We will kick off the month by honoring our beloved volunteers with a luncheon on May 3 rd . We appreciate all they do. N ational Nurse’s Day is May 6 th . Our nurses are top notch. They have hearts of gold and care so much! D uring National Nursing Home Week (May 11 th – 17 th ) we are going to take a little walk on the wild side. Philadelphia Zoo will be visiting us and teaching us all about the Radical Rainforest. We will get to learn about all of the layers of the rainforest and have an animal from each layer visit us! O ur first picnic of the season is on May 22 nd ! Join us for some delicious picnic fare. Afterwards we will be playing some fun games in the courtyard. T he fun won’t stop as we waltz into June. On the 5 th we will be entertained by Vivian & Don and their beautiful ballroom dancing. O ur second picnic takes place on June 26 th . Please join us as we celebrate Independence Day! May is going to be such a fun filled month here at

Hickory House. We will kick off the month by honoring our beloved

volunteers with a luncheon on May 3rd.

We appreciate all they do.

National Nurse’s Day is May 6th. Our nurses are top notch. They have

hearts of gold and care so much!

During National Nursing Home Week (May 11th – 17th) we are going

to take a little walk on the wild side. Philadelphia Zoo will be visiting us and teaching us all about the Radical Rainforest. We will get to learn about all of the layers of the rainforest and have an animal from each layer visit us!

Our first picnic of the season

Mary Magner’s Message

We have a number of events coming up for National Nursing Home Week May 11th thru the 17th. We invite you and your family to celebrate National Nursing Week with us! This special week of dedication starts on Mother’s Day, May 11th. This year’s theme is: Living the Aloha Spirit ... of kindness, unity, truthfulness, humility, and patience.

We had a special guest visit on April 17th. Ivan Stoltzfus is a retired farmer from Honey Brook, PA that will be driving his specially built “Johnabilt” across the US to raise money for the Wounded Warrior Project.

Janet Martin

Janet Martin has been chosen for our resident spotlight. Janet was born in Glenmoore and was an only child. She was raised by her aunt on the Mainline. She late moved to Newtown Square and graduated from Haverford High School.

After graduation she worked for Philadelphia Electric for twenty-nine years. Janet met her

husband Ray at a dance and they were married i n 1958. They moved to Honey Brook to live. Janet and Ray have two daughters, Lynn and Diane.

Janet is a long-standing member of the Honey Brook Presbyterian Church. She always loved to dance and also enjoys reading.

Janet has been a wonderful addition to our Hickory House family. She can often be found at activities having fun!

Prep Time: 15 minuteTotal Time: 15 minutes

Ingredients

For the Crust:

• 2 cups graham crumbs • 1 teaspoon sugar • 2 tablespoons butter, melted • For the Cheesecake Mixture: • 1 cup heavy cream • 1/2 cup confectioners’ sugar • 2 tablespoons granulated sugar • 1 package (8 ounces) of cream cheese, softened, and

whipped smooth • 1 individual sized package (4.5 g) of Crystal Light Pink

Lemonade Mix • Optional: pink food coloring, not necessary at all,

personal choice

For the Optional Garnish:

• Sprinkles • Whipped cream • Crushed cookies• Make Raspberry-Coconut Chocolate Cupcakes

InstructionsFor the Crust: 1. Pour graham crumbs into a bowl, add sugar and mix

well. 2. Melt the butter in microwave or on stove top. Pour over

graham crumbs. Mix with a fork until well combined. 3. Divide evenly amongst serving dishes and leave loose,

no need to pack it down since you are not cooking it. 4. For the Cheesecake Mixture: 5. In a stand mixtures combine the heavy cream,

confectioners’ sugar, and granulated sugar. Start mixer on low with the whisk attachment. Once it starts to thicken slightly you can increase speed until it’s on high. Whisk on high till the mixture is fluffy.

6. In a separate bowl whip the softened cream cheese with a mixer until it’s smooth and there are no chunky pieces, add the lemonade mix slowly and mix until combined.

7. Add the cream cheese mixture to the whipped cream mixture and whisk on medium speed until it’s smooth and combined.

8. Transfer to a piping bag if desired, or spoon into serving dishes.

9. Place in fridge for at least an hour.

For the Optional Garnish: 1. You can add sprinkles, whipped cream, crumbled graham

crackers or anything else over top of these. We did ours plain this time around and just did the cheesecake mixture with some sprinkles.

2. Serve with a big old puckery smile!

These will have you stealing them from your family members!

The bunny came a hop hop hopping along and visited us on Good Friday. Fun was had by all.
