    FROM THE MANAGERIt’s hard to believe another year is behind us. All of the staff enjoyed serving you thispast year and we will strive to bring excellent food and superior service to you through-out the New Year. In 2006 we added new chairs in the Main Dining Room, new ban-quet chairs, new dining tables and replaced all of our ovens, fryers, griddle, grill andbrowning ovens. In 2007 we plan to replace all of the china in the Club. After 20years, it’s time to enhance your dining experience with newer and larger plates to show-case Chef Michael’s wonderful cuisine.

    Looking back, Thanksgiving, Holiday Family Night, Santa Brunch and New Year’s Evewere fun-filled events packed with members relaxing at the Club. To maintain exceptional member involvementwe’re planning to establish an Events Committee to assist in planning future events and programs.

    Lastly, the Park City Club staff and their families join me in thanking each member who so generously contributedto the Employee Holiday fund. From the Park City Club family to yours, we extend our warmest regards and bestwishes for a healthy, prosperous and happy New Year!

    Combining piano ragtime with traditional jazz and early popular music, B-Square was formed in 2005 as analternative to the big Dixieland jazz bands currently canvassing the traditional music scene. Brian Holland(piano) and Bud Dresser (sousaphone/flugabone) decided that they could encourage audiences to have just asmuch fun as they would listening to a full-sized jazz band by kicking up the energy and audience participa-tion quotient. Touring all over the Dallas/Ft. Worth area, B-Square is making more than just a small splash ina big pond.

Wehelped our members plan their perfect holiday events, many of whom are still raving about the delicious food,and the attentiveness of the staff to each and every little detail. We thank all of you for making this holidayseason a successful one and we look forward to continuing our trend of excellence in 2007. Also, remember itis never too early to book your holiday event for this year to guarantee availability.

    One of the projects the catering department will be working on this year is revamping our catering menus. Wewill definitely keep our members favorite items, but we are also looking at adding new, interesting entrees toour existing breakfast, lunch, dinner and hors d’oeuvre menus. Your input is greatly appreciated, so please callor e-mail us with any items you would like to see added to our new menus.

    The Park City Club is proud to continue our series of Winemaker Dinners in 2007. The first event, Friday,February 2nd will feature the boutique winery Sarcacina located in Mendocino County. Saracina is a 600-acre bio-diverse property encompassing three ranches located in Hopland, California. With 250 acres in vineyards and 350acres in ranch lands, the property’s openness and unspoiled yet well-tended beauty are unique in MendocinoCounty. The main ranch is home to Saracina Vineyards, a small-production, state-of-the-art winery open to mailinglist members and special guests by appointment, and to the first wine caves in Mendocino County, carved out ofsolid rock over a two-year period.

    Reminiscent of the rural character of Napa Valley 20 years ago, the ranches are populated with sheep and goatsroaming the hillsides, groves of 100-year-old olive trees, pomegranate orchards, bamboo gardens, hiking trails, awild azalea canyon, an organic vegetable garden, and four ponds that attract herons, Canadian geese and myriadanimal life to their banks. The owners are committed to preservation of the land and the rivers, including theRussian River which runs through one of the ranches, rather than clear-cutting every available acre for vineyards.

    Having sold Fetzer Vineyards to Brown-Forman in 1992, former CEO John Fetzer settled into the life of a gentle-man farmer, growing grapes for a number of wineries in Napa and Sonoma counties. By 2001, Fetzer was eager toreturn to winemaking...in a small way. He and his wife, Patty Rock, envisioned a boutique winery producing nomore than 10,000 cases that would showcase the varietals in which Mendocino County excels: sauvignon blanc,roussanne, syrah, petite sirah and zinfandel. His mission was to highlight the outstanding viticultural traditions ofthe county and raise the bar for local vinification practices to produce wines that could compete with the finestworld wines.

    John Fetzer and Patty Rock released their first wine, 500 cases of sauvignon blanc, in late 2002. In 2004, SaracinaVineyards introduced a second brand, Atrea, featuring interesting red and white Rhone blends (Atrea Old Soul Redand Atrea The Choir White) that allow the winemaker new territories for experimentation with unusual varietals.In 2006 Saracina released its first vintages of syrah and petite sirah and in 2007 its first grenache.

    With the winter months here and the mercury below the freezing point on many occasions, there is nothingbetter than a hot cup of coffee. Of course, we feel that the best place to enjoy that cup of coffee is at the ParkCity Club. We have always served gourmet coffee and ground our own beans for every pot that we brew. Webrew over 2800 pounds of coffee per year, almost one and a half tons. We are not alone though as it is one ofthe most popular beverages in the world with 7 million tons produced annually. Brazil remains the largest cof-fee exporting nation and in recent years has been followed by Vietnam, who produces large quantities ofrobusta beans.

    There are two main species of the coffee plant with Arabica being the older one and a more sophisticated fla-vor and aroma. Most Arabica coffee beans originate from one of three regions; Latin America, East Africa-Arabia, and Asia-Pacific. The second species, Robusta, which contains 40-50% more caffeine, can be cultivatedin environments where Arabica will not thrive. Compared to Arabica, Robusta tends to be bitter and has littleflavor with a telltale “burnt rubber” or “wet cardboard” aroma and flavor and is used more for mass market-ing. Sometimes it is used in espresso to provide a better “crema” (foamy head).

    Coffee plays an important role in many societies throughout the world today. From the coffee houses of the16th century, to the modern day cafes, coffee brings people from all walks of life together. English coffeehous-es were centers of intellectual and commercial activity. Lloyds of London, the famous insurance firm, wasoriginally a coffeehouse.

    Many studies have been performed on the relationship between coffee consumption and many medical condi-tions, ranging from diabetes and cardiovascular disease to cancer and cirrhosis. One fairly consistent findinghas been the reduction of diabetes mellitus type 2 in coffee consumers. Recently, coffee was found to reducethe chances of developing cirrhosis of the liver, not to mention the high antioxidants it contains.

    Spent coffee grounds are a good fertilizer in gardens because of their high nitrogen content. Starbucks, andsome other coffeehouses have a specific policy of giving their used coffee grounds to gardeners. While theytend to be only slightly acidic, through chemical processes they improve the acidity of garden soil better thanmost other fertilizers and in Dallas with our soil so alkali, it is a good additive.

    Let me leave you with a recipe for café Diablo to enjoy while you are seated around the fireplace this winter. Itcan be used as a dessert or an after dinner drink.

    Café Diablo

    8 cups cold water1/3 cup packed dark brown sugar½ ounce finely chopped baking chocolate2 whole cloves1 cinnamon stick broken in ½1 cup dry regular grind coffee1 teaspoon vanilla1/4 cup brandy8 tablespoons coffee liqueurwhipped cream

    Heat water, brown sugar, chocolate, cloves and cinnamon to boiling in 3-quart saucepan; reduce heat. Simmeruncovered 15 minutes. Stir in coffee. Remove from heat, cover and let stand 5 minutes. Stir in vanilla. Straincoffee through four thicknesses of cheesecloth. Keep hot in saucepan after straining. Heat brandy just until warmin small, long-handled saucepan. Remove from heat, ignite. Pour flaming brandy over coffee. Allow flame to burnout; stir. Pour coffee into cups or mugs. Top each with whipped cream and 1 tbsp liqueur. Garnish with cinna-mon stick if desired.

    The Park City Club is proud to continue our series of Winemaker Dinners in 2007. The first event, Friday,February 2nd will feature the boutique winery Sarcacina located in Mendocino County. Saracina is a 600-acre bio-diverse property encompassing three ranches located in Hopland, California. With 250 acres in vineyards and 350acres in ranch lands, the property’s openness and unspoiled yet well-tended beauty are unique in MendocinoCounty. The main ranch is home to Saracina Vineyards, a small-production, state-of-the-art winery open to mailinglist members and special guests by appointment, and to the first wine caves in Mendocino County, carved out ofsolid rock over a two-year period.

    Reminiscent of the rural character of Napa Valley 20 years ago, the ranches are populated with sheep and goatsroaming the hillsides, groves of 100-year-old olive trees, pomegranate orchards, bamboo gardens, hiking trails, awild azalea canyon, an organic vegetable garden, and four ponds that attract herons, Canadian geese and myriadanimal life to their banks. The owners are committed to preservation of the land and the rivers, including theRussian River which runs through one of the ranches, rather than clear-cutting every available acre for vineyards.

    Having sold Fetzer Vineyards to Brown-Forman in 1992, former CEO John Fetzer settled into the life of a gentle-man farmer, growing grapes for a number of wineries in Napa and Sonoma counties. By 2001, Fetzer was eager toreturn to winemaking...in a small way. He and his wife, Patty Rock, envisioned a boutique winery producing nomore than 10,000 cases that would showcase the varietals in which Mendocino County excels: sauvignon blanc,roussanne, syrah, petite sirah and zinfandel. His mission was to highlight the outstanding viticultural traditions ofthe county and raise the bar for local vinification practices to produce wines that could compete with the finestworld wines.

    John Fetzer and Patty Rock released their first wine, 500 cases of sauvignon blanc, in late 2002. In 2004, SaracinaVineyards introduced a second brand, Atrea, featuring interesting red and white Rhone blends (Atrea Old Soul Redand Atrea The Choir White) that allow the winemaker new territories for experimentation with unusual varietals.In 2006 Saracina released its first vintages of syrah and petite sirah and in 2007 its first grenache.

    One of the projects the catering department will be working on this year is revamping our catering menus.     FROM THE MANAGERIt’s hard to believe another year is behind us. All of the staff enjoyed serving you thispast year and we will strive to bring excellent food and superior service to you through-out the New Year. In 2006 we added new chairs in the Main Dining Room, new ban-quet chairs, new dining tables and replaced all of our ovens, fryers, griddle, grill andbrowning ovens. In 2007 we plan to replace all of the china in the Club. After 20years, it’s time to enhance your dining experience with newer and larger plates to show-case Chef Michael’s wonderful cuisine.

    Looking back, Thanksgiving, Holiday Family Night, Santa Brunch and New Year’s Evewere fun-filled events packed with members relaxing at the Club. To maintain exceptional member involvementwe’re planning to establish an Events Committee to assist in planning future events and programs.
