Next to specific taste profiles some yeast extracts do also have a wide range of functionalities. Bioreal organic yeast extract TN includes a naturally occurring concentration and ratio of glutamic acid and ribonucleotides, which enables formulators and developers to create effects like taste fortifica-tions generally, taste masking, boosting specific taste profiles, accenting single taste perceptions in a blend or even improving the mouthfeel of the end product.
Product TN has a quite neutral colour as well as taste profile so that it shows no interference with the genuine taste profile of the formulation. Compared to TN, TS has a higher salt content, which implies the usage in applications, which inquire a bigger depth of the flavour.
