What ’s Happening?Several Events Planned For MLK Day Celebration In Henry Co.Plans are underway for several events in Henry County to celebrate the Dr. Martin Luther King, Jr. Holiday later in January. The theme of this year’s events is Civil Rights to Silver Rights, celebrating the 50th year of the celebration.

On Sunday January 17th, Guest Speaker Jerome Blakemore will speak at services at Progressive Baptist Church at 6pm. He is the Social Studies teacher at Lewis University, and formerly at the Univer-sity of Memphis. Jerome Blakemore is the son of J.D. and Maddie Blakemore, formerly of Paris.

MLK Day, Monday January 18th, will have several events starting with the an-nual Prayer Breakfast beginning at 7am at Central School. The keynote speaker there will be Lt. Colonel Dereck Stewart, of the Tennessee Highway Patrol, son of James Stewart, former pastor at McKen-zie Baptist Church.

The March to the Courthouse will begin on January 18th at Mt. Zion at 10am and will include community leaders, law enforcement, and all citizens are invited to attend as well.

While at the courthouse, there will be an unveiling of a portrait of Mordeceai Johnson, who was born in Paris on Janu-ary 4th, 1861, and served as the first African American President of Howard University from 1926, until 1960. During the portrait unveiling, guest speakers will include George Bass and Tony Lawer-ence, Chamber President, and Paris Parks and Recreation Director.

Other events surrounding the MLK Day will include a luncheon, honoring Paris and Henry County’s very own local law enforcement officers.

The annual essay contest will also be included and winners of the essays will read them throughout the events planned Sunday and Monday January 17th and 18th. For more information on events surrounding this year’s Martin Lu-ther King Holiday celebration, contact Henry County Commissioner Kenneth Humphreys. All citizens are welcome to attend and take part in any of the events.

Benefit in Memory of Ronnie Cole Set for FridayThere will be a benefit concert and bake sale in loving memory of Ronnie Cole at JR’s Silver Dollar, located at 125 N. Brewer St. in downtown Paris this Friday January 8th from 6:30pm-9:30pm. There will be live music by Brian McCadams and all proceeds go to the Cole Family for funeral expenses.

Auction Items Needed For Benefit To Be Held In February

Three Oaks Restaurant, located at 11755 Highway 69 South in Springville is hold-ing a benefit for Paul “PD” Clen-denin on Sunday, February 21st.

PD has recently been diagnosed with cancer and donations and auction items are requested.The benefit will include BBQ plates, a live auction, raffles, 50/50 drawing and a bake sale.For more information, please contact Three Oaks at 731-593-1000.

Raspberry and AlmondShortbread Thumbprints original recipe makes 3 dozen

1 cup butter, softened 2/3 cup white sugar 1/2 tsp almond extract 2 cups all-purpose flour Preheat oven to 350 degrees F. In a medium bowl, cream together butter and white sugar until smooth. Mix in 1/2 teaspoon almond extract. Mix in flour until dough comes together. Roll dough into 1 1/2 inch balls, and place on ungreased cookie sheets. Make a small hole in the center of each ball, using your thumb and finger, and fill the hole with preserves. Bake for 14 to 18 minutes in preheated oven, or until lightly browned. Let cool 1 minute on the cookie sheet. In a medium bowl, mix together the confectioners’ sugar, 3/4 teaspoon almond extract, and milk until smooth. Drizzle lightly over warm cookies.

Baby Back Ribs Original recipe makes 4 servings2 lbs. pork baby back ribs 1 (18 oz) bottle barbecue sauceTear off 4 pieces of aluminum foil big enough to enclose each portion of ribs. Spray each piece of foil with vegetable cooking spray. Brush the ribs liberally with barbeque sauce and place each portion in its own piece of foil. Wrap tightly and refrigerate for at least 8 hours, or overnight. Preheat oven to 300 degrees F. Bake ribs wrapped tightly in the foil at 300 degrees

Candied Almonds original recipe makes 2 cups

1/2 cup water 1 cup white sugar 1 tablespoon ground cinnamon 2 cups whole almonds

Lemon Roasted Potatoes original recipe makes 6 servings

1/4 cup canola oil 1/2 cup butter, melted 2 tablespoons lemon juice 3 cloves garlic, minced 1 tablespoon dried dill weed 1 teaspoon salt 1 teaspoon ground black pepper 5 large potatoes, peeled and cubed

Preheat the oven to 400 degrees F. In a large bowl, stir together the canola oil, melted butter, lemon juice, garlic, dill, salt and pepper. Add potatoes and toss to coat. Spread the potatoes out on a baking sheet and drizzle any remaining liquid from the bowl over them. Bake in the preheated oven until potatoes are brown and crispy, about 45 minutes.

Combine the water, sugar, and cinnamon in a saucepan over medium heat; bring to a boil; add the almonds. Cook and stir the mixture until the liquid evaporates and leaves a syrup-like coating on the almonds. Pour the al-monds onto a baking sheet lined with waxed paper. Separate almonds using forks. Allow to cool about 15 minutes.

F (150 degrees C) for 2 1/2 hours. Remove from foil and add more sauce, if desired.
