When using the appliance, follow basic safety precautions, including thefollowing:

Read all instructions before installation and use of the range to preventaccidents and machine damage.

This range complies with current safety requirements. However,improper use of the appliance can result in personal injury ordamage to property.

Please read the installation instructions carefully before installingand connecting the appliance. Read the operating instructions before using the range for the firsttime. To prevent accidents and damage to the appliance, alwaysobserve both the installation instructions and operatinginstructions. Both documents contain important information aboutinstallation, safety, use and maintenance.Miele cannot be held liable for damage occurring as a result ofnon-compliance with the instructions.

Keep these installation instructions and operating instructions in asafe place and pass them on to any future owner.

Appropriate use

This range is intended for domestic use and use in other similarenvironments.

This appliance is not intended for outdoor use.

Use the range exclusively under normal domestic conditions:

– Use the oven for baking, roasting, broiling, defrosting, canningand drying food.

– Use the stovetop to prepare food and keep it warm.

Any other use is not permitted.

Risk of Fire! Do not use this oven to store or dry combustiblematerials.

Persons who lack physical, sensory or mental abilities, orexperience with the appliance should not use it without supervisionor instruction by a responsible person.

Safety with children

As with any appliance, close supervision is necessary when theoven is used by children.

Do not leave children unattended: Children should not be alone orunsupervised in the area where the appliance is installed. Do notallow them to sit or stand on the appliance.

Children must be kept away from the range unless constantlysupervised.

Children ages eight and up may only use the range withoutsupervision if they have been shown how to use it in a safe manner,and if they are able to recognize and understand the potential risksof improper use.

Children must not be allowed to clean or maintain the rangewithout supervision.

Please supervise any children in the vicinity of the range and donot let them play with the appliance.

Risk of burns! The skin of children is more sensitive to hightemperatures than that of adults.

– External parts of the oven such as the door glass, vent andcontrol panel become hot. Do not allow children to touch the ovenwhen it is in operation.

– The burners of the cooktop will become hot during use. Turn potand pan handles inward, so children cannot pull them down andbe burned. Risk of burns!

Danger of burns. Children's skin is more sensitive to high temperatures than that ofadults. The oven becomes hotter during self-cleaning than it does innormal use. Do not let children touch the oven while the Self Cleanprogram is running.

Burn hazard from improper use! Do not allow children to operatethe oven.

Danger of suffocation! Ensure that any plastic wrappings, bags,etc. are disposed of safely and kept out of the reach of children.

Burn hazard! Keep the spaces above and behind the range clear of any items thatcould draw the attention of children. Otherwise, they can be temptedinto climbing onto the appliance.

Danger of injury. Never allow children to hang or lean on any partof the appliance.

Technical safety

Unauthorized installation, maintenance, and repairs can causeconsiderable danger for the user. Installation, maintenance, andrepairs must only be carried out by a Miele authorized technician.

Do not carry or lift the range by the oven door handle or thecontrol panel!

Maintenance by the user: Never repair or replace any part of theappliance unless the instructions specifically recommend doing so.Service work should only be performed by a qualified technician.

A damaged range can be dangerous. Always check for visiblesigns of damage. Never use a damaged appliance.

Reliable and safe operation of the range can only be guaranteed ifit is connected to the public power supply.

The electrical safety of the range can only be guaranteed when itis properly grounded. Compliance with this essential safetyrequirement is absolutely mandatory. If in any doubt, please have thebuilding's wiring system inspected by a qualified electrician.

Proper installation: Make sure that your appliance has beeninstalled correctly and that it has been grounded by a qualifiedtechnician.

To avoid damaging the range, make sure that the connection data(voltage and frequency) on the data plate correspond to thebuilding's power supply before connecting the appliance.When in doubt, consult a qualified electrician.

During installation, maintenance and repair work, e.g. if the ovenlighting is broken (see “Frequently asked questions”), the range mustbe completely disconnected from the household electricity supply. Itis only completely isolated from the electricity supply when:

– The main circuit breaker has been tripped, or

– The plug fuses have been fully unscrewed (where applicable), or

– The power cable has been unplugged from the wall outlet. Unplugthe cable by pulling on the plug, not on the cord.

Do not use a power strip or extension cord to connect the rangeto electricity. These are a fire hazard and do not guarantee therequired level of appliance safety.

Any contact with live connections or tampering with the electricalor mechanical components of the range will endanger your safetyand may lead to appliance malfunctions.Do not open the appliance housing under any circumstances.

This appliance must not be installed and operated in mobileinstallations (e.g. on a ship).

Any repairs not performed by a Miele authorized servicetechnician will void the warranty.

Defective components should be replaced by Miele original partsonly. Only with these parts can safety of the appliance be assured asintended by the manufacturer.

Risk of electric shock! If the ceramic surface of the stovetop isdefective or chipped, cracked or broken in any way, immediatelyswitch the stovetop off and do not continue to use it. Disconnect therange from the power supply and contact Miele Technical Service.

If the range is installed behind a cabinet door, do not close thedoor while the appliance is in operation. Heat and moisture can buildup behind the closed door and cause damage to the range and tothe surrounding cabinets and flooring. Do not close the door until theappliance has completely cooled down.

Reaching over a hot cooktop to access the cabinets can result inburns. You can reduce the risk of burns by installing a range hoodthat extends at least 4 3/4" (12 cm) past the bottom of the cabinets.

Correct use

The oven becomes very hot while in use. Use caution toensure that you are not burned on the heating elements or interiorsurfaces of the oven. Use pot holders when placing food in theoven, adjusting the racks, etc. in a hot oven.

Caution: Heating elements may be hot even though they are notglowing. Interior surfaces of an oven become hot enough to causeburns. External parts of the oven such as the door glass, vents, andthe control panel can become hot. During and after use, do nottouch, or let clothing or other flammable materials come into contactwith heating elements or interior surfaces of the oven until they havehad sufficient time to cool.

Do not let food sit in the oven for an extended period of timebefore or after cooking. Doing so can result in food poisoning orsickness.

Use only dry, heat-resistant potholders. Moist or damp potholdersused on hot surfaces may result in steam burns. Do not letpotholders come in contact with oil or grease. Do not substitute dishtowels or other bulky items for potholders. Do not let potholderstouch hot heating elements.

Loose fitting or hanging garments present a fire hazard. Wearproper apparel while operating the appliance.

Do not heat up food in closed containers, as pressure will build upin the container, causing them to explode.Do not use the range to boil or heat up cans.

Never pour cold water onto hot surfaces in a hot oven.The steam created could cause serious burns or scalding and thesudden change in temperature can damage the enamel in the oven.

To prevent burns, always place oven racks at their desired heightwhile the oven is cool. If the rack must be moved while the oven ishot, do not let pot holders touch hot heating elements.

Open the door carefully to allow hot air or steam to escape beforeplacing or removing food.

To prevent burns, allow the heating elements to cool beforecleaning by hand.

Do not leave the oven door open unnecessarily as someone maytrip over it or be injured by it.

Never leave the appliance unattended when cooking with oil orfat. They can ignite if overheated. Do not use water on greasefires.Turn off the oven immediately and suffocate the flames bykeeping the oven door closed.

Do not use water on cooktop grease fires. Turn the cooktop off.Smother or use a dry chemical or foam-type extinguisher on any fireor flame.

Smother the fire or flames, or use a dry chemical extinguishingagent or foam fire extinguisher.

Never store flammable liquids and materials in, above or under anoven, or near cooking surfaces.

The high temperatures radiated could cause objects near the ovento catch fire.Do not use the oven to heat the room.

WARNINGNEVER use this appliance as a space heater to heat or warm theroom. Doing so may result in carbon monoxide poisoning andoverheating of the oven.

WARNINGNEVER use this appliance as storage space. Doing so may resultin carbon monoxide poisoning and overheating of the oven.

WARNINGNEVER cover any slots, holes or passages in the oven bottom orcover an entire rack with materials such as aluminum foil. Doing soblocks air flow through the oven and may cause carbon monoxidepoisoning. Aluminum foil linings may also trap heat, causing a firehazard.

Broiling food for an excessively long time can cause it to dry outand may result in the food catching fire.Do not exceed recommended broiling times.

Some foods dry out very quickly and can be ignited by highbroiling temperatures.Do not use broiling functions for crisping rolls or bread or to dryflowers or herbs. Instead use the Conv Bake (Convection Bake) orSurround functions.

Use caution when using alcohol in your recipes. Alcoholevaporates at high temperatures but may, in rare circumstances,combust on the hot heating elements.

Plastic or aluminum foil cookware melts at high temperatures andcan damage the range or start to burn. Do not use any plastic oraluminum foil cookware. Exception: You can use oven-safe plastic cookware in the oven.Heed the cookware manufacturer's instructions.

When residual heat is used to keep food warm, the high level ofhumidity and condensation can cause damage in the oven. Thecontrol panel, countertop or cabinetry may also be damaged.Do not switch the oven off completely while food is inside it, butselect the lowest possible temperature for the oven mode you areusing. This will ensure the fan will automatically continue to run.

It is recommended to cover all cooked food that is left in the ovento be kept warm. This will prevent moisture from condensing on theinterior of the oven.

To avoid damage, do not place aluminum foil, pots, pans orbaking sheets directly on the oven floor. This can cause a build up ofheat that will damage the oven floor.

Do not slide pots or pans on the oven floor. This could scratchand damage the surface.

The door can support a maximum weight of 33 lbs (15 kg). Do notsit on or lean against an open door, and do not place heavy objectson it. Also make sure that nothing can get trapped between the doorand the oven cavity. The oven could get damaged.

This oven must only be used for cooking food. Fumes, vapors orheat given off by glues, plastics or flammable liquids and materialscould be hazardous. Do not use it as a dryer, kiln, dehumidifier, etc.

Do not obstruct the flow of combustion and ventilation air.

Do not let metal objects (aluminum foil, pans) come in contactwith the heating element.

Make certain that the power cords of small appliances do notcome in contact with or get caught in the oven door.

When baking frozen pizzas or pies, place them on the wire racklined with parchment paper. Do not use the baking tray or theroasting pan for frozen foods with a large surface area. The tray orpan could become warped and difficult to remove from the ovenwhen hot. Frozen foods like french fries, chicken nuggets, etc. canbe baked on the baking tray.

The flames could set the grease filters of a ventilation hood on fire.Do not flambé under a ventilation hood.

Never heat empty cookware.

If the cooktop is covered, there is a risk that the material of thecover will ignite, explode or melt if the cooktop is still hot or if turnedon inadvertently. Never cover the cooktop with a board, cloth orprotective sheet.

When using an electrical appliance, e.g. a hand mixer, near thecooktop, make sure that the power cable does not come intocontact with the hot cooktop. The cable's insulation could becomedamaged.

The cooktop gets hot when in use and remains hot for a whileafter being turned off. There is a potential hazard until the residualheat indicator goes out.

If the cooktop is turned on or accidentally turned on or if it is stillhot, metal objects on the cooktop can heat up. Other items may meltor catch fire. Damp lids can become attached to the cooktop bysuction. Do not store items on the cooktop! Always turn the burnersoff after use!

Do not allow solid or liquid sugar, or pieces of plastic or aluminumfoil to get onto the cooktop when it is hot, as they can damage theceramic surface when it cools down. If this should occur, turn off theappliance immediately and scrape off all the sugar, plastic oraluminum residues while still hot, using a shielded scraper blade.Use pot holders. Allow the ceramic surface to cool down beforecleaning with a suitable ceramic cleaning agent.

Pans that boil dry can cause damage to the ceramic glass. Do notleave the appliance unattended while it is being used.

Pots and pans with bases with pronounced edges or ridges canscratch the ceramic burner. Only use pots and pans with smoothbases.

Lift pans into position on the cooktop. Sliding them into place cancause scuffs and scratches.

Grains of salt, sugar and sand (e.g. from cleaning vegetables) cancause scratches if they get under pan bases. Make sure that theceramic surface is clean before placing pans on it.

Even a light object can cause damage to the ceramic cooktop incertain circumstances. Do not drop anything on the ceramic surface.

Hot pans on the display can cause damage to the electronicsunderneath. Do not place hot pans on the area around the display.

The cooktop frames or surrounding (in the case of beveledcooktops) may become hot due to the following factors: operatingtime, high output settings, large cookware, and number of burners inoperation.

Cookware made from aluminum or with an aluminum base cancause shiny metallic spots. These spots can be removed withceramic glass or stainless steel cleaner (see “Cleaning and Care”,“Cleaning the ceramic surface”).

If residue remains on the cooktop for any length of time, it cancook into the cooktop and sometimes it is then not possible toremove it. Remove spills and splatters promptly. Also make sure thatthe bottom of any cookware is clean, dry, and free of grease beforeplacing it on the cooktop.

The cooktop has burners of different sizes. Use cookware with alevel base that is large enough for the burner. Cookware that is toosmall leaves part of the hot burner uncovered, which may causeburns due to touching or ignite clothing. The use of cookware of theright size also makes for better use of the heated areas.

Not any cookware of glass, glass ceramic, ceramic, clay or otherglass cookware is suitable for use on a burner. It can be damageddue to sudden temperature change.

Wet sponges or clothes can cause burns due to hot steam if theyare used to wipe spilled food off a hot burner. Some cleansers canemit hazardous vapors if they are applied to a hot surface. Be carefulwhen cleaning the cooktop.

Spilled food can cause odors and the spraying of grease, whichcan ignite on the cooktop. Never leave the cooktop unsupervised athigh power.

If the handles of a pot or pan extend across an adjacent burner,this can cause burns, the ignition of flammable materials and thespilling of food due to inadvertent contact with the cookware. Turnthe pot or pan so that the handles point toward the inside and do notextend across an adjacent burner.

If the burner is damaged, cleansers or spilled food can penetratethe glass surface and cause a short-circuit. Never cook on adamaged burner. Contact an electrician immediately.

Cleaning and maintenance

The steam from a steam cleaning appliance could reach liveelectrical components and cause a short circuit.Do not use a steam cleaner to clean the range.

Only clean parts listed in these Operating and InstallationInstructions.

Scratches on the door glass can cause the glass to break.Do not use abrasive cleaners, hard sponges, brushes or sharp metaltools to clean the door glass.

The shelf runners can be removed for cleaning purposes (see“Cleaning and care”). Ensure they are correctly fitted after cleaningand never operate the oven without the shelf runners inserted.

There is a seal around the oven interior which seals the inside ofthe door. Take care not to rub, damage or move the gasket. Do notclean the door gasket - the door gasket is essential for a good seal.

Do not use a protective coating to line the oven and do not usecommercial oven cleaner unless certified for use in a self-cleaningoven.

Debris should be removed before running the Self Clean program.If not removed this debris can smoke causing the self-cleaningprogram to turn itself off.

Accessories

Use only genuine original Miele parts. If parts or accessories fromother manufacturers are used, the warranty will become void.

The high temperatures used during self-cleaning will damageaccessories that are not designed for cleaning in the Self Cleanprogram. Please remove these accessories from the oven beforestarting the Self Clean program. This also applies to accessoriespurchased separately (see “Cleaning and care”).

When the set temperature is reached,

Shelf runners

The shelf runners are located on theright and left-hand sides of the ovenwith the levels for inserting accessories.

The shelf level numbers are indicatedon the front of the oven frame.

Each level consists of a strut on whichyou can place the wire oven rack, forexample.

The runners can be removed. See“Cleaning and Care”.

The FlexiClips with wire rack can bemounted on any shelf level and pulledcompletely out of the oven This allowsyou to see the food easily.

The FlexiClips with wire rack is pushedin and then locked onto a level.

The rack can hold a maximum of 33 lbs(15 kg).

Installing and removing the FlexiClipswith wire rack

Danger of burns! Make sure theheating elements are turned off andthat the oven cavity is cool.

Do not pull the FlexiClips apartduring installation or removal.

Hold the FlexiClips with wire rack withboth hands and position it in front ofthe desired level.

Insert the FlexiClips with wire rackonto the level (1.) and slide it alongthe struts of the level (2.) until it clicksinto place.

If the FlexiClips with wire rack jamswhen sliding it onto the level, pull itout using some force and reinsert.

To removing the FlexiClips with wirerack:

Push the FlexiClips with wire rack inall the way.

Using both hands lift the front of theFlexiClips with wire rack on bothsides (1.) and pull it out of the level(2.).

Temperature selector with °C scale

The range is delivered with atemperature selector with °F scale. Youcan get the temperature selector with°C scale as an accessory. Specify themodel of your range when purchasing.

Replacing the temperature selector

Do not operate the range withoutan installed temperature selector.

Turn the temperature selector to (Off).

Pull the temperature selector off therange horizontally.

Install the new temperature sensor inthe same position and push it ontothe range.

Perforated Gourmet baking trayHBBL 71

The perforated Gourmet baking tray hasbeen specially developed for thepreparation of baked goods made fromfresh yeast and quark doughs.The tiny perforations assist in browningthe underside of baked goods.The tray can also be used fordehydrating or drying food.

Cooktop safety features

Overheat protection

Each burner has overheat protection(inner temperature limiter). It turns theheating of the cooking off automaticallybefore it overheats. As soon as theburner has cooled off, the heating turnson again.

Overheating can be caused by:

– turning a burner on without putting apan on it,

– heating empty cookware,

– a pan with an uneven bottom notsitting evenly on the burner,

– the pan not conducting heat properly.

You will recognize activation of theoverheat protection if the heat keepsturning on and off at the highest powersetting.

Oven safety features

System lock for the oven

The system lock prevents the oven frombeing used unintentionally (see “Systemlock ”).

The system lock will remain activatedeven after a power failure.

Cooling fan

The cooling fan comes on automaticallywhen a cooking program is started. Thecooling fan mixes hot air from the ovencavity with cool room air before ventingit out into the kitchen through ventslocated between the appliance doorand the control panel.

The cooling fan will continue to run for awhile after a program is complete toprevent moisture from building up in theoven, on the control panel orsurrounding cabinetry.

When the temperature in the oven hasfallen sufficiently, the cooling fan willturn off automatically.

Vented oven door

The oven door is made of glass panesthat have a heat-reflective coating onpart of their surface.

During operation, air is also circulatedthrough the door to keep the outerpanel cool.

The door can be removed anddisassembled for cleaning purposes(see “Cleaning and care”).

Safety Door Lock for Self Clean

For safety reasons, the door is lockedas soon as the Self Clean program isstarted. After the self-cleaning programhas finished, the door will remain lockeduntil the temperature in the oven hasfallen below 535°F (280°C).

PerfectClean treated surfacesThe revolutionary PerfectClean enamelis a smooth, non-stick surface thatcleans easily with a sponge.

Food and soiling from baking androasting can be easily removed fromthese surfaces.

Do not use ceramic knives as thesewill scratch the PerfectClean surface.

Follow the instructions in the “Cleaningand Care” section of this manual so theanti-stick and easy cleaning propertiesare retained.

Before using for the first time

The range may only be operatedafter it has been installed properly.Read the operating and installationinstructions carefully before installingthe range..Read the operating instructionscarefully before starting up the range.

The time of day can only be changedwhen the mode selector is set to Off.

Set the time of day.

Setting the time of day for thefirst timeThe time of day is shown in 12 hourclock format.

After connection the oven to theelectrical supply will appear in thedisplay and a will flash under :

Use or to set the time of day.

Confirm with OK.

The time of day is now saved.

Change the time of day to a 12-hourformat by setting h in the settingsmenu (see “Settings”).

During a power failure, the time of daywill be saved for approx. 200 hours. Ifthe power returns within this period oftime the current time of day isdisplayed again. If the power is out foran extended period of time the time ofday will need to be reset.

The time is day is turned off by default(see “Settings - ”).The display will appear dark when theoven is turned off. The time of daycontinues to run unseen in thebackground.

Turning on the cooktop for thefirst time Remove any protective foil and

stickers.

Before first use, wipe down theappliance with a damp cloth and dryit.

Metal components are protected by aconditioning agent. Smells and vapormay occur when the appliance is usedfor the first time.

The smell and any vapors do notindicate a faulty connection or adefective appliance and are not harmfulto your health.

Heating the ovenNew ovens may have a slight odorduring their first use. Heating up theoven for at least an hour with nothing init will eliminate the odor.

Ensure that the kitchen is wellventilated while the appliance isbeing heated up for the first time.Close doors to other rooms toprevent the smell spreadingthroughout the house.

Remove any protective wrapping andsticky labels from the oven.

Take all accessories out of the ovenand clean them (see “Cleaning andcare”).

Before heating the oven up, wipe theinterior with a damp cloth to removeany dust or bits of packaging thatmay have accumulated in the ovencavity during storage and unpacking.

Select the operating mode ConvBake (Convection Bake)

The oven heating, lighting and coolingfan will turn on.

Select the maximum temperature475°F (250°C).

Heat up the oven for at least onehour.

Once the heating up process iscomplete, turn the mode selector toOff and the temperature selector to (Off).

After heating up for the first time

Danger of burns! Allow the ovento cool before cleaning.

Select “Light” to turn on the ovenlight.

Clean the oven interior with warmwater and liquid dish soap, appliedwith a soft sponge or cloth.

Dry all surfaces with a soft cloth.

Turn the oven lighting off.

Leave the oven door open until theoven interior is completely dry.

How the burners workEach burner has overheat protection,which prevents the overheating of theceramic top (see “Overheatprotection”).Standard burners have one heatingband, variable burners have two heatingbands.If a power level is set, the heating turnson and the heating band is visiblethrough the ceramic top. The heatoutput of the burners depends on thepower level set and is controlledelectronically. This causes the “cycling”of a burner: the heating is turned onand off.

The most suitable cookware is metalpots and pans with thick bottoms that,when cold, bulge inwards slightly. Onwarming, the bottom extends and sitslevel on the cooking zone; thisconducts the heat optimally.

Cold Hot

Glass, ceramic or stoneware is lesssuitable. These materials do notconduct the heat well.

Pots and pans made of syntheticmaterial or aluminum are not suitable.These melt at high temperatures,

Cookware of aluminum or with analuminum base can cause shinymetallic spots. These spots can beremoved with ceramic glass or stainlesssteel cleaner (see “Cleaning and Care”).

The composition of the pan bottom canaffect the evenness of the cookingresults (e.g., when making pancakes).

– To make optimum use of the cookingzones, choose pans with a suitablebase diameter (see chapter “Cookingzone data”).

– Use only pots and pans with smoothbases. Rough bases can scratch theceramic glass.

– Always lift the pans to move them.This will help prevent scratching.

– Please note that the maximumdiameter quoted by manufacturersoften refers to the diameter of the toprim of the pot or pan. The diameter ofthe base (generally smaller) is moreimportant.

Energy saving tips– Ensure that the bottoms of pots or

pans match the size of the burner orare somewhat larger. This ensuresthat heat is not lost unnecessarily.

– Use a lid whenever possible tominimize heat loss.

– For small quantities, select a smallpan. A small pan on a small burneruses less energy than a large, onlypartially filled pan on a large burner.

– Cook with as little water as possible.

– Once food has come to the boil orthe pan is hot for frying, reduce theheat to a lower power setting.

– When cooking for a long time, turnthe burner off at least 5 or 10 minutesbefore the end of the cooking time.This makes use of the residual heat.

Energy saving tips– Remove any accessories from the

oven that you do not require forcooking.

– Only preheat the oven if the recipe orcooking chart advises.

– Try not to open the door whencooking.

– If a temperature range is given, it isbest to select the lower temperatureand check the food after the shortestcooking time given.

– Use the operating mode Conv Bake(Convection Bake). You can usecooking temperatures 10-30° lowerthan when using other modes.

– Conv Broil (Convection Broil) can beused for a wide variety of foods.Lower temperatures can be used thanwith other broil modes that use themaximum temperature setting.

Using residual heat

Tip: When cooking using temperaturesabove 285°F (140°C) and cookingdurations longer than 30 minutes, youcan turn the temperature selector to the (Off) position about 5 minutes beforethe end of cooking. The heatingelements will turn off and the residualheat in the oven will be sufficient tofinish cooking the food.

Using the oven Place the food in the oven.

Using the mode selector, select therequired oven mode.

The oven lighting and the TwinPowerfans will turn on.

Select the temperature using thetemperature selector.

After the cooking process:

Preheating the ovenThe appliance only needs to bepreheated in a few cases.

Most dishes can be placed in a coldoven. They will then use the heatproduced during the heating phase.

The oven should be preheated in thefollowing instances:

Conv Bake (Convection Bake)

– dark bread doughs,

– beef sirloins and tenderloins.

Surround

– cakes and pastries with a shortbaking time (up to 30 minutes),

– delicate mixtures,

– dark bread doughs,

– beef sirloins and tenderloins.

Rapid PreHeat

With Rapid (Rapid PreHeat) thepreheating phase can be shortened.

Do not use Rapid (Rapid PreHeat)when baking pizzas or delicatemixtures (e.g. small cakes, pastries).The tops of these items will browntoo quickly.

Select Rapid (Rapid PreHeat).

Select a temperature.

Set the desired oven function whenthe temperature indicator light goes out for the first time.

This function allows the oven to beheated to the desired temperaturequickly.Once the desired temperature has beenreached the oven function must beselected.

Bake

(Baking element)

This mode uses traditional bakingtechniques to perfect pies and biscuits.

Broil

(Browning / Broiling element)

Use this function for broiling or searingsmall quantities. Ideal for chops, ribs,browning baked dishes and toastingbread.

Surround

(Browning / Broiling element + Bakingelement)

This premium baking mode uses heatfrom the upper and lower elements tocreate perfect results on all bakingrecipes.

If using an older recipe or cookbook,set the oven temperature 10 ° lowerthan that recommended. This won'tchange cooking times.

Conv Broil (Convection Broil)

(Browning / Broiling element +Convection fans)

This allows for a lower temperature tobe used then when using broil. Ideal forbroiling thicker cuts of meat (e.g.roulades, chicken). This functiondistributes hot air from the browning /broiling element over the food using thefan.

Conv Bake (Convection Bake)

(Convection fans with heating element)

Use this mode for baking and roastingon several levels at the same time. Youcan cook at lower temperatures thanwith the Surround function because thefans distribute the heat evenlythroughout the cavity for a consistentbaking temperature.

Operating modesDepending on how you would like thefood prepared, you can use Conv Bake(Convection Bake) or Surround.

BakewareThe bakeware used depends on theoven mode chosen and how the food isprepared.

– Conv Bake (Convection Bake):Baking tray, Universal tray, any heat-resistant baking dishes

– Surround:Dark metal, enamel or aluminumbaking tins with a matte finish, aswell as heat-resistant glass, ceramicand coated dishes can be used.Avoid bright, shiny metal tins as theyresult in uneven or poor browning,and in some cases cakes might notcook properly.

– Always place baking pans on the wirerack.Position rectangular pans with thelonger side across the width of therack. This will allow for optimum heatdistribution and even baking results.

– When baking cakes with fruittoppings or deep cakes, place thepan in the universal tray to catch anyspillages.

Parchment paper / Greasing the pan

All Miele accessories (baking tray,universal tray and round baking form)are treated with PerfectClean enamel.

Surfaces treated with PerfectCleanenamel generally do not need to begreased or covered with parchmentpaper.

Parchment paper is only needed with:

We recommend roasting in a coveredoven dish, this will ensure that enoughstock will be prepared to make gravy.The oven will also stay cleaner thanwhen roasting on the rack.

TemperatureAs a general rule, select the lowertemperature given in the chart.If higher temperatures are used, themeat will brown on the outside, but willnot be properly cooked through.

When cooking with Conv Bake(Convection Bake), select a temperature25°F (20°C) lower than when usingSurround.

Select a temperature of approx. 25°F(10°C) lower than quoted in the roastingchart for meat weighing more than6.5 lbs (3 kg).The roasting process willtake longer, but the meat will cookevenly through and the skin or cracklingwill not be too thick.

When roasting on the rack, set atemperature approx. 10° lower than ifusing an oven dish.

Shelf levels In most cases level 3 should be used.With large items, such as a turkey, uselevel 1 or 2.

Tips– Browning: Browning only occurs

towards the end of the roasting time.Remove the lid about halfwaythrough the roasting time if a moreintensive browning result is desired.

– Resting time: At the end of theprogram, take the roast out of theoven, cover with aluminum foil and letstand for about 10 minutes. Thishelps retain the juices when the meatis sliced.

– Roast Chicken: For a crisp skin, bastethe poultry 10 minutes before the endof the cooking time with lightly saltedwater.

This cooking method is ideal forcooking beef, pork, veal or lamb when atender result is desired.

First, using a cooktop sear the meat onall sides to seal in the juices.

Then place the meat in a preheatedoven. It will be cooked at a lowtemperature for an extended timeallowing the meat to become verytender.

The meat will rest and the juices start tocirculate evenly throughout.This gives the meat a very tender andjuicy result.

Tips

– Use fresh, lean meat that has beentrimmed. Remove the bones beforecooking.

– When searing, use a suitable cookingoil or fat that can withstand hightemperatures (e.g. clarified butter,vegetable oil).

– Do not cover the meat duringcooking.

Cooking will take approx. 2-4 hours,depending on the size and weight ofthe meat, as well as the desireddegree of doneness and browning.

Operation

Use the universal tray with the grillingand roasting insert.

Place the rack with the universal trayon shelf level 3.

Select Surround and a temperature of265°F (130°C).

Preheat the oven along with theuniversal tray and wire rack forapprox. 15 minutes.

While the oven is preheating, sear themeat on all sides on the cooktop.

Danger of burns!When the oven is hot use pot holdersto insert, remove or turn the food, orwhen adjusting the oven shelves,etc.

Place the seared meat on theuniversal tray.

Reduce the temperature to 210°F(100°C).

Continue cooking until the end of thecooking time.

On ovens with a clock/timer, you canset the cooking process to finishautomatically (see“Clock/Timer -Setting the cooking duration”).

After the cooking program– Meat can be carved straight from the

oven. It does not need to rest.

– The meat can be left in the oven afterthe program is complete. This will notaffect results in any way.

Ceramic surface

When cleaning with liquid dish soap,not all contaminants and residuesare removed.An invisible film forms, which causesdiscoloration of the ceramic. Thisdiscoloration cannot be removed.Clean the cooktop on a regular basiswith a special ceramic cleaner.

First wipe down the surface with adamp cloth to loosen soiling, thenremove stubborn crusting with a glassscraper.

Clean the cooktop with the Mieleceramic and stainless steel cleaner (see“Optional accessories”) or acommercial ceramic cleaner and papertowel or a clean cloth. Do not put thecleaner on a hot cooktop since this maycause spotting. Please follow themanufacturer's instructions.

Then clean the cooktop with a dampcloth and dry it off. Cleaner residues willburn into the cooktop duringsubsequent uses, damaging the glassceramic. Make sure you remove allresidues.

Spots from lime deposits, water, andaluminum deposits (metallic spots) canbe removed with a glass ceramic andstainless steel cleaner.

Danger of burns!Risk of burns! Wear oven mitts anduse a glass scraper to remove sugar,plastic or aluminum residues fromthe hot cooktop.

Should any sugar, plastic or aluminumfoil spill or fall onto a hot burner while itis in use, first turn off the appliance.Then carefully scrape off these residuesfrom the cooktop immediately whilethey are still hot, using a shieldedscraper blade. – Soiling caused by spilled fruit juicesand cake mixtures is best removedwhile the oven is still warm. Usecaution and make sure the oven isnot too hot.

Normal soiling

There is a seal around the oveninterior which seals the inside of thedoor.Take care not to rub, damage ormove the gasket.Do not clean the door gasket - thedoor gasket is essential for a goodseal.

Remove normal soiling immediatelyusing a clean sponge with warmwater and liquid dish soap appliedwith a clean, damp microfiber cloth.

After cleaning, ensure that anydetergent residue is removed withclean water.This is particularly important whencleaning surfaces treated withPerfectClean enamel as detergentresidue can impair the non-stickproperties.

After cleaning, dry the surfaces with asoft cloth.

Stubborn soiling

Do not use a protective coating (i.e.tin foil) to line the oven and do notuse commercial oven cleaner unlesscertified for use in a self-cleaningoven.Remove coarse soiling from the ovenand scrape any burnt-on residues offenameled surfaces with a glassscraper.Use the Self Clean  program. See“Cleaning the oven interior with SelfClean ” for more information.

Spilled fruit and roasting juices maycause lasting discoloration or mattepatches on enameled surfaces. Thisdoes not affect the functionalcharacteristics of the finish. Do notattempt to remove these marks.Clean them following the instructionsgiven here.

Baked on deposits can be removedwith a glass scraper or with a non-abrasive steel wool pad, warm waterand liquid dish soap.

The cavity does not need to be treatedwith oven cleaner as it is equippedwith a Self Clean  program.

If necessary, the scouring pad on theback of a non-scratching washing-upsponge can be used to remove thesoiling after the holding time.

After cleaning, remove all ovencleaning agent residues thoroughlywith clean water, and then dry thesurfaces.

Self Cleaning the oven interiorInstead of cleaning the oven by handyou can use the Self Clean program .

During self cleaning the oven interior isheated up to over 750°F (400°C). Anyresidual soiling is broken down andreduced to ash by the hightemperatures.

This oven has three levels for selfcleaning, each with a different duration:

– Level 1 for light soiling,

– Level 2 for heavier soiling,

– Level 3 for very heavy soiling.

Once the Self Clean program has beenstarted, the door will automaticallylocked. The door cannot be openedagain until the program has ended.

If desired, the timer can be used todelay the start of the Self Cleanprogram.

At the end of the program any residues,such as ash from the cleaning process,can be easily wiped away.

Preparing for the Self Clean program

Non-pyrolytic accessories will bedamaged by Self Clean.Remove all non-pyrolytic accessoriesfrom the oven before starting a SelfClean program. This also applies foroptional accessories that are notsuitable for the Self clean program.

The following accessories are suitablefor cleaning with Self Clean and canremain in the oven during the program:

– Shelf runners

– Wire oven rack HBBR 30-2

– FlexiClips with wire rackHFCBBR 30-2

Remove all accessories that are notsuitable for the Self Clean programfrom the oven.

Slide the wire oven rack into the topshelf level.

Heavy soiling in the oven can causethick smoke to develop and canresult in the Self Clean programbeing switched off.Burnt-on residues can cause lastingdiscoloration or dull spots onenameled surfaces.

Before starting the Self Cleanprogram, remove coarse soiling fromthe oven and scrape any burnt-onresidues off enameled surfaces with aglass scraper.

Delaying the start of the Self Cleanprogram

Start the program as described andthen set the desired finish time withinthe first five minutes of starting theprogram.

Most soiling can be easily removedusing a clean, soft sponge and a mildsolution of warm water and liquid dishsoap.

Depending on the degree of soilingbefore cleaning, there may be a visiblelayer of soiling across the inner glasspane on the door. This should beremoved using the scouring side of adish sponge or with a stainless steelspiral sponge and liquid dish soap.

Please note:

– There is a fiberglas seal around theoven interior which seals the inside ofthe door. Take care not to rub,damage or move the gasket. Do notclean the door gasket - the doorgasket is essential for a good seal.

– Spilt fruit juices may cause lastingdiscoloration to enameled surfaces.This discoloration is permanent butwill not affect the efficiency of theenamel. Do not attempt to removethese marks.

The Self Clean program is canceled

If the Self Clean program is cancelled,the oven door will remain locked untilthe temperature inside the oven dropsto below 535°F (280°C). The symbol will light up until thetemperature has dropped below thislevel. The door can be opened assoon as the symbol starts flashing.

The following will cause the Self Cleanprogram to cancel:

– Turning the mode selector to Off.

Once the door has been unlocked, will go out and the time of day willreappear in the display. If necessary,start the Self Clean program again.

– Turning the mode selector to adifferent function.

Door removal

The door weighs approx. 18 kg).

The oven door is connected to thehinges by retainers.Before removing the door from theretainers, the locking clamps on bothhinges have to be released.

Open the door fully.

Release the locking clamps byturning them as far as they will go.

Do not pull the door horizontally offits retainers, as they will spring backagainst the oven.

Do not pull the door off the retainersby the handle, as the handle couldbreak off.

Raise the door up till it rests partiallyopen.

Hold the door on either side and pullit diagonally upwards from the hingeguides. Make sure that you lift thedoor off straight.

Reinstalling the door

Hold both sides of the door securelyand carefully fit it onto the brackets ofthe hinges.Make sure that the door goes onstraight.

Open the door fully.

If the locking clamps are not locked,the door can easily becomedetached from the brackets and bedamaged.You must make sure that the lockingclamps are locked again.

To relock the locking clamps, turnthem back up to the horizontalposition as far as they will go.

Removing the shelf runners

Danger of injury!Do not use the oven without the shelfrunners correctly inserted.

Danger of burns! Make sure theheating elements are turned off andthat the oven cavity is cool.

Loosen the screw (1.).

With the help of the following guide minor faults in the performance of themachine, some of which may result from incorrect operation, can be remediedwithout contacting the Service Department.

This guide may help you to find the reason for the fault, and how to correct it.

Cooktop or burnerscannot be turned on.

There is no power to the appliance. Check if the breaker has tripped. Contact a

qualified electrician or Miele Technical Service (forthe minimum fuse rating, see the data plate).

There may be a technical fault. Disconnect the appliance from the power supply

for approx. 1 minute:– Turn off the relevant fuse.– Remove the screw-in fuse completely.– Turn off the ground fault circuit interrupter

(GFCI). If, after resetting/replacing the fuse or the GFCI,

the appliance still will not turn on, contact aqualified electrician or Miele Technical Service.

There is a strange smellor vapors when theappliance is being usedfor the first time.

Metal components are protected by a conditioningagent. Smells and vapor may occur when theappliance is used for the first time. The smell and anyvapors do not indicate a faulty connection or adefective appliance and are not harmful to yourhealth.

The “cycling” of the heating is normal. It is caused bythe electronic temperature control (see “How theburners work”). If the heating cycles at the highest power level, theoverheat protection has been triggered (see“Overheat protection”).

This display is dark. There is no power to the appliance. Check if the circuit breaker has tripped.

The oven does not heatup.

Only an oven mode or a temperature has beenselected. Select a mode and a temperature.

The system lock is On. Turn off the system lock (see “System lock ”).

The oven turns off automatically if a button is notpressed after a certain amount of time or after acooking program has ended to save power. Turn the oven back on.

The oven lighting turnsoff after a short time.

The oven is factory set to turn off automatically after15 seconds. This setting can be changed (see“Settings overview – ”).

Baked goods are notcooked properly afterfollowing the timesgiven in the chart.

A different temperature than that given in the recipewas used. Select the temperature required for the recipe.

The ingredient quantities are different from thosegiven in the recipe. Double check the recipe. The addition of more

liquid or more eggs will make a wetter mixturewhich will take longer to cook.

The browning isuneven.

The wrong temperature or shelf level was selected. There will always be a slight unevenness. If the

unevenness is great, check whether the correcttemperature and shelf level were selected.

That material or color of the bakeware is not suitablefor the oven mode selected. When using Surround, use matte, dark colored

pans. Light colored, shiny pans will not produce asdesirable results.

Disconnect the appliance from the power supply. Loosen the bulb cover with the tool supplied at the

back of the frame. Do not touch the halogen bulb with bare fingers.

Observe the manufacturer's instructions.Remove the halogen bulb.

Replace it with a new halogen bulb (Sylvania66740, 120 V, 40 W, G9, FS1).

Press the bulb cover back into place. Reconnect the oven to the electrical supply.

There is soiling in theover after the Self Cleanprogram.

The Self Clean program burns off soiling in the ovenand leaves it as ash. Using a soft sponge, warm water and liquid dish

soap remove the ashes.If coarse soiling remains, start the Self Cleanprogram again with a longer duration.

The rack and otheraccessories make anoise when beingpushed into or pulledout of the oven.

The heat resistant surface of the shelf runners createsfriction when accessories are taken in and out of theoven. To reduce the friction, lubricate the runners with a

few drops of cooking oil applied with a papertowel. Repeat this process after each Self Cleanprogram.
