manufactured foods for restaurants as well as the retail

and food service industries.

eah Chase may be known

for her gumbo des herbes

and fried chicken, but she’s

a pretty good raconteur in her own

right. Not only does she serve food

that warms the heart and soul, but

she also feeds her guest comfort,

and conversations of her family and

of growing up in Madisonville. I love

to listen to Leah reminisce about the

seafood truck that made its way to

the country, loaded with fresh shrimp

and oysters. She tells stories of her

Uncle Charles who journeyed into

the swamp to gather snapper turtles

for the traditional Cowan dish that

graced the table for the Creole Easter

feast. And, her stories of watering

her Daddy’s garden every night

are priceless. But, my favorite Leah

Chase stories stem from the days of

the Civil Rights Movement. Because

Dooky Chase’s was one of the few

places where African Americans and

white leaders could meet, the Queen

of Creole Cooking had a hand in

calming racial tensions, one bowl of

gumbo des herbes at a time.

remember going to Mardi Gras and seeing fried

chicken being sold on the street. We would go to see

the Zulu parade, which was on Claiborne Avenue

from Canal Street to St. Bernard Avenue. The street was full

of booths, with blacks selling fried chicken, fried fish and

red beans. My favorite thing about Mardi Gras was that we

could eat in the street. My father never even let us eat candy

outside normally.

I also thought it was so fun to dress in a costume. But a lot of

Creole ladies used the occasion to bring out their first spring

suit. One group put on a Mardi Gras Breakfast Dance that

was very fancy. The invited guests – usually teachers and

professionals – would go in hats and gloves. I got invited

eventually and wasn’t so impressed. I was just happy to be

watching the parade, finally able to eat some fried chicken

in the street.

INGREDIENTS1- 3 lb. fryer

1 tbsp. salt

1 tbsp. black pepper

2 eggs, beaten

½ cup Pet milk

½ cup water

2 cups flour

1 tsp. paprika

¼ tsp. ground thyme

½ tsp. granulated garlic

1 qt. oil for frying

Please enjoy this recipe from Dooky Chase’s and

Cut chicken in eight pieces. Season

well with salt and pepper. Set aside.

Mix eggs, milk and water. Pour mixture

over chicken. Let sit for 5 minutes.

In a heavy paper bag, mix flour,

paprika, ground thyme and

granulated garlic. Place chicken in

bag with flour mixture. Shake until

chicken is well coated.

Heat oil in a Magnalite fryer – oil

should reach 350 degrees. Place

chicken in hot oil. Fry, turning as

chicken browns. Heavy parts, such

as breast, thighs and legs will take

15 to 20 minutes, wings about 10 to

15 minutes. Drain chicken on paper

towels. Yield: 4 servings.DIR

I get together with all of my

sisters in the country, it’s endless

food and we are all big on

like a Magnalite factory when

we have a family reunion.

Magnalite is like a religion to

us. I use it at home and in the

restaurant. In all of these recipes

you will see me say, “Get your

Magnalite has to stay shiny, shiny,

shiny both inside and out. The

pots might be ten years old, but
