We are certainly joyful as we raise our various devices to record the dynamic crescendos of wolf song. It’s difficult for us not to instinctively join in again with the wolves. Why do humans howl? Babies do it before they can talk. Teenagers do it careening around the corner in their fast cars. Adult males often do it to show attraction to a woman. In some cultures, mourners howl in elegy for their dead. It’s so natural to lift one’s voice in a long fulfilling howl. All ages howl along with their domesticated dogs. Why?

In my role as fellowship director at the University of Arizona Center for Integrative Medicine, I am responsible for teaching physicians, advanced nurse practitioners, and physician assistants about the many topics that encompass integrative medicine. Nutrition is one of the most important topics, not only due to its enormous impact on health, but because, paradox-ically, physicians receive almost no education on practical nutrition during medical training. When I had the pleasure of reading Cynthia Lair’s material in 2014, I knew that she had an important message to share with our fellows that could help fill this educational gap. In her role as the founder of Bastyr University’s Bachelor of Science in Nutrition and Culinary Arts program and as assistant professor for the School of Nutrition and Exercise Science at Bastyr University, she has perfected her teaching approach to engage the adult learner in both the science and creative pleasure of preparing healthy foods.

Pork belly has become almost synonymous with Lark. It’s much more common now, but when we first opened, it was a rare sight outside of an Asian restaurant. After all, who would want all that fat? Julia Child said “fat equals flavor,” and I’ve been an adherent to her philosophy for years. I buy a superb Tamworth/Hampshire cross from Nick and Sara at Jones Family Farms on Lopez Island. Once you try the meat from a heritage-breed hog, you’ll never go back to commodity pork. We change the pork belly accompaniments many times throughout the year, and this combination is a perennial favorite.
pork belly WITH ENGLISH PEAS, PEA VINES, AND WHOLE GRAIN MUSTARD SAUCE
1 Place the pork belly in a pan or container large enough to hold it. Cover it completely with the brine. Place plastic wrap directly onto the brine and set a plate or other weight on the plastic wrap to hold the pork belly down below the liquid. Refrigerate for hours.
2 Preheat the oven to degrees F.
3 Remove the pork belly from the brine and, without rinsing it, place it in a large, deep ovenproof pot with sides at least inches high. Add the carrot, onion, celery, garlic, bay leaves,
