1. THE PRINCIPALITY OF MONACO
The Principality of Monaco is situated on the French Riviera,

in 1886 and had been quickly renowned as one of the
most glamourous place of Monte-Carlo.
Spring and Summer are the busiest months in Monaco gathering all types of events such as galas, multi-national popstar
concerts, Ballets de Monte-Carlo performances, international festivals, exhibitions etc.
Monaco’s pinnacle season is undoubtedly May with the Formula 1 Grand Prix taking place each year which has definitely
become a not-to be missed event! The Grand Prix attracts thousands of visitors and has definitely become the major event of
the Principality. The Hotel Metropole Monte-Carlo is lucky to have a very good location offering a clear view on the circuit
from the terraces of the Michelin-starred restaurants, the balconies etc.

2. HISTORY OF THE METROPOLE
Hotel Metropole Monte-Carlo’s historic location was once
owned by Pope Leo XIII. The plot of land was purchased in
1886 by the “Monte Carlo Hotel Company Ltd” and the
property was built in 1889.
Hotel Metropole Monte-Carlo became a haven for affluent
travelers, providing a discreet location which combined
luxurious charm and comfort.
Set in the heart of Monaco and overlooking the
Mediterranean Sea, the hotel was built in a Belle Époque
Style.
The Metropole quickly became a reference in Monaco for the
international elite, which included the English aristocracy,
famous for their elegance and taste. The success story
continued until the thirties, when the global economic crisis
slowed down the momentum.
In 1980 the Lebanese promoter Mr. Nabil Boustany, lover of
the Principality, bought the Hotel Metropole and began
major renovations whilst renaming the hotel ‘The Metropole
Palace’.
After 23 years, the Metropole Palace closes in September 2003,
for interior and exterior works. This starts a new period of
renovations pursuing the goal of giving the property the
codes of a Palace in total harmony with the era bringing
together charm, modernity and soul.
The hotel reopens in July 2004 and is renamed as Hotel
Metropole Monte Carlo. A new hotel, a new identity and a
new concept were born.
3. A NEW CONCEPT - THE HOTEL METROPOLE MONTE-CARLO
In 2003, the Hotel Metropole Monte-Carlo selected leading names in design, gastronomy and well-being to open a new
chapter to the hotel.
A DREAM TEAM…
Internationally renowned architectural and interior designer, Jacques Garcia, was selected to recreate the interiors and
the exterior landscape of the Hotel Metropole Monte-Carlo as part of the property’s multi-million pound renovation
plan.
Garcia, who has redesigned hotels in Paris, Geneva, New York, Beirut and Marrakech, has also transformed the 126-room
hotel from an old world luxury property typical of Monte-Carlo, into a hipper, more contemporary location unlike any
other in the Principality.
Jacques Garcia adapted his “Signature Designs” to produce a warm, Mediterranean interior for the Metropole, which
was dissimilar to all his previous hotel work.
Jacques GARCIA, Interior Architect
Didier GOMEZ, Interior Designer
Didier Gomez designed Yoshi, the hotel’s Japanese restaurant by
Joël Robuchon. His previous work included the decor of Asian
inspired restaurants, "The Mood" in Paris, as well as his
collaborations with prestigious brands such as LVMH, Vivendi,
Ferragamo, Céline, Jean-Paul Gaultier, Yves Saint Laurent and
Armani.
In 2008, Yoshi opened at the Hotel Metropole. The dining room
opens onto a Japanese inspired garden designed by Jacques Messin.
The Garden Designer worked closely with Didier Gomez to create a
real transitional space between the interior and exterior of the
restaurant, creating harmony with the surrounding environment.
Jacques Messin, a Parisian Garden Designer, has worked in the
botanical industry for over twenty years. His wealth of knowledge
was created through several years of higher education; beginning at
the School of Architecture, moving onto the Institute of Political
Studies, and finally the University of Paris.
Messin uses the three major tools of landscaping perfectly; the pen,
the spade and the secateurs. In his career he has worked on the
Parisian terraces, France’s private gardens, and in the gardens of
prestigious castles.
Jacques MESSIN, Landscaper
Joël Robuchon, the world’s most Michelin-starred
chef, was born in 1945 in Poitiers, France. Following
his extensive studying and research in the culinary
field, he has been rewarded with several awards,
such as the "Chef of the Century" by Gault Millau
and the "Best Restaurant in the World" by the
International Herald Tribune.
As a teacher and innovator, Joël Robuchon has
constantly created iconic recipes for the public. A
true musician to the heart, Joël Robuchon considers
his cuisine like music, an authentic art that
includes technique and rigour.
In 2004 he developed with Christophe Cussac and
his team a special original and innovative concept
for the Hotel Metropole Monte-Carlo. With his vast
experience in Mediterranean cuisine, the two chefs
collaborate to create menus highlighting classic
dishes blended with contemporary flavours and
Mediterranean styles.
The two chefs orchestrate 4 restaurants within the
property.
Joël ROBUCHON,
Chef and Creator of the restaurant concepts
Christophe Cussac is Joël Robuchon’s protégée. He has
worked along his side in several well-established and
famous properties before running the Cussac‘s family
hotel in French Burgundy.
Later, Cussac heads to the south and become Chef at La
Réserve Hotel in Beaulieu-sur-Mer (French Riviera)
from 1997 to 2004 where he was rewarded with two
Michelin stars.
In 2004, Christophe Cussac joins the Hotel Metropole
Monte-Carlo for the reopening where he supervises all
the restaurants of the property. Chef Cussac is thrilled
to be part of this wonderful adventure with Joël
Robuchon and as pure visionaries they imagine
tomorrow's gastronomy by getting their inspiration
from their experience and clients’ feedback.

4. GOURMET DESTINATION
The Hotel Metropole Monte-Carlo is a unique gastronomic destination with 4 restaurants led by Joël Robuchon and
Christophe Cussac.
This two Michelin-starred restaurant is managed by Joël Robuchon in association with Christophe Cussac, Head
Chef. Joël Robuchons’ inpirations for this restaurant were to craft a comfortably stylish dining venue that is
unrivalled in the Principality.
He imagined an open-kitchen to offer guests more than just a gourmet experience but a culinary show where
transparency sounds alike quality and conviviality. The cuisine is authentic and Mediterranean-styled besides the
on-site bakery also ensures to be served the freshest breads and pastries.
The conviviality atmosphere of the restaurant is backed up by Jacques Garcia who imagined this backdrop against
the wall representing a scene of Paul & Virginie (Manufacture of the Gobelins, 1802), velour armchairs and exotic
wood parquet floor. The restaurant has a large opened-terrace benefiting from an exceptional view on Monte-
Carlo and the Mediterranean Sea.
The Restaurant Joël Robuchon was awarded its first Michelin star in 2006 and a second in 2007, for its original
cuisine, as well as the professional team masterfully led by Joël Robuchon and Christophe Cussac.
YOSHI*- Japanese restaurant
Over the past 30 years, Joël Robuchon has developed a
great passion for Japan where he now has six restaurants
serving French cuisine. YOSHI illustrates, through the
refined cuisine and elegant interiors, Mr. Robuchon’s
contemporary and poetic vision of Japan to which he is
particularly attached.
YOSHI means “kindness” in Japan. The world’s unique
Japanese Robuchon restaurant is located in the heart of the
Principality, within the Hotel Metropole Monte-Carlo. Yoshi
offers a modern and healthy cuisine, created by Japanese
Chef Takeo Yamazaki, under the helm of Joël Robuchon
and Christophe Cussac.
Takeo Yamazaki has been working with Joël Robuchon for
more than two decades including the opening of L’Atelier
de Tokyo, London and Hong-Kong. The trustworthy
relationship between the two Chefs got even stronger
when Joël Robuchon asked Takeo to run the team of Yoshi
at the opening in 2008. One of kind concept and
collaboration rewarded by one Michelin star since March
2010.
The menu includes a Selection of Sushi, Sashimi and Maki
as well as à la carte dishes such as Ebi No Soup
(langoustine with Kombu consommé) and Zeitaku Wakame
(seafood in jelly), served with a selection of sakes,
Japanese green teas and international wines carefully
selected by our sommelier.
«Guests can come to YOSHI out of curiosity, they can be
seduced by the quality and everyboby can meet there for
pleasure !» comments Joël Robuchon who also imagined a
very exclusive sushi bar which can accommodate 4 guests
who can fully live the Yoshi experience.
French interior designer Didier Gomez has created a warm
and slick décor which gracefully combines the Japanese
influences and the elegance of the Hotel Metropole Monte-
Carlo. Gomez has used light tones such as ivory, yellow, pale
green and noble materials including ebony wood, stone and
silk, resulting in a serene and delicate atmosphere, in perfect
harmony with Joël Robuchon’s cuisine.
« It is a great pleasure to work with Joël Robuchon and the
Metropole Monte-Carlo » comments the designer. « I really
appreciate the constant desire to achieve the highest quality,
the strong will to always push the limits further in order to
create this fine jewellery piece YOSHI has become ».
Didier Gomez, who has already designed Japanese-inspired
restaurants such as « Le Mood » in Paris, is renowned for the
projects he has carried out for several prestigious groups such
as LVMH and Vivendi, as well as for numerous luxury brands
including Ferragamo, Céline, Jean-Paul Gaultier, Yves Saint
Laurent and Armani.
The 35 seat dining room opens up onto a Japanese-style
garden, created by Jacques Messin. The garden designer has
worked closely with Didier Gomez to create a transition space
between inside and outside, thus creating a harmonious
contrast with the city environment surrounding the
restaurant.
The Lobby Bar
The Bar of the Hotel Metropole Monte-Carlo is located between
the Lobby and the Restaurant. The Architect Decorator Jacques
Garcia created a living space for guests to relax with friends and
family.
“With the sea view, this warm atmosphere… it just feels like a
real house where you can sit in to have a drink, to welcome
friends, to read a book etc.”
The Lobby Bar is decorated with elements relating to the
Mediterranean Palace and the Riviera. The walls are lined with
bookshelves and ivory navigation devices. The authentic
collection of furniture signed by Garcia is completed by the
famous bar stools named “confident and indiscreet” and two
19th century Moorish statues.
The musical ambience is created by Béatrice Ardisson who has
imagined a full playlist dedicated and adapted to each moment
of the day. She associates 50’s musical style with contemporary
notes to result in a « Riviera Glamour » concept.
The Lobby Bar is the ideal place to have a drink, a coffee, lunch,
dinner or a tea time. The menu is created by Joël Robuchon and
is varied to fulfil every guest expectations and desires: cold
starters, snacks, sandwiches, hot dishes, selection of cheese and
desserts are on the list.
The chief barman, Michaël Bellec, also suggests a large menu of
exclusive and original cocktails to be sipped from 10am to 00am.
Besides, each month he reinvents the drink menu thus following
the changing theme and decoration of the Hotel Metropole
Monte-Carlo.
ODYSSEY, stunning duo Joël Robuchon & Karl Lagerfeld

emphasising Mediterranean flavours.
ODYSSEY is the place to be for an aperitif to choose from an
extensive menu featuring innovative cocktails and have a bite
to eat from a selection of delicious dishes to be shared. At
sunset, ODYSSEY transforms from an oasis of tranquillity to a
magical evening destination where the pool sparkles with
underwater stars.
The bespoke mural by Karl Lagerfeld illustrating the

lighting system intensifying as the sunlight dims.

of pleasure between friends, family or as a couple.
