    Intro: Perfect Oven Sweet Potato FriesI have perfected the art of the sweet potato fry. I've made them so many times that I have a very set formula for making them. I don't enjoy frying things, so I do mine the oven. They're easy and tasty and go well with Cuban, Mexican and Indian food. :D

    They're also good for holiday dinners. I just can't get on the "let's dump half a bag of brown sugar and some marshmallows into a pan with some sweet potatoes andmaple syrup!" bandwagon. Sweet potatoes are sweet enough as is!

    Step 1:Supplies!You will need:

    one large sweet potatosea salt (coarse)freshly ground black pepper, chunkygood quality olive oil (not pictured)a peelera sharp chef's knifea cutting boarda large baking sheet (not pictured)

    This recipe takes about a half hour to make, and one large sweet potato can serve 2-3 people if it's a side. Or sometimes I'll eat a whole one by myself if I've had nothelse to eat that day.

    Step 2:Preheat the oven and peel the sweet potato!Set the oven to 450 degrees Fahrenheit.

    Now, peel the potato.

    I don't worry about washing it, normally, but you can rinse it in the sink as long as you promise me you'll dry it off very, very well. If it's still wet the olive oil won't coat thfries as well, which will lead to soggy fries. And then you'll be disappointed with the fries and I'll be disappointed with you. :(

    Step 3:Slice the sweet potato!Most times, I will cut the sweet potato in half because they're normally very large.

    Now, cut a thin slice from both ends. (For the one pictured, I only had to do one end!) This will eliminate little pointy ends on your fries - they're bad because they tendburn very quickly since they slice up thinner. (Burnt sugar = nasty)

    Now, take a half of the sweet potato and cut it into large slices about 3/4 inch thick. You'll then cut the larger slices into fries. Your fries should be 1/2 inch to 3/4 inchthick.

    Repeat this for the other half!

    Sorry for the lack of action shots, I was doing this all by myself. :P

    Step 4:Put the fries on the baking sheet!Just throw them all on there.

    Sprinkle a good pinch of sea salt over them, and then apply a ton of freshly ground black pepper. I like to keep mine more chunky because it gives them a nice bite. :D

    Drizzle with olive oil (Probably about 1/4 cup, I don't know, I just eyeball things.)

    Now, mix it all together on the baking sheet. Make sure you're scooping the salt, pepper and oil from the bottom and mixing it in. Don't let the tastiness go to waste!

    At this point you can add more olive oil if you want - just don't drown them. They should look glossy, but they shouldn't be sitting in a pool of olive oil.

    Once everything's mixed, space out the fries on the baking sheet. Make sure they're all evenly spaced and not touching. They'll get soggy otherwise!

    Step 5:Baking!Put them in the oven for 15 minutes. Do not open the oven or fidget with them during this time. Just let 'em cook. The smell will probably be too much to bear, so perhthis is a good time to go to another room and focus on something else. :D

    Then, take them out and flip them. I use my bare hands most of the time, but tongs work well too.

    Once they're flipped, put them back in the oven for 10 minutes. :)

    Both sides should now be dark brown and crispy and delicious. And hopefully spicy, if you followed my directions. Spicy is the way to go with sweet potato fries!

    Keep in mind that I like mine REALLY dark and crispy. Should you want a lighter brown color, just reduce the cooking time a couple minutes for both sides.

    Could you perch some cooling racks inside a cookie sheet, and place the pieces atop, in order to avoid the turning-over operation (air flow beneath) ?

    I can't wait to bake these for Thanksgiving.

    jessyratfinksays: Nov 20, 2010. 5:48 PM REPYou can definitely coat the potatoes that way - but since I have never owned a dishwasher, I tend to skip any additional dish dirtying steps! :)

    I'm not sure that the cooling racks would work, though, because you really want the fries to get as much surface contact as possible with the bakingsheet so they get browned and crispy. But you could always do a test run!

    Warning, straight out of the oven, the inside is napalm which will blister the roof of your mouth. ;-)

Just be very careful what you are putting on them.Dogs cannot tolerate but very little salt, be careful not to use garlic and onion this can be dangerous to your dog.

    Bicyclemansays: Nov 22, 2008. 7:20 AM REPI like using a ziploc bag for this step, espescially if I'm using many herbs or spices. Just mix the seasonnings in the bag, add oil, add potatoes, close andshake, shake, shake! This whole recipe also works great for butternut squashes.

    I worked at Seva for 4 years as a waitress. The recipe is simple, but a little Ann Arbor local dependent. Its mayo with Clancy's Fancy, an Ann Arbor mahot sauce (. Yum. I have to remember to stock up on that stuff next time I'm in town.And now to figure out what's in the Clancy's. They have a website...:) Happy fry eating.

We make fries at home but I didn't know their saucehad a sour cream base. We've tried to replicate with mayo, spicy mustard, worchestershire, and a few drops of hot sauce. I like Dave's Insanity, but myson uses Gunslinger. We don't really have measurements, it's sort of just to our taste. Start out with about 1/2 C. mayo, 2-3 TBSP. mustard, 1 TBSP.Worchestershire and a couple drops of hot sauce. I'm going to make some fries now and maybe I'll try a sour cream base! Yum!

    The crowning touch was a drizzle of balsamic vinegar syrup (just boil 1 cup of vinegar until it reduces to 1/4 cup & store in the fridge) ... SO good.

    I would imagine the addition of some chili powder to these would be really tasty, too!

Not only does it add flavor, nutrients and texture it helps in keeping the soft potatotogether. The only time I peel my sweet or white potato is if there is a hard spot or blemish. I tend to cut mine into wedges... and roast on. Quick andeasy... and oh so satisfying.

I also put them in a baggie with the oil so that I can be frugal with theoil and coat them evenly. I also used about 1/4 tsp of ground rosemary and some paprika and went light on the pepper and salt. REALLY, REALLY good. Igoing to make this for my grandchildren who love sweet potatoes. Healthy, healthy!

I can't even imagine how great theywould taste with better quality ingredients. I followed Bicycleman's advice on step 4. I'm glad I used a ziplock bag, if not I would have made a mess!
