Our Young Leaders National Ambassador
Laurel County 4-H member, Justin Woods was recently selected to serve on the National Shooting Sports state leadership board for the 2020-2021 school year. This youth board is comprised of high school age 4-H members selected through a competitive process and state level panel interview.
This is Justin’s second year as a state ambassador. This is a very prestigious honor for a select few students from all over the United States. Justin’s leadership for his club, district, state, and now, country has already impacted those around
him and will have even more opportunities to affect the lives of others. He is the epitome of the 4-H way of learning by doing and making the best better. A huge congratulations to one of Laurel County 4-H’s young leaders!
State SET Board
A Laurel County 4-H member, Charlotte Blevins was recently selected to serve on the Kentucky 4-H Science, Engineering, and Technology Leadership Board for the 2020-2021 school year. This youth board is comprised of high school age 4-H members selected through a competitive process including
writing an essay, a resume, and successfully interviewing with a state level panel. The goal of this program is to develop educational programs that provide youth opportunities to: master technical skills and creative abilities; explore careers in the science, engineering, and technology industry; develop leadership abilities and character; build self-confidence; improve public speaking and presentation skills and share knowledge with others. Congratulations to one of Laurel County 4-H’s young leaders!

Right on Target The Laurel County 4-H Shooting Sports Club has some big news! Thanks to the help of many great leaders and volunteers, the Laurel County Sharpshooters range has made major improvements. It has been the goal of the county 4-H program for the last several years to find a location and create a place for all of our shooting sports disciplines to be held in that one location. It is also our goal to eventually host our very own competitions. We are now one step closer to accomplishing that goal. It would not be possible without the dedication and support from our county judge-executive David Westerfield, KY state representative Robert Goforth, and Brent Reed of Reed Farms. When you see these gentlemen make sure to say thank you from Laurel County 4-H. This range, once complete, will be capable of teaching shooting sports safety to the younger generation for many years to come. To our volunteers with the program, we dearly appreciate you and hope that these improvements inspire us all to continue the great program that has been in place for over the past 15 years.
Ag Fair Another summer season and another year of the Laurel County Agriculture Fair has come and passed. Hard-working 4-H’ers with rabbits, goats, lambs, hogs, and cattle once again had an opportunity to present their animals in the show ring. These students put in countless hours working with their projects with the culmination of these efforts taking place at their local county fair. Volunteers and planning
committees put in extra time and measures to pull this event together safely and without them, these students would not have had the opportunity to come together and compete with their animals. Laurel County 4-H is extremely grateful for all the volunteers, parents, students, staff and local organizations coming together to make this event happen.
The following are the Laurel County Agriculture Fair Cornett Awards for the overall showmen of the week. A huge congratulations to all of the students that participated!

Online Project Fair
This year, the difficult decision was made to leave out projects from Ag Fair and State Fair. Instead of letting this opportunity pass you all by, we held an Online Project Fair. We had 32 total entries to this new fair and everyone one of them showed the great talent that the young artists and photographers of Laurel County have! Champion Winners are listed below in no particular order. Thank you all for participating and sharing your creative skills with us! You brightened our day with your projects!

Grab, Go, and Grow Since the pandemic has effected the programming that we offer, we’ve looked to new avenues to stay connected as a resource to Laurel County youth. One of the biggest ways we have stayed connected is by offering free grab and go activity bags. So far we have had activities themed around moon phases, handwritten-letters,
photography, clay, and an outdoor sunprint activity. With these we aim to supply kids with hands-on activities that they may not experience otherwise. These bags also always center on at least one of our 7 core content areas: Agriculture, Family & Consumer Sciences, Healthy Living, Communications, Leadership, Natural Resources, and Science, Engineering, & Technology. We miss seeing all our 4-H’ers in person but hope these bags are
giving a little dose of the fun of 4-H. Thank you to everyone who has been participating! If you’re interested in our next go-bag, check our Facebook or Twitter for more regular updates.

Summer Veggie & Wild Rice Bake 1 (6 ounce box) wild rice with
herbs and seasoning
1 green pepper,
chopped
½ cup coarsely
chopped fresh basil
2 teaspoons salt 1 tablespoon olive oil
1 medium eggplant, peeled
and diced
1 medium onion,
chopped 1 teaspoon pepper
1 cup low fat
2 yellow squash, cut
lengthwise, sliced crosswise
6 cloves garlic, minced
3-5 tomatoes, coarsely
chopped
shredded Italian
cheese blend
Heat oven to 350 degrees F. Prepare
wild rice in saucepan according to
package directions. Remove from
heat; drain excess water; stir in packet
seasonings. Heat oil to medium
high in large skillet. Add eggplant,
squash, pepper and onion; stir and
cook 5 minutes or until tender crisp.
Stir in garlic and cook 1 minute. Add
tomatoes, basil, salt and pepper; stir
occasionally and cook 2 minutes until
heated through. Stir in wild rice and
spoon into a 9-by-13 inch baking dish
that has been coated with cooking
spray. Top with cheese and cover with
aluminum foil. Bake 35 minutes or
until bubbly. Uncover and bake an
additional 5 minutes.
Yield: 16
Serving Size:½ cup
Nutritional Analysis:
90 calories, 2.5 g fat, 1 g saturated fat,
5 mg cholesterol, 469 mg sodium,
13 g carbohydrate, 2 g fiber, 3 g sugars,
4g protein.
Kentucky Eggplant SEASON: Late June to October.
NUTRITION FACTS: Eggplant
contains small amounts of
several important vitamins that
are needed daily. It is very low in
sodium and calories, with only 15
calories for a half cup serving.
SELECTION: Select firm, heavy
eggplant with smooth, shiny, deep
purple skin. Choose medium size
eggplant, about 3 to 4 inches in
diameter.
STORAGE: Store soon after
harvest or purchase in the
vegetable crisper in the
refrigerator. Use within one week.
PREPARATION: Eggplant is a
versatile vegetable and can be
baked, broiled, grilled, fried,
stuffed or used in a variety of
casseroles in combination with
other vegetables. It works well
with tomatoes, garlic, onions and
cheese. One pound equals 3 cups
diced. Eggplant should be peeled
before preparation, unless it is
very young and tender.
To broil or grill: Cut into three
fourth inch slices and brush with
margarine or Italian dressing.
Broil or grill for about 5 minutes
on each side, until eggplant is
tender and browned. Remove
from heat and sprinkle with
grated Parmesan cheese.
To season: Use marjoram,
oregano, allspice, chili powder,
curry powder, garlic, basil or
rosemary.
