INGREDIENTS 2 dashes orange bitters 1/2 rum 1/2 Caperitif • Fill a cocktail mixing glass halfway full with ice cubes. Add Caperitif, rum and orange bitters. Strain into an old-school Cham- pagne cocktail glass. Garnish with a lemon twist. BUSHRANGER BUSHRANGER In the late 1700s, bushrangers attacked diggers returning from the gold fields. At one point, it was legal to shoot them on sight. Seen as both Robin Hood and at other times, brutal thieves who would rather die than surrender. After the Boer War, Caperitif travelled from SA to cities such as Paris, NYC, and London where new cocktails were invented. This one introduces absinthe.

INGREDIENTS1/2 gin1/2 Caperitif1 dash absinthe1 dash Angostura bitters1 cherry

• Rinse a cocktial glass with ab-sinthe. Half-fi ll a shaker with ice cubes. Add gin, Caperitif and a dash of bitters. Strain into a glass and garnish with a cherry.

VESPERVESPER

In Casino Royale, James Bond provided the recipe for an invented cocktail called the Vesper. A martini in a goblet with gin, vodka, and Lillet. Lillet Blanc is used as a substitute. Lars Lyndgaard Schmidt thought of another one...

INGREDIENTS1/3 Caperitif1/3 gin1/3 vodka

• Half-fi ll a cocktail shaker with ice. Add the gin, Caperitif, and vodka. Shake well until ice cold. Strain into a cocktail glass. Add a large slice of lemon peel.

• Place fi ve ice cubes in a cock-tail shaker. Add the brandy, Caperitif, dashes of bitter and curaçao. Stir well and strain into a chilled cocktail glass. Garnish with a twist of orange and a cherry.
