creates motivation and love creates excellence.

Agape maintains a strong work ethic and has long-standing connections with social workers in other-countries too.

What can we do to help?With the transient moving of expats, in and out of Qingdao, very often people have second-hand items that they do not want to pack and take with them. What can we do with them? Where can we take these things? At last, we have a great project to solve this issue. A few members of QEC will form a task force team for:

• Regular pick-up from many of our neighbour-hoods

• Deliver the collected / donated items to Agape’s second-hand store

• Help organize items inside the store, sort out, price items and display

• Ask for volunteers to help giving / selling in the store

What items to donate?Whatever you would like to offer, PLEASE ensure that it is in good enough condition for the next person to actually use and enjoy.

• Clothing, all ages, washed• Shoes, all ages, cleaned and not broken• Household items, in working order• Toys, cleaned and in ‘working’ order• Furniture, in condition to be enjoyed

Also, as Agape is setting up the store now, perhaps you have some freestanding shelving or hanging rail. They would really welcome this for their start-up especially. The store location will be available very soon plus the opening hours; we are all welcome to drop in and have a look! Perhaps even make a dona-tion of cash and take something home!

HAIR TIP FROM THE HAIR DOCTOR

1 OILY HAIRCause - Over secretion of sebum (natural oil) from the scalp. Of-ten this is hereditary, but can also be irritated more by too much fat in your diet. Solutions - Cut down on the fats in your diet. Refrain from touching your hair too often as

this will only stimulate the oil glands in the scalp to produce more oil. Don’t wash the hair too frequent-ly or vigourously, as this too will over stimulate the scalp’s oil glands (the natural reaction is to wash the hair more, but this only doubles the problem). Cut back on hair styling products as they can add more oil to the hair and make the hair more lank. Try to use non-silicon shampoo, or a dry shampoo that will soak up the over produced oil. Professional hair colour-ing and some bleaching can also help by making the hair a little more coarse, giving it body and absorbing some of the oil.

2DANDRUFFCause - Usually this is an indication that there is a nutrients problem in the body, mainly a deficiency of Vitamin C or Zinc. Solutions - Eating foods that are rich in

Vitamin C and Zinc (foods are more quickly absorbed by the body than supplement tablets). A weekly scalp massage with either lemon juice or coconut oil can reduce the dandruff, but this depends on which one works best for you. Using warm water when you shampoo the hair instead of hot water will also irri-tate the scalp less. Medicated shampoos such as cold tar shampoo can also reduce the problem. It’s impor-tant to note that you need to be clear that instead of dandruff you don’t have psoriasis and if you are un-certain you should first consult a Doctor.

This month the Hair Doctor will give advice on 4 of the most common problems with hair health and condition. Without healthy hair you can not hope to have your hairstyle looking the very best, so here below are the most common hair problems and some practical solutions to keep your hair looking fantastic.

3SLOW GROWING HAIRCause - Stress and ill-ness can create many problems in the body including the growth of hair too. Certain medicines can have

side effects, which can also effect the hair’s growth. Slow hair growth can also be hereditary. The lack of protein and iron in the diet and the body being defi-cient in Zinc and biotin Solutions - Improving the diet with more protein and iron, Zinc and biotin supplements and more exercise which boosts blood circulation generally and to the scalp, which in turn will stimulate the hair follicles. ADULT BASKETBALL

Every Tuesday from 6.30 – 8.30PM in the YCIS QINGDAO gymnasium. Bring your friends from work and come and join. We welcome begin-ners to advanced players.

The QICC in association with YCIS Qingdao will host its first ICT course. This course will be four weeks long. Each week will focus on a different area of ICT. Appli-cants can choose the weeks they wish to attend or they can attend all four sessions. Each session will cost 200RMB and will include a light lunch and refreshments throughout the day. The outline of the course will be as follows:

Saturday 31 Aug, Week 1: Introduction to ICT and how to set up email accounts.

Saturday 7 Sept, Week 2: Microsoft Office – Word, Power-point and Excel

Saturday 14 Sept, Week 3: Apple iLife suite – music creation with GarageBand.

Saturday 21 Sept, Week 4: Video editing with iMovie and iPhoto

Week 4: Adobe Photoshop – How to ma-niputlate and create exciting and interesting effects.

GFU soccer club will begin on June 2 and run for 4 weeks every Sunday afternoon at QICC. The coach is a professional soccer player who has recently moved to Qingdao from Beijing where he was part of a soc-cer club there.

Calling all aged 11+ to teens! Come and hang out in the QICC with your friends twice a month.

Next Youth Club will be on 14 June 2013 from 4.00 – 6.00. Supper will be provided for 40 RMB per per-son and we will have a tuck-shop

The Kinder Club has arrived!! Weekends just became more excit-ing for the youngsters of Huang-dao. Beginning in June the QICC will be the home to a new club for parents and kindergarten children aged three to six years old.

The club will engage children along with their parents in a variety of creative, fun, physical and enrich-ing activities. These will include stories, crafts, cooking, outdoor games and much more. Each session will require pre-reg-istration as well as a small fee for

materials and other miscellane-ous items. The Kinder Club will be hosted in English only and will be open to foreign passport holders.

We will start a Monthly Market at the QICC sometime near end of August. Date to be confirmed later.

This market is open to all Expats living in Qingdao and Huangdao and there is no entry charge to attend. There will be a tuckshop selling drinks and snacks during the day.
