Paganini, the innovative Irish ice cream and dessert Company was established in 1990 by Tomas Murphy. Tomas began making ice-cream using a classic Italian recipe from his Dairy Farm in Wexford. He wanted his fresh milk to be enjoyed by many and what better way than to make rich dairy ice-cream, so Paganini was born. Paganini now has a dairy and bakery producing a full range of Irish dairy ice-cream, cheesecakes, pastries, gateaux and desserts for hotels, restaurants and the hospitality and retail sectors.

From the outset Paganini has placed huge value on the quality of ingredients used. We know the milk and cream from the grazing pastures of Wexford is the best available so we seek out the finest quality ingredients from around the world to work with:
