A $20 million, three-storey apartment and retail block planned for the cor-ner of Beresford St and Marine Pde has been granted resource consent.
The 2893m2 building will have 42 residential units and a ground floor cafe.
The building will consist of 15 one-bedroom apartments; 25 two-bedroom apartments and two three-bedroom apartments.
Plans also include a cafe, a private gym for exclusive use of on-site resi-
dents, 60 on-site car parks, various cycle parking facilities, a children’s play area; and a communal garden.
Project manager Ian Meuli said it was good to get through the resource consent process and was now concentrating on designs and being granted building consent.
Mr Meuli said everything going well construction would start next year and it could be finished in early 2017.
“We’ve been working with the business association and Paul Zaanen, so it’s great for the area
and hopefully it kick-starts a lot of other development in the area.”
Ray White New Brighton agent, Maxine Jones, said there has been a lot of interest in the apartments.
“We’ll have about 50 to 60 people living in them, near the mall, and that’s just got to be good for New Brighton and will create more demand for them.
“I’m just so excited for what it’s going to do for the area.”
She said they cannot be taken to market yet until the next step in the process was finished.
The site is owned by Auckland firm, Jolmin Holdings and is being developed privately.
Burwood-Pegasus ward city councillor Glenn Livingstone said it was another positive for the area.
He said it was another major project for the east.
Cr Livingstone said it was great to see so much happening in the ward with this new development, plus the new Aranui super school and the Aranui Community Centre along with the schools and recreation centre going in to QE II.

▌▌READERS’ LETTERS – FISHING ON THE PIER DEBATEMike Stevens, former chairman of the New Brighton Pier fundraising committee responds to a letter from August 24.
In response to Lorraine McKenzie’s letter.
May I assure her that fishing options were consid- ered.
The trust was given an origi-nal estimate of $10,000 per metre to build. The longer the pier, the bigger the price.
City council put a tentative $1.5m on budget with the trust to raise the balance.
Personally, I would have gone for a 400m pier. Which I considered beyond our reach financially. Hence our 300m.
A dedicated platform would have been wonderful, but beyond us.
Had the tendered price exceeded the original estimate, we had to find the difference. That price was $3m all up, raised by the most
wonderful supporters.
Cheryl Haglund, Selwyn: I was down there with a young lad I was looking after.
We were watching some of the fishers and I was really distressed.
A fellow was trying to catch crabs and he accidentally hooked a young seagull. He snapped its wings and threw it back in the water.
I ticked him off and the boy I was with as well as others on the
pier were horrified. We watched that poor bird in the water, it was so distressing for this kid.
It washed up on the beach and we took it to the police but there was not much they could do about it so we took it to a bird sanctuary place where they had to put it down.
I was absolutely bloody hor-rified what they did to the bird and it was very distressing.
I think the fishers need to be away from the public if they need to be fishing at all.

Chairs for SmileDialSmileDial has been granted funding from the city council to have two specially designed chairs that people with special needs can use at New Brighton beach over summer. The chairs allow people who would not normally have access to the beach in a standard wheelchair to get onto the sand and into the water.
Funding for signThe South Brighton Residents’ Association has applied for funding from the Burwood-Pegasus Community Board to go towards their proposed new welcome sign. City council staff have recommended the board grant the association $996, from the discretionary response fund, which is how much the group requested. The sign is part of a beautification project of South Brighton including lining Rocking Horse Rd with pohutakawa trees and a brass sculpture on the Bridge St bridge.

Frustration is building in the east at the lack of communication from the Canterbury Earthquake Recovery Authority.
The South Brighton Residents’ Association asked for a CERA staff member to attend its latest meeting but its request was turned down.
This comes after the Burwood-Pegasus Community Board also had a request knocked back.
The board asked CERA to attend on the Friday before the Monday meeting but a CERA spokeswoman said that was too short a time frame for a staff member to be organised.
Asscociation chairman Hugo Kristinsson (right) said he received a bizarre response from act-ing CERA chief executive John Ombler when he asked for their presence.
He said the reason Mr Ombler gave was because the issues the as-sociation was covering were insur-ance problems and the insurance companies and the Earthquake Commission would be better suited to attend.
Mr Kristinsson disputes this and says the issues do involve CERA.
“It’s utterly disappointing,” Mr Kristinsson said. “We don’t find it
reasonable to decline meetings.”A CERA spokeswoman said:
“A staff member did not attend the South Brighton Residents’ Association meeting because we understood that the issues to be raised at the meeting were the responsibility of insurance compa-nies, the Earthquake Commission and the city council.”
Mr Kristinsson said this was disappointing when it was CERA’s job to oversee the entire rebuild.
“We don’t find that reasonable. We are one of the worst-affected areas and we have to go to extreme measures to get information, it is like pulling teeth.”
On CERA’s website one of
the roles it says it performs is to keep people and communities informed.
Community board chairwoman Andrea Cummings said CERA seems to be increasingly leaving the community out of its plans.
“There seems to be a downgrade of the services they’re are offering.
“It is really disappointing to continue to be left uninformed about our community. We get very frustrated at community board level when we have to make a decision and not actually having a clue what’s going on.”
“A lot of angst would be solved if they would just come and talk to us,” Ms Cummings said.
The CERA spokeswoman said they have begun to move part of its roles to other agencies.
“Supporting community-led recovery functions are now being led by the city council, with psychosocial functions being transitioned to the Canterbury District Health Board via an arrangement with the Ministry of Health.
“CERA continues to work closely with the community development advisers and the wider community governance and support unit at the city council, to ensure that support and assistance is being provided to residents and communities.”

Chisnallwood Intermediate had a stellar Canterbury Bandquest, winning five awards.
South New Brighton School also grabbed a third place finish in one of three concerts.
One concert was held at Chisnallwood and the other two at Riccarton and Kaiapoi high schools.
Of the Chisnallwood bands, Cosmic Latte, won their event which earned the school $400 to spend at the Rockshop.
Lead singer of Cosmic Latte, Max Aldridge was also judged as best male vocalist on show.
Another $100 voucher for the Rockshop was picked up by band Static Movement for best original song.
The fourth award went to lead singer of Electric Twitch, Izzy Riwaka, for best female vocalist at the event.
The final Chisnallwood winner was Jai Tudor-Oakley from Catch Phrase was given the rocking drummer award.
South New Brighton’s Beach Break finished third at their event winning the school a $100 Rock-shop voucher.
The competition is for bands of two or more members, from intermediate or primary schools, who play a short set of covers or original songs, with a focus on performance skills.
Event co-ordinator Matt Ealand
says this age group is increasingly sophisticated and self-motivated.
“Rather than just forming a band in their music class, they’re getting together with like-minded friends, they’re practising outside of school time, using technology to record or promote themselves and showing a real awareness of what it takes to make it in the music industry.”
The national competition now enters the finals stage.
Video footage of the finalists will be displayed from September 18 in an online national final at bandquest.co.nz. The announce-ment of national winners and other awards will be made on September 23.

The Duke of Edinburgh Hillary Awards have been presented to Aranui High School students.
T.J Snow was recognised with a silver award while another nine others received bronze awards.
The bronze award win-ners were Valerie Ifopo, Josh Creedon,Taitama Tukaki,Bryce Adamson, Connor Roberts, Mikayla Scott, Sholita Umutaua, Jayrohn Krishna and Shardae Kauhou.
More than 150 Aranui High students have now received the award.

presented the awards to the students last week.
To receive the award you have to be a part of a range of activi-ties for a certain time period.
The longer you participate the higher award you receive, with gold, silver ad bronze being awarded.
Those activities include community service, developing skills, physical recreation and adventurous journey.
To receive gold, 12 to 18 months of participation is re-quired, for silver, six to 12 months and for bronze, six months.
The programme is run by the Joshua Foundation.
It uses programmes to help young people fulfil ambitions and dreams through leadership, competence, courage, clarity, integrity and character.
Over the past six years the Ministry of Youth Development provided funding to the Duke of Edinburgh Hillary Award to sup-port the Joshua Foundation to conduct programmes for young people in the Canterbury.
The awards are open and available to all 14 to 25-year-olds.

The sun is about to rise on a new era of schooling in east Christ-church and it will be called Haeata.
That is the new name of the Aranui super school. Haeata means dawn/daylight and new beginnings and it was picked from a short list of four.
The other three names were the Eastern Community Campus, Tai-kura and Awa.
Taikura means a coastal school or tides of learning and Awa means river.
The year 1-13 school will open in 2017 on the site of the present Aranui High School.
The name was chosen after ex-tensive consultation involving representatives from the commu-nity, the education sector, and Ngai Tahu.
“Our new campus is designed to reflect Haeata,” says Haneta Pierce, establishment board of trustees chairwoman.
“Our buildings face east, so we will see the very first rays of the sun every day and the campus will be a significant addition to the recovery of the eastern Christchurch.”
Ms Pierce said students, teachers and staff will reflect the same hope-ful possibilities of the new day and the new opportunities the campus will provide.
The new principal of Haeata, Andy Kai Fong, said the process used to arrive at the name – wide community consultation – signals a key approach to Haeata’s inten-tion as a school.
“The people in the community
are a big part of who we are and what we will be – their voice is es-sential.”
Aranui Primary, Wainoni School, Avondale Primary and Aranui High School will close and combine to make Haeata on the Aranui site.
Aranui Primary School principal, Mike Allen said the establishment group has done a remarkable job in selecting the new name.
“I think it is a good name. It will be a new future for all the children who walk through the gates when Haeata opens in 2017. And it’s also appropriate that the name incorpo-
rates the east and a new dawn for our community.”
Rawhiti School principal Liz Weir said: “It’s a wonderful name and, in particular, it comple-ments the name of our school, Rawhiti, the eastern point on the compass.”
There will be about 900 students merging into the one school in 2017 but has capacity to grow to a roll of 1800.
Five new buildings totalling just over 5000m2 of teaching space will make up the school and are being built where the current playing fields are.

The first meeting between au-thorities discussing the relocation of two high schools to QE II Park has been held.
Representatives from the city council, the Ministry of Education, Avonside Girls’ and Shirley Boys’ high schools and the Burwood-Pegasus Community Board were present.
They have been set up to discuss the relocation of the two schools to a still-to-be-determined part of the QE II Park site, alongside the East-ern Recreation and Sport Centre.
Councillors David East and Glenn Livingstone, both of whom represented the city council at the partnership meeting, say the first meeting was a positive start to dis-cussions between the parties.
“Residents are understandably keen to see progress on the QE II site as soon as possible. While the earthquakes damaged these facili-ties, they’ve also given us the op-portunity to think about how we can do things better when we re-build.
“This is a really exciting oppor-tunity to have three key commu-nity facilities based on the one site, which we expect to have signifi-cant spin-offs for residents. We’re looking forward to continuing to work with all the parties involved to bring these discussions to a suc-cessful conclusion.”
Construction of the Eastern Rec-reation and Sport Centre is sched-uled to begin in August 2016. It is expected the facility will open in 2018. The new schools are also ex-pected to open in 2018.

This new pressure main pipe transports wastewater from properties in the north-east of the city (from Spen-cerville to Southshore) to the wastewater treatment plant in Bromley
The Stronger Christchurch Infrastructure Rebuild Team is also constructing a new vacuum wastewater system to service around 2600 properties either side of Pages Rd.
The new vacuum wastewa-ter system is a more resilient system that uses air pressure to move wastewater through pipes.
This new system replaces
the gravity system in the area.SCIRT’s work installing
vacuum system mains will continue down the other end of Pages Rd near Anzac Drive during the summer of 2015/16.
Once the pipe work and vacuum chambers for the new vacuum system are fin-ished it will return to Pages Rd to complete final connec-
tions and commissioning of the new system.
The gravity wastewater system will then be decom-missioned.
The permanent road sur-face on Pages Rd will be completed by late 2016 when all the work has been com-pleted.

Rāwhiti School has a new logo.
The merged schools of Central New Brighton, North New Brighton and Freeville have been using a temporary one since the start of the year.
The three koru shapes in the logo represent the three original schools and they merge together to make a sun.
The sun is shown as a blazing fire rising up in the
east, representing Rāwhiti School as a shining example of education in the east.
The sun towards the east, rising above the horizon is used to represent the school’s vision of rising above the ordinary.
The orange and purple colours will also be the colours of the school’s new uniform but those designs are yet to be finalised.
A new school is currently being built on the old North
New Brighton site in Leaver Tce which is expected to be ready next year.

You have just recently become the president?
Yeah, I’ve been vice president for a couple of years and circum-stances have arisen where the club needed someone to take over the president role and there wasn’t anybody else putting their hand up so I thought I would.
When did you take the reins?At our annual meeting in June
this year.Have you been involved with
the club previously?Yes, I went on the committee
and did in-house stuff basically looking after the cleaning and organising aspects of the building. I did that for a year then became vice president, again they just needed somebody and I was there.
Why did you put your hand up?
I didn’t really want to, but if there was someone else who was better suited to the position I would have said go ahead. It’s very hard to stand up and do these jobs, I’ve got a good team with me and with their support I thought I’d be able to do a good job as president. I’ve got a group I can trust who put their hearts in to
the club. When you’ve got those people it makes it a lot easier.
What does the role involve?Facilitate social functions and
opening day which was on Sat-urday, welcome visitors and just to do the announcements to new members, I chair the committee meetings too.
How has the preparation gone for the upcoming season?
Good, quite a lot of background work the last two months leading up to the season getting teams organised. A lot of work goes into preparing our handbook that we give to people that has our entire programme for the season and information for new members in it. This particular season we have done a lot of work in getting our gold star status from Bowls New Zealand.
What are you looking forward to in your new role?
Just watching people enjoy our facilities and enjoying their bowls. We have a large social member-ship so just being able to make sure they all enjoy themselves.
Do you have natural or artifi-cial greens?
Two natural greens which are very subject to the weather early in the season. Opening day was of-ficially on Saturday but the greens may not be ready until later in the month.
You had a bit of earthquake damage didn’t you?
Yeah, there was a lot, we have basically rebuilt both greens and just been working towards the
grounds where there was a lot of damage. Our clubroom floors will never be level.
It must be nice to be almost back to normal though?
It is, even last season it was quite nice on a beautiful sunny day sitting on the deck at the clubrooms.
Have you been playing bowls for a long time?
No I haven’t, about seven years. My husband and son started playing before me and one day I had the opportunity to fill in and realised oh, I can do this. And I re-ally enjoyed it.
Ever played in a big match?
My most memorable game would have been during the first year I played. I played against a lady at the club and at the time we were very even in our ability. We played in the pouring rain and the only reason I won was because of the weather. She didn’t like being wet and I could tell it was bothering her. I just stayed calm when she was running inside all the time and coming back with dry clothes on and she was getting flustered. If it was a fine day I don’t know how I would have gone. I got to represent the club against the other clubs in Canterbury.
That must have been special?

It was, but we have got other members in our club who have represented New Zealand and Canterbury at a higher level. I just play for the enjoyment.
Those experienced members must be good to have around the club?
Yeah, they are. They’re always very helpful; I have found most bowlers are helpful and quite willing to share their knowledge with other members.
There are exciting plans for new clubrooms too?
Plans are well under way for that and are all subject to a few more steps and hurdles. We have plans drawn up and geotechnical reports done which have indi-cated our land is okay to build on. That is the biggest hurdle but we’ve got the all clear for that. Next part is getting the funding and having that gold status al-lows us to apply for extra grants and funding.
Are you from Christchurch?No, I’m from Sydney.I thought I detected an Aus-
tralian accent, how long have you been here?
I came here 41 years ago.Did you bring family over
with you?I actually met my husband
here at a social function.How long have you been
married?This year is actually our 40th
anniversary, which is very special.
Children?
Two sons, who both play bowls. They’re both married and have families. My older son has given us three grandchildren and the other, two.
Bowls runs in the family then, will the grandchildren play too?
Time will tell.Have you done any travel-
ling?The last couple of times we
have done a bit of New Zealand. We like doing road trips like a mid-winter trip to the North Island around Queens Birthday Weekend. We also went to West-ern Australia last year. My aim is to go have a look at each state in Australia; it’s on the bucket list. With the special wedding anniversary we are going to the United Kingdom and see a bit of Europe.
Where do you work?I work full time for Inland
Revenue as a collections officer. I have done that for 20 years and have enjoyed that. It is a good department to work for.
Were you trained to go into that work?
No, I was trained when I got here and started off as a part-timer working with cheques, then over the years I progressed as you do in a Government department.
Do you have any hobbies?Probably just bowls is number
one. I just enjoy my family and make time for them between the time at the bowls club.
directionMillcroft Place – Parklands
The gravity wastewater repair work along Millcroft Place was delayed due to one of the street lights needing to be temporarily removed. The street light has now been removed and the work on Millcroft Place is due to restart on Wednesday.
Forest Drive – ParklandsA road closure is due be in
place along Forest Drive between property numbers 23 and 47 from today. Once this work has been completed the road closure will be between No 57 and Courtfield Close. Stronger Christchurch In-frastructure Rebuild Team will aim to maintain vehicle access to residents properties. However, ve-hicle access for residents within the work area will be restricted for about one week. This is for the safety of workers and residents.
Bancroft Pl – ParklandsSCIRT will be undertaking
sections of road, footpath, kerb and channel renewal. The work is expected to start this week. It is anticipated this work will take about four weeks to complete. A temporary road closure will be in place on Bancroft Pl. Resident access will be maintained where possible which may be outside of work hours. Parking on the street will not be available next to the work area. At times, footpath ac-cess will be disrupted but one side of the street will always be open.
Portchester St – AranuiA new vacuum wastewater sys-
tem (sewerage) is being installed in Aranui/Wainoni to replace the damaged one. SCIRT has already
installed six vacuum wastewater chambers in the street. From to-day, for about three weeks, SCIRT is due to install a new vacuum wastewater main, which will con-nect to the newly installed cham-bers. SCIRT will start work at the Pages Rd, Portchester St intersec-tion and move west towards Caris-brooke St.
Armagh St – LinwoodSCIRT is due to start the seg-
ment repairs on the wastewater network in Armagh St from to-day for about two weeks, subject to favourable weather and on-site conditions. Work will start at 528 Armagh St and head towards the intersection at England St.

A special concert will be held to celebrate the New Brighton Silver Band’s 125th anniver-sary.
It is being held this Saturday (September 12) at the Geoff Butler Hall at Rawhiti Domain.
Bruce King has been a band member for the last 24 years and says reaching 125 years was special for the band.
“The fact we’ve lasted that time is a success in itself. It has survived because it’s a strong community band.”
The man the hall is named after, Geoff Butler, died last
year and Mr King said it was Mr Butler who held the band together for the last 50 years.
Mr King, who plays the euphonium, said there was a core group of people who keep the band going every year and it was nice to reach such an important milestone.
The band was formed in June 1890 after musicians met at Mr Free’s Hotel and at the commu-nity school.
Within a month practices had begun. The New Brighton community wanted a band so they did not have to rely on the availability of the bands from
the city.The St Albans Community
Choir led by Heather Glad-stone will also be a part of the concert this Saturday.
Mr King said the band always tries to include other community groups in their concerts.
He said because they have a hall to play in they liked to help out other groups who may not have a facility to play at.
Tickets to the special event are $10 for adults and $5 for children.
A light supper will also be provided after the concert.
HISTORY: The band in 1890 and the band today (inset) which will celebrate its 125th anniversary this weekend.
Silver band stands the test of time
Gardeners around the city are gearing up for the spring garden competi-tions.
The Christchurch Beautifying Asso-ciation and Canterbury Horticultural Society spring garden competitions will be judged on October 3.
As with last summer’s competitions the two organisations will be combin-ing their resources and judging both competitions at the same time.
The Christchurch Beautifying As-sociation competition is for the front garden only and is judged from the street.
The Canterbury Horticultural
Society competition covers the whole of the property and includes a walk-through by the judges.
There are several classes to enter, and winners can receive a trophy or certificate, or the satisfaction of hav-ing a competition standard garden.
Entry forms will be available from garden centres from September 12 or by contacting the Christchurch Beautifying Association president, Ron Andrew on 332 8128 or Brian Lovelock on 323 5426.
Canterbury Horticultural Society entry forms can be obtained from its centre, Hagley Park.

Three feline adventurers at different addresses across the city were returned to grateful owners this week, one from a roof, a second from a tree and the last from a locked garage.
I know this is the traditional, slightly mocking view of some of the things firefighters are called to do but alongside the drama and danger of fire, the technical skill of removing a smashed up car from around the occupant’s knees and the trauma of sudden death to the saving of a distressed animal and its equally distressed owner is a very worthwhile service.
Well done to the fire crews.A further example of the helpful
nature of firefighters was seen in Glen-rowan Ave in Avondale last Sunday night where a garage door collapsed on top of a lady’s car, denying her entry to the garage or the car.
The Wainoni crew responded, lifted the door, placed it back on to its tracks and freed the entry for the caller. No fire. No rescue. Just help where it was needed.
Any gas leak can be dangerous. When a contractor ruptures the gas main in Colombo St as occurred on Tuesday the danger tends to esca-late.
While firefighters can’t repair such damage they can make the situation as safe as possible until experts arrive.
In this case the gas cloud was dispersed by a water curtain from a fire appliance monitor.

Learning opportunities at CPIT’s CAmPus ConneCT
CPIT’s Campus Connect branches are opening their doors so people have the opportunity to come and talk to the staff about what they
can learn in their neighbourhoods. From 9am to 12pm on Tuesday,
September 15, all of the Campus Connect sites, including Madras Street, Bishopdale, Hornby, New Brighton and Rangiora, will simultaneously host an open day so people can have a coffee and a biscuit, and discuss their study options in a relaxed setting.
“We want to invite people to a relaxed and welcoming atmosphere where they can learn about Campus Connect and how they can benefit from it. Once they’re inside, they can have a casual chat about what learning options might help them get new skills,” manager of Campus Connect Peter Nock says.
Campus Connect offers free computing programmes for those who want to learn at their own pace as well as courses in job hunting and business. The courses provide self-paced, flexible learning for anyone who wants to gain a formal qualification for employment, learn the fundamentals of computing or enhance existing skills. Campus Connect offers around 22 different courses so there is something to suit most people.
Nock says the courses are flexible to meet people’s learning needs and what they want to achieve. “It can be intimidating for people to come in and try something new, especially if they haven’t enjoyed their previous

experiences with school or computers. But we offer a completely different way of studying at Campus Connect.”

Studying a degree programme in health is more accessible than you might imagine. Enrol in a foundation pre-health programme and you could
be studying nursing, sports science, human nutrition or physical activity and health promotion in February 2016.
The condensed Certificate in Pre-Health and Science will have you ready to start a health degree in three months instead of six. You’ll be getting started in an industry that is crying out for well-trained people as our population ages and interest in health grows.
Nursing is as dependable a profession as it has ever been, but modern nurses have much more opportunity for specialisation and for ongoing training. You can change specialisations and find the conditions that suit you – whether that is mental health, emergency, community nursing or hospital ward.
CPIT is known nationally for its nursing programme, but the institute also offers a range of sports exercise and wellness degrees that are ideal for those who love sport, exercise, nutrition and wellness education.

personal trainer or group exercise instructor and more advanced roles such as working with elite athletes, or as a sports scientist, community health promoter or private health consultant. The scope for employment is huge.

Vibrant cuisine from the Valley
PAN-FRIED FISH, CASSOULET OF BEANS, VEGETABLES AND CHORIZO — Serves 4Based on an Emerson’s res-taurant’s recipe except Em-erson’s served marlin and this one uses monkfish. The cassoulet can be prepared well ahead then reheated to cook the fish.
INGREDIENTS 2 tbsp olive oil 1 onion, diced ½ tsp ground cumin 50g spicy smoked chorizo 2 cloves garlic, crushed
670g passata 410g can cannellini beans pinch sugar freshly ground salt and pepper to taste 1 tbsp sliced mint leaves 1 cup peas 4 (700g) skinned and boned chunky white fish fillets
METHOD Heat half the oil in a heavy frying pan. Saute the onion,
until softened. Add the cumin, chorizo and garlic and cook for 2 minutes. Add the passata, beans, sugar and seasoning. Sim-mer for 5 minutes. Add the mint and peas and continue to cook, until hot.
Heat the remaining oil. Season the fish with salt and pepper. Panfry on medium-high for about 1 minute each side, until lightly coloured. Place the fish on top of the mixture in the frying pan. Cover and simmer gently for 3-5 minutes, until cooked. Great served garnished with pea fronds.
THE DECK’S DILL-CURED SALMON GRAVLAX Perfect served with Gartelmann Semillon. — Serves 4 as starter or light meal
INGREDIENTS Cure: 2 cups rock salt; 1 cup sugar; 1 bunch dill, roughly chopped; 1 tbsp freshly ground white pepper; 500g piece salmon, skin on, bones re-moved Salad: 2 tbsp olive oil; 1 tbsp capers, patted dry; ½ each small fennel bulb, red onion; 250g kipfler or small potatoes; 2 tbsp aioli; 1 tsp each wholegrain mustard, chopped preserved lemon; lavash or sourdough bread for serving
METHOD Combine the rock salt, sugar, dill and pepper. Place the salmon in a shallow dish, skin-side down. Rub the salt mixture into the salmon. Refrigerate for 24 hours, turning over halfway through. Wash the mixture off and pat the salmon dry. Covered, the salmon will keep chilled for 7 days.
Using a sharp knife, thinly slice the salmon from one side to the other. Heat the oil and pan-fry the capers, until crisp. Shave the fennel. Thinly slice the onion. Boil the potatoes until just tender. Drain, cool and cut into 1cm thick slices. Combine with the fennel, onion, aioli, mustard and preserved lemon in a bowl and gently toss to combine. Place the sliced gravlax on a serving plate and top with the potatoes and fried capers. Serve with the lavash or sough dough.

packet ‘‘chips’’ we tend to thinkof fatty, salty occasional treats.But I was recently pleasantly
surprised to discover amoreishrange of proper chips— 100 percent natural, gluten-free, GMO-free and hand-cooked in high-oleic sunflower oil. Ned andMina Smith, the expatriateAmerican couple who run thefamily-style Proper Crispsoperation in Nelson, brandedtheir delights ‘‘crisps’’ todistinguish them frommass-produced ‘‘chips’’. And they are
different. I just love themcrushed and sprinkled overicecream. The rapport between
the salty tang of the chips andthe sweetness of the icecream isa taste treat.The potato is certainly
common and a staple worldwide.They are cheap, hardy and easyto grow, and are high in starch,protein and vitamins. They arealso versatile.We all love thetraditional potato favourites butthis week I’m serving upsomething funky— potatoeswith icecream, in chocolatetruffles, with squid and in agluten-free pastry.
RECIPESTOFFEE & POTATOCRISPS VANILLAICECREAMProper Crisps are delicate.Perfect for coating icecream.
4 large scoops French vanillaicecream1 large cup Proper Crisps inMarlborough Sea Salt, lightlycrushed1/2 cup long thread coconut,lightly toasted4 meringue nests, optionalToffee: 1/2 cup sugar1/2 cup water
Refreeze the scoops oficecream. When hard, roll in thecrushed crisps and coconut.Freeze, until ready to serve.
To make the toffee, placesugar and water in a large,microwave-proof glass bowl.Microwave on high for 2minutes.
Stir to dissolve sugar.Continue microwaving for 3-4minutes until liquid is lightgolden. Remove — the toffeewill continue to colour onstanding.
Remove icecream fromfreezer. Place in meringuenests, if using. Drizzle withtoffee. Serve immediately.
Serves 4.
CHOCOLATE POTATOTRUFFLESThe mashed potato must befree of seasonings, cream andbutter. It should also be verywell mashed and have asmooth consistency.
1 cup dark chocolate chips1/2 cup cold cooked mashedpotatoes1/2 tsp vanilla essence4-5 pieces crystallised gingerDark cocoa powder for dusting
Place chocolate chips in amicrowave-proof bowl. Melt on50 per cent power for about 2minutes. When completelymelted, stir into mashed potatovery well.Add vanilla essence and stir wellagain. The mixture should besmooth. Chill for 30 minutes.
Cut ginger into thirds orquarters. Take a tablespoon ofpotato mixture and roll around apiece of ginger.
Repeat with remainingmixture. Place on a plate anddust with dark cocoa powder.Roll into small balls. Dust withcocoa. Refrigerate until firm.
Can be stored in fridge for upto one week.
Makes 16.
POTATO & SQUIDSALADThis is based on a PetaMathias recipe that she will bedemonstrating at theChristchurch Food Show, April4-6.
400g waxy potatoes4 eggs, free-range/organic, ifpossible1 large shallot4 tbsp olive oil1-2 tsp diced or crushed chilli100g squid rings8 pitted black olives8 anchovies, oil retained2 tbsp white-wine vinegarFlaky sea saltFreshly ground black pepperto taste
Peel potatoes. Place in cold,lightly salted water. Bring toboil. Simmer, until cooked.Don’t overcook. Slice thickly.
Meanwhile, place eggs incold water. Bring to boil.Simmer for 5-6 minutes. Cool,then peel and quarter. Sliceshallot and place in icy water tocrisp.
Heat a little of the olive oil in afrying pan. Add diced chilli.
Saute squid rings for about 2minutes, until just cooked.Combine with potatoes, shallot,eggs, olives and anchovies in abowl.
Make a dressing usingremaining olive oil, a little oilfrom the anchovies and vinegar.Season. Drizzle over salad.
Serves 8 as a starter.
GLUTEN-FREEPOTATO PASTRY450g cooked warm mashedpotato100g butter, chopped1 & 1/4 cups rice flour1/2 cup cornflour1 tsp salt1 egg, lightly beaten
Place warm mashed potato andbutter in a large bowl and mixwell. Add rice flour, cornflour,salt and egg. Mix well. Use yourhand to mix it, if easier. Wrapthe dough in a plastic bag. Setaside for 30 minutes to rest.Roll out to about 1cm thicknessor thinner. Great for pie pastryor for sausage rolls.

Preheat the oven to 200C.Combine the ricotta, egg,parmesan, salt, black pepper,orange rind and half the thyme ina bowl. Spoon into four small oiledramekins. Top with the remainingthyme. Spray with oil. Bake for 25minutes or until golden and set.

DECONSTRUCTEDLEMONMERINGUE PIEMy simple take on Emerson’ssmashed lemon meringue pie.Mine is one of those dishes youcan throw together forunexpected dinner guests.Delicious — keep thepresentation artistic.
INGREDIENTS
1/2 cup each: rolled oats, brownsugar, plain flour1/2 teaspoon mixed spice75g chilled butter, grated3/4 cup lemon curd2 tbsp lemon juice, optional4 large meringues4 scoops lemon sorbet (fromsupermarket freezer)whipped cream to serve
METHOD
Preheat the oven to 180C.Combine the rolled oats, brownsugar and flour, mixed spice andbutter. Mix well then spread in aroasting pan. Bake for 10 minutes,stir well then continue baking andstirring until golden and crumbly.Cool. Store in an airtight containerin the fridge or freezer.
To serve, spread a little of thecrumble on four serving plates. Ifthe lemon curd is thick, stir in alittle lemon juice. Mix well, untilsmooth. Dollop some onto eachplate. Break each meringue into 3pieces. Place creatively on top ofthe lemon curd. Add a scoop ofsorbet on the side. Serve withwhipped cream. — Serves 4

It is well-known how important omega-3 fatty acids are to good health. It is estimated most people don’t even get a third of the recommended omega-3

According to a country doctor DC Jarvis from Vermont in the USA, cider vinegar and honey (CV & H) can be an important part of a long
healthy life. Dr Jarvis noted Vermonters, who regularly consumed cider vinegar and honey, had excellent health with many putting in a vigorous day’s work on the farm even when well into their 80s.
Dr Jarvis found the effects of cider vinegar and honey on arthritis can be remarkable, with many patients reporting almost total relief after taking a course of the cider vinegar and honey. Dr Jarvis surmised that the acid and potassium in cider vinegar counteracted calcium deposits and helped the body control calcium use.
As well as a general tonic, Dr Jarvis found regular administration of cider vinegar and honey at the onset of complaints such as the common cold, sinusitis, asthmatic attacks, hay fever and childhood diseases, such as chicken pox and measles, was accompanied by an improvement in the condition with symptoms either disappearing, or the conditions were extremely mild and soon over.

Considered a 'comeback gig', Lindon says he stepped off the treadmill to build a house in Lyttelton in the hope of repaying the debt of free couches he's wracked up over the years.
For those that haven't delighted in the Lindon Puffin experience... he plays a mean harmonica, spins hilarious yarns and fronts the occasional tv show but prefers to describe himself as a fisherman trapped in a musicians body.
Lindon Puffin has released several albums, toured NZ relentlessly, and played across Australia, Europe and the States.
He has supported some famous dudes like Billy Bragg, Jack Black & Chris Knox. Been short listed for a Silver Scroll, had an album in the top 10 and twice been adjudged live performer of the year.
