    This months cover star Rosemary Shrager may no longercall Yorkshire home but the celebrity chef still yearns forthe northern charm she became accustomed to during herten years here.     With her cookery school, recipebooks and TV appearancescelebrity chef Rosemary Shragertells Stephanie Burns why sherevels in her packed schedule.

    This year, Rosemary Shrager hasheadlined the Great Yorkshire Showfor the seventh year running,travelled the country with the Cake andBake Show and demonstrated at allmanner of other food festivals. Its fair tosay that she is very much in demand.

    What you may not know is that, all thewhile, she has been running her very owncookery school, which opened inTunbridge Wells, Kent, in May 2013. And itsthis which keeps her away from thespotlight, teaching both amateurs andprofessionals how to cook with confidence rather than any media booking, that shedescribes as the highlight of her career.

    I love teaching the everyday personwho wants to learn to cook and, if peopleembrace it with me, I give them two-foldback, she says earnestly. The schoolmeans the world to me. All the work Ivedone and all the things Ive given up, toend up with this, there has been meaningbehind it.

    Its from her home in Wadhurst, Kent,that Rosemary is speaking to me. Sheanswers the majority of my questions withan assumed exclamation mark: when didyou first get a taste for cooking? oh mygod, when I was a little girl!, do you comeback up to Yorkshire often? oh my god yes,

    Im up there all thetime!, how hard isthe life of a chef?oh my god, itstough, I used towork 18-hourdays! I canimagine her sittingback in her chair,phone pressed toher ear with onehand, the othermaking wildgestures throughthe air as shespeaks.

    Enthusiasmcomes naturally to Rosemary and its easyto see how the 64-year-old found fame(though she hates the term celebrity,preferring got well known for what I didinstead), and has managed to hold onto itfor nearly two decades. Of course, herpassion for cooking began many yearsbefore she first appeared on television andher journey to success has not been aneasy one.

    Born in Buckinghamshire in January1951, she enjoyed cooking as a child but asshe got older chose instead to studyarchitecture and soon landed a job in

    London. It was while developing layouts fora hotel in the city in the 70s that she hadthe urge to get into the kitchen. Havingtaught herself how to cook and makingeverything in Mastering the Art of FrenchCooking by Julia Childs in the process shegave up her career to work with food.

    Sadly, it wasnt all plain sailing andshortly after opening her own restaurant,her life fell apart. The restaurant closed, hermarriage to affluent barrister MichaelShrager broke up and she was left withnothing. But she soon picked herself backup and began making waves in the

    Her most notable professionalaccomplishments include working forPierre Koffmann at the three Michelin starLa Tainte Claire in London, as well as a stintwith Jean-Christophe Novelli. Between1998 and 2002, she was head chef atAmhuinnsuidhe Castle and ran cookerycourses for many a keen student beforesetting up in Yorkshire, where she led acookery course at Swinton Park for tenyears.

    She still misses the north. I loved theDales and I had a lovely relationship withall the local suppliers. Coming down toKent was definitely the right move but itcouldnt have just been anywhere it hadto be special for me to make a move awayfrom Yorkshire.

    Rosemary first appeared on the smallscreen in 2000, with a six-part series forChannel 5 called Rosemary Castle Cook,and she released her first cook book of thesame name the following year. They wereto be the first of many and she continuesto release new shows and books to thisday.

    But it wasnt until Ladette to Lady the2005 ITV1 show that took wayward girlsand transformed them into members ofpolite society at a 1950s-style finishingschool that she really entered the publicconsciousness as the firm-but-fair cookerytutor. While the audience laughed along atthe girls lack of social graces, however,Rosemary was battling a moral dilemma.

    I found it quite difficult because wereall caricatures and we all have faults butwho are we [the tutors] to dictate whatpeople should do? Were not really thatspecial. Were the same as them but were a

    different tribe, thats all it is. I just wantedpeople to feel good about themselves.

    The show ran for six seasons, includingan Australian version, and Rosemaryscaring attitude shone through on screen.Seven years later, in November 2012, herceleb status was cemented when sheappeared on jungle-themed reality showIm a Celebrity Get Me Out of Here.Finishing sixth out of 12 contestants, shedwon her place in the hearts of the nationand has no hesitation in describing theexperience as life-changing.

    It was the most amazing experienceand I felt really privileged to have beenasked to go there. It tested me and told meI was not a bad person and that I couldlearn to be with people that I didnt like. Ididnt try to be attention seeking or play agame, I just went in there to be myself. Ieven didnt take any herbs, spices or salt inwith me!

    without a very generous fee, anyway shewould embrace almost any other reality TVthat came her way. I wouldnt do anythingphysically tough because Im not shapedfor that but, you know me, Im up foranything! she laughs.

    Clearly, despite her packed schedule she has just filmed a new BBC show Rosemary remains happy, upbeat andthankful for the opportunities that havearisen for her as a celebrity chef. If yourepassionate about your job, you dont countthe hours, she says. And Im very lucky tobe in love with what I do.

    Rosemary Shragerssignature dish: chicken and potato pieServes 68750g potatoes, thinly sliced130g unsalted butter, plus extra for greasing3 shallots, finely chopped2 tablespoons tarragon leaves2 tablespoons chopped chives4 large skinless, boneless chicken breasts,cut into thin strips800g puff pastryFlour for dusting2 egg yolks, lightly beaten, for glazing240ml double creamSea salt and black pepper

    1 Put the potatoes and half the butterinto a pan and heat gently, turning fromtime to time, until they are just tender butnot brown. Transfer them to a large bowland set aside to cool.

    2 Meanwhile, soften the shallots in the

    remaining butter. Add the herbs andchicken, turning the mixture over a steadyheat for a few minutes until the meat ispartially cooked. Add to the bowl ofpotatoes, mix carefully and season wellwith salt and pepper. Set aside to cool.

    3 Place half the pastry on a lightly flouredwork surface and roll it into a circle about30cm wide. Transfer it to a lightly butteredbaking sheet. Brush the perimeter of thepastry with beaten egg yolk, then pile thechicken mixture in the middle. Roll theremaining pastry into a circle about 36cmwide and place it over the filling, sealingand crimping the edges.

    4 Cut a circle about 10cm wide in the top,but leave it in place: this will act as a lid.Brush the whole surface with theremaining egg yolk. Bake in an ovenpreheated to 180C/Gas Mark 4 for about50 minutes, checking that its notbrowning too much, in which case lowerthe heat slightly.

    4 When the pie is ready, heat the creamuntil boiling, then season with salt andpepper. Carefully remove the small pastrylid from the pie and pour in the cream,lifting the mixture gently to allow it tocirculate. Put the lid back on and returnthe pie to the oven for 10 minutes.

    At this time of year, a mere break in the clouds is enough towarrant a dash into the countryside let alone a full blazingsun. So when a mild lunchtime presented itself, we jumpedin the car and headed out to Bradfield to see if one of its well-lovedbusinesses really was as good as wed heard.

    Since The Schoolrooms original managers took charge againearlier this year, the caf/deli/butchery has once again beenwinning rave reviews for its local menu that is almost entirely madeby hand by head chef James Grey and sous Laney Smith. Out front,Matthew Hurt and Hannah Quarmy provide a friendly andwelcoming service.

    It was the last Friday of half term when we visited and we werelucky to get a seat in the bustling caf, which can be found in theeves of the former school. Looking round, our fellow diners wereenjoying the weekly special of fish and chips complete withtartare sauce, pea puree and lemon wedge for just 5. At almosthalf the usual price, this is an absolute steal, but we couldnt helpbeing tempted by some ofthe menus other offerings.

    It was the steak andBradfield Brewery ale pie thatcaught my partners eye.Served with seasonal veg, fatchips and rich gravy, andaccompanied by a glass ofArgentinian Malbec, he madesure this lunchtime treat wasas indulgent as possible. Withtender meat, a wonderfullycrisp puff pastry lid andseriously good chips, the dishwas a real hit.

    I chose a lighter option; thedaily deli board. The chunkywooden board came ladenwith homemade ham hockterrine, three artisan cheeses,half a Toppings pork pie, realale chutney, a tiny Kilner jar of

    pickled onion, salad with shards of crisp prosciutto, and two thickslices of fresh brown bloomer most of which is sourced from thedeli and butchery downstairs. Every element was great but the starof the show was that terrine; full of flavour and absolutely delicious.

    To complete the experience, my partner ordered the gooeycaramel chocolate fondant, served warm with vanilla Peak Districtice cream. It was a fantastic end to his hearty meal and he tookgreat pleasure in scraping every last crumb from the bowl.

    Meanwhile, I had turned my attentions to the counterstantalising selection of fresh cakes, tray bakes and biscuits. I cannever resist a fruit scone and when its served with Tiptreeraspberry jam and light-as-air whipped cream all the better.

    As we left, we passed a group of walkers who were basking in theautumn sun out on the terrace, taking full advantage of theunseasonably warm weather. Given the standard of the food at TheSchoolrooms, I wont be waiting for another burst of sunshine toreturn. Come rain or shine its well worth a visit.

    Belgian Blue is one of 14 seasonalspecials available throughout the year.Theres a Poppy Ale to commemorateRemembrance Day in November, a Wim-Bull-Don to drink with the tennis in June,and a Ye Olde English Ale to toast StGeorges Day in April, to name but a few.

    This year also played host to severalother extra special creations. Decade Alemarked the brewerys tenth birthday, 3kcelebrated their 3,000th brew and ourpersonal favourite Celebration Ale wasmade especially for Sixers 21st birthday.

    These special ales are sold in additionto the six core beers that are availablethroughout the year. There is somethingfor every taste: Farmers Stout, BrownCow, Farmers Bitter, Yorkshire Farmer, PaleAle and the best-selling Farmers Blonde.Of the 80,000 pints of ale that are brewedeach week, just over half of that is theaward-winning Blonde.

    Their social media following is equallyimpressive. The buzzing onlinecommunity of more than 13,000Facebook likes and 6,000 Twitterfollowers helps to spread the Bradfieldmessage far and wide. It was via theFacebook page that they officially announced the name of thebrewerys newest team member, Decade the foal. Though still tooyoung to work, hes very much enjoying life on the farm and whenhes old enough he will be trained to follow in the footsteps of hismuch-admired mum Claire, who sadly died after giving birth.

    The Gills John, his wife Susan, their daughter Lisa and sonRichard never imagined that they would come to employ 21 fulltime staff and that already-impressive sales and volumes wouldcontinue to improve year on year. It was when the price of milkplummeted at the turn of the millennium that the dairy farmingfamily were forced to diversify. Richard came up with the idea ofproducing their own beer and, in March 2004, work began ontransforming the cow shed at Watt House Farm into a brewery.Experienced head brewer Paul Ward, who is still with them today,was employed to oversee the process and the first batch wasfinished on 26 April 2005.

    Ten years on and they even have their own pub, the Nags Head,where a large range of their beers flows for just 2 apint. Alongside tasty homemade foodand real fires, theyve created acosy bolthole for people toimmerse themselves inthe Bradfield Breweryexperience.

    Of course, all ofthis successdoesnt meantheyre resting ontheir laurels quitethe opposite. 2016 isset to be anotheroutstanding year, thanksin no small part to therelease of their first book. Not

    only will the book, which is being published by Pulses sistercompany RMC Books, offer a greater insight into the breweryshistory, but theyve also teamed up with the nationally renownedMagpie Caf in Whitby to match ales with seafood: as many will nodoubt agree, a match made in heaven. Work has just begun, so besure to keep a look out for it next year.

    In the meantime, be sure to visit the brewerys on-site shop inthe run up to Christmas to stock up on presents for the beer loversin your life. Theres a great range of merchandise, clothing and gifts,as well as Farmers ales to taste.   • After blazing a Latin trail in the early noughties,Cubana are now firmly established as one ofthe top party venues in the city.

    It was 15 years ago that Cubana burst onto the Sheffield nightlife scene, offering aburst of joyous Havana sunshine on a sleepy back street a short shimmy awayfrom the city centre.Looking at all the multicultural restaurants, bars and music venues in the city, it is easy

    to take the wide variety of food, drink and sounds from around the world for granted.But it hasnt always been such a hotbed of diversity, and Cubana was one of the

    trailblazers that helped breathe new life into Sheffield. Now the salsa venue iscelebrating a landmark anniversary and it is as fresh and vibrant as ever.

    First unleashed on an unsuspecting public in November 2000, Latin music, salsadancing, mouth-watering tapas food and colourful cocktails all blended, bringingpeople together in a fun and friendly setting.

    Now based in Leopold Square, the Latin beat pulses stronger than ever.

    First StepsCo-owner Adrian Bagnoli first got into Latinmusic whilst visiting a popular Braziliannightclub called the Maracan in Florence,Italy. Adrian was amazed by the livelyatmosphere and was convinced that this wasexactly the kind of night out Sheffieldneeded.

    Back then, the only Latin music peopleknew was The Gipsy Kings and La Bamba,

    explains Adrian. We decided the time was ripe to introduce a bit more culture toSheffield.

    Adrian and friends Toni Dente and Gian Bohan started by launching a Viva Salsanight at local nightclub Club Uropa (formerly Isabellas), booking Brazilian DJ MarcusVinicius and a live Brazilian band called Viramundo for the opening night.

    An astounding 700 people attended the first event in June 1996, making Sheffieldsfirst salsa club night an undeniable success.

    This really paved the way for us, says Adrian. Calendar News came to cover it andthe atmosphere was incredible. It gave us lots of confidence and we started bookingtouring bands from Cuba and Latin-American bands based in London and Manchester.

    The final Viva Salsa took place in May 2000 and it was then that Adrian joined forceswith Brad Charlesworth and Kito Morales to open Cubana on Trippet Lane.

    Cubana Mk. I Trippet Lane Getting the look of the venue right was justas important as creating the authentic tapasdishes and cocktails, so Adrian employedtalented architect and close friend PaulBrady, to capture a true Latin vibe.

    We offered something different people felt like theyd discoveredsomething great tucked away on thisbackstreet in the city centre, says Adrian.There wasnt another tapas bar in Sheffieldat the time.

    Wed already built up contacts with theLatino community from the Viva Salsa night,so they were on board as soon as theydiscovered wed be offering live music.

    Cubana LiveOne of Cubanas proudest moments washosting a night at Music In The GardensFestival 2010 in the Botanical Gardens.Cubana Live attracted a sell-out crowd ofover 3,500 people and helped raisethousands of pounds for local charities.

    The extravaganza offered some of themost popular Latin artists, including OmarPuente and his band. The group arrived inchauffeur-driven 1957 Chevrolet convertiblesand pulled up in front of the stage, beforedelivering an amazing performance.

    overwhelmed when theband returned after theirsecond Sheffield City Hall gig in 2008.

    Once at their new premises at Leopold Square,Cubana was given the ultimate seal of approval when DrAleida Guevara, daughter of famous Latin Americanrevolutionary Che Guevara, visited for dinner and posed for a picture underneath the portrait of herfather.

    Other notable guests include Panamanian boxer Roberto Duran, once considered to be the bestpound-for-pound fighter of all time, who visited in 2003.

    Cubana Mk. II Leopold Square After 14 years building up a reputation as the most vibrant independent Cuban bar inSheffield, it was time to say goodbye to Trippet Lane.

    Adrian discovered the two-level venue, formerly Platillos in Leopold Square hadbecome available. After a discussion with business partner Brad, they decided the timewas right to move. They enlisted the help of local artist Paul Staveley and Paul Bradyonce again to recreate Cubanas trademark style.

    Just four days after closing the Trippet Lane venue, the new Cubana was opened.We opened with a big party on Thursday 24 July. Over 400 people turned up and it

    was an incredible atmosphere, Adrian recalls. We knew right then, from everyonesreaction that it was going to work.

    Now offering two floors for two different nights out, diners can enjoy the cosy upstairs area orparty downstairs. Cubana turn over around 300 diners on a Saturday night, many of which stay allnight.

    Theres great flavoursome food, courtesy of Chilean head chef Fabrian Cruz who has been incharge of kitchen affairs since day one, exotic cocktails, friendly customer service, chilled-out livemusic and vibrant music to dance to all under one roof, says Adrian.

    Cubanas Salsa In The Square has also been a huge success. Since Cubana has taken over hostingthe Bank Holiday Sunday extravaganza, attendance numbers have doubled and Cubana looks forward to offering a live Cuban salsaband, salsa lessons, dance demos and more in May 2016.

    So, after 14 years brightening up Trippet Lane and a successful first year adding a vibrant mix of Cuban flavour to Leopold Square, howwill Adrian and his team be celebrating their success?

    Of course, there will be a big party, but Brad and I are going over toCuba in January too, says Adrian. Its such a great place and well getloads of inspiration. Well be treating that as our 15th birthday present.

    College teams up with the TykesBarnsley Colleges Sports Academy has established apartnership with Barnsley Football Club, which will givetalented footballers trial opportunities at the clubs academy.

    The partnership will enable the colleges athletedevelopment manager Dave Penney, who has managedprofessional clubs including Doncaster Rovers and OldhamAthletic, to send talented players from college to BarnsleyFCs academy for a trial.

    FILLING THE GAPSCan you name the final nine Ecclesfield Grammar teachers from 1960?

    In September 2014, we printed an Ecclesfield Grammar Schoolstaff photograph from 1960 and asked readers if they couldname any of the teachers. John Brewitt of Chapeltown and SteveSmith from Ecclesfield got in touch to fill in some of the gaps andtell us a little about some of the teachers featured in the picture. Bythe end of last year, we had names for just over half of them.

    Earlier this year we received a call from Paul Dolby, who was apupil at the school until 1969. Paul had been in touch with 89-year-old Geoff Jennett a history teacher at the time this photographwas taken, who eventually became deputy head to see if he couldidentify the remaining staff.

    Thanks to Geoffs impressive memory there are now just ninepeople who have not been named. Paul and Geoff are eager tocomplete the list and believe that the un-named females could bedomestic science or PE teachers. If you recognise any of the
